Explore Your Home Sweet Home I

am the type of person who likes to stop and smell the roses. The fast-forward lifestyle is not a part of my being. Perhaps that is why my husband and I make such an awesome pair. Our opposite personalities create a perfect balance in both of our lives. It’s always important to me, though, to enjoy, take pride in and explore whichever city I live in. I have found that “enjoying the moment” can often lead to discovering a new understanding of myself, and a chance to learn new and amazing things. This month’s issue is all about “Living in North Scottsdale.” The amazing feel and location of 4020 Lofts paint the perfect picture of what Scottsdale living is all about. Discover more about these top of the line residences in the center of all that happens in Scottsdale. Dive into Scottsdale’s western history with us with a visit to Redbuck Ranch. It’s a quaint bed and breakfast that might just be Scottsdale’s best-kept secret. Did you know that our night sky offers one of the most amazing stargazing experiences? Take a “Field Trip” to some of Arizona’s observatories or bring your telescope up one of our local mountains to discover the galaxies in a whole new way. No matter how you choose to gaze, one thing is for sure, you will discover something Scottsdale offers that is out of this world. Read about Roshan Toopal in our Star Student column. His life in Scottsdale, as a 17 year old, is spent balancing his time between academics and his passion for gymnastics. His dedication is admirable and he is well on his way to being a very successful gymnast. Scottsdale’s own Suzette Zara has a scrumptious recipe for you this month. Roll up your veggies this spring in yummy spring rolls. After seeing how easy these are to make, you will be excited to serve these to your next houseguests. Don’t forget moms this month, too. As Mother’s Day approaches, be brainstorming about ways to make her feel extra special. As you read about all of the things that make “Living in Scottsdale” unique and exciting, I hope it inspires you to explore more about this amazing city. As sure as the stars that shine over our heads each night, there is always something more to learn about the places we live in. Find the opportunities and grab a hold of what is just waiting to be discovered around the corner. There’s no place like home, neighbor!

A Stargazer’s Dream ARIZONA NIGHT SKIES ARE OUT OF THIS WORLD ARTICLE KORY KILMER | PHOTOGRAPHY LOWELL OBSERVATORY

W

hen somebody claims that there is something special about the desert sky, it turns out that it may not just be his or her imagination. For centuries, astronomers and amateur stargazers have been flocking to the Southwest to get an amazingly clear glimpse of the heavens. The options are almost limitless for anyone already with a telescope in hand. Locations such as McDowell Mountain Regional Park and the Dreamy Draw Area of the Phoenix Mountain Preserve offer a perfect opportunity to make some late-night observations without ever leaving the comfort of the metro area. Amateur astronomers will undoubtedly be thankful if they elect to take even just a short drive outside of Phoenix. Leaving the light pollution behind will unveil a stargazing opportunity not found in too many other places on Earth. Higher elevation areas just outside town up around the Rim Country position stargazers closer to the skies, and the dry desert air is ideal as the lack of humidity increases visibility. The town of Payson takes its role as a stargazing destination more seriously than most. Residents claim that they reside underneath one of only three pure air ozone belts found in the world. The town has also embraced an array of “dark-sky” ordinances that would help to protect the view from the ground for generations to come. 12 North Scottsdale Lifestyle | May 2014

For those looking for a more high-powered experience gazing the skies, it should be no surprise that Arizona is home to two of the most famous observatories in the world. Perched high atop the Quinlan Mountains in the Sonoran Desert on the Tohono O’odham Nation and about an hour southwest of Tucson is the Kitt Peak National Observatory. Administered by the National Optical Astronomy Observatory (NOTO), Kitt Peak is home to what is considered to be the most diverse grouping of astrological equipment found anywhere in the world, including 24 optical and two radio telescopes. Among the equipment at Kitt Peak is the McMath-Pierce Solar Telescope, which is the largest of its kind found in the world. The research performed at Kitt Peak has also been at the forefront of locating near-Earth asteroids and calculating their likelihood of impact. Up north in Flagstaff is the legendary Lowell Observatory, which was founded in 1894 and ranks among one of the oldest still operating in the United States. Having been named one of “The World’s 100 Most Important Places” by TIME magazine in 2011, Lowell still is home to numerous telescopes, including its original Alvan Clark telescope (which is unfortunately undergoing renovations that will keep it out of commission until 2015), and was instrumental in the discovery of Pluto in 1930 among other discoveries. Lowell has teamed up with the Discovery Communications to build the Discovery Channel Telescope. After seeing its first light in April of 2012, the DTC is the fifth-largest optical telescope in the continental United States and promises to help Lowell continue to dig deeper into the secrets of outer space. Both the Kitt Peak National as well as the Lowell Observatories offers a wide variety of day and night programs throughout the year that will appeal to astronomers of every level of both skill and interest. Both observatories recommend booking early as many programs have a tendency to book up fast, especially those that occur around notable celestial events. From Kitt Peak down south to Lowell up north and every store bought or do-it-yourself telescope in between, Arizona’s vibrant night skies beg to be viewed. And they will always offer one promise: anyone that dares to look up is bound to see something that is out of this world.

