ike and I are the proud parents of five fur babies: three dogs and two cats. Like any other family with very specific dynamics, I am in the unfortunate role of disciplinarian. Since I am in and out of the house all day, I am left to the task of making these crazy animals behave. I am “the mean mama” that makes them stay off the couch and not go on barking frenzies. The minute Mike walks in the door they run to him tails wagging and excited. When I come home they just want me to let them outside in hopes that their daddy will be pulling up soon. When he sits down on the couch it’s a battle royale for the coveted place on his lap, our 100-lb boxer mix included. I am the one that makes them stay on the floor if I want to sit next to my husband, yet another strike against “the mean mama.” I am the one that makes them go into their kennels every night. He is the one that wakes up with them in the morning and lets them out of their kennels. He feeds them and gives them treats while I have to punish them for getting into the trash.

So now you see how unfair this dynamic is. Recently I have taken to bribing them with string cheese to get them to love me best. It works well for all of the two minutes its takes them to finish it off. I am not complaining, just resigned to my role in this crazy family of ours.

This month’s issue is dedicated to all of you that spend your time protecting and saving the animals of Fort Worth. I was trying to find the right words but this quote from Kevin E. Mackin, O.F.M., Franciscan of the Holy Name Province, says it all: I believe every creature is important. The love we give to a pet, and receive from a pet, can draw us more deeply into the larger circle of life, into the wonder of our common relationship to our Creator.

Around Town THE POLICE K-9 SUPPORT FOR FORT WORTH Founded in November 2013 as a non-profit, 501(c)(3), organization, primarily, to aid in the medical cost of the retired Fort Worth Police service dogs. Upon retirement of a police service dog in Fort Worth all veterinary costs fall onto the handler, who assumes full financial responsibility for the dog. This fund was created to ensure that the retired police service dogs are taken care of long after their tour of duty. As many pet owners know, the cost to maintain the health and wellness of aging dogs can be very costly. The hazards of apprehending felons, seizing illegal narcotics, and shift work are hard on the dog’s bodies. These dogs retire to their handler and they deserve the best care available to them in their latter days, as a cherished member of the handler’s family. Secondly, the fund will ensure that unit has access to equipment, otherwise not provided through city funding due to recent budget cut-back city wide. Thank you in advance for your continued support of these deserving police service dogs. PoliceK9SupportFortWorth.org

A Superior Grade of Wine Bar
GRAND CRU BRINGS A STUNNING FLAVOR PROFILE TO MAGNOLIA AVENUE ARTICLE DOUGLAS MATUS | PHOTOGRAPHY HAYLE HULLETT
G
rand cru - /grand kroo/ - noun - (French official classification) wine of the highest grade, or the vineyards that produce it. A bold classification, and one that wine lovers the world over respect. An almost unobtainable standard of excellence, “grand cru” signifies the pinnacle achievement of the grape and the art of winemaking. A mere 32 vineyards in the region of Burgundy have this designation, and between them produce some of the world’s most desirable wines. A wine bar or shop that adopts this name for its own makes a clear statement as to the quality of its wares; Fort Worth’s Grand Cru, located on Magnolia Avenue, not only lives up to its name — but extends this signifier of vinicultural excellence to all aspects of the business, from food to atmosphere, and even craft beer. Karen and Kayne Chu have grown their business from a small, primarily retail space to its current iteration as a wine bar and eatery in the heart of Fort Worth’s Southside. “We got our start in the Bryant Irvin, I-20 area in a little shopping center,” says Karen. “We had maybe 10 wines by the glass. We stayed there for five years, and when our lease was up, hurried to Magnolia as soon as possible.” The move spurred an evolution of the business, with a focused shift to the experiential. While Grand Cru still sells wine for customers to take home, the emphasis now is squarely on the pleasure of fine wine and food in a comfortable and elegant environment. “The conception for Grand Cru came to us in the early 2000s,” says Karen. “My husband and I have always been food and wine lovers. We traveled a lot and would seek out cool wine bars, shops, and mom and pop places. We decided to open a place that incorporated the best aspects of all of them.” Karen and Kayne relocated to a 1920s-era building, where the exposed brick walls and bottle displays create an atmosphere reminiscent of a European bodega. More than a simple homage to international wine bars, though, Grand Cru distinguishes itself through the variety of its food and drink offerings. “We have wines from all over the world,” says Karen. “We try to have wines from surprising places, like a Chardonnay from Hungary, 12

or a Croatian vintage. We offer more obscure wines, and a lot of things you’re not going to see in grocery stores.” Guests can sample selections of Grand Cru’s wines at weekly flight tastings, offered on the weekends with changing, thematic selections. “We might focus on a single region, or grape or winery. We always have a red and white to choose from, and offer them at a special price. Our flights can contain wines we don’t normally sell by the glass.” If you’d rather just drop in for a glass or two, Grand Cru offers approximately 75 wines by the glass at any given time, with virtually everything available by the bottle or for retail purchase. As for the food, expect more than your average wine bar snacks. “Everything on our menu is something that I would want to serve to guests at my home,” says Karen. “We have a lot of shareable items, such as cheese and charcuterie, but more substantial choices as well. Every week we offer a fresh, housemade soup, and have flatbread pizzas that come fresh from the oven.” In addition to its food menu, Grand Cru offers a monthly fixedmenu wine dinner. The evenings develop around the wine selection, usually based on a region, with courses paired for each wine. “Our wine dinners are a lot of fun,” says Karen. “We make them educational events, with speakers that lead participants through the tasting, and supplemental audio/visual components.” One more special feature of Grand Cru allows customers to try ultra-premium wines by the ounce, rather than splurge hundreds of dollars on a bottle. “We use the Corvine system, which allows us to extract wine from a bottle without ever pulling the cork. This ensures that each pour is as fresh as the first, and gives wine enthusiasts the opportunity to try expensive wines without the financial commitment. For example, for as little as $15, you can say you’ve had Gaja Barolo Sperss Barolo without having to fork over more than $250 for the bottle.” If you enjoy wine, you owe it to yourself to experience what Karen and Kayne’s place has to offer. As far as wine bars go, Grand Cru on Magnolia is a rare vintage indeed.

