Personally, I am challenging myself to wake up every morning and acknowledge people and experiences I should appreciate. We’ve all heard studies that say it takes 21 days to form a habit, and many more who say it can take anywhere from 18 to 254 days, and everything in between. I’m not too concerned about how long it will take but more focused on the conscious effort to make it happen, to be extra appreciative, communicating it and challenging myself to stick to the commitment. Those featured in the November issue are thankful, have taken life's experiences in stride and have turned them into opportunities. by those I treasure most in the world and just enjoy time with them. Every year is spent at my parent's house. Arriving the night before allows us to help them prepare for the day ahead—cleaning, baking and enjoying time together has become a tradition. Thanksgiving morning, waking up to the aroma of a turkey roasting in the oven is engrained in my memory. My mom and I turn on the Macy's Thanksgiving Day Parade and get to work. While she is bustling around the kitchen, I'm in charge of preparing the lefse. One of our favorite dishes of the day is my grandma's stuffing because her recipe has been passed down for generations. I've had the opportunity to make this delicious dish with her many times. Although she is still in charge of bringing it to our family holiday gatherings, someday I plan on taking over this special task. This homemade stuffing puts the just-add-

water-boxed-stuffing to shame and is a simple recipe that will wow your holiday guests. It's rich, buttery and perfectly seasoned with homemade breadcrumbs. Just remember to start this a few days early so that your bread has time to dry out properly. Add a new tradition to your Thanksgiving and give this homemade stuffing recipe a try! You might just love it enough to pass it down to your own family. 14

INGREDIENTS + 13-15 cups dry bread cubes* (We like to use a heavier bread so it soaks up more juice) + 1 cup chopped celery + 1 cup diced onion + 1 1/2 cups butter + 2 1/4 teaspoons salt + 1 teaspoon ground black pepper + 1 1/2 tablespoons poultry seasoning + 1 1/2 cups chicken stock + 2 large eggs *To make your own breadcrumbs: Two days before preparing the stuffing, cut bread into 1-inch cubes, then allow them to dry in a big bowl for about 48 hours. Stir the bread cubes once or twice a day so they dry out evenly. They should be very dry to soak up the liquid in the recipe.

DIRECTIONS 1. In a frying pan, saute the onion and celery in the butter for 10-12 minutes, or until the onion and celery are tender. 2. Place the bread cubes in a large bowl. Pour the butter, onion and celery mixture over the breadcrumbs and mix. Add the remaining ingredients and mix well. 3. Spray a 2-quart casserole dish with cooking spray. Put the stuffing in the prepared pan. Bake at 350 F for 30-35 minutes or until golden brown. Garnish with a sprig of rosemary if desired.

FINDING THE PERFECT HOME FOR A SENIOR IS NEVER AN EASY TASK. Leaving behind a home with many memories and moving to a simpler lifestyle with built-in care can be a very emotional move for not only the individual but their family as well. Mark Globus, a native Minnesotan, encountered this difficult path as he looked for a place to transition his mother of 85 from her single-family house to a new home for the next stage in her life. He was looking for the right combination of an upscale luxury building with great amenities and programs but was unable to find the right fit for his mother. Every place they toured wasn’t quite checking all of the boxes they were hoping for, and they didn’t feel like home. Mark decided it was time to create the perfect space he envisioned for not only his mother but other families in the same situation. Partnering with SilverCrest Properties, this ten-year idea grew into a reality, and Global Pointe Senior Living became a very personal project for Mark. “Seniors are so important to the community," Mark says. "They’re the collective memory of the community, city and society. One of our goals at Global Pointe is to really listen to the needs of our residents and offer them a great lifestyle.” Having grown up in the area, Mark knew that the large vacant lot situated right on the northwest corner of Highway 100 and I-394, just four minutes from downtown Minneapolis, would be the perfect area for a new luxury senior living building. "The key to visiting someone is having them live in a close, central location," Mark says. "The closeness and proximity factor is so important to be able to make visits happen on a regular basis.” The idea behind this unique care facility was to keep it small and have a boutique feeling along with a wide array of amenities. Jen and Kelsey, co-owners of New Gild Jewelers, definitely understand what goes into this process and how important quality, trust and education are when helping someone make a jewelry decision. Jen recalls seeing a couple being “wildly overcharged for their diamond” and was soon after hit by an idea when she received her community education catalog in the mail. She designed a short evening class called "How to Buy a Diamond" and hopes to teach consumers what they should know on the jewelry buying journey whether they shop at New Gild or not. This philosophy of taking care of their customers doesn’t just stop with Jen and Kelsey but resonates throughout their entire team who appreciates both the materials and those shopping for them.