Determination Leads to Success ROSHAN TOOPAL FINDS BALANCE BETWEEN SCHOOL AND SPORTS ARTICLE KATHLEEN SHIPMAN PHOTOGRAPHY MOHAN TOOPAL

R

oshan Toopal has the work ethic of an individual well beyond his 17 years. Not only is he a high academic achiever at BASIS School in Scottsdale, he is also a top ranking gymnast as well. His commitment to successfully balance both areas in his life is admirable. As a junior at BASIS, Roshan is very used to the rigorous schedule that his school requires. BASIS is known for its consistent top ten ranking of American high schools, due to its intense focus on academics and mission to raise education to the highest levels of international standards. Although all of the students at BASIS are incredibly gifted, the staff at BASIS takes notice of Roshan’s remarkability. “His teachers and our administration are often impressed by Roshan and his ability to balance the demands and the joys of our curriculum with that of his highly engaging extra-curricular activities,” says Elizabeth McConaghy, college counselor at BASIS Scottsdale. At BASIS, the curriculum revolves around AP courses, which are equal to the standards of college classes. Roshan has been excelling at these courses, taking them at all opportunities. Since Roshan has completed both of the AP Math courses available, he is currently taking Category Theory, a course where he has found great enjoyment. By the end of his junior year he will have completed 15, a rare accomplishment even for a high school graduate “It’s fun because in Category Theory they teach you Abstract Math,” says Roshan. “We also get to apply the math, like solving a Rubik’s Cube or analyzing spheres or hyper cubes.” The course of Category Theory is one that is not taught in high schools other than at BASIS Scottsdale and is only offered if a student completes both AP Math courses. It compares to an Abstract Math 243 Level Course offered in college. “Stanford professors were surprised BASIS was teaching a Stanford level of Math,” says Roshan’s mother. Another triumph for Roshan occurred when he took the SAT subject tests for math and biology. He tested perfectly in the math test, scoring 800 out of 800, and 760 out of 800 in biology. Excelling in these areas coincide with Roshan’s desire to study bioengineering in college. The time and commitment Roshan puts into his studies is only a portion of his day. After school Roshan goes straight to Aspire Kids Sports Center in Chandler, where he lives out his other passion as a gymnast.

14 North Scottsdale Lifestyle | May 2014

For Roshan, his love of gymnastics began when he was just four years old. He has since mastered skills that are typically performed in the international meets. For the last three years, Roshan has been at the highest level of competition in gymnastics (Level 10). It has been his dedication and talent which has helped him accomplish such a high level. “He’s very determined when he sets his mind on a goal,” says Mohan Toopal, Roshan’s father. Outside of school, Roshan spends most of his time at his gym. On a typical day, he will train for duration of four hours with his coaches, who are also high ranking gymnasts themselves. It is because of the superior quality of coaching Roshan receives that his parents believe has contributed to his athleticism. “It is one thing to be coached by a coach, but it’s totally different to be coached by top ranking gymnasts, as in the case with Roshan’s coaches,” says Roshan’s mother. On the weekends, the Toopal family travels all over the country for Roshan to be able to compete. He is no stranger to winning gold medals during these competitions, where his favorite event is the high bar. For Roshan, this is a very rewarding part of gymnastics. “The best payoff is when you win at a competition,” says Roshan. “You’ve worked so hard for so many hours every week, and you can finally see the results at the competitions.” Although academics and sports may seem like opposite ends of the spectrum, for Roshan they are completely reliant on each other. The focus that Roshan puts into his responsibilities is what has allowed him to simultaneously thrive in both school and gymnastics. “They always talk about gymnasts being good students. It’s because they have to be so disciplined,” says Scott Barclay, owner of Aspire Kids Sports Center. “It’s all about challenge and growing.” Roshan has plans to combine his two talents when he enters college, by choosing a university that specializes in both. “My number one choice of college would be Stanford because it has a good gymnastics program and a good academic program as well,” Roshan says. “While I’m in college I’m going to try and get onto the National team so that I can compete for the United States.” The amazing effort that 17-year-old Roshan Toopal puts forth on a daily basis is one that is admirable to say the least. His determination to work hard and always try his best are sure to take him far.

