I think it's safe to say that when most of us think of Del Mar we mostly think about sunny days and cool, comfortable evenings. Our minds conjure images of perfect blue skies, serene beaches and sunshine glittering across the seemingly endless Pacific Ocean. We think of art. We think of people peacefully walking alongside their friends, significant others, and (perhaps most importantly), their dogs up and down Camino Del Mar on an impeccable Del Mar morning. We think of the Del Mar Racetrack and all of the innumerable events the Del Mar Fairgrounds has to offer us.

is crucial. The amount of traffic a kitchen gets also makes it especially prone to collecting clutter. With that in mind, here are a few tips

Besides expiration dates, be sure to evaluate whether or not you still cook with various spices, or eat various types of food. While people’s tastes, eating and cooking habits change, they often don’t take the time to ensure their pantry reflects that shift. 12

four Eliminate the daily struggle of wrestling with things like pot lids and mis-matched Tupperware. The former you can remedy by storing the lids all together in one spot, rather than enmeshed with the pots and pans you’re (probably) nesting within each other. Keep lids in their own drawer, or use a lid rack that suits the space you have available. Beat the Tupperware tops-and-bottoms-blues by streamlining to one cohesive set. I prefer glasslock containers which keep your food fresh far longer, and are much easier to keep neat in your cupboards.
five There are so many helpful organizing products that can make a massive impact in the kitchen. In the pantry, a uniform set of canisters can keep dry goods looking neat and staying fresh. Baskets or bins can also be helpful in the pantry to corral various categories of food, like snacks, baking supplies, breakfast essentials and so on. Deep cupboards can be made hugely more effective with the addition of pull-out drawers (they’re easy to install, I promise!). Corner cabinets can be made mercifully more accessible by way of a lazy susan.

Culture Brewing Co. has been an exemplar of what is best from the local brewing scene in San Diego. Their beach locations are perfect places to kick back with a brew, enjoy the ocean breeze, watch the world go by or even occasionally get a glimpse of how the beer is made. The company is the creation of John Niedernhofer (Owner), Steve Ragan (Owner/Brew Master) and Dennis Williams (Owner). With several decades of brewing experience between the three, Culture Brewing Co. came about as the trio wanted to take their ever increasing passion for home brewing to the next level and decided to open their own brewery. They’ve been a fixture in the San Diego brewing scene ever since. Culture Brewing Co has a rotating selection of beers, and to find out what’s on tap at any given moment you’ll have to visit one of the tasting rooms in person or view the oft updated picture of the ‘currently serving’ chalkboard via their website. Since their opening in 2013, Culture has produced over 50 varieties of well-reviewed beer and barley wine. Their passion for adventurous

tastes has led them to brew everything from Peppermint Stouts, to Coffee Ipas to ‘Candy Cane’ blonde while their dedication to quality as reflected in the basics has led them to try and create exemplary batches of classic flavors ranging from Hefenweizen to Belgian Saison to American Brown. While beer has been Culture’s primary interest, the company has always aimed to give back to the community. To that end, they run both tasting rooms as ‘pop-up’ galleries which feature a different local artist every month. In addition, they have assisted over 60 local and charitable organizations ranging from the Surfrider Foundation to Rady’s Children’s hospital to the San Diego Art Institute. urbank, 1951. Two Brothers, Eugene and Bernie, open their first grocery store. A store that would come to be known as Gelson's. Eugene and Bernie took the formula from their parents' Iowa grocery store and improved upon it beyond anyone's wildest dreams. They implemented a modern design. The front of their store wasn't concrete, but the front of their store was made of reflective glass, so anyone passing by could see the wondrous interior. Detailed displays of items and immense stocks of seemingly any item anyone may need.

