PASSPORT CUISINES ARTICLE LAURA DILLMANN

W

hile many dream of starting a business, few are able to make it a reality at the young age of fourteen. Yet, that is how it happened for Lake Zurich High School Freshman, Dean Lambertsen, the proud owner of Passport Cuisines. Passport Cuisines makes ethnic cuisine cooking kits with all the necessary dry ingredients to create an entree, two side dishes, dessert, and drinks to serve 4-5 people. The kit saves the consumer time and money by not having to search for expensive, hard to find ingredients. Currently, there are three types of kits available; Punjabi Indian, South African and Korean. Dean’s idea for Passport Cuisines developed while he was a student in the Young Entrepreneurs Academy (YEA!), a year-long after school program that teaches teens how to start a business. The program was sponsored by the Lake Zurich Area Chamber of Commerce (LZACC), where the LZACC's executive director and local business owners served as the instructors and mentors.

“One of our first assignments was to explore business ideas, so I started thinking about my hobbies as possible businesses,” explains Dean. “One of my hobbies is cooking global cuisine. Ethnic friends taught my mom how to cook global cuisine, even taking her to ethnic markets so she could learn how to shop for ingredients. I always noticed how complicated and expensive these shopping trips were, so I decided to create a business that could simplify the process and make it more economical and fun.” With this idea in mind, Dean developed his business plan. Upon completion of his plan, he and fellow YEA! students presented to an investor panel with the hopes of receiving seed money to actually start their businesses. Dean was not only awarded $2,000 to start Passport Cuisines, he was selected to represent his class at the YEA! Regional Competition in Boca Raton, Florida. There he competed against 30 other students, receiving the runner-up Founders Award for his business idea.

After Regionals, Dean completed all of the paperwork and procedures necessary to start selling Passport Cuisines online and at the Lake Zurich Farmers’ Market. Within his first two weeks of selling, he exceeded his yearly sales goal. “Customers love the kits, and have returned to buy more. They use the kits for family meals, gifts, and even teen cooking parties. The kits also introduce customers to global cuisines that they may not have originally thought to cook.” The next goal for Passport Cuisines is to sell kits within a locally owned store. “We have a friend that was able to get her product into a store, so I am hoping to learn how to make that a possibility for my product.” Dean believes his success with Passport Cuisines would not have been possible without the time, talent, and support from the Lake Zurich Area Chamber of Commerce, the local business owners, and YEA!. “For that, I am very grateful and thankful!” Please visit PassportCuisines.com or Passport Cuisines’ Facebook page for more information. he Dictionary defines activity as “the state of being active; action; liveliness; energy, a particular action or sphere of action; meaningful involvement in life interests.” The National Therapeutic Recreation Organization’s philosophy states that research has addressed the value of activity involvement in human development, social and family relationships, and in general, as an important aspect of the quality of life. “An important aspect of the quality of life,” did you hear that? Staying active is important! Think about what makes you, you. The decisions and actions that you make, what to

wear, what to eat, what to read, what to do, where to travel, who to see, what to watch on television, where to worship, when to exercise, what music to listen to…these are the activities of your life, it is who you are. But, if you stop these interests, what would your life would be like? What would it do to your body, to your brain, to your soul? What about laughter? Did you know that laughter, whether real or fake, produces endorphins and increases the serotonin levels in your body which reduces stress? An Unexpected Answer to

Prayer

“C

ome get me. Now.” The text read. “Ruh-Roh,” Scooby Doo said in my head. Dive practice doesn’t end for another half hour. “Why is my son bailing early?” I wondered. Ten minutes later he climbed into my car, squinting. “I smacked so hard my contact flew out,” he said quietly. The whole left side of his face was red, his eye swelling. “I smacked so hard I couldn’t breathe. I had to lay there for like 30 seconds, just to catch my breath. Coach said I could go home.” My son was trying to earn a spot on the state dive team, a rare feat for a freshman, and he had to land a hard dive, a 2 ½, to

qualify. I’ve learned that in any dive that ends in a whole number, you enter the water feet first. But any dive that ends in ½, means you enter the water head first, or hopefully, hands first, in a dive position. And if you can’t get around fast enough, you enter the water face first. Hard. Divers call it a face plant. Or a SMACK. When we got home, I handed my son three things: an ice pack, some ibuprofen, and a stack of rejection letters I’ve received over the past year from various publishers who have rejected my book proposal. “I’ve never been brave enough to dive,” I said. “But I sort of know how you feel.