Terrific Teacher

Educator Linda Hill’s Passion for Middle School BRINGING HER LOVE OF LITERATURE TO THE CLASSROOM ARTICLE KATHLEEN SHIPMAN | PHOTOGRAPHY PROVIDED

T

he day educator Linda Hill first entered the classroom was the day she found her true calling. While the thought of teaching middle school may be harrowing to some, Hill hasn’t shied away from it. In fact, this 8th grade language arts teacher has spent the last 16 years at Desert Canyon Middle School in Scottsdale, where her passion for education has made an impact on the students and faculty. “Mrs. Hill is a dedicated teacher who embraces new curriculum,” says Dale Link, principal at Desert Canyon Middle School. “She is a pleasure to work with and an asset to our community.” Even though Hill’s talent for teaching middle school is evident to those at Desert Canyon, surprisingly it wasn’t her first career path choice. Originally, Hill graduated college with a degree in medical technology, spending several years working in a hospital lab. It 16 North Scottsdale Lifestyle | May 2014

was after raising her own children that Hill discovered her desire to become a teacher. “I knew I wanted to teach when I had my own children and began watching them learn,” says Hill. “It excited me.” Hill decided to pursue this new venture by completing a post-baccalaureate teaching program at ASU, later receiving her master’s degree in education. She was then hired into the Scottsdale School District, where she began her career as an educator in the elementary schools. After several years of teaching, Hill decided to take a position at Desert Canyon Middle School. She taught both 6th and 7th grade before eventually moving up to 8th grade language arts. She found her niche; this is where Hill has been ever since. “I love teaching the younger grades, but with each year that they progress they become more like little adults,” says Hill. “They can think at a higher level and I think I like that. That’s why I’ve stayed in 8th grade as long as I have.” As a language arts teacher, Hill finds great enjoyment in being able to educate her students about yet another one of her passions, literature. “I love literature,” Hill says. “I love to do projects with literature that gives students choice, but also challenges them at different levels.” It is of great importance to Hill that her students always give their personal best during these projects. She encourages her 8th graders to immerse themselves in their books, analyzing the story in distinctive and thought provoking ways. “I like giving them different prompts or ways to look at a book instead of just the plot, character, setting, theme,” says Hill. “I like for them to look at things from multiple perspectives or from an ethical point of view and to encourage them think more critically.” Hill realizes that her students have differ-

ent learning abilities, which is why she adjusts her literature lessons to meet their individual needs. By providing them choice in her classroom, the students have been able to work towards and achieve their own personal goals. “I think that the students appreciate having the projects differentiated for them and somewhat individualized so that they have some control and ownership of the process,” Hill says. One very successful project in Hills class involved the integration of literature and history. The students learned about the Holocaust and World War II by reading books relating to the historical topics. They then selected from various book options, afterwards completing both individual and group projects. Hill was very proud of the efforts that her 8th graders put forth. “Sometimes I’m impressed with how students challenge themselves,” says Hill. “I was really pleased with how that project turned out.” Besides devoting her time in the classroom, Hill also takes on other important tasks at Desert Canyon Middle School. Similar to what she teaches her students about always giving their all, Hill also works to her highest abilities. Principal Link is very grateful for her dedication to the students. “She cosponsors National Junior Honor Society and organizes the 8th grade promotion ceremony and field trip,” says Link. “She goes above and beyond.” Although it may add to her already busy schedule, Hill finds great pleasure in planning the 8th grade field trip. She feels her students are very deserving of the end of the year reward. “It’s the big thing that they get to do that the other grade levels don’t,” says Hill. “It’s a nice way to end the year with them,” It is also during the completion of the school year that Hill can’t help but marvel at the growth of her 8th grade students. “I really enjoy this group, it’s interesting to see how much they mature,” says Hill. Hill is a highly respected teacher at Desert Canyon Middle School, making a positive impact on the students and faculty. Her love for teaching makes it apparent that Hill chose the right career path. She was meant to be an 8th grade teacher.

