Around Town NEXMETRO ANNOUNCES PLANS TO DEVELOP SINGLE FAMILY LEASED-HOMES NEIGHBORHOOD Phoenix-headquartered NexMetro Communities recently announced the purchase of 15 acres at the northeast corner of Warner Rd. and Grace Blvd., where it plans to develop 194 homes. The Avilla Grace development will feature one, two and three bedroom floor plans and continues the developer’s charter of building single-family, detached homes for lease that cater to lifestyle-conscious consumers. The deal is part of NexMetro’s aggressive growth strategy for 2015.The acquired property is less than two miles from Chandler’s Downtown District, which has undergone extensive redevelopment initiatives in the last several years. With only two multifamily properties constructed in the area over the last 11 years, the construction of the new Avilla Homes neighborhood is expected to be a significant catalyst in the community’s revitalization, attracting higher-income residents seeking a quality lifestyle. “The City of Chandler is excited to see a project that is consistent with the recommendations of the Mayor's 4-Corner committee to redevelop older, challenged commercial space," says James Smith, Economic Development program manager. “The Avilla Grace development fits our strategy of bringing increased density and activity to intersections with underperforming commercial space. The influx of new residents will help support the remaining commercial space and provide density on an important transit corridor."

Giving Back

Chandler Firefighter Charities FIREFIGHTERS MAKING A DIFFERENCE IN PEOPLE’S LIVES AFTER THE FLAMES ARE OUT

ARTICLE MICHELLE GUERRERO | PHOTOGRAPHY PROVIDED

I

believe that giving and kindness are both contagious and prolific. Once you give back, it’s difficult to stop. To prove my point, I present the Chandler Firefighter Charities (CFC), a nonprofit organization founded by people who already give, risk and sacrifice on a daily basis. Before the CFC was founded, it was common for Chandler firefighters to pull money from their pockets to help people after the immediate crisis was handled. These firefighters stepped into the lives of strangers, on a day that could easily be considered their worst; yet saving a life or extinguishing the flames, just wasn’t enough for them. They wanted to do more. Even if all they could do was give someone enough cash to buy a nightgown to sleep in when they lost all their clothes, or buy a meal when they no longer had a kitchen table to sit at. In 1994, Tom Carlson, who is now assistant chief for Chandler Fire, Health & Medical, witnessed the frequent giving taking place 14

Chandler Lifestyle | June 2015

and decided it was time to start the CFC, so that they could raise funding and better help the people they came across. REACHING THOSE IN NEED

“With our 10 stations, at least once a week we hear about someone in need,” says Jeff West, captain paramedic for the fire department and the president of the CFC. One story West likes to share when explaining the work of the CFC is about a man they came across during an emergency call. He was living out of his car. The car broke down while on his way to work and needed a lot of repairs, so the firefighters gave him money to get his car fixed so he could continue to get to and from work. They’ve been known to help people keep their electricity on or put food on the table. But also, they give more than just cash, they give of their time.

“On one of our calls, we met a single mom who had a son who was restricted to a wheelchair. She had been lifting him up and down the stairs by herself. So on a day-off, one of the crews who had been responding to her house, went by and built her a wheelchair ramp,” says West. Some of the people that they help were encountered on a call, while others are referrals from their crisis team. They send out this team for various reasons, often it’s because of a drowning or because someone passed away. “Sometimes people hit rock bottom and need some help,” says West. “We have even helped some of our City employees. One specifically was battling cancer, and sometimes even a small thing like money to help put fuel in the car makes a difference” The firefighters have 48-hour shifts, and most of the work they do for the CFC is done when they are off-duty. FILLING THE COFFERS