Looking through the store's glass front people could see long corridors, or "aisles" that would become a signature of all Gelson's super markets. People who walked through that glass front would encounter a rare-forthe-time modern "self-service" meat department, which featured metal and glass cases running the full length of entire walls. People could enter and easily choose the freshest produce California had to offer. It goes without saying that over 66 years later, Eugene and Bernie have been extraordinarily successful. The first Gelson's was 1,200 square-feet, then 5,000 square-feet, then 8,000 square-feet; eventually there was a 25,000 square-foot store. But nowadays, size doesn't matter. With Gelson's supermarkets, it's all about the quality of the store. In all Gelson's stores, even today, you can sense Eugene and Bernie's "can-do" spirit. You feel Eugene and Bernie's respect and love for each customer that walks through those glass doors. Today, in 2016, Gelson's operates 18 full-service specialty grocery stores in Southern California. hat is a superfood? According to Lisa Odenweller, the founder and visionary behind Beaming, a series of superfood cafes in

Her favorite superfood, turmeric, is a “gorgeous, ridiculously potent orange root [that] is powerfully anti-inflammatory and chock full of antioxidants, supporting healthy organs across the board, but the brain, heart and liver in particular.” Maca, a medicinal root from Peru, is great for “boosting energy naturally, smashing stress, amping up libido, and balancing hormones.” Algae, as it turns out, is much, much more than just fish food; various types of algae such as spirulina and chlorella have high amounts of chlorophyll. Algae “attracts and flushes out heavy metals from the body, making it a powerful tool for detoxification. It is also packed with easily digestible protein!” So how do you actually incorporate these exotic new foods into your daily diet? Odenweller suggests keeping it simple by putting them in your morning smoothie. Toss your favorite fruits and vegetables (especially spinach and other leafy greens) into the blender, along with a base of hemp milk, almond milk or coconut water, then add your superfoods! In addition to Odenweller’s favorites listed above, you can also try hemp seeds for an extra protein punch, or cacao powder, which takes your smoothie to the next level with its chocolate flavor and powerful antioxidant content. As Julia Child said, "I enjoy cooking with wine, sometimes I even put it in the food I'm cooking." Wine should be added to food early enough in the cooking process that it has time to simmer. As wine cooks down, the alcohol evaporates away and the flavors begin to concentrate. Use a light hand at first until you get familiar with cooking with wine. Typically, white wines impart their delicate flavor to seafood, and dishes like chicken piccata and vegetable risotto. Red wine adds depth to bolder dishes like beef bourguignon, mushroom steak sauce, and of course, great-grandma's famous pasta sauce. Using wine in a reduction or to deglaze a pan creates an intense and complex sauce. It easily picks up those coveted brown bits that elevate the flavor of any dish. But be careful— light and overly fruity wines can ruin a sauce. The fruitiness is lost during the cooking process and will leave the sauce too acidic, ensuring those lovely brown bits have gone to waste. Red or White? Let's be clear about what is considered a good cooking wine. The so-called "Cooking Wine" found in your local grocery store next to the fancy vinegars and Worcestershire sauce is a poor excuse for a cooking ingredient. They are low in alcohol content, highly acidic, and contain a massive amount of salt. Instead, choose a wine you would pair with the meal. Use one that is fruity, medium or full-bodied, and with little or no oak flavor. Wine aged in oak barrels tends to turn bitter and harsh when cooked in food. For red wines, Pinot Noir and blends such as Côtes du Rhône will produce consistent results. Again, avoid wines aged in oak such as the robust Cabernet Sauvignon. White wines should also be dry and full-bodied. Try a Sauvignon Blanc, unoaked Chardonnay, or even a French Vermouth.

Does an expensive wine produce a better sauce than a wine
picked from the bargain bin? Well, maybe. America's Test Kitchen tested sauces made from similar wines in the $5, $10, $20 and $30 price points. They discovered that the $5 wines cooked down to sweet, syrupy sauces, while the $10, $20 and $30 bottles were smoother, making sauces with multiple layers of flavor. Although tasters favored wines in the two more expensive price ranges, none thought the difference justified spending an extra $10 or $20. They found that limiting the price to $10 left cooks with plenty of good shopping options.