Individuality thrives in Scottsdale with 4020 Loft living.

he show is about to begin. You and your three closest friends top off your drinks and are filled with giddy anticipation of the spectacle you’re about to experience. There is a slight breeze floating through the open-air venue but with the temperature hovering right around 80 degrees, there’s no need to grab a jacket. The breeze carries a whiff of something savory baking in an oven at a popular eatery next door. Remnants of laughter and distant conversations from down below add to the excitement you feel. You take your seats.

They are the best in the house, lavishly comfortable and inviting. The intimate setting, four stories off the ground, gives a panoramic viewing experience unlike any other. The sites are unmatched with city skylines and picturesque mountain backdrops. Then it’s time. The sky streaks with vibrant oranges, startling pinks and soothing purples. It’s another picture perfect sunset in Scottsdale. The private rooftop decks at the 4020 Lofts are an enviable setting to enjoy Mother Nature’s dai18 North Scottsdale Lifestyle | May 2014

ly shows – sunrise and sunset. Because these hip living spaces have recently become available for purchase, a rooftop party isn’t just something for you to attend anymore. You can now host your own get-togethers. Why wait for an occasion? After all, everyday is worthy of a little after-dinner relaxation or the occasional lazy afternoon soaking up the desert sun. The rooftop deck is an extra respite that comes with a handful of the modern living spaces. The tranquility that you’re surrounded by is unexpected against the continual energy and excitement of Downtown Scottsdale. The 4020 Lofts building itself is unassuming, which contradicts the popularity it enjoys particularly because it is located in the heart of Downtown on the corner of 1st Avenue and Scottsdale Road. Many people already know the building because the ground floor is home to one of Scottsdale’s favorite casual restaurants, Daily Dose. If you haven’t enjoyed brunch or a late afternoon snack there, it’s worth the stop. The conveniently located downtown branch of Bank of America shares the first floor retail space. When you look up, you’ll notice the balconies from the 21 homes on the second and third floors of the building. Unless you were looking for them, you most likely didn’t even know they were there, hidden in broad daylight. The texture and colors of the building effortlessly blend in the private spaces. The balconies, like the lofts, range in size with one balcony adding almost 600 square feet to the personal living area. Lofts are a relatively new product type in the Scottsdale market. They are extremely popular in many urban areas because they feature open floor plans and spacious floor-to-ceiling windows. The free flowing spaces can easily be configured to accommodate individual needs and design tastes. As the Downtown Scottsdale market transitions into a more urban atmosphere, the modern appeal of loft living is becoming increasingly attractive to prospective homeowners. A prime location that offers modern finishes is gaining in popularity over traditional qualities like the number of bedrooms and square footage. With our packed schedules and often times demanding lives, accessibility and manageability are catapulting in important qualities for a home purchase. Right out the front door of the 4020 Lofts, there are more than one hundred restaurants offering cuisine from around the world, art galleries housing countless creative works of art, nightclubs that will keep you moving until the wee hours of the morning, boutiques and unique shops for all kinds of gifts and sundries. All of the benefits of Downtown Scottsdale are within walking dis-

tance, or better yet, just a quick golf cart ride away. Events of all sorts take place year round in the area giving residents an array of options to choose from when they choose to leave their urban oasis. The interior does draw you in, however. The finishes at 4020 Lofts combine modern style with the cozy warmth you want at home. Every detail has been thoughtfully considered to incorporate chic design with effortless functionality. True to a traditional loft, 4020 has 11-foot floor-to-ceiling windows that brighten the space with natural light. For privacy, light blocking shades are standard. Custom light fixtures add designer touches in exactly the right spot. Exposed spiral ductwork gives each home an open, edgy feel. KitchenAid® stainless steel appliances are already installed in each home including a French door refrigerator, washer and dryer. A minimalist’s approach inspires clean lines in the bathroom with Kohler® double sinks, polished chrome faucets, showers and bathtubs throughout. Off of each bathroom suite is closet and storage space with built-in shelving to maximize organizational efforts. The second floor homes all have natural classic bamboo flooring, blond birch wood cabinetry with stained concrete countertops and tiled backsplashes. All third floor homes feature dark stained concrete flooring, natural wenge wood cabinetry with quartz countertops and quartz or tiled backsplashes. A beautiful yet purposeful cabinet partition is available that stylishly separates the bedroom from the living area. Made of macassar ebony, the custom-created partition includes a stainless steel fireplace that opens to both the living and bedrooms.