While there are only six members on the board, everyone pitches in, in some way. “Most of our funds come from donations," says West. "Annually we have a work place giving campaign and the firefighters, and many city employees, donate. We also have an annual golf

tournament, and have sold t-shirts and hats to raise money.” They offer a CPR program, taught by the firefighters themselves, in which all of the class fees go directly to the CFC. There are classes geared towards babysitters, but also medical providers who need certification cards for their line of work. They receive a lot of community support to keep their coffers full as well. “The businesses have been really helpful and people do reach out. Sting Ray Sushi in Chandler did a donation booth for us during their grand opening, and Walmart just gave us a $2,500 grant to assist with first aid supplies,” says West. While the firefighters do their best to come up with creative fundraising ideas, like their ride-a-longs and chili cook-off, they would like to expand their fundraising strategies to one day include a gala or evening dinner event. “We appreciate the community looking out for each other and involving us when we can help. We are part of the community and there’s a firehouse near every neighborhood. We are the problem solvers,” says West. Each firetruck sent out to a Chandler emergency has four firefighters onboard. Two of them are paramedics, and two are emergency medical technicians. And most likely, all four of them contribute to the CFC, keeping an eye out for how else they can help. Follow the CFC through their Facebook page at Chandler Firefighter Charities, and connect with them via email at ChandlerFirefighters@gmail.com. Donations, in the form of cash or check, can be sent to: Chandler Firefighter Charities, 151 E. Boston St., Chandler, AZ 85225.

Junior Reserve Officer Training Corps Teaches Service, Citizenship and Patriotism HAMILTON HIGH SCHOOL PROGRAM DESIGNED TO HELP STUDENTS DEVELOP LIFELONG SKILLS ARTICLE EDWARD VALENCIA JR | PHOTOGRAPHY PROVIDED

W

hen the idea of Junior Reserve Officer Training Corps, JROTC, was introduced with the National Defense Act of 1916, a dream was born. The dream was to create better young citizens for our fine nation and future leaders for our Armed Forces. Since 1916, when the first Army JROTC was founded, Navy, Marine Corps, Air Force, and Coast Guard units were added. In 1986, Arizona’s second Air Force JROTC was established in Chandler. As Chandler grew, more schools offered AFJROTC programs. In 1998, AZ-862 moved from Chandler High School to Hamilton High School. Since then, AZ-862 has received multiple accolades, and commendations for its contributions to the community and the state. None of this would be possible without the mission of AFJROTC and the Air Force Core values.

SERVICE AND COMMUNITY

Cadets can take part in a variety of activities that follow the mission of AFJROTC which include drill team, clubs, physical training, and community service opportunities. “The corps” as AZ- 862 is affectionately called, strives to best serve and provide opportunities so that cadets can excel not only within the corps at Hamilton High School but also in the community. An example of the commitment and dedication of the corps is evident in the AZ-862 goals during the school year. These goals include 2,500 volunteer hours, 24 military/AFJROTC awareness events and sponsoring blood drives to collect 300 useable pints of blood. In May, AZ-862 was awarded the “Distinguished Unit Award,” following the completion of corps goals and a great inspection from AFJROTC headquarters. LEARNING VALUABLE SKILLS

MISSION

The mission of AFJROTC is to “develop citizens of character dedicated to serving their nation and community.” It also instills core values of the United States Air Force which are: "Integrity first, service before self, and excellence in all we do." These words are the very foundation of the everyday events of AFJROTC, and of that of AZ-862. AZ -862 represents and illustrates the mission and commitment of AFJROTC through its daily duties and activities throughout the month. The defined classroom lessons and coursework on subjects such as f light, Air Force history, global and cultural studies and space exploration, highlights leadership skills and ownership of roles and responsibilities. 16

Chandler Lifestyle | June 2015

Cadets can apply their skills through a number of clubs offered through the AZ-862 corps such as model rocketry, air combat simulation, and paintball. These activities allow students to experience different areas of the Air Force such as the science of flight and the aerodynamics of a rocket, the history of the flag, and how to fly a plane in a simulator. One of the most popular clubs is the paintball club. This group visits a paintball course once a quarter and learns the tactics of the battle field. They learn flanking movements, and other maneuvers on how to effectively take an objective. DRILL TEAM

One of the most prestigious displays of corps values is through participation in the Drill Team. Drill in the United States can trace back

