admit, when we first joined forces with Sean O’Keefe Events, Tina Fowler and the team at Polo in the Pines (October 8 and 9), I panicked. What to wear? How to behave? What is a divot and how does one stomp upon it?

At the shoot for this month’s feature, Promising Polo, I met players and ponies, sampled the thoughtful food from Murphy’s and Morningside Kitchen and got to know the incredible people behind the event that has raised more than $250,000 thus far for Sarcoma Cancer Research. orthside is dedicated to the enrichment of the communities they serve. Each year, a growing number of individuals, schools and area businesses support Northside through generous gifts of time, talent and treasure to the hospital’s Foundation. While primarily a fundraising organization, the Northside Hospital Foundation also has a strong commitment to building stronger and healthier communities through volunteerism and outreach. Last year, nearly 4,000 Northside volunteers donated more than 30,000 hours of their time to community service projects throughout the hospital’s service areas. Employees, physicians, Auxilians and their families and friends are connected to local volunteer opportunities – organized walks, rides and runs; collection drives for the Atlanta Community Food Bank, Children’s Restoration Network and Partnership Against Domestic Violence; and other service projects such playing Bingo with local seniors. Financially, the Foundation hosts giving campaigns, community events, and other activities throughout the year to raise 14

This health care campus will initially include the hospital and a medical office building, a distinctive women’s center, cancer center, and 900 parking spaces. Northside Hospital-Forsyth has undergone near-continuous expansion since being acquired in 2002. This year the hospital has added three additional floors to better serve the burgeoning North Fulton / Forsyth region. The new construction brings the hospital’s inpatient bed count to 247 (currently 231) and the total number of beds, including observation, to 325. Northside’s newest medical campus is being developed in East Cobb. The 100,000-square-foot Northside East Cobb Medical Center, located at Johnson Ferry Road and Olde Towne Parkway in Marietta, is expected to open in December 2016. This medical center will feature Northside physicians providing services that include imaging, primary care, urgent care and other specialties. Other major health projects are underway that will add even more health care quality, access and diversification – look for Northside to grow in Woodstock, Sandy Springs and Midtown Atlanta. aya Steaks & Seafood, open for less than two years in Sandy Springs, took the place of Seabass Kitchen. The restaurant is completely revamped with the bright blue tile replaced by reclaimed wood. The dark and cozy atmosphere lends itself to intimate date nights or catching up with a few close friends over a bottle of wine. And, of course, amazing cuisine. You really can't talk about Maya without mentioning the chef and owner behind the concept, Mimmo Alboumeh. He's owner of Red Pepper Taqueria restaurants with two locations around the city, known for their locally sourced organic ingredients. However, he wanted to open a restaurant that reflected his time spent in both Spain and Italy. Maya, named after his youngest

daughter, brings his passion for his restaurants. His gregarious personality will make you fall in love with him. I dare you not to. There are two standouts on the starters: The Crispy Lobster Tail and Beef Carpaccio. A very light batter covers the perfectly succulent lobster. And the Aji remoulade with a slight spice and tanginess is the perfect dipper. Even if you’re planning on getting a steak, I'd urge you to try the Beef Carpaccio, sliced fresh daily. If you love wine, that's reason enough to visit Maya, with over 40 wines by the glass, all chosen by Mimmo himself. A Tempranillo, suggested by our server, was light bodied and went well with seafood appetizers. But a spicy Zinfandel was the perfect match for my ribeye. Steaks are the star of the menu with choices of

Filet, Ribeye and NY Strip supplied from Braveheart Black Angus Beef Purveyors. My ribeye was juicy and oh so flavorful. Although there are over 10 "steak addictions" (toppings), I chose the simple, M' sauce, not too overpowering with a slight kick. Seafood fans should not miss the Chilean Seabass bathed in a lobster broth. Although I loved my comfy booth with a view of the entire restaurant, Mimmo's favorite spot is the high top in the front of the restaurant that overlooks the kitchen. He calls it the Gangster booth. Maya Steaks is a lovely addition to the Sandy Springs neighborhood. Pop in soon and find out for yourself. Just don't take the Gangster booth, I'm planning on being perched there.