Directly above the fireplace is a perfect spot to include a flat screen TV. This designer element is available for purchase and is currently available for viewing in the model loft. The 4020 Lofts are available for purchase and begin at $299,000. Designated Broker Kelsey Young is available at 480.734.3547 or Kelsey@4020Lofts.com for more information or to schedule a visit of the property. So, fill up your drink. Pick the most comfortable seat in the house. Get ready for an amazing adventure. The show is about to begin. May 2014 | North Scottsdale Lifestyle 19

RedBuck Ranch The Hideout Revealed ARTICLE KATHLEEN BLAIR | PHOTOGRAPHY PROVIDED

I

’ll never forget my first visit to Arizona in 1980. In fact, it was a business trip that brought me out here. When I flew into Sky Harbor, Terminal 2, a staircase was wheeled out so we could depart from the plane and then walk outside to reach the terminal and claim our luggage. When my cab dropped me off at The Pointe resort, I thought I landed in paradise. I got to enjoy the Valley’s weather and the amazing resort. After moving here, I still enjoy the great weather, but no longer stay at any of the resorts in town. It may be hard at times when the budget is low to leave our great state for a vacation, so a staycation can be an ideal get-a-way to kick back and relax. And, if you are looking for something a little different, more western and away from the crowds, I have the perfect place for you. One of the best-kept secrets in town is a Western B&B located off 154th Street and Dynamite: RedBuck Ranch. Named for the owner’s two horses, Red and Buck, the facility sits on five acres in a perfectly peaceful location with panoramic views. There are two wonderful suites that look more like apartments than guest rooms and are so comfortable you won’t want to leave. HOW IT BEGAN

It all started when a city girl, Billie Shepherd, met a cowboy, Johnny West, back in the early ‘90’s while country western dancing. West won the country western state dance champion and Shepherd was a “groupie” who went and supported the local boy. They started dating and West and his friends enjoyed teasing the city girl who drove a Mustang convertible and had a cul-de-sac home that was decorated in all white. On the outside, this couple was so opposite one wouldn’t think the relationship could possibly last very long but there was something about cowboy West that stole city girl Shepherd’s heart. West was born in Jamestown, New York, but his family moved to Arizona when he was a little boy. He was raised in Chandler on 20 North Scottsdale Lifestyle | May 2014

his stepfather’s dairy farm, which at the time was the largest in Arizona. He grew up participating in rodeos. However, Shepherd who was born in Boise, Idaho, grew up traveling with her family to Europe before settling in Arizona. West worked as a paint contractor and Shepherd had worked as an advertising executive for Goldwater’s department store. After about six months of dating they decided it would be better if they got a place of their own where cowboy West could keep his horses and they could build a life together. So, West was on a mission to find just the right place that Shepherd would love. In 1993 he took Shepherd to an area where he loved riding his horses that was way out in the desert. Shepherd instantly fell in love when she saw the fabulous views. So they purchased five acres in this desolate area to build their dream with West’s two horses. Shepherd continued working in the city and would make the long drive back to their ranch while they stayed in a horse trailer until their home was completed. They hired a young architect from Taliesin to design their one bedroom home, a well was dug and the home was completed in 1994. Yes, life was good even though Shepherd had a long commute to work every day and they were unable to have a phone for five years. THE CANDY APPLE RED TUB

It started when Shepherd decided they needed a bunkhouse where

their adult kids, three each from previous marriages, could stay for a couple days when they came for a visit. So in 1997, the bunkhouse ended up being a marvelous, luxury four-room suite complete with fireplace, kitchenette, great room, bedroom with a king size log bed, snail shower built with a wall of quartz rock (fool’s gold) from Congress, Ariz., and a candy apple red old fashion claw foot tub that sits in front of a large picture window to capture the fantastic views of the mountain ranges in the distance. In fact, every window has wonderful views and it all can be enjoyed on the covered veranda that has a stucco fireplace, gas grill and flagstone floor. This bunkhouse became a luxurious bed and breakfast “hideout” for guests to stay and enjoy as their own private retreat. And, as Shepherd says with a grin, to help pay for the candy apple red tub. The next project was adding a pool and spa. But with Shepherd’s wonderful flair for design, no ordinary pool would do. A beautiful patio area with a pool that has a sitting area under a magnificent waterfall, a swim out bar and a heated spa was added to their desert oasis. It became a perfect relaxation station for their guests. WESTERN WEDDINGS

