Lifestyle Letter
Hello Johns Creek
L
ast month, we celebrated my beautiful niece’s engagement in Asheville with family and her incoming in-laws. My husband and his brother (the father of the bride) were shushed a few times by other members of the family who could see the trajectory of the night. They were two wound up New Jersey bulls in a china shop. Luckily my niece and her smart (and much quieter) fiance’ had recently been introduced to The Five Love Languages, author Gary Chapman’s manual for “love that lasts.” The Your Lifestyle Pubs team, Karyn Slovin, Sue young bride-to-be explained to her parents and Collins, Jim Newman and Jenny Kepano aunt and uncle (both couples celebrated 29 years of marriage last month) the importance of understanding how your mate expresses love. While the bulls rolled their eyes, the wives nodded, recognizing that words of affirmation, physical touch and quality time were not necessarily the strongest languages of our mates. They are, however, fluent in gift giving and acts of service. My husband and I have three kids (17, 20, 25) and just last month, he drove 14-plus hours from a meeting in Milwaukee to pick up our daughter and her three college mates when their car broke down outside Indianapolis. He didn’t think twice before organizing a hotel room for them after the tow truck dumped them off. He never forgets birthdays and anniversaries, personally picking out the flowers at our favorite florist in Candler Park. My mom and dad spoke entirely different languages, which probably contributed to them divorcing after 36 years of marriage. Thankfully, they both found amazing spouses with whom they communicated with much more efficiently, successfully and warmly. They are both gone now, and I miss them on Father’s Day, Mother’s Day, and every day. This month, I will celebrate my children’s father’s love for them and hopefully he’ll understand what I’m saying. I’m starting with beef and red wine. Happy Father’s Day to all you dads. Enjoy this issue, which is man-centric for all the right reasons.

LB: LyfeWell leverages science and technology by bringing healing to those who are suffering from a wide variety of health conditions through the application of an alternative medicine wellness approach, capable of providing them a pain-free, better quality of life. We are proud to announce the opening of a one-of-a-kind wellness center based in Johns Creek. JCL: Welcome to Johns Creek. What services do you offer? We provide Enhanced Hyperbaric Oxygen Therapy and Pulsed Electromagnetic Field Therapy, (E-HBOT). The benefits of E-HBOT have been scientifically proven to improve many health-related conditions, such as chronic illnesses; sports injuries; mental health issues; stress and depression; as well as, overall improvement in the quality of life due to aging. In effect, nearly any medical condition that is circulatory in nature can benefit. JCL: What can people expect? LB: Compassionate care and educating our patients in order for them to set reasonable expectations are central to our mission. Assisting people dealing with pain, or improving a person’s quality of life through the use of our therapy is a rewarding experience that can’t be put into words. JCL: What led you to opening this unique wellness center? LB: For nearly 40 years, I’ve been thinking outside the box. I’ve launched several new business concepts, many of which were considered “disruptive” due to the risks associated with plowing new ground. As an entrepreneur, I have the uncanny ability to envision an idea, lay out a business plan on a 5” X 5” napkin during lunch then share it with others who would end up catching the vision, too. Breathing life into an idea and seeing it taking shape and becoming productive has been quite fulfilling. JCL:Sounds like the American Dream. LB: Having the skills to launch new businesses that contribute to the nation’s economy and putting thousands of people to work has allowed me a front row seat to
realize first hand how American capitalism works from ground level, and has led me to the realization that anyone can share in the great American experiment if they use the gifts we’ve been blessed with. By opening LyfeWell, I think we are answering a call for

EXECUTIVE CHEF RYAN DELESANDRO
CHOPS LOBSTER BAR
Chef Delesandro’s crab cake instantly transported me to Maryland. I heard about this work of culinary art from my good friend Seth Herman who used to live in Baltimore and is also a crab cake fiend residing in ATL. I took his recommendation and confirmed: Delesandro knows crab cakes. Delivered in a dish with just enough depth to hold the shallow base of lemon mustard beurre blanc to surround the main attraction, the evenly browned crab cake was a quarter-pound masterpiece boasting an edge jagged enough to give each jumbo morsel its own identity. Unprecedented in my dining experience, a healthy flake of white crab meat was used as a garnish on the top. “I only use jumbo lump crab meat,” Chef Delesandro said while I cried internally due to forking the last of his crab cake. “I instruct my staff that they only use a limited amount of crushed crackers and mix it with the crab only in two tosses. No more. The meat will break otherwise. After that, it is baked. Nothing else.” Ultimately, I owe Seth a beer. This crab cake was the best I’ve ever had inside the perimeter so far. CONTINUED >

