I

was told at a young age that the way you feel about yourself is ultimately the way others will see you. That is something I have carried with me through life and I have experienced that my attitude, mind, emotions and view of myself are in direct reflection of my physical health. So to start out the year right we are making our January issue all about Health & Wellness. Whether you start this year out with a New Year’s resolution to get healthy or to just continue in your healthy lifestyle, we’ve got some great ways to get outdoors and get our fitness on. We also have some great recipes for the whole family and help to curb that late night chocolate fix without all the calories. Some fun events are going on around town this month. For starters there’s the 44th annual Barrett-Jackson Car Auction, which is always a personal favorite for my dad and me. Then if you’re willing to travel a bit there’s the 20th annual Glendale “Glitter and Glow” block party featuring hot air balloons and 500,000 twinkling lights with more than a dozen bands performing all genres of music.

T

he name of the restaurant, Culinary Dropout, intrigued me. Knowing it was part of the renowned Fox Restaurant Concepts, I anticipated an evening of exploring different types of cuisine. From the minute I arrived up to my last bite, the restaurant lived up to its reputation. Culinary Dropout opened in January 2010. It is was the first “Dropout” in the Fox chain stand considered the “rebel child,” breaking the rules with uniform-free staff and relaxed ambiance. Upon arrival, I was pleased to find an oversized, inviting patio

with a large indoor/outdoor bar. The restaurant opens into two main areas. The left side, where live musicians perform on weekends, has a pub-style feeling and kitchen view. The right side is set up with tables, comfortable, upholstered chairs and overstuffed leather benches. A rustic wood floor and large chandeliers create a rustic, inviting ambiance like visiting a friend’s home. PUB STYLE GRAZING

An affordable grazing menu brought a steady flow of diners who enjoyed a lively, fun atmosphere. A build-your-own antipasti offers a selection of choice of meats, cheese and snacks. I could pick as little or as much from the sweet and savory choices. I sampled the prosciutto, fig, prairie breeze cheddar, date and walnut terrine and toasted ciabatta drizzled with garlic, olive oil and balsamic. I loved the sharpness of the white cheddar cheese with the sweetness of the figs and dates. Next, I sample the pretzel and provolone fondue platter. The homemade soft pretzels are fantastic dipped in the creamy cheese. It’s a definite winner and a very popular item on the menu. Equally enjoyable are the homemade breadsticks, Grissini, that are made with chopped bacon bits added to the dough and rolled in parmesean cheese prior to baking. 14

“Our wide varieties of appetizers are fun-to-the-table items and the great price points allow our diners to experiment,” states General Manager Kory Kilmer, who recently joined the Fox family. A menu must-try is the kale and sweet potato salad made with apples, roasted and fried sweet potatoes, pomegranates, goat cheese and pecans served with a champagne vinaigrette dressing. These simple ingredients combined bring a plethora of flavors to each bite. For an entrée I sampled the 36-hour pork ribs, Korean-style ribeye cap and the rainbow trout. All were equally delicious it was hard to pick a favorite. The pork ribs and rib-eye were moist and tender and the rainbow trout was cooked perfectly and melted in my mouth. It was served with caramelized shallots and toasted almonds. Other popular items are the meatloaf, fried chicken, pub burger, and a nice selection of sandwiches served with coleslaw. The housemade potato chips are served with their famous onion dip and the truffle fries are thin and crisp. Yesterday’s soup is a small batch that is soaked for 24 hours and can be corn chowder, chicken noodle or chili, just to name a few. NOTABLE DESSERTS

Chef Fred Flores wanted me to try the homemade desserts and, though already quite full, it wasn’t hard once I dug into the yummy salted caramel custard with caramel homemade popcorn. The warm monkey bread with cinnamon apple brioche and vanilla ice cream is sinfully good. Just as tasty are the chocolate ganache cake with graham cracker and chocolate pudding, and the Bourbon black bottom pie.

Chef Fred moved to Arizona in 2005 from New Mexico and graduated from Le Cordon Bleu in 2007. He worked at Bourbon Steak for five years before joining the Fox family in 2012 at Olive & Ivy. Then he opened The Yard restaurant before coming to Culinary Dropout in October 2013. DROPOUT SUCCESS

Leave it to Sam Fox and Chef and Vice President Clint Woods, both culinary school dropouts, to come up with a unique, laidback dining concept. The waiters build relationships with their customers and make them feel like guests in a home. My waiter, Corey, was extremely knowledgeable and thoroughly explained the menu. He likes the restaurant’s atmosphere and describes it “as a gastro pub with a rebel side where the focus is on the food and not what you wear.” As exiting General Manager Blake Mathias puts it, “We’re a place where you can come and relax, wear plaid, have a beard and get great food with stellar service.” That’s exactly the enjoyable evening I had. and I have been greatly changed by our son’s medical conditions and pediatric feeding issues; often infants and children cough, choke, gag and vomit at mealtimes and 15,000 children in Arizona alone are affected. My son suffers from dysphagia, and aspirates when he swallows. It’s been a rough road, but an organization called Feeding Matters has greatly supported my family and me. It allows you to snap pictures of your children’s artwork, organize them by date, make albums of the pictures for each of your children at the end of every year or whenever, or even email the pictures to family members. I worked for the SID (Sports Information Director) throughout college for the Vanderbilt Baseball team, and I was also president of my sorority. I am a girly girl, but I like my sports too.