Not long after the inquiries came from soon-to-be-brides wanting to have their weddings at this wonderful retreat. So, West and Shepherd shared their desert ranch with the many couples and their families and friends who exchanged marriage vows at RedBuck Ranch. In 2009, the building used for weddings was remodeled and Shepherd designed a 750-square-foot suite, the Rendezvous, in a western contemporary style. After 17 years, the West and Shepherd

duo, who began as neophytes to the bed and breakfast industry, now are experts at making their ranch so inviting they never need to advertise as guests continue to come back year after year to enjoy this private western get-a-way. Another amenity includes a 97-yard, par 3 golf challenge with three sand traps. This 1¼ acre “short course” was designed by Shepherd’s son, Shawn, a golf enthusiast, with help from the Troon North Country Club. It’s a perfect place to practice your game before heading out to some of the wonderful golf courses in the surrounding area. Over the years, the isolated desert was discovered and neighbors moved in. But it is still peaceful and the views haven’t changed. Now, just 20 minutes away guests can enjoy wonderful restaurants and shopping in North Scottsdale and in Carefree/Cave Creek. In fact, there is still an old stagecoach at the ranch that was used for the parades in Carefree back in the day. Red and Buck are no longer around, but horseback riding is still available close by. It is obvious that Shepherd’s philosophy, “If you love what you do every day, you will never have a bad day” is one she and West live by. Now, 20 years later, you can still see the love in Shepherd’s eyes as she listens to West tell his cowboy stories. They are living their dream and enjoy their life finding the humor in most things and being very grateful for the wonderful life they share. They proved to their family and friends that cowboy West and city girl Shepherd could live happily ever after. Scottsdale Station A MEMORABLE CULINARY EXPERIENCE AWAITS ARTICLE KATHLEEN BLAIR | PHOTOGRAPHY JOHN ORMOND

S

cottsdale has a new restaurant, but it really isn’t brand new as Robert and Linda Gabrick have enjoyed 10 years of success operating the Carefree Station before moving to Scottsdale in November 2013. In fact, the concept was so good they opened the Prescott Station in May of 2012. Yes, they have a knack of knowing what pleases their diners. Located on Hayden, just North of Via de Ventura, it is a wonderful space. I love how the dining areas are separated but still open. There is a large front patio that is surrounded with beautiful blooming plants, thanks to Linda Gabrick’s love for gardening. The enclosed patio has a large fireplace in the corner and seats 80. Right inside is the porch area which is across from the main dining room. And, down the hall is a private dining room which can be used for small gatherings or business meetings and is equipped with a television screen. In the back you will find the bar patio this is also enclosed and has a wonderful ambiance. A fantastic bar, Bev’s Heaven, seats 40 comfortably around this massive bar. There are five televisions discreetly positioned, a wine cellar and cozy side booths and tables. PROVIDE A LEVEL OF SERVICE BEYOND WHAT IS EXPECTED

Robert has been in the restaurant industry for a long time. He graduated from the University of Miami where he majored in food and beverage management. While in college Gabrick worked as a waiter learning the front end of the business and, later, as an apprentice with a French chef. He also had a successful career with 22 North Scottsdale Lifestyle | May 2014

the Famous Pacific Fish Company before opening his own restaurant. Linda has also been in the restaurant industry. That’s how they met, and they continue to work together – she manages the front end and he oversees the back food operation. Gabrick’s goal has been to create an environment that people would want in a restaurant. It’s a daily effort making sure all components of the business are at their best and still bring new items to the menu. “My vision is to have a restaurant where it would be remembered for everything and not just one or a few dishes,” states Gabrick. “We work on every dish as if it was the most important item on the menu.” I can attest the menu and food will certainly satisfy the pickiest diner. The choices on this global menu are wonderful. From Korean style ribs, Thai noodles, Chinese salads, Cajun, Italian pasta dishes, Jamaican, Moroccan, Scottish salmon and many southwest specialties to a raw bar menu, there are more than enough selections to choose from. I was pleased to see that many of the entrees have two sizes - a petite, smaller portion and a regular portion as Gabrick knows one size doesn’t fit all appetites. AS GOOD AS IT LOOKS