State-of-the-Art Facility | Now featuring skin therapies and spa services to the American Revolution, when General George Washington sent for Baron Friedrich von Steuben, a Prussian officer, to train his soldiers proficiently in Prussian drill, which included marching and weapon movements. These lessons would be passed down from instructor to instructor, until they were regulated, and written down. As time passed, more was added to these lessons, and these

movements, once used in battle, are now used to create discipline within the trainees. By the late 1950’s, drill meets started to pop up across the United States. Today local drill meets are held on Saturdays. In drill, cadets learn to march, handle drill rifles, memorize general knowledge questions, and overall team work. Members travel across Arizona for drill meets to display their skills to the judges in the hopes of bringing home a trophy. This season, the drill team took home 3rd place in the “Overall Unarmed” category at the Southern California Invitational Drill Meet, which qualified our drill team to the National Drill Meet at Daytona Beach Florida in early May.

BECOMING A RESPONSIBLE CITIZEN

Through experiences offered in AFJROTC, cadets learn not only leadership skills but also problem solving, conflict resolution and teamwork. They gain experiences and learn lifelong lessons that will help them be a responsible adult and citizen of their community. A “Pro-State” of Mind Taking a Stand Against Prostate Cancer ARTICLE DANIELLE ACCOVELLI | PHOTOGRAPHY JENNIFER STEWART

P

resident and CEO of the Arizona Diamondbacks Derrick Hall made a name for himself in baseball for his pioneering spirit, driving determination and always-positive attitude. However, on the morning of September 17, 2011, Hall received the devastating news that he had prostate cancer. After a long and tearful conversation with his wife, Hall made the bold decision to go public with the news. A naturally positive person, Hall was determined that he could and would beat prostate cancer, and with the help and support of his family, he endured surgery and treatment all with unwavering positivity. Along the way, Hall openly shared his journey and the challenges that he faced, encouraging all men to get tested for prostate cancer and viewing his battle as an opportunity to be a resource for men. With this in mind, the Derrick Hall Pro-State Foundation was founded as an open platform where men could go to and get the tough questions answered. Today, the Foundation offers a vast array of resources and support for both men and their families with the vision of driving awareness, educating men and encouraging them to get tested. Here, Derrick Hall shares his inspirations and plans for the Pro-State Foundation.

er than just surgery or these other methods, but until then I want to make sure that I can walk people through all the different options, make sure they can put their minds at ease as they are going through it, and put their families’ minds at ease, too. It’s not just a website for men, but a website that women and family members and friends can go on as well to know what their husband, what their father, their uncle, whoever, may be going through, and to be there to help them and support them as well. YOUR MOTTO IS “A PRO-STATE OF MIND IS A POWERFUL MEDICINE.” WHAT DOES THAT PERSONALLY MEAN TO YOU?

Just the name in itself -- rather than "prostate" to change it to “pro-state” with a hyphen, and to make it a “pro-state of mind,” -- because I think every patient, every victim needs to make sure he, or she, when it comes to cancer, is as positive as possible to get through it. It’s amazing the recovery time, the ability for the body to recover when the mind is going through positive thoughts, and so I’m just trying to remind men, especially those going through prostate cancer, to have a very “pro-state of mind,” and that was really the vision behind the name.

WHAT WAS YOUR BIGGEST INFLUENCE IN STARTING THE DERRICK HALL

HOW IS MAINTAINING A “PRO-STATE OF

PRO-STATE FOUNDATION?

MIND” ESSENTIAL WHEN BATTLING PROS-

My motivation was really just to help others and to let them know my story, let them know that they should not be embarrassed or scared, that there are men out there to help them through it. Ultimately, I would love to know that there’s a cure for it oth-

TATE, OR ANY OTHER CANCER?