1/4 teaspoon Honey 1 tablespoon Water, Purified & Distilled 1 wedge-yield Lemon Juice, Raw 10 Lg Onions, Spring Or Scallions, Raw 1/4 teaspoons Hot Sauce 1/4 teaspoons Black Pepper, Ground 1/2 teaspoons Celery Seed 1/2 teaspoons Sea Salt 2 tablespoons Olive Oil, California, Extra Virgin 3 lime-yield Lime Juice, Raw 24 oz Salmon, Wild Caught Combine: 1/3 cup Lime Juice, 2 Tablespoons Olive Oil, 1/2 teaspoon Salt, 1/2 teaspoon Celery Seeds, 1/8 - 1/4 tsp. Black Pepper and a few drops of Hot Sauce

Use 1/4 of a cup of above combination and marinade the Salmon for 10 minutes to 1/2 hour. Take the remainder of above combination and ADD 1/4 cup of chopped scallions, 1 Tablespoon of fresh Lemon Juice, 1 Tablespoon of Water and 1/4 teaspoon of Honey. Mix it all together and set aside. Grill or cook the Salmon to your liking. Serve with remaining “sauce” Citrus and Salmon is a classic combination that will get your taste buds tingling. Packing a healthy amount of fatty acids from the fish, this dish doesn’t skimp on essential amino acids and omega 3’s that will keep you feeling satiated and provide your muscles with the necessary elements to recover from a hard workout.


Pesto Chicken Pizza

(serves 2)

1/2 cup Cheddar Cheese 1/2 cup Asparagus, Raw 1/4 cup Sundried Tomato 1/4 cup Broccoli Florets, Frozen 3 tablespoons Pesto W/basil, Reduced Fat 1 tortilla Tortilla, Wheat, Lowfat 1 spray Cooking Oil Spray, Olive Oil 1/8 teaspoon Pepper, Black, Ground 1/4 teaspoon Salt, Table 8 oz Boneless, Skinless Chicken Breast

Season chicken w/ salt and pepper, then cook. Set aside, and preheat oven to 400F. Lightly coat a baking sheet with spray, and place tortilla on tray. Spread the pesto on the tortilla, leaving about an inch for crust. Combine other ingredients except cheese in a bowl and toss. Spread evenly over pesto. Top with cheese and bake until cheese is melted and tortilla is slightly toasted. (Usually about 10 min.) This healthy pesto chicken pizza utilizes super-lean chicken breast, is packed with veggies, and substitutes tomato sauce for pesto and crust for a low-carb, whole grain tortilla. The flavors from the basil pesto mix great with sundried tomatoes tie things together in a super healthy (and easy!) alternative to traditional pepperoni pizza.

Chocolate Protein Mug Cake (serves 1)

1/2 teaspoon Vanilla Extract 1/2 teaspoon Cinnamon, ground 1/4 teaspoon Baking Powder 2 tablespoons Pumpkin, canned 2 teaspoons Cocoa, unsweetened, powder 1/4 cup Egg White, raw 1 tablespoon Chia Seed, dried 30 grams Optimum Nutrition Gold Standard Whey – Chocolate

Mix all ingredients together in a coffee mug, mixing dry ingredients first. Microwave for 70-80 seconds on high. A decadent dessert for one to curb any evening sweet tooth, this mug cake also has balanced ratios of protein, carbs, and healthy omega 3 fatty acids. Additionally, the heart-healthy chia seeds provide a fiber boost with 11g of fiber and plenty of antioxidants.

F

or decades now, residents and frequent visitors liked to pretend that Winter in Southern Arizona was our own little secret. While the rest of the country bundles up and prepares to shovel out from their impending Snowmageddon, Valley residents quietly enjoy their meals on heated patios, with little more than a light jacket or sweater to take the nip out of the air. But the fact of the matter is word about the

glory of Arizona winters has been out for a while, and people have definitely been listening. The population boom that came to define the Phoenix metro area in the latter-half of the 20th century was also accompanied by a rise in seasonal residents that came to bask in the desert sun during its milder months. Snowbirds have been an Arizona winter staple ever since, and though specific numbers are hard to come by, estimates have put the number of people that reside part time in the state well over 400,000. But whether you are here all year, part time, or just for a quick visit, winter in the Valley is just different, unique and unrivaled. For those who enjoy a bit more leisurely place for their outdoor adventures, the Sonoran Desert puts on a show just about year round. The desert encompasses seven climatic zones, which means something is almost always in bloom, but February and March are prime for strolling among wildflowers in full bloom.