Cooking Tips: • Add a light, dry white wine to melted butter and baste grilled, broiled, or baked fish. • Mix wine with different herbs and olive oil to make a delicious salad dressing. • Stir in a couple tablespoons of red wine into brown gravy. Slowly simmer to create a luscious sauce for beef. • Freeze leftover drinking wine in ice cube trays for future cooking use. • Use a wine-based marinade to help keep meat, poultry or seafood moist while it cooks.
RED WINE REDUCTION FOR SAUCES
Makes about 2 tablespoons Two tablespoons of this potent wine reduction can be substituted in a recipe, such as a pan sauce, tomato sauce, or roast beef jus, that calls for one-half to three-quarters cup of wine. Add this reduction near the end of the cooking time—the way you might finish a sauce by swirling in some butter. The reduction can be kept for up to two weeks in an airtight container in the refrigerator. 1 small carrot, chopped fine (about 2 tablespoons) 1 medium shallot, minced (about 2 tablespoons) 2 button mushrooms, chopped fine (about 3 tablespoons) 1 small bay leaf 3 sprigs fresh parsley 1 cup fruity, smooth, medium-bodied red wine blend Heat all ingredients in 12-inch nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1 cup, 15 to 20 minutes. Pour through strainer and return liquid (about 1/2 cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons, 15 to 20 minutes. he new year was kicked off in succulent style with San Diego Restaurant week, held over eight days in January! 12 years of culinary excellence was celebrated as San Diego Restaurant Week offered delicious discounted dining at over 180 participating restaurants across San Diego County. For eight days, foodies were able to dine like kings and queens at an extraordinary variety of participating restaurants. There were prix-fixe dinner menus for as little as $20 per person! It is estimated that over 150,000 locals enjoyed magnificent mastication as they celebrated San Diego County’s booming culinary scene! Locals were not left out of the fun, as many of our very own restaurants participated in
San Diego Restaurant week. Searsucker Del Mar was offering fine American cuisine with lunch for as little as $15, and dinner for as low as $30! Chef Brian Malarkey’s Searsucker Del Mar location happily offered discount dining for patrons while they enjoyed Searsucker Del Mar’s “New American Cuisine.” The Clubhouse Grill at Fairmont Grand Del Mar offered lunch for as little as $20; there’s no doubt Restaurant Week participants took advantage of Chef Joshua Dorfner’s patented gourmet chicken and waffles! For well over a decade Del Mar Rendezvous has been serving Del Mar. Del
Mar Rendezvous offered discounted meals to regular and new patrons alike. Patrons of Del Mar Rendezvous were able to enjoy a deep menu of fine Asian dishes, a stellar wine selection, Japanese sakes and local and high-end draft beers; all while gazing out at the Pacific Ocean. Pacifica Del Mar was also in on the action. The awa rd-w inning Pacifica Del Mar offered a delectable selection of fresh seafood, steak, pasta and much more! But you can’t talk about fine dining without, at some point, mentioning great Italian food. Il Fornaio offers some of the finest and most unique Italian cuisine around. From wood-fired rotisserie and grill meats, poultry and game, to pizzas from an oak wood burning oven, Il Fornaio satiated any and all of prospective patron’s needs! We were all overjoyed to have San Diego Restaurant Week come, but we were certainly sad to see it go. All of our palettes and pocketbooks will have to be patient and wait for San Diego Restaurant Week to arrive again next year!