18

Chandler Lifestyle | June 2015

Personally, that’s just who I am. I’m a very positive person. I love life, I live life to the fullest; I think everybody needs to, and cancer can create such a dark cloud over our heads that we have to find a way

to turn it into a positive. It’s all about overcoming diversity and getting through it knowing that there are others with you and that you’re not alone, so naturally you want to stay as positive as can be for them as well. I admire those who fight any disease, and in particular cancer, with a strong attitude and a positive mindset and tend to believe that survival is a little longer, and in some cases completely defeated, because of that positive will and that positive attitude. I highly encourage people to stay as positive as can be and if our name and if our foundation provides just a glimmer of that, and a bit of hope and light, then its extremely rewarding for me.

HOW HAS SURVIVING PROSTATE CANCER IMPACTED YOUR OUTLOOK?

It definitely changed it. I think at first there was definite depression and fear, you start thinking about your own mortality, but then you quickly turn it around. There’s something extremely powerful in saying that you’re a cancer survivor, and so that’s the way I was looking at it. I’m always going to have it in the back of my mind, there’s always going to be that anxiety because I still need to be tested and there’s always that fear that it could come back again. But then you can’t control that, and things that you can’t control you shouldn’t let lead your life, so I just keep thinking about all

the positives—having beat it—and I continue to believe, and I always will.

there were some dark days, but for the most part it’s okay and you’re not alone.

WHAT ADVICE WOULD YOU GIVE TO MEN

WHAT ARE YOUR FUTURE GOALS FOR

BATTLING PROSTATE CANCER?

THE FOUNDATION?

I would say, as I say to all of them, “You’re going to be okay, your life is going to change a little bit, but you’re going to be okay.” For me, I believe that everything happens for a reason, and I believe that I got cancer so I could share it with others; share my story and hopefully be encouraging and motivational for them to battle it, and use my national platform and stage here with a major league baseball team to spread the word. I always tell people that

The vision is to one day make sure that we have a surplus of individuals that have gone through cancer who are willing to volunteer their time, their voice and their experiences. Then, taking it a step further where I can partner with some of the other foundations that are currently providing testing and see if we can’t either reduce dramatically the cost of testing or provide free testing and screening throughout our state and eventually go nationwide. CB & CB has three other locations that are in Scottsdale - Grayhawk, which opened in October 2010; Old Town, which opened in July 2013; and Shea which recently opened.

MORE THAN MEETS THE EYE

Don’t let the 40 flat screen televisions fool you into thinking it’s just a restaurant for watching a game. There’s a wonderful selection of food items thanks to Executive Chef Robert Wagner, who creates all the recipes. You’ll definitely want to check out the “Starters” where you’ll find buffalo chicken eggrolls, CB & CB onion dip, grilled asparagus spears, hummus and pita, chicken tenders, mozzarella sticks, parmesan truffle fries, buffalo chicken dip, tot chos and hell fire chips. There are also three styles of grilled drummettes and four types of sliders. I sampled the buffalo chicken dip served with the house made chips and loved the chips and how the dip had a little kick! Everything is hand formed and freshly made that day which isn’t the case for other casual restaurants that use frozen foods. They even the salad dressings and sauces are housemade. Listed on the menu are 16 mouth watering 20

specialty ½ lb. burgers for you to choose from that are unusual and intriguing. These award winning burgers are made with ground chuck. A couple to consider are the prime rib burger with caramelized onions and the lineman burger, which uses two grilled sandwiches as buns – for a total of four slices of bread. All burgers come with a choice of bun (except the lineman) from brioche, wheat, pretzel and gluten-free. BURGER CHALLENGE

If you’re a burger lover, you may be tempted to participate in the Burger Challenge. You get to decide how many patties you want to try to eat and beat the previous record time. The minimum is three patties. Now remember, these are ½ lb. patties. You’re timed to see how quickly you can eat the number of patties you selected. If you get them down and beat the current champ, then you win your burger, a t-shirt and your name is added to the Burger Challenge board. If not, you buy! The current record is 9 patties (4 1/2lbs.) set in July of 2013. MORE OPTIONS

