Two new state-of-the-art facilities coming late spring 2016 to Highlands Ranch. Highlands Ranch provides a location centric to the community served by Schomp Honda and MINI. ay has always been my favorite month. This is because of a combination of things: it’s one of the most important people in my life’s birthday (my grandma), the weather is among the best we get all year and it tempts us with all the incredible possibilities of summer. May is pretty much the gateway to everything fun and good.
With that spirit in mind, we created this May issue around the happiest of topics—weddings, travel, food and summer vacations. We have a gorgeous styled wedding shoot at the Highlands Ranch Mansion celebrating all things love. Then there’s a fun bucket list-style suggestion of how to best spend your summer break right here in Colorado. If a road trip is on your mind, we talked with Rocky Mountain Harley-Davidson about the best routes to experience on two wheels. And then, of course, there’s my favorite topic: food. We checked out Indulge Bistro & Wine Bar for patio-worthy eats and drinks and put together a looksgood-enough-to-eat (literally) candy display for a dash of summer sweetness. But it’s not just in May that we celebrate the best things in life and community. We want to highlight all the special people, businesses and goings-on that Highlands Ranch and the surrounding area have to offer year-round. If you have story ideas, we’d love to hear from you. edding Event Designer Joyce Goeppinger of La Vie le Gage doesn’t shy away from drama, and she didn’t disappoint with this
French romance-inspired bridal shoot at the Highlands Ranch Mansion. “I wanted to go large scale,” Goeppinger says. “French style is just stunning, whether simple or grandiose. So why not just go big? We’re dreaming, right?” Using the Mansion’s elegant rooms as a backdrop, she and the team created an indulgent feast for the senses in vivid shades of pinks, reds and golds. “Blending the color palette into floral harmony was my goal,” she says. Mission accomplished.

Impressive wine walls tempt you with the large variety of wine offered, and the ceilings are adorned with colorful murals. Indulge also has a beautiful patio with comfy couches and a fire pit. The menu is thoughtful and enticing, inspired by the owners’ international travels and love of food and wine. The diverse menu accommodates many dietary choices and restrictions and has something to please everyone, from carnivores to vegetarians to gluten-free friends. Indulge is not your typical wine bar that just offers tapas; you will find a wide variety of starters, soups, salads, flatbread pizzas, entrees, burgers and desserts. They offer many classic dishes, such as steak with garlic fries and pan seared salmon and some unique dishes as well. Some of the most popular dishes are the Tony Soprano Flatbread (loaded with mushrooms and sausage), the Ahi Tuna Guacamole and the Indulge Hummus. The Ahi Tuna Guacamole has a very pretty and impressive presentation; tuna tartare tops the house-made guacamole, and it’s finished with a drizzle of ponzu sauce and served with wonton chips. The Indulge Hummus offers a tangy twist on the classic Mediterranean spread. The house-made hummus is blended with feta and roasted red peppers, topped with Kalamata olives and served warm with grilled pita bread. Indulge also has an impressive charcuterie board, brimming with a mouthwatering selection of cheeses, cured meats and dried fruits. Don’t worry if you don’t know what wine pairs best with your tasty treats, the staff is very knowledgeable and will help you pick the perfect pairing. Indulge has a vast assortment of wines, available by the glass or bottle. They also offer several wine flights so you can sample a few before settling on a glass or bottle. If not everyone in your group is a wine fan, there are plenty of cocktails and bottled beers to choose from. Indulge has an excellent daily happy hour from 3–6 p.m. (starting at 4 on Sundays), offering many of the starters at discounted prices and reasonably-priced glasses of wine, cocktails and beers.