he sixth annual Elegant Elf Marketplace returns this year, showcasing 85 carefully selected local and regional artists, craftsmen, gourmet food purveyors, and unique gift vendors in jewelry, handcrafted fashions, fine crafts, home and garden, handbags, toys and more. The upscale two-day “shopping for a cause” fundraiser is presented by the Sandy Springs Society. Heading up the Sandy Springs Society for the 2016-2017 term is Carol Anne Hendrix. She is joined by a leadership team of four energetic chairpersons: Barb Mutz, Melissa Patterson, Belle Cameron Pierce and Susan Sutterfield. Along with one advisor, Valerie Love, they are working alongside 310 volunteers to present the 2016 show with a new lineup of special entertainment and new attractions this year. This lineup includes student performances from local schools, authors and a fashion show, highlighting the clothing and jewelry of many of the talented vendors. Funds for these programs are solely raised by two major fundraisers per year: The Elegant Elf Marketplace in November and Tossed Out Treasures in March. To date these events have raised over $3.2 million for the grants program. “We are strictly an all-volunteer organization working to fund our grant program that supports Heritage Sandy Springs and several other non-profits in the community,” says Carol Anne Hendrix, current president of the Sandy Springs Society. “Our Marketplace is the perfect opportunity for people that enjoy shopping and supporting the community. That means that in a race to be the first and get to market earliest, restaurants — always worried about the competition — will often try to open as quickly as they can. But that can mean restaurants in their early days are sloppy affairs, with servers still learning the ropes and cooks still perfecting their dishes. That's not the case at Jinya Ramen Bar, a new Japanese noodle eatery in Sandy Springs. From day one, Jinya has been ready to ladle up bowls of the rich, flavorful noodle soup — and much, much more. While at other spots young service staff can struggle with tough-to-pronounce menu items and explaining a cuisine to guests, Jinya's service is smart, efficient and on top of just about any question tossed their way, whether from a ramen pro or a noodle newbie. In fact, this Atlanta location of Jinya — a chain that perfected its formula in Japan then move to the States, first by way of Los Angeles — had to undergo a rigorous quality review from the Jinya higher-ups. And while the ramen bigwigs might tell a new store it needs a few more days or weeks to perfect its recipes, service or operations, the Sandy Springs Jinya — the first Georgia location

— was deemed ready to go even before its official grand opening. And Sandy Springs has clearly been ready for Jinya — located in a strip mall complex at the corner of Roswell Road and Hammond Drive, the restaurant has seen hour-long waits and lines out the door within a few days of its early July opening, despite the intense summer heat. The noodles are the star of the show, and one of the strongest aspects of Jinya is the ability to either cede control or to customize. You can go with the preassembled combinations — the Jinya No. 1 takes a spicy chicken broth and roast chicken broth, fills a bowl with thin ramen noodles and tops it with egg, green onion and bean sprouts for a lighter option, or opt for the Cha Cha Cha ramen, a fragrant bowl of creamy pork tonkotsu broth rich with roast pork, a whole seasoned egg with a creamy yolk, onion, scallion, garlic and fish powder, served with a thick noodle and an optional side garnish of fresh garlic to press into the soup for even more of a kick. But building your own ramen bowl makes for a great way to sample certain flavors by not overdoing it with the toppings — get your server to guide you, from broth flavor (pork? chicken? half and half ?) to noodle size to the more than

two dozen options to dress up the soup — bamboo shoots, broccoli, dired seaweed, corn, ground pork and much, much more. And while the noodles are the clear star at Jinya, pay attention to the flipside of the menu for a section listed confusingly as "tapas" (just because they're small, shareable bites doesn't mean they're Spanish). A creamy shrimp tempura takes crisp fried shellfish in a rice-flour batter and slathers on an addictive, subtly spicy mayo sauce, while similarly fried Brussels sprouts get a dash of flavorful, funky truffle oil. The takoyaki octopus ball are a popular dish, crisp and creamy and flavorful with green onion and covered in a flurry of bonito flakes, a dried fish that adds a salty punch to the dish. And best of all? Jinya's ramen, whether ordered from the lively bar, the cozy tables or on the modest patio, is available every day. Good ramen broth takes days to make, and some intown restaurants have turned it into a cult dish available just once a week — it's great to have a reliable place offering rich, flavorful comfort food in boundless variety with consistent quality. A

s a dedicated beer writer, consultant, judge, show host, lecturer and sincere advocate under the alias Ale Sharpton, picking my favorite beer can always be a challenge due to constant introductions of new additions. Thanks to the craft beer boom especially throughout the last decade, bars, retailers and restaurants are beginning to truly appreciate the vast tasting profiles ales and lagers provide, directly increasing the demands of constant innovation. Well, during my years of research, it often becomes difficult to choose a favorite within this growing plethora of liquid gold. However, when I do find one that wows me, I let the world know. Enter the Creature Comforts Automatic Pale Ale direct from Athens, Georgia. The word “pale” can often be correlated to lacking color or vibrancy. Of course, the “pale ale” term is simply a beer style in relation to its light color, but everything else about this fantastic beer is the exact opposite. Making its debut in June of 2016 by perhaps the most revered brewery in Georgia since its inception two years ago, the Automatic is vibrant, refreshing, and simply a lip-smackin’ pour of excellence. Both the aroma and taste boast notes of pear, pineapple, and a tad of grassy earthiness mostly due to the ingenious utilization of Mosaic and Crystal hops. Even more impressive is its drinkability, meaning you can consume a few of these in one “session” due to its merciful 5.2 percent alcohol by volume and light body. Even Automatic’s packaging is stellar, thanks to local Athens painter Michelle Fontaine, who embraced the previous owners of the brewery’s home, a Chevrolet dealership in the 1940s followed by the iconic Snow Tire Company. Adding some pop culture feel of the mid-1900s and soft pastel colors, eyes are easily captivated to its can. And its name? Creature Comforts says, “The name ‘Automatic’ is a nod to the amazing community in which we're located—Athens, Ga. It’s a reference to the slogan of local restaurant Weaver D’s that inspired one of REM’s most prolific albums, Automatic for the People.” REM is also from Athens. It was truly difficult to follow the footsteps to its big brother, Creature Comforts’ nationally renowned flagship beer—the Tropicália India Pale Ale—but Automatic made it seem like it was, well, automatic to maintain its maker’s illustrious reputation.