However, if burgers aren’t your thing, you’ll find other great choices on the menu. There are five types of mac & cheese entrees and eight sandwiches, which include a BLT, club, buffalo chicken, prime dip and more. For salads there’s the classic Caesar, CB&CB salad, a Cobb salad, and an Asian chicken salad. If you like hot dogs, you’re in for a treat as there are 10 Stadium Char Dogs to choose from. They’re named after team cities - Chicago, Cincinnati, Colorado, Los Angeles, San Diego and San Francisco. There’s also an Arizona dog, a Deep South dog and a Chili Mmmac dog. Be sure to save room for the Tableside S’mores, where you and your party can roast your own marshmallows with Hershey’s chocolate and graham crackers. You may want to keep an eye on the chocolate as it’s known to mysteriously disappear. SPECIALS

Daily specials start with Mac Daddy Monday – where you can build your own Mac & Cheese with unlimited toppings for only $11. On Tuesday its Cantastic & Wine Day when all can beers are $3 and bottles of wine are half-off. Wednesday bring Build Your Own Burger with unlimited toppings all for $11. And, Trivia Thursday has drink specials. There are forty beers on tap – 40 you may want to explore a few that you haven’t tried like Coronado Orange Wheat, English Pale which is hearty and Boddingtons or Purple Haze, which has a fruity taste. Once you discover Cold Beers & Cheeseburgers, you’ll find yourself going back for the great food and fun atmosphere. The company strives to meet its goal to ensure COLD BEERS & each guest is having an enjoyable and CHEESEBURGERS memorable experience. Hours: Sun 1980 W. Brewery Tours Provides Craft Beer Experience PUBLIC AND PRIVATE TOURS TO LOCAL BREWERIES FOCUS ON SAMPLING, PAIRING AND CREATING A UNIQUE EXPERIENCE ARTICLE MEGHANN FINN SEPULVEDA PHOTOGRAPHY BRIDGETTE MARIE PHOTOGRAPHY

I

t took 50 years for John Alvarado to find his passion. The Chandler beer-lover-turned-entrepreneur launched Arizona Brewery Tours with his son Johnny, in January 2013. Together, the father and son team are doing what they love: tasting, pairing, sharing and educating others on the growing craft beer industry.

BOOK A TOUR

Tours can be booked online at AZBrew.com or by calling 480.382.4677. Gift certificates are also available.

PARTNERING WITH LOCAL BREWERIES

Alvarado’s desire to keep local breweries in business was a driving force behind the creation of Arizona Brewery Tours. “People may not know that a brewery exists right in their own backyard,” says Alvarado. “Arizona breweries are literally popping up all over, especially in the East Valley and downtown.” Tours allow craft beer lovers to interface with local brewers and owners by understanding the complexities of the beer making process. They also allow a novice to learn about craft beer. “We encourage people to expand their beer palettes by exposing them to new flavors and pairings,” Alvarado says. “We ask guests what they like and don’t like and we encourage them to try something different.” PUBLIC BREWERY TOURS

Public tours are geared towards experienced and novice craft beer drinkers. Public tours are $99 per person, and are held Wednesdays through Saturdays, typically from 11 a.m. to 4 p.m. Included are stops to three local Arizona breweries, 15 to 18 craft beer samplings, special brewery tours, a meal, and souvenir. Tours start with craft beer education including the beer making process, types of beer and history on Arizona breweries. Guest beer guides also make appearances. “We sometimes get local brewers or brewery owners on board to hang out with our guests, to talk about craft beer, share their knowledge and have a good time,” Alvarado says. “We tailor tours to every group.” Breweries are prepared in advance. Tables are reserved and beer and food is served within minutes of arrival. Everything is easy for the customer. Shuttle service to local beer festivals is also available and guests are usually picked up at The Hungry Monk in Chandler. PRIVATE BREWERY TOURS

Private tours can accommodate up to 50 people and vary in price depending on the number of guests and the experience chosen. “It’s a great way to celebrate birthdays, anniversaries, bachelor parties or corporate team building events,” Alvarado says. “We like to have fun but we’re not a party bus. We are truly focused on craft beer education.” While Arizona Brewery Tours visits and samples craft beer at breweries in the local Phoenix-metro area, private tour excursions can travel to breweries located in the state such as northern Arizona.