I began my tasting with a scrumptious crab bread pudding that had a touch of Brie cheese and is served with a lemon butter sauce. It’s a twist on crab cakes and was packed with flavor. I had to force myself not to finish it as to save room for what was next. Opa, a Greek expression of joy, is what you’ll hear shouted at many Greek restaurants when they serve Flaming Saganaki. on. It’s served with house made pita wedges and was so yummy; it should come with a warning, “Caution: Could Be Habit Forming!” Although it’s seasonal, I was pleasantly surprised to see one of my favorite seafood items on the menu, Chilean sea bass. So, when the server placed this wonderful delicacy in front of me, I actually felt like I received a wonderful gift. It was so moist, flaky and delicious. It’s served with coconut black rice, which was incredibly tasty, asparagus chopsticks and roasted garlic chili butter. Next, I sampled the Lamb Mediterranean which is marinated Colorado lamb chops that are chargrilled with a little fat left on to enhance the flavor. Served with couscous, spinach, salsa verde, feta and pistachios, it’s a winning combination. The presentation of the food was so nicely done. Since we diners taste the food with our eyes before it meets our lips, believe me, you will be enjoying your eye tasting about as much as the real thing.

THE GRAND FINALE

I have good news for the ladies. You will no longer need to ask your husband for a bite of his dessert. There are delicious bite size delicacies on the desert menu. A couple of the impressive array of desserts are the 24K cheesecake that is light and airy, coated with a chocolate ganache, served with shimmering gold champagne sauce and fresh fruit. It looks like a chocolate marshmallow and it was scrumptious. I highly recommend ordering this even if you’re not a cheesecake lover. Other desserts I sampled, remember they were just bite size, were the chocolate nachos with mascarpone cream, vanilla bean ice cream and topped with fruit. I also enjoyed the popular lemon tart with toasted meringue served on top of a shortbread cookie. Delicious! Of course, full size portions are also available, but bite size allows you to try a couple. Also there are coffee drinks and liquid desserts to check out as well. My time at Scottsdale Station was so enjoyable. There isn’t enough room here to tell you all about the unique experience

awaiting you in the bar area, Bev Heaven. I just may have to save that for a future article. And, consider checking out the Sunday Brunch menu. I suggest you make your Mother’s Day reservations early as the restaurant received an award for the Best Mother’s Day Brunch. HOURS:

Roll into Spring SPRING ROLLS WITH SPICY PEANUT SAUCE ARTICLE SUZETTE ZARA | PHOTOGRAPHY JOY REYNOLDS

A

s Spring rolls in, temperatures are beginning to rise. Here’s an easy way to create beautiful Spring Rolls without heating up your kitchen. These “no bake” rolls are as delicious as the ones you find on the menu at popular Asian restaurants, and they are boosted with nutrition, thanks to the fabulous combination of fresh veggies. The Spring Roll has a long history, dating back over a thousand years to Saigon. Traditionally, a paper thin pastry is filled with shredded ingredients, then deep fried. This updated version uses reduced-fat ingredients, and it’s fresh, not fried, to keep calories low. As pretty as they are nutritious, these rolls are amazingly simple to create, using a technique similar to rolling a burrito. The rice paper shells are transparent, making a stunning visual presentation of the colorful veggies inside. The zesty peanut sauce is also incredibly simple; it can even be mixed by hand, making these rolls a fast fun project to cook with kids. These Spring Rolls are also an excellent way to add more nutritious kale in your diet. Kale, the “queen of the greens,” is high in the antioxidant vitamins, calcium and iron. When selecting kale, choose small, deeply colored, moist leaves. The peppers and carrots add a nice crunch which contrasts well with the creaminess of the avocado, while the mushrooms add a heartiness, making these rolls a good entrée as well as an appetizer. The freshness and lightness of these Spring Rolls make them a perfect dish for recovering from an indulgent Easter feast.