In fact, it’s a refreshing approach to this style, with more controlled notes of apricot, mango and mandarin orange working with a caramel and toffee backbone. The flavors reach their peak at a cool—not cold—temperature. AROMA:

Wonderfully complex with a fusion of pine, orange and pineapple with a little alcohol heat to wake up the nose in the proper glass like a tulip or Teku joint. WOULD TASTE BEST WITH:

Grilled, glazed chicken; gumbo; chili; Wisconsin sharp cheddar; Jamaican cuisine; fried seafood; Nashville-style hot chicken; and legitimate enchiladas. OVERALL:

Often, brewers of double India pale ales are known to not only boost the alcohol levels well over seven percent, but also make the hops considerably more aggressive in aroma and palate profiles. Jekyll did a solid job balancing the earthy bitterness with the malty base while allowing mentionable notes of mango, pineapple and even a toffee finish so that no single characteristic takes the backseat. I am looking forward to Jekyll’s consistent growth and heightened will to experiment. Things are evidently promising for this Alpharetta gem going into its third brewing year. 28

Parting Thoughts

More than a Meal: a Feature Production. M

ost people view cooking as a chore, maybe a labor of love, but still work. There’s shopping, chopping, sautéing, simmering, boiling, baking, roasting and grilling. For a few glorious moments, there’s the actual partaking of the meal that took all that effort to prepare…and in what seems like a split second, they’re gone – all your people, they leave you with the clean up. Sometimes, this takes even longer than preparing the meal itself. There’s nothing worse than being left alone in the kitchen with a bunch of greasy pots and pans. But, this is a totally different story if you’re Cajun! Cajun cooking isn’t just going through the motions; it’s a total EXPERIENCE, a feature production, if you will.

REHEARSAL:

Of course, there’s still shopping and chopping (the holy trinity of onions and bell pepper and celery) but it’s all about the people--okay, the food’s pretty incredible, too. The Italians and the Greeks know what I’m talking about as they have similar customs when it comes to cooking…the more, the merrier. After all, someone’s got to taste the cannoli and baklava. STAGING:

Cajuns thrive on the prep process! For example, take a good ol’ crawfish or crab boil. Authentic Cajuns set out to check their crab traps and actually pull up their dinner from the marsh, the others of us buy a sack or two or three (depending on how much company we’re expecting). We rinse and purge, maybe ice them, some salt them, but all have their favorite methods of getting them ready to boil. LIGHTS:

The burner is lit--all the goodies necessary for this perfect formula are in place--the costars: the Creole seasoning, lemons, salt, oil, sausage, corn, potatoes, onions…there’s really nothing that can’t be thrown into the pot--it’s where creole gets its name…a melting pot of many different people.

CAMERA:

This is when the crowd starts to gather. The crabs and crawfish crowd into their new, steaming hot tub! Here’s where it comes in handy to be ambidextrous as there is always a beer in one hand and a paddle to stir the mud bugs around in the other. It is now an all out event…. a major feature production under way. ACTION:

Sounds and smells unlike any others in the world inundate this space-spicy cayenne aroma fused with lemon zest--kids running around with live crawfish as weapons and adults taking it all in anticipating their mouthwatering treats ahead. Cajun accents yelling over the roaring butane burner and Zydeco music just add to the experience. These echoes and scents spill from the backyard boil--a little slice of heaven on earth. FINALE:

Finally, hundreds of beautifully boiled crimson creatures are spread across a newspaper-lined table, or a more sophisticated set up with a hole in the middle for easily discarded shells. Chow time! Piles begin to mount as the faster peelers pull ahead. And don’t forget those costars…onion dip with saltines…maybe some oysters on the half shell… mayo/ ketchup concoction and optional hot sauce for dipping …corn and potatoes and all their boiled friends. A feast of happiness. CUT:

More batches follow and eventually, it grows quiet, as there are fewer and fewer mudbugs on the table. Everyone is fat and happy. Ahhhh! Cleanup--easy: a hose and Dawn dishwashing liquid, and a quick prayer that the garbage is running the next day. There’s no experience quite like it…a good ol’ Cajun crawfish boil. It’s so much more than just a meal. LET THE GOOD TIMES ROLL! THAT’S A WRAP!
