Veteran's Passport to Hope Whiskey Tasting Veteran's Passport to Hope hosted a Bourbon Whiskey Tasting Benefit at the Aspen Flying Club at Centennial Airport on Sept. 19. GREEN BEAN “CASSEROLE”

INGREDIENTS ++ Olive oil and dairy-free butter for sauteeing ++ 1 package sliced mushrooms

++ 1 small-medium onion, sliced ++ 1 package frozen petite green beans ++ 2 cloves garlic, chopped ++ 1/4 cup white wine or sherry ++ 1/4 cup all-purpose gluten-free flour ++ 1/4 cup canned coconut cream or milk ++ 1 1/2-2 cups chicken broth ++ Kosher salt and pepper Note: Mushrooms soak up lots of butter, oil and salt. Add more as needed.

DIRECTIONS Heat a cast iron or heavy saute pan on medium-high. Add butter and olive oil. When the oil is hot, add onions. Reduce heat to medium and saute until onions are browned, seasoning with salt at the end. Remove onions from pan and set aside. Keeping the pan hot, add more butter and oil, then add sliced mushrooms. Stir to coat mushrooms in oil/ butter mixture, then add frozen green beans. Stir the mushrooms and beans around until coated with butter/oil, adding more if needed. Let cook without stirring until beans

Stir constantly as it thickens, adding more broth as needed. Plate on a serving dish and top with remaining onions. Serve immediately or reheated and held in a warm oven until ready to serve.

HUMMUS PESTO DIP INGREDIENTS ++ 1 container roasted red pepper hummus ++ 1 jar nut-free pesto ++ 1 large tomato, diced ++ 1 cucumber, diced ++ Feta cheese ++ Salt and pepper

DIRECTIONS On a medium serving platter, spread hummus evenly. Top the hummus with all of the pesto. Carefully spread out the pesto layering it over the hummus. Top with tomatoes and cucumber. Season with kosher salt and ground pepper. Top with crumbled feta. Refrigerate until ready to serve. Serve with a variety of dipping options: carrots, cucumbers, endive, peppers, crackers, bread or gluten-free pretzels.

HONEY BALSAMIC ROASTED CARROTS AND ONIONS INGREDIENTS ++ 15 purple, yellow and orange carrots, peeled and sliced

DIRECTIONS Peel and cut carrots and onions. Spread carrots and onions evenly on a large baking sheet. In a bowl mix together olive oil, honey and balsamic vinegar. Coat the carrots and onions in the honey-balsamic mixture. Sprinkle with salt and pepper and toss to coat. Add the thyme, reserving a few springs to garnish. Bake at 400 degrees for 20 minutes. Turn over veggies with a spatula and cook for 10 minutes more or until caramelized. Top with the extra thyme. 16

INGREDIENTS ++ 1 puff pastry, cut into 6 rectangles ++ Fruit preserves (apricot, berry or lemon) ++ 2 peaches ++ 2 pears ++ 1-3 tablespoons sugar ++ 1 egg

DIRECTIONS Cover a large baking sheet in parchment paper. Thinly slice peaches and pears, and place in separate bowls. Sprinkle sugar on fruit as needed; toss to coat. With a fork, poke holes throughout the centers of each pastry, leaving a 1/2-inch border around each. Spread 1 tablespoon of fruit preserves over the center section of each pastry. Top with sliced fruit, keeping the 1/2-inch border open. Bake at 375 degrees for 15-20 minutes until golden brown.

Christy Kopp founded Kids Mobility Network in 2005 with her husband, Peter, to help children with disabilities have access to durable medical equipment, such as wheelchairs and walkers. Christy says she and her husband were inspired to help provide necessary equipment to uninsured and underinsured families. WHAT IS THE “WHY” BEHIND WHAT YOU DO? Tyler Pilger of Elevation Cycles says he feels strongly that bicycles aren’t just a two-wheeled machine but a vehicle to joy, physical fitness and independence. Tyler, along with co-owner Phillip Brown, works with Project ReCycle a Douglas County nonprofit organization that works to provide children with bicycles. WHAT IS THE “WHY” BEHIND WHAT YOU DO? In one way or another, bicycles have changed the lives of all the folks on our team. We have the luxury of sharing our passion with our customers every day. While we offer bikes from the high end to entry level, some people are just not in a place to buy a new bike. We want to be a community resource to partner with our customers to help share the joy and independence that bikes can bring to those who may need it most. We are a conduit for this by working with Project ReCycle (ProjectReCycle.org) to help our customers donate bikes throughout the year which are used for their Dream Bike Program to encourage kids to earn a bike through improving their school attendance and academic growth. During the holidays, we offer a discount to customers who donate old bikes and give gift cards to customers who purchase new kid’s bikes for donation. SERVICE FIRST "My path to photography was really different than most," says Army veteran Brian Johnson of Brian Johnson Photo. "When I went to war, I took a couple of blasts from IEDs. I don't have much memory prior to 2005. I have images but not much recollection. Photos allow me to say, 'Yes, I was there.' I live vicariously through those images." "I have seen the worst of the worst through my life and career choices, and that helped me focus on giving back," Brian says of his several deployments with the Army and as a deputy sheriff. When Brian was in law enforcement, he started volunteering and taking photos for Special Olympics Colorado. "It tugged at my heartstrings. It inspired me to see the special needs community triumph over barriers other people don't have," he says. "They don't communicate the same way we do, so it is important to find a way to communicate on their level through the right tone of voice, word choices, etc. We donate all photography to Special Olympics valued at more than $100,000 to date."

GIVING LIGHT TO LIFE THROUGH THE LENS Parker resident Johnnie Medina dabbled in photography on and off for about 15 years, but on July 27, 2017, his family was changed forever. That was the day his 24-year-old daughter, Mikayla, took her own life. Johnnie’s idea of Life Through the Lens was born during the next few weeks. Getting behind the camera and capturing precious moments of terminally ill patients was a gift he could give to families. “I realized I didn’t have enough photos that showed who Mikayla was in life,” Johnnie explains. “It was my form of grieving, and it helped me through this.” Life Through the Lens provides photos for free. Taking final portraits of terminally ill patients evolved into taking photos for the Colorado Cancer Coalition, Global Down Syndrome and Kids Mobility Network, as well as other nonprofits. Her shop donates a plant or an arrangement for every funeral, and

Life Through the Lens creates a legacy of memories and keeps the person’s light alive. “I want people to see who they were and what defined them.” Irish singer Tommy Fleming is an ambassador and advocate. Finding more sponsors, celebrity ambassadors and photographers will help Life Through the Lens grow worldwide, Johnnie says.