EXECUTIVE CHEF CHARLES ZERAN
STONE'S CUISINE & COCKTAILS Executive Chef Charles Zeran has showcased his culinary skills throughout the East Coast including, yes, Maryland, but his crab cake style is obviously one of his own. Breaded with browned panko crumbs to provide a crunchy encasement, the slightly creamy crab filling is made with about 70 percent jumbo and a pinch of diced red peppers. “I think they should be about the crab,” Zeran explains. “Just enough seasonings to highlight the flavor, just enough other ingredients to accent, and just enough breading to keep them together.” The dish was accompanied with an extraordinary passion fruit tartar sauce, celery root, and crowned with yam straw disclosing Zeran thrives on complexity. His crab cake—as well the other picturesque, mouthwatering dishes that passed me by—boasts the delectable fusion of various textures, colors, sweet, and savory all resulting in a burgeoning legion of loyal customers. You can count me as one of them. Dennis Malcolm Byron aka Ale Sharpton is a world-renowned beer authority,

nowing what you don’t want can be as important as knowing what you do.
“I did not want to open a restaurant,” says Chef Andrew Traub,
who after 35 years in the restaurant industry was interested in trying something new, yet wanted to continue working in culinary arts. The creative solution he dreamed up is rooted in his knowledge that food brings people together. A&S Culinary Concepts, which he launched in May 2015, offers a variety of hands-on experiences in what Traub describes as a “fun, laid-back environment.” It offers private cooking classes, corporate team-building activities, catering services, and special events that foster camaraderie and learning as well as satisfying dining experiences. “We’ve done private dinners, wine dinners, beer dinners, bar mitzvah dinners, prom dinners—anything people want,” he says. Team-building exercises can be customized, but are typically three-hour sessions. “Our two most popular are ‘Executive Chef,’ which is based on the TV show Iron Chef, and ‘Mystery Basket,’” Traub
says. Teams may prepare three-course meals or divide up appetizer, entrée and dessert courses among the participants. Whatever format
is selected, teams work together to prepare dishes using a mix of pre-selected ingredients, and then eat what they’ve prepared. Private cooking classes cover a range of themes, from cooking basics to international menus. Students learn cooking basics, master a skill, test out new recipes, or simply enjoy cooking in a social setting. All classes are hands-on. Monthly Big Green Egg boot camps are especially popular; they showcase the ceramic kamado grills along with quintessential smoker recipes like brisket, boneless pork butt, ribs and chicken. “I’ve always enjoyed cooking, I’ve always enjoyed food,” says Traub, adding that his favorite part of being a chef is flexing his creative
muscle. Now an award-winning chef, he got hooked on the industry at age 15 during his first job at an Italian steakhouse. Since graduating from culinary school in New York’s Catskill Mountains, he’s worked several stints at Marriott Hotels and Resorts in New York, Georgia and Tennessee. He also opened a catering company in Manhattan with a college friend, which counted Radio City Music Hall and the Luxembourg Consulate among its clients. Among his positions, he served as Executive Sous Chef at the Marriott Marquis in Atlanta when the hotel hosted the 1996 Olympic Headquarters, and for 14 years was Executive Chef of the Atlanta Evergreen Marriott Conference Resort in Stone Mountain. At A&S Culinary Concepts, Traub says, “We make everything fresh right here, from mayonnaise to bacon.” To ensure the highest possible quality, Traub partners with local farmers to source ingredients. “All of our meats are local, natural and sustainable, meaning hormoneand antibiotic-free. We work with local farmers from Cumming to Woodstock to obtain the best and freshest produce possible.” He chose a work location close to home. “Johns Creek is a great place to raise a family,” he says. “We’re very happy with the schools, the ball park, and dance studio.” The father of three still has one child at home plus one attending Vanderbilt in the fall and another at

Georgia Southern University. A&S Culinary Concepts is involved with several community organizations. “I am on the Advisory Board of the Atlanta Community Food Bank,” says Traub. “I am also on the board of the ACFB Hunger Walk.” In addition, the company works with Prism school for special adults in Johns Creek and also started "Battle of the Big Green Egg.” The friendly competition pits the fire department against the police department to raise money for the Johns Creek’s Public Safety Fund; the next face-off is set for September 23 in Newtown Park. r. Judson Connell's path into the career of
dentistry is unique. Many dentists make
their career decisions early in life with a parent or relative practicing dentistry or medicine. For them
it's a natural choice to continue the tradition when your family has paved the way for you. For Judson, the choice to become a dentist was logical, but
for different reasons. His family has agricultural roots. He is the first doctor in the family.
He studied art in college, pursuing a personal
call, later exploring the sciences. He enjoyed working with people and helping patients, and
realized that studying dentistry would be a true blend of art and chemistry.
As an artist, Dr. Connell enjoys working
with his hands and in his Johns Creek office he chooses to perform most of his own lab
work. With Chairside Economical Restoration
of Esthetic Ceramics (CEREC) he creates teeth and beautiful smiles while sitting with the patient. He can create porcelain crowns, veneers, inlays, and onlays in a single visit. The smile makeovers he has performed are displayed proudly in his office and on his website. When he leaves the practice, he gets back to his roots and enjoys the farm life. He lives on a 13-acre farm and manages horses, rabbits, dogs, cats and birds. He also flexes his artist’s muscle by doing creative home decorating, carpentry and studio art. He’s rather a Renaissance man. ”People may be surprised to find out that I also played football as a running back on a collegiate level," he says. "Not many art and science majors play football in college. So
I was this weird combination of a goofy, artsy, nerdy kind of jock." Dr. Connell’s goal is to treat his patients in a way not experienced in most dental offices. With his interior decorating vision, he created an office environment that is inspired by an Italian courtyard. Dr. Connell feels personalized customer service has become nearly extinct in most medical offices and it is his goal to bring that back. He's made it his team’s priority to get to know the patient, listen to the patient and make the visit all about the patient. JudsonTConnellDMD.com 26
