AUTHOR HAL BORLAND. You understand this sentiment if you’ve already found yourself putting the top down, throwing open windows while you still can or perhaps sinking your toes into the grass. May brings with it an abundance of joy—bright blue skies, a rainbow of flowers and, of course, the celebration of mothers on May 12. In this issue, we not only celebrate mothers but all the women in our community who make such a difference in our homes, schools, businesses, churches and nonprofit organizations. We are blessed. This month, we catch up with Flower Mound Chamber of Commerce President Lori Walker and her team of talented ladies. These gals can run circles around anybody and are instrumental in supporting our local businesses and community in fresh, innovative ways. We also have a front-row seat for Creative Element’s owner Lucie Hasek’s life-changing cycling trip through Laos, an amazing journey that started with a simple conversation.

Liberty Christian School Students Serve in Panama City Nearly 150 Liberty Christian students and 26 leaders ventured to Panama City over spring break for a life-changing week of service and transformation. Beyond manual labor projects, the group performed a drama, The Journey, to all who would listen. Hearts and minds were touched, and on the final day, many students were baptized in the Pacific Ocean as a celebration.

McAuliffe Elementary Chili Cook-Off McAuliffe Elementary held its 14th annual Chili Cook-Off Feb. 28. The theme was Camp Rock this year. FOR CARA PRICE, CREATOR OF THE NOURISHED BODY AND SOUL BLOG, AND HER MOTHER, LINDA PHILLIPS, SPECIAL OCCASIONS ARE MEANT TO BE CELEBRATED WITH CHOCOLATE PIE. “For as long as I can remember, this chocolate pie was served at every holiday,” Cara says. “It started with my grandmother and then my mom took it on. “I have fond childhood memories of waiting patiently to lick the pan after the pie filling was done. I remember thinking that only my mom and grandmother could make this pie and that there surely was no other chocolate pie in the world that was as good.” Luckily, Cara proved herself wrong. She recently re-invented her family recipe to suit her dietary needs. “The new version contains ingredients that are non-inflammatory and are great for someone struggling with autoimmune disease or food allergies,” she says. “The great thing about homemade goodies is that you know they are made with whole-food ingredients. So even though the original recipe isn’t one I can still enjoy, the whole ingredients it contains won’t wreck someone’s health like processed ingredients. But for those looking for healthier options, there’s the new way of making a delicious favorite. Even my mom loved it!”

Cara's Choco l at e Pie INGREDIENTS For the Pie Filling: + 2 cans full-fat coconut milk + 1/2 cup maple sugar + 5 tablespoons cocoa powder + 3 tablespoons arrowroot flour* + 1 tablespoon vanilla extract + 1/4 teaspoon salt + 6 large Medjool dates, pitted For the crust: + 1 cup almond flour + 1 cup arrowroot flour* + 1/2 cup palm shortening + 1 teaspoon maple sugar + 1/4 teaspoon salt + 1 egg *arrowroot flour & arrowroot powder are essentially the same thing DIRECTIONS 01 Preheat oven to 350 F. 02 To make the pie crust, place almond flour, arrowroot flour, salt and sugar in a food processor. 03 Pulse to combine. Add palm shortening and process until crumbly. 04 Add egg and process again until a dough ball forms. 05 Place the dough in a 9-inch pie plate. Press the dough out evenly and press up the sides of the pie plate. Poke holes in the dough with a fork. Bake for 12-15 minutes until golden brown. 06 While the crust is baking, pour both cans coconut milk in a blender and blend for 5-10 seconds on low, just to combine the fat and water. 07 Add 3/4 cup coconut milk to a medium-sized bowl. Whisk 3 tablespoons arrowroot flour into coconut milk until smooth. Set aside. 08 Add the rest of the filling ingredients to the blender and process on high, about 45-60 seconds, until dates are completely pureed. 09 Pour chocolate mixture into a medium saucepan and heat over medium-low heat for several minutes until thoroughly warmed. Do not boil. 10 Once the chocolate base is warm, quickly whisk coconut milk/ arrowroot mixture into chocolate mixture. Continue cooking over medium-low heat, whisking continuously for 3-7 minutes, until mixture thickens to the consistency of pudding. 11 Pour pie filling into crust. Immediately lay a piece of plastic wrap or parchment paper over the pie filling (don’t seal the edges). Refrigerate for 4 hours or overnight before serving. 12 Serve with garnish of coconut whipped cream and chocolate shavings. May 2019 | Cross Timbers Lifestyle

Organization Helps Lift the Burdens of Cancer Patients Across North America

WHEN RONNI CADE OF LEWISVILLE WAS BATTLING BREAST CANCER, SHE NEVER KNEW SHE NEEDED HELP DOING THE THINGS SHE ALWAYS HAD DONE FOR HER FAMILY. But when her daughter scheduled Cleaning for a Reason to deep clean her home on a regular basis, Ronni says a burden was lifted. “It was a godsend,” Ronni says. Cleaning for a Reason is a nonprofit organization that offers free house cleaning to individuals undergoing treatment for cancer. “It’s a gift no one foresees they will need. You still think you are going to be able to do it all,” Ronni says. “There was no better feeling than knowing you could relax somewhat knowing your family’s house was being taken care of.” Ronni also says because her immune system was compromised at the time, having a clean home was extremely important.

In addition, Debbie says she hopes to inspire more cleaning companies and community volunteers to become involved. “We’ve already held several volunteer days where we serve as many as 20 patients in a day,” she says. “Volunteers from Texas Health Presbyterian Hospital join my team at Buckets & Bows Maid Service for our local Volunteer Day every fall.” In October, Debbie received ISSA’s highest honor, the Jack D. Ramaley Industry Distinguished Service Award for her inspiring work. But it is the response she receives regularly from clients that is her biggest reward. “We get emails and letters all the time from women who say they had no idea the impact this would have on them. They say, for the first time since being diagnosed, they feel like they have a little more control in their life,” Debbie says. “One woman said when she received a diagnosis of Stage 4 breast cancer, she had given up. But when she walked into her clean house, it gave her the feeling for the first time that she could beat it,” Debbie says. “It’s the emotional lift they need in this dark time.”