“We had an amazing tour to Flagstaff with AZ Girls’ Pint Out, a local group of women who enjoy drinking and learning about craft beer,” Alvarado says. “And recently took the same beer club on a tour of the new breweries in the West Valley, such as Freak’N Brew, Dubina, Saddle Mountain and Peoria Artisan. Preparations are underway for the third year tour with the Arizona Society of Homebrewers. UNIQUE FLAVORS

Alvarado uses his love of craft beer to expose brewery tour guests to new and unique flavors to broaden their experience. “We consider it a challenge when a non-beer drinker is on the tour,” he shares. “It’s fun to see what they taste that they do end up liking!” North Mountain Brewing brewed ancient Egyptian-inspired ale using dates, cinnamon, sesame and hints of coriander for a special event at the Science Center. The Perch in Chandler is always brewing up popular unique flavors like Perch Belgian Peach. “Other brewers experiment with local ingredients like honey, wheat and even harvesting yeast from the air near Flagstaff,” Alvarado says. “I’ve seen breweries add peanut butter, white chocolate and even Girl Scout cookies. There are so many different flavors and options now available.” ARIZONA: A BEER DESTINATION

Tours not only include locals, but vacationers and those looking to experience the craft beer scene in Arizona. East Valley’s own Arizona Wilderness brewing crew made international headlines for Arizona as the number one new brewery in the world. International visitors from England, China, Germany and Canada have experienced a ride with the Arizona Brewery tour crew. “Arizona is definitely becoming a beer destination,” Alvarado says. “People are traveling here to taste the award-winning craft beer.” Alvarado joined the Arizona Craft Brewers Guild to promote the craft beer business. The Guild recently led efforts to pass a bill in the Arizona legislature to allow the increase of barrel production and distribution for local breweries. This is a real win for business and for the Arizona economy. “Breweries are competing on a national level and bring in tourism, which ultimately boosts our economy,” Alvarado says. “We want to showcase Arizona as a craft beer leader and a craft beer destination.”

Terrific Teacher

Spotlight on Chandler High School Teacher Andrew Valuikas DEVOTING HIS LIFE TO STUDENTS WITH SPECIAL NEEDS ARTICLE ERICA FORST PHOTOGRAPHY BRIDGETTE MARIE PHOTOGRAPHY

A

ndrew Valuikas's journey started in the small town of Eden, Maryland. It soon took a turn west for Chandler when his father's job relocated Valuikas and his family out to the Valley of the Sun's budding suburban city. A couple years after the move, Valuikas attended Chandler High School where a passion for wrestling developed. The hours after school were dedicated to practicing this strategic combat sport under the coaching staff of Vidal Mejia and Curtis Owen. As he improved, Valuikas realized that the experiences during his time wrestling allowed him to take on challenges brought on by tough practices and determined opponents. FINDING HIS PASSION

After Valuikas graduated from Chandler High, he attended Mesa Community College focusing on mechanical engineering. He found the endless hours spent in front of a computer to be mundane and unstimulating. So, he changed his major to history with the goal of becoming a professor. However, he soon discovered that most people do not take the same interest in learning about the subject he found to be so intriguing. Again, Valuikas went back to the drawing board. He remembered a class he took at MCC where he observed a special education classroom. “The time I spent within the class was amazing," Valuikas says. "I instantly felt a connection with the atmosphere and the culture of the classroom.” 24

Terrific Teacher

(CONTINUED)

That was it. Valuikas entered the College of Education at Arizona State University and the rest is – well – Special Education. MEETING HIS MENTOR

After his graduation from ASU, the stars aligned once again. Valuikas found a vacant student teaching position that he was able to fill at Chandler High. There he met mentor, Jessica Peacock, who is now his co-worker. “I owe a lot of my success in special education to Jessica Peacock," Valuikas says. "She not only gave me a great start to my career in the classroom but also the amount of work she did with kids outside of school. Jessica really was an incredible role model for me to have and I have been lucky enough to have her tutelage over the last 5 years.” BECOMING A VOLUNTEER

