The Farmer Fund was created in 2008 to provide the resources necessary for farmers to reach their full potential, opening the door to scholarships, zero interest loans, updated tools and gadgets, and certifications, going on to award $27,000 in grants to deserving farmers in 2015. Partnering with other organizations allows Freshfarm to expand their reach and connect with a broader audience. Together with DC Public Schools, they were able to introduce FootPrints, a program educating children about the benefits of healthy eating. “The kids get so excited about eating kale and radishes, and we’re able to introduce them to foods they otherwise wouldn’t be interested in,” Julia says. Through the program, they’re learning harvesting skills, cooking techniques, and, in 2016, caught the eye of former First Lady Michelle Obama, who paid a few Watkins Elementary FootPrints students a visit and explored the world of healthy eating. Freshfarm has 14 market locations throughout the Washington, D.C., metropolitan area, each layered with locals selling goods that were grown right in the district’s backyard.

LOCAL GROWER OFFERS FRESH-PICKED FAMILY FUN EVERY JUNE IS THE START OF A NEW SEASON AT POTOMAC FARM MARKET, WHERE KEEPING THE PRODUCE FRESH AND LOCALLY SOURCED IS PROPRIETOR STEVE MAGASSY’S RECIPE FOR SUSTAINABLE SUCCESS. Potomac Farm Market has been family owned and operated since 1988. Steve reincorporated in 2007, and it’s been his passion project ever since. Steve was raised in Potomac and started getting his hands dirty in farming when he was a kid. The modest property at the corner of Congressional Parkway and River Road is his grandparents’ homestead and still the central hub of the market, in addition to other locations in North Potomac, Glen Echo, McLean and Spring Valley. “I’ve been doing this since high school,” he says. “I’m a big fan of agriculture; I have a big interest in growing—always have.” During the off-season, the land where rows of everything from tomatoes and pumpkins to vegetables and Christmas trees grow throughout most of the year January-March is barren and empty, but Steve says that when things are in full swing, “It’s a zoo.” When the market reopens in June for the summer months, there will be rows of juicy peaches, sweet corn, melons, mouthwatering tomatoes and more—a lot more. “You can’t buy my product in stores,” Steve says. “Homegrown tomatoes? You can only get those here. We bring the farm to you.” June through September is mostly produce and cut-your-own flowers, then the market switches to pumpkins for the fall, followed by Christmas trees. It also offers firewood during the winter. Steve prides himself on the emphasis he puts on his products being fresh, sustainable and local. “Everything is grown within 10 miles of where you’re standing, and some of it 50 feet or less,” he says. “That’s what separates us from any other farm market. Nothing’s coming from Canada or Mexico. Sometimes we have to supplement if it’s early or late in the season, but everything is locally sourced, either from the Eastern Shore or other parts of Maryland. Many farm markets are not solely Montgomery County-grown.” While Potomac Farm Market doesn’t offer the opportunity to get your own hands dirty with pick-your-own options, Steve promises everything available for purchase was grown naturally and with organic practice, “Everything is picked each morning around sunrise,” he says. “We don’t refrigerate.” Steve says the community atmosphere is what keeps him invested in the business. “Whether it be a Grandma getting a tomato, someone getting flowers, kids getting pumpkins, a family picking out their Christmas tree—our job is to put smiles on faces.” Potomac Farm Market is open from 10 a.m. to 6:30 p.m. seven days a week. SUMMER PEACH COBBLER Using freshly picked sweet peaches from Potomac Farm Market, you can savor this easy dessert all season long. INGREDIENTS + 1/2 cup unsalted butter + 1 cup all-purpose flour + 2 cups sugar, divided + 1 tablespoon baking powder + Pinch of salt + 1 cup milk + 4 cups fresh peach slices + 1 tablespoon lemon juice + Ground cinnamon (optional) DIRECTIONS 1. Melt butter in a 13-by-9-inch baking dish. 2. Combine the flour, 1 cup sugar, baking powder and salt. 3. Add milk, stirring just until dry ingredients are moistened. Pour batter over butter. Do not stir. 4. Bring remaining 1 cup sugar, peach slices and lemon juice to a boil over high heat, stirring constantly. Pour over batter. Do not stir. Sprinkle with cinnamon, if desired. 5. Bake at 375 degrees for 40 to 45 minutes or until golden brown. Serve warm or cool.

Heighten the traditional flavor by substituting the protein with tofu, adding herbs like basil, cilantro and mint, and mixing in apples and ginger. This combination of flavor enhancements complement each other and give the broth an element of sweetness while the spices and tofu maintain the savory element.
EAST VEGAN PHO WITH BLACKENED TOFU B R O T H I NGREDIENTS: + 3 star anise, whole + 8 cups low-sodium vegetable broth + 3 cups water + 1 medium onion cut into 4 pieces + 2 whole cloves + 1 teaspoon coriander + 1 ½-2 inches sliced ginger + 1 teaspoon black peppercorn + 1 medium carrot, thickly chopped + 1 cinnamon stick, about 2 inches + 1 teaspoon Bragg Liquid Aminos, to taste + 1 medium Fuji or Gala apple + 1 package rice noodles

DIRECTIONS 1. Cook rice noodles according to package. Drain and rinse with cold filtered water; set aside. 2. Sautée ginger and onion in large cast iron pan until aromatic and lightly browned. 3. Place broth, cinnamon, onions and chopped carrots in large pot over medium heat; bring to simmer. 4. Place apple chunks and ginger in cheesecloth or tea bag. Place remaining spices in another bag. Add both bags to broth along with water. Cover; let simmer for 20-30 minutes. 5. Strain broth into an empty pot. Set bags aside to cool. Discard any veggie chunks from the broth. 6. Once bags are cool, squeeze over broth to express any remaining broth. 7. Add liquid aminos to broth and taste. Adjust seasonings as desired. 8. Press the tofu. Place tofu block between two sheets of paper towel and place a weight on top of the tofu without breaking it. 9. Mix paprika, garlic powder and black pepper in small bowl. In a shallow bowl, mix liquid smoke and liquid aminos. 10. Marinate tofu in liquid mix for 4-6 minutes, followed by dipping tofu in seasoning mix. Add oil of choice in skillet and sautée tofu on high until blacked and crispy on the outside.
Kianna Shepherd, founder of Zen Eats Co., advises her readers to step outside the box and incorporate fresh fruits and vegetables in meals regularly as a substitute for animal products. Simply swap chicken for tofu, or milk-based ice cream for coconut, which Kianna says is a personal favorite. “It has a texture and freshness that can’t be imitated with regular ice cream.” Some suggested Pho Toppings include basil, cilantro, scallions, mint, green onions, sauteed shiitake mushroom, sprouts, Sriracha and lime wedges.