We talked about this a couple of years ago and felt it would be fine to wait for the State's mandate, but look what has happened there. Plastic bag businesses put a lot of money into blocking the legislation, to ban the plastic bag. I think eventually, the ban will be across California but now Del Mar needs to step up and put our own ban in place. We have residents asking us to do it soon. People in town know me. I have served on many non-profits working on projects that have required me to roll up my sleeves and get the job done. Folks know to trust me to work hard for what I believe in. Additionally I have a long history in Del Mar, over 40 years now. What that means is I can tell you why things are the way they are, what decisions were made then to mold Del Mar. However, knowing the history doesn't mean that I worship the past. All that I know from our history is what we valued then. The present times may require a different track. The goal is to keep Del Mar a town that we want to live in and where businesses can thrive. Finally the idea of service has always been important to me. Not for the recognition but because I value the friendships, standing alongside others who are willing to roll up their sleeves as well and to value what I value. It makes me feel alive and purposeful. AS DEL MAR'S NEWLY ELECTED MAYOR, DO YOU HAVE ANYTHING YOU'D LIKE TO COMMUNICATE TO YOUR RESIDENTS?
2016 is an election year. Del Mar has not had competition for council seats for 3 cycles so it is likely that this year we will have folks who are eager to run for one of the 3 council seats. What I would like to tell my Del Mar friends is that serving on Council is not about one issue. Council members must look at the big picture and be willing to spend many hours reading and preparing for meetings that cover a wide variety of issues. The best councils are those that respect one another and work collaboratively to move Del Mar into the future. When you vote this year you need to ask, "Will this person be able to handle the workload?" "Will he/ she work respectfully with the others on the Council?" These are the councils that can inspire both our community and our staff to make things better for Del Mar. DelMar.Ca.Us

at food. Not too much. Mostly plants.” –Michael Pollan It’s a simple statement but putting it into action can be challenging. The plantbased diet is getting more attention these days as films like “Forks Over Knives” and “Food Inc” bring the diet, or I prefer to say, “lifestyle” to mainstream audiences. Why is plant-based eating taking root in people’s lives? Films and media coverage of well-known actors and even a former President (Bill Clinton) who are going completely vegan or eating a mostly plant-based diet may be influencing Americans to finally be more aware of the need to change their Standard American Diet or SAD food they’re eating. The main benefits of going plant-based are the ability to lower your blood pressure, averting or slowing cancer, weight loss, anti-aging, and having more energy. But some argue you can’t be strong on a plant-based diet. Do you remember Popeye and the green fuel that made his muscles pop? The creators of Popeye may have chosen spinach as the super food because of a mistake made by German chemist, Erich von Wolf. In the 1800s, he discovered that spinach is a good source of iron— 3-5 milligrams per 100-gram serving— but inadvertently recorded it as 35 milligrams which would be like eating a paperclip.

This error wasn’t uncovered until 1937, seventy years later, according to Samuel Arbesman, who noted the error and the connection between spinach and Popeye in his book The Half-Life of Facts. However, English criminologist Mike Sutton argues the “decimal point theory”, saying spinach was actually chosen by Popeye creators because of its Vitamin A content. Either way, U.S. consumption of spinach then increased by a third. Fast-forward to the 21st century, and Popeye types are still promoting green diets. One of the strongest men alive is Patrick Baboumian who is known for his strength and plant-based diet. He became a vegetarian in 2005. In 2009 he went vegan. In 2013, he lifted more than 1,200 pounds on his shoulders and carried it for 10 meters. That’s like giving a large horse a piggyback ride. If you’re considering a plant-based diet, start with the addition vs. subtraction method. O
ne day, when you least expect it, you might walk into a fine dining establishment and fall in love. It happened to me. There I was, expecting a nice meal, good company and nothing more. The usual suspects were present: Favorite people and all the trappings of a place where you don’t have to struggle with greasy fingers and a ketchup packet. After a dainty glass of wine and some conversation, I found before me a plate of artfully arranged tenderloin medallions, sprigs of pencil-thin asparagus and what looked like ordinary scalloped potatoes. I took one nonchalant taste of the latter dish, and KAPOW, there was no turning back. People. These were no ordinary scalloped potatoes. Let me say here and now, I can’t believe I’m devoting an entire column to a potato experience. I don’t consider myself a foodie, especially when family life gets busy. Sometimes, as the dinner hour approaches, my expletive rolodex spins out of control. I say to myself, “Blankety blank. Why does everybody in this house get hungry every single evening? I just fed them yesterday.” Most of the time, I’m all about short cuts and freezer diving: “Hey guys, what’ll it be? Stouffer’s tartare, or Mrs. Paul’s au poivre?” But then one day, out of nowhere, I find myself swooning over spuds. Unbelievable. Despite it all, even a Zagat rube like me can tell the difference between extruded taters mixed with cream of chicken soup and recently unearthed Yukon Gold baked to a subtle al dente perfection in…what? What exactly were the magical ingredients? I had to know. I just had to know the chef’s secret. All conversations swirling around me turned to background noise. I took more bites. The dish was heavenly. I knew if I could confirm the cheeses involved, my cooking repertoire would take a new direction. Was that Swiss I tasted? Probably. But I knew there was more, much more than one cheese. It was time to break a rule and go full-out CSI. Love can do that to a person. My husband has always had a thing for potatoes, and suddenly, apparently, I did too. I had to make this dish at home. They say a way to a man’s heart is through his stomach. In this case, cholesterol would clearly be en route to my guy’s ticker as well, but still. I flagged down the waiter and whispered, “Would you mind asking the chef what cheeses he used in the scalloped potatoes?” There might have been a flinch in the waiter’s face, but I didn’t care. My oven back home was already pre-heating in my mind. I was going to make this dish. The waiter kindly, discretely reported back to me, “Swiss and parmesan.” Then, he took off like a thief in the night. I suppose at this point you’d like a special scalloped potato recipe. You are, after all, holding a lifestyle magazine in your hands and patiently tolerating this odd tale of passion. Here it is: Simply search online for “scalloped potato/Swiss/parmesan.” That’s it. If you can momentarily block out your cardiologist’s face, you’ll find some nice choices. I picked one that also included heavy cream and garlic. Worked like a charm. Funny. I’ve always known the French call potatoes “pommes de terre,” which translates to “apples of the earth.” But now I understand why.