During this time, Valuikas began volunteering for the Special Olympics. His goal was to make it possible for students to interact with the community as much as possible. As sports had played such an integral part in his life growing up, he wanted to share that joy with his students. “I also love coaching unified sports," Valuikas explains. "I feel that sports, like wrestling for me, are one of the greatest ways for people to persevere. Through unified sports my students have had the chance to feel equal on a playing field they otherwise could only sit in the stands and cheer on their favorite player. They along with their non-disabled peers now have to opportunity to play sports in front of their friends and it has made the community acceptance for our students tremendous.” Valuikas's support for the Special Olympics has progressed over the years and he currently coaches the Chandler High School freshman team beside his former coaches, Mejia and Owen. While continuing to teach and coach, Valuikas was able to earn his master's degree in education from Grand Canyon University in April of 2014. ENVISIONING THE FUTURE

Valuikas's goals are nothing short of inspiring. “My main goal is always to treat every one of my students like every other high school student I encounter, hold them to high expectations at all times and to make sure they smile every single day," he says. "I am not afraid to get a little goofy or embarrass myself to get a laugh out of my students. I always feel that if I am having fun then they will be too.” He says his greatest joy in his job is being able to see the growth of the students both academically and socially. "It is amazing to watch these kids shine when they are held to high expectations like everyone else their age,” he says. The Chandler community is fortunate to have such a dedicated teacher guiding its students. Our journeys do not always unfold the way we plan them to, but sometimes, like in Andrew Valuikas's case, they take us to exactly where we were meant to be. Andrew Valuikas enjoys spending his free time with his 1-year-old son and wife, Ashley. 26

Parting Thoughts

A Tribute To Dad WORDS MARK RUSSELL

M

y father, Lawrence Gibbilini, was born on the north side of Chicago in 1918. When the crash of '29 sent the country spiraling into the great depression, Dad, along with his six younger brothers and sisters, helped make ends meet by selling their mother's pizza door-to-door; some say the first pizza delivery ever. Despite the tough times, the pizza business took off. Dad was in charge of the distribution department but quickly tired of organizing his siblings and requested a transfer into production (the start of his cooking career). His mother, a great traditional cook, taught him the secrets of her pizza and many other family recipes. My dad, on the other hand, liked to experiment and actually started using fresh vegetables and whole wheat in his recipes (to the horror of his mother) before it was in vogue. When my dad was eighteen, his mother sold her pizza business and decided that Lawrence should go into the bricklaying business with his father. But Dad had a passion for cooking and refused to give it up completely. On weekends he would throw a large checkered tablecloth over the dining room table, drag up every chair in the apartment and invite all his friends, family and acquaintances over for dinner. He would serve them his variations of time-honored Gibbilini dishes as well as recipes he was developing. Most received outstanding

reviews and earned him the title of “Lawrence of Oregano.” Dad’s pasta and sandwiches were great but his pizza, stuffed and thin crust, were his crowning achievements. Over the years, it seemed we always had family and friends over, eating, drinking, talking and listening to old Frank Sinatra and big band records. My dad truly practiced his philosophy about life: the key to happiness is friends, good food and music. My dad died at the age of 72 while cutting the rug to Frank Sinatra with my mother. Years later, I cleaned out his garage and found close to a thousand assorted plates, glasses and silverware (none of which matched) that made me think he’d been collecting them for years in hopes of opening his own restaurant. I wish I had known. All in all, I’d have to say that was probably Dad’s only regret in life. He was well-loved and thought of by his family and friends and lived life with a zest that I can only envy. We miss him greatly. Founded by Mark Russell in 1993, today Oregano’s Pizza Bistro has 15 locations across the state of Arizona. Specializing in original Chicago-style thin crust, stuffed and pan pizzas, Oregano’s continues to be inspired by recipes passed down from the Gibbilini family. Look for a new Queen Creek location opening later this year. Learn more at Oreganos.com.