Where to go might be the hardest question, as the metro area has a seemingly endless amount of city, regional, and state parks to explore. In terms of sheer size, in fact, three of them rank among the Top 25 in the world, including Phoenix’s South Mountain Park and North Mountain Preserve, as well as Scottsdale’s McDowell Sonoran Preserve. “Winter and early spring are prime times for me to work with my clients and capture some really spectacular moments outside with the vibrancy of the desert as the backdrop,” explains Brittney Olson, who owns her own photography business, Shot With Charm. She is also the mother of a curious 3 year old and the pair like to make their own family memories exploring some of the cities local hiking trails. “We do Cholla Trail on Camelback Mountain a lot. My daughter isn’t quite ready to head to the top, but we have so much fun just being together and looking out over the city to even notice. We’ll get up there someday, but I am in no rush for sure!” There is no outdoor activity that is more synonymous with the area than golf, a sport that takes full advantage of the Valley’s 330+ days of sunshine. Metro Phoenix boasts over 220 golf courses, the majority of which are in or around the Scottsdale area, with many consistently ranked among the best to play in the country or even the world. Beyond Phoenix, Arizona as a state is comprised of approximately 85 percent national forests, national parks, recreation and wilderness areas, wildlife preserves and Indian reservations. The options for outdoor adventure are truly limitless. For mountain bikers McDowell Mountain Regional Park is the premier venue in the Southwest and features a competitive-race circuit of three loops totaling more than 15 miles of single track, in addition to the 25 miles of trails that wind through the rest of the park.

Rock Climbers visiting the area have access to some of the best cliffs to scale in the world to the northwest of Prescott in the Granite Mountain Wilderness Area, which is not to say they even need to leave town as perhaps the most iconic climbs can be had on the face of Camelback Mountain. Other adventure seekers will find world-class opportunities for anything from off-roading and hotair ballooning to even skydiving, spelunking (caving), and high-performance car driving, just to scrape the surface. A more traditional winter experience can be found just a short trip away, where skiers and snowboarders alike can get in their powder fix. Less than a three hour’s drive to the north, Flagstaff’s Arizona Snowbowl may be the state’s most notable ski destination with 40 runs/trails and six lifts, Sunrise Park Resort out east is its biggest with 65 runs. Often forgotten is Mt. Lemmon Ski Valley in the Catalina Mountains just outside Tucson, which boasts an admirable 18 runs as well as the title of being the southernmost ski resort in the United States. A whole new slate of events will accompany the arrival of Super Bowl XLIX this winter. The Phoenix Convention Center will be transformed into a pro football theme park to create the NFL experience. That is just part of what will be Super Bowl Central, a 12-block area in the heart of Downtown Phoenix. Something new since the city hosted its last Super Bowl in 2008, Super Bowl Central will feature a concert stage, local food trucks, beer and wine gardens, network broadcast stages and an autograph stage were fans of all ages can shake hands with some of footballs best players from the past and present. Westworld of Scottsdale will play host to the 24th annual “The Super Bowl Taste of the NFL – The Party with a Purpose.” This event is held on the eve of the game and is the most successful charitable event held during Super Bowl Week, and features more than 32 restaurant stations, including one from each NFL city. In addition to amazing food and wine, attendees will have the opportunity to interact with celebrity chefs and NFL greats, all while raising money for food banks in each of the NFL team cities as well as other select hunger relief organizations. In addition to the 16 million people who visit metropolitan Phoenix each year, an estimated 90,000 will be arriving to the area as a result of Super Bowl XLIX. Just around the corner in 2017 the city will again be on the national stage as it plays host to the NCAA Final Four which will again bring thousands more. Whatever reason they come, people that experience the glory of winter in the Valley will want to experience it again and again, that is if they ever leave at all. Growing Older, But Not Up WORDS JIM COSGROVE

M

y New Year’s resolution is to act more like a 5-year-old. I got the idea from my daughters. They laugh a lot. They sing often and loudly. They spontaneously break into dance. They cry and sob and throw occasional tantrums, and then a few minutes later they’re laughing again. They don’t hang onto yesterday or worry too much about next week. I want a little more of all of that in my life. So, I’ve been watching and listening to my girls and learning from them. I realized that the key to success that we adults are endlessly searching for is really quite simple. It’s joy. That is, to exist as joy-filled beings and seek out and extract joy from every situation life throws our way–to be more childlike (not childish) in everything we do. I’m pretty sure all of us understood this when we were kids, but we’ve long forgotten what it’s like to live in the childlike present. A couple of years ago in January my then 5-year-old daughter announced, “This is going to be a cool year!”

And do you know what? She ended up having a cool year. In fact, she had an awesome year. And do you know why? She decided to have a cool year. She chose to make it an awesome year. And it really is that easy. Joy is a choice. It’s not simple, but easy. Despite the loss of a job or a loved one…despite failing health or an expanding waistline or (in my case) thinning hair…despite our circumstances, we can still opt for joy. It’s always there for us to choose or not to choose. We know this is true because we’ve all seen it and heard it in stories of those who overcome tragedy and monumental setbacks. It takes strength of character and a full-throated child-like spirit. So, this year, if you see me riding on the back of a cart in the grocery store parking lot, or singing out loud on the street, or dancing in a fountain, please join me. Jim Cosgrove, aka Mr. Stinky Feet, is an award-winning children’s singer-songwriter, speaker and writer and has been entertaining youth and their families for many years.