INGREDIENTS

Spring Rolls: • 6 rice paper wrappers • 1 avocado • 1 carrot • 4 medium mushrooms • 1 small red pepper • ½ cucumber • 6 fresh basil leaves • 6 kale leaves 26 North Scottsdale Lifestyle | May 2014

Sauce: Stir together all sauce ingredients until smooth. (You may use hand mixer on low speed if a finer texture is desired). Rolls: To prepare the rolls, cut all veggies into long thin strips. Working with one wrapper at a time, dip rice paper wrapper in warm water to soften, then place one piece of kale leaf down center of wrapper, topping with remaining strips of veggies and two tablespoons of sauce. Fold up bottom, then left and right sides into middle (similar to folding a burrito). Roll up as tightly as possible. Serve promptly, or refrigerate until ready to serve. Serve with hot mustard and Spicy Peanut Sauce for dipping. Serves 2-4. Cost per Serving: $0.88 (Note: Rice Paper Wrappers are available at most major supermarkets; they are easily found at Safeway in the refrigerated Asian section, near Tofu.) KALE: THE QUEEN OF GREENS Top 5 Benefits of Eating Kale: 1. Low in Calories, Zero Fat A half cup of kale has only 18 calories, 2 grams of fiber & 0 grams of fat. 2. High in Calcium Per calorie, kale has more calcium than milk. Calcium helps prevent bone loss and aids in maintaining healthy metabolism. 3. Packed with Antioxidants, Vitamins A & C Kale is bursting with antioxidants, including flavonoids, which help prevent against many forms of cancer. 4. High in Iron Per calorie, kale has more iron than beef. Iron is essential for blood health and liver function. 5. Helps fight inflammation One cup of kale is loaded with 10% of the RDA of Omega-3, which helps fight arthritis and autoimmune disorders.

Parting Thoughts

Greetings from Zin City WORDS DENISE SNODELL

I

grand plan. Their zins might serve as an untouchable color patch to transition the eye from, say, hydrangeas to box hedges. That sounds horrible, in retrospect, but it’s coming from me. What do I know? Nothing. So how did this whole zinnia thing happen? By accident. Years ago, I received a free seed sample in the mail. I think it was from a real estate agent. Can’t remember. The packet showed such a colorful mix and stated these suckers were great cutting flowers. When I noticed the instructions advised to plant the seeds just a quarter inch deep in the soil, I was totally on board. A fraction of an inch meant no worm encounters and no complications. Plus, I knew there was that un-mowable bare section at the side of the house, soaking up all that sunlight in vain. My cutting garden was born. It’s been bouquet city ever since. Inspired, but not a gardener? Trust me, zinnias are so forgiving. They can get thirsty, yes, but who wouldn’t with all that sun? I’m sure garden clubbers have strict “how to” rules, but I plant my little buddies on my own schedule—sometime in the spring, when I feel like it. I always drop the seeds too close together, oops. Some years I fertilize the soil, others I don’t. Regardless, the zinnias always show up, and they’re always beautiful. My only advice, other than “just add water,” is to make sure you buy seeds labeled “giant” or “super giant.” Ka-pow! It’s a good idea to have garden scissors, too. Upon the first wave of blooms, I run with mine.

have a dirty little secret. I’m a non-gardener who has somehow slyly scraped the earth’s surface. Yes, it’s true I’m not ambitious about “planting things.” While other suburbanites take pride in nudging photosynthesis, I am clueless. Clueless. My hidden outdoorsy adventure has nothing to do with homegrown veggies and herbs, either. Nice concept, but I thrill at harvesting crops in the grocery produce section only. It’s all prepicked and shiny and waxed. Nice. Whatever it takes to avoid the effort involved with growing cornucopia fillers, I’m there. But flowers are a different story. I cultivate some myself. Crazy as it sounds, every summer, all summer long and into fall, my house is bursting with colorful, artful bouquets from my very own secret garden. It’s not exactly a garden. My planting area is a little patch of sloping not-grass on a narrow side yard, right up against the house. Picture this glamorous triangulation: a small area of lumpy dirt just below the dryer vent, smack dab between a small concrete door slab and a spidery window well. What I just described is the opposite of a British flower scenario. (English people set the bar for lovely flower gardens.) If I were, say, an outskirt Londoner, my so-called garden would instead be in full view, punctuated with a delicate iron trellis and an antique stone bench, just beyond a row of fragrant, exotic roses. But here I am in Middle America, with the frumpiest set-up the outdoors can offer. Did I mention the dryer vent? Fear not, when warm weather hits, I have some stuff even British royalty would die for. Good ol’ blaring American sun. A few cheap packets of zinnia seeds. A watering can. And southern exposure. Take that, Queen. The thing about zinnias is they’re perfect cutting flowers. And that’s why I’m a big fan. Probably many people who know what they’re doing plant zinnias as part of a sweeping, stay-put master-gardened