Real Talk San Diego I’ve written a book, Customize Wall Street, that among other things seeks to encourage Wall Street institutions, and the financial media, to be more friendly to every day folks on Main Street. By “folks on Main Street,” I mean the general investing public seeking to use Wall Street’s investment offerings, such as stocks, bonds, mutual funds, and annuities, as wonderful opportunities to save and invest for the future. By “more friendly”, I mean that so much of the news and media hype we receive from Wall Street leaves us stressed, worried, and unable to sleep at night. Can the news and other messages be presented in a more objective and less threatening way? Also in my book, I describe numerous powerful investment tools offered by every Wall Street institution, which in my opinion empowers every saver and investor to take control of one’s financial future. We all have the opportunity to achieve our financial goals. So, where is the disconnect? Why are so many of us stressed over the ups and downs of the stock market, interest rates, and world events? Wall Street offers us wonderful investment tools, while at the same time, its communications often worry us, leaving us discouraged and distressed. I believe there is a solution; and it needs to be addressed from two different perspectives. Yes, Wall Street investment firms, and the reporting media needs to reassess from their perspective, the methodology of their marketing and reporting to the investing public. They need to be more objective, supportive, and education oriented.
At the same time, I believe the customers and clients, those of us on Main Street, also need to contribute to the solution. From our perspective, I believe we would better serve ourselves if we seek more education, discipline, and self-control in our collective attitude toward saving and investing. Let’s put it this way, I feel that way too many of us clients and customers treat the investment process, especially stock market investing, as if it were Las Vegas. I think we need to treat it more like the family business. I address this issue early in my book by asking the question: “Are you an Investor or a Speculator?” As more of us try to think and act as true investors, rather than guessing on “red or black”, the less stress we will have when the stock market acts crazy. The solution might well lie in the purpose, planning, and the implementation of one’s saving and investing program. If a person owns a business or works for an employer, there is a purpose involved related to that job or business. This should be the same for stock or bond investing. If one owns a business, there is a plan on how to manage it and grow it. Likewise, we can plan how we address our saving and investing for the future. Finally, whether one owns a business or is saving and investing for the future, one needs to implement and carry out the plan to reach the desired goals. No solution is perfect or guaranteed.
