t ha n k sg iv i n g t u rkey THANKSGIVING IS ONE OF MY FAVORITE HOLIDAYS BECAUSE THERE ARE ONLY TWO REQUIREMENTS: GREAT FOOD AND OUR CLOSEST FAMILY AND FRIENDS. We have gathered together from as far from as Anguilla to Aspen to my sister’s home in Nashville and our childhood home in Connecticut. But my favorite Thanksgiving is always here in Las Vegas. Having our celebration in Las Vegas not only allows our party to grow, but also allows me to work with some of our favorite local vendors. My grandmother Rose was a great cook and all of our family holiday recipes come from her culinary collection. She immigrated from Eastern Europe so paprika is the secret ingredient. We also make a turkey meatball version which is a menu favorite at our restaurant Honey Salt.
i n g re d ient s + Whole, Organic/Free Range Turkey, 18-20 lbs + 1 T smoked paprika + 1 T garlic powder + 1 T salt + Freshly ground pepper + 2 T EVOO or high quality vegetable oil + 2 apples + 1 onion
i n st r uc t ion s 1. Preheat oven to 325, set your oven rack on lowest position; remove all other racks. 2. Wash & Dry your turkey throughout; remove neck and livers from inside. 3. Mix together: smoked paprika, garlic powder, salt & freshly ground pepper 4. Combine oil with dry ingredient mixture into a thick paste; rub around exterior of turkey. Be sure to coat the wings, underneath and inside of turkey cavity. (If you run out, just make more paste!) 5. Stuff the cavity with your favorite stuffing 6. Place turkey in a thick roasting pan with sliced onions and apples in the bottom of the pan. Use for flavor to your drippings to make a delicious gravy and add the neck to the pan for additional flavor. 7. Cover the whole turkey with tin foil 8. Cook for two hours, remove tin foil; baste every 30 minutes until finished 9. Total cooking time, approx. 4-4 ½ hours for 18-20 lb turkey, depending on your oven at home 10. Place a thermometer into lower part of the body to register to 165. 11. Let rest for at least half/hour before carving. CityLifestyle.com/RedRock

LOCALLY OWNED (CONTINUED)
“THE WORLD HAS CHANGED, AND THE GYM CONSUMER IS NOW MUCH MORE SOPHISTICATED.”
KILO CLUB IS JUST WHAT 2020 CALLED FOR – A NEW ERA GYM FOR HEALTH, WELLNESS, AND FITNESS. Formerly David Barton Gym, this reimagined multipurpose gym is an experience that includes capped memberships for adults 21 and older, 24/7 secure access, and a med spa and meditation room. Local owner Jea Jung has created a subculture on the west side, where the swagger of a nightclub meets the motivation of a well-equipped fitness center in the middle of Tivoli Village’s grand Mediterranean-style development. Jea’s fitness expertise runs deep from his early days in martial arts, to being a four-time Heavyweight Champion in bodybuilding and powerlifting. His fitness journey continued as he served pro athletes and moved from the east coast to Vegas to serve fitness communities at the highest level by developing premier facilities. Nearly 10 years ago, Jea founded famed City Athletic Club, which catered to the hard-core bodybuilding universe and beckoned athletes and celebrities from around the world. It is Jea’s understanding of the industry and anticipation of needs that allowed him to transition from the competition arena to the luxury market. “The world has changed, and the gym consumer is now much more sophisticated,” said Jung. “The high volume experience is a huge turn off for the new generation of members, and people are seeking high value in their fitness experience.” The capped membership means that Kilo Club stops selling memberships at a predetermined number. And for his 21 and over customers, that idea has resonated. “No crowds, no kids, and luxury amenities,” Jung continued. “It’s not for everyone, but our community of members appreciate this business model.” Since opening in September 2019, Kilo Club has tripled the amount of equipment, built an MMA room with a variety of classes, added med spa services, and hit membership capacity within 6 months. All this plus hand-crafted custom artwork from Thailand, which caps off this locally owned new era fitness experience.