This is a writer’s version of smacking,” and I read the middle paragraph of a few letters. You know all about the middle paragraph if you’ve ever applied for a job. In college, we called those letters the “Thank you, ‘blank’ you, thank you” letters, and we papered our apartment walls with them. My son didn’t say a thing, but he was up at 4:30 the next morning and back in the pool at 5. I’ve never been prouder. A few days later I woke up early and started to pray. “Dear God, please let my son hit all of his dives today. Please let him qualify for state. He has worked so hard, and he only has two more chances to qualify. Please.” A few hours later I watched as my son failed his very first dive of the day. He was doing 11 dives that day, and he failed the very first one. I watched him swim to the side and take his seat behind the boards, completely dejected. He struggled on his next few dives, unable to recover from his catastrophic start. And that’s when a small miracle occurred. As he was drying off after yet another shaky dive, an older diver from another team approached him. He didn’t know my son, and I couldn’t hear their exchange, but whatever he said transformed my son. My son went from “Diary of a Wimpy Kid” cover boy to Mick Jagger impersonator, strutting around the pool deck like a little rooster. He hit every dive after that, and after each dive, the older boy would meet him at the side and give him a high five. On the drive home, my son said, “Did you see that guy that came up to me?” “Ummm, yeah,” I said. What I thought was, “See him? I want to marry him. What did he say?” “He asked me how old I was. I told him I was a freshman. He said, ‘You’re only a freshman? You’re kidding! I can’t believe you’re trying those dives as a freshman. You are going to be incredible by your senior year.’ And then he high-fived me after every dive! Did you see that, mom?’” I nodded. I nodded, but I didn’t say anything. I couldn’t say anything, because I couldn’t speak. Life is full of smacks: “Your job’s been eliminated.” SMACK. “I’m seeing someone else.” SMACK. “I’m sorry to wake you, this is the police...” SMACK. “We found someone who’s a better fit for this position.” SMACK. “We found a suspicious spot on the x-ray.” SMACK. For some reason, God doesn’t stop us from smacking. He does, however, reward us for not giving up. We can let the water suck us under, or we can suck it up, struggle to the side, haul ourselves out of the water, and get back on that board. My son had the courage to get back on that board, and it was only then that the senior diver came over to encourage him, to give him some needed perspective. While he did not qualify for state that day, my prayers were answered, none-the-less, and my son taught me a powerful lesson in perseverance. Excuse me, I have some more book proposals to send out.

acebook. Twitter. Instagram. Online gaming. Online shopping. Fantasy sports teams. Okay, we’ll just stop there. With the world at our fingertips, thanks to the Internet, it’s easy to get sucked into the digital world. You keep up with friends and family on various social media platforms. You e-mail your boss at all hours of the night. You post photos from your sweet ski trip. We get it—2016 is an online world. Everyone is logged into something. But when is it too much? When do you go from it being a hobby to it being a habit—or even, an addiction? We spoke to addiction psychiatrist from CeDAR (Center for Dependency, Addiction and Rehabilitation), Patrick Fehling, MD about digital addictions to get a better understanding. “The best predictor to someone having addiction to anything is a prior addiction to something else. Those tend to be people who get in recovery from alcohol or pain killers for instance. We get them clean and a new addiction develops—like exercise addiction,” says Fehling. “The same rules would apply for Internet usage—social media has to do with wanting to feel attached and connected to people. People are watching you. The narcissism of humanity, they feel important and their lives are meaningful.”

You have identified a problem. You’ve accepted you have a problem. The second is commitment. You are committed to do better and makes changes. That’s how you would start,” explains Fehling. Okay, shut down by Dr. Fehling, but we’ll still post that stick-figure artwork. So much talent. In all seriousness, Fehling explained that Internet Addiction Disorder often has a duel-diagnosis. Meaning you’re depressed, have social anxiety or something else going on—you want to avoid others so you tend to ignore them and spend time on the computer. “You have found a way to keep partial attachment going while being isolative and having less motivation to change,” says Fehling. It’s time for a digital detox. How do you learn to ignore your Fantasy Football Team? Won’t you get fired if you don’t e-mail the boss at 10 p.m.? Here are four tips to get started: 1. Boundaries. Articulate boundaries with your friends,

For instance, if dinner time and getting kids to bed happens from 6-8 p.m. set a rule that there are no smart phones or computers during that time. 2. Acceptance. If you have accepted that you’re obsessed with going online, be aware as to how often you logon. 3. Commitment. If you’re ready to limit screen time, set up personal goals and stick to them. 4. Mindfulness. Once you’ve set boundaries, be mindful of your emotional state. When you go offline, how do you feel? If you find yourself more agitated and anxious, there may a level of addition. “It’s nice to note that addictions are conditions. They have developed in the brain so you have nothing to be ashamed of—don’t be embarrassed. Our brains just develop these things from pressures. We want to extinguish stigma,” says Fehling.

s we all contemplate the joys of January and the requisite making of resolutions (and the systematic breaking thereof...), I thought it poignant and pertinent to make some resolutions to which I know I can adhere. Really, who likes to start off a brand new year with the best of intentions only to see them slide down the slippery slope? Not me!That's why this list, thanks to Mr. Letterman, is manageable and meant to make you smile. 10. Stay out of the gym during the month of January. There will be 1,003 people there who think they can go nine miles per hour on the treadmill because they saw some yahoo on Biggest Loser do it, and they're sure it's not that hard. Get off before you hurt yourself. 9. Refuse to do any more stupid people tricks. I entered some ridiculous 34

50,000-words-in-a-month novel writing contest in November. First of all, I don't have 50,000 words I can put in an understandable sequence in a month. Second of all, don't you people have lives? Moby Dick is already taken. 8. Do not buy one more appealing paperback book until I have finished one of the seven appealing paperbacks on my bedside table. I don't care if it's got Oprah, Michelle Obama, Ellen DeGeneres, Mackenzie Phillips, and Snoopy all on the cover, I'm not buying. 7. I am not going to pay more to check my underwear on a flight than I pay to check my whole person. Do you hear me? I'll take a cab to Mazatlan, I swear. 6. Insist that wait staff at restaurants learn the soup of the day before they approach my table. True story... recent outing to a restau-

rant in the Legends; asked the waitress what the soup was; she replied, "Umm, something with chicken in it, I can't remember the name." Oh, that narrows it down. 5. Put my Christmas cactus in the closet so it blooms on Christmas instead of November 19th. Oh, for the love of penguins, does this mean Al Gore was right? 4. Use the word "Shankapotomus" more. Seriously, try it. "Catapotomus, Dorkapotomus, Freakapotomus," isn't that fun? 3. Watch more prime-time television. Really. I'm the only one I know who can't keep up at a cocktail party because I have no idea why Madmen aren't sitting on the laps of Desperate Housewives. 2.