est Fort Worth dog owners can howl with joy: a new dog park, the city’s second after Fort Woof, is set to open in November on the grounds of North Z Boaz Park. Located just west of downtown, the new park has been developed on land formerly occupied by Z Boaz Golf Course. The dog area will occupy a full 10 acres of the park, with separate sections for large and small dogs and amenities sure to elicit barks of approval. Funded through a combination of public and private funds, the dog park, once finished, will stand as a stateof-the-art facility that complements Fort Worth’s reputation as a city of dog-lovers. “We conduct need assessments and surveys, and dog parks rank highly,” says David Creek, the Parks Department’s assistant director of planning and resources management. “With all of Fort Worth’s growth and urban development, people who move into the central city need a place to exercise their pets. This provides a location for that.” The new dog park will offer much more than a place for Fido to stretch his legs, however. The city’s acquisition of the Z Boaz Golf Course provided a rare opportunity to develop a substantial new outdoor space in a centrally located area. As Mr. Creek explains: “It’s very rare to have the opportunity to acquire a site of that size, with that kind of rolling terrain and mature trees, in an urban environment. It gave us enough acreage to do just about everything.” North Z Boaz Park covers a total of 138 acres, with a master plan that includes space for basketball courts, generous open areas, wildflowers and soccer fields. Of course, for many people (and pets), the dog park will
stand as North Z Boaz’s crown jewel. The fully irrigated and lushly grassed dog areas will measure seven acres for larger animals, and three for smaller. For a point of comparison, the new dog park’s total size — 10 acres — is twice that of Fort Woof. Located in Gateway Park east of downtown, Fort Woof has admirably served the needs of Fort Worth’s dogs. The new park, which will greatly expand the accessibility of dog-friendly areas, represents an upgrade as compared to what Fort Woof can offer. In addition to the increased size, the new dog park will allow dogs to beat the heat through access to two ponds. The pond in the larger area will persist as a feature from the former golf course, repurposed for canines. Not wanting small CONTINUED >

dogs to feel left out, planners decided to build a second pond in the 3-acre area. The overall lushness of the facility will set it apart from other dog parks, and give Fort Worth yet another premier space for the enjoyment of the outdoors. “The natural landscape of the North Z Boaz dog park will set it apart,” says Creek. “With Fort Woof, we found that one of the really important things was to have a good grass surface. In order to support this, the new park will have full irrigation, which not only promotes grass growth, but helps filter the waste that the dogs produce.” A preparatory step of the dog park’s creation called for the construction of a 140-space parking lot. This lot, scheduled for completion before the dog park opens, will benefit not only park goers, but anyone who wants a parking opportunity off Camp Bowie Boulevard. The first phase of the dog park’s creation will result in the general off-leash play areas for large and small dogs, along with fencing and the irrigation apparatus. The city of Fort Worth allocated the initial funds, which included $500,000 from a 2014 bond allocation for park improvements, for the park’s infrastructure. A partnership with a local donor’s group will enable the dog park to become the state-of-the-art facility that planners and community members have envisioned. The second phase of the park’s construc18

tion will add security lights, while an eventual third phase will complete a range of amenities set to include shade shelters, benches, picnic tables and dog washes. “A lot of the dollars associated with our Phase 3 come from fundraising,” says Creek. “Community members are placing calls and raising funds on an ongoing basis.” This commitment on the part of the west Fort Worth community should come as no surprise. While an excellent facility in its own right, Fort Woof’s location made it less-than-ideal for residents of the city’s western area. Residents of Fort Worth’s increasingly urbanized central area will appreciate the opportunity to enjoy the outdoors with their furry companions. “The people who buy the condos and apartments want to have their pets, but they didn’t have a place to exercise them,” says Creek. “Now they will have a location for that. Fort Worth is very pet-friendly, and this new park will give people a place to go with their dogs and associate with like-minded folks.” The news of the dog park surely has owners and dogs alike straining at the leash in anticipation. Though the North Z Boaz dog facility has no opening scheduled as of this writing, planners have identified a target date: November 2015. Mark your calendars, pet-owners; Panther City’s about to go to the dogs.

HORSES WITH HEART SERENDIPITY EQUINE HAVEN EMPLOYS THE HEALING POWERS OF HORSES TO REHABILITATE THOSE IN NEED ARTLCLE DOUGLAS MATUS | PHOTOGRAPHY HAYLE HULLETT

n east Fort Worth, right off Meadowbrook Drive, lies an 8-acre horse ranch. This ranch doesn’t breed animals for sale, though, nor does it offer trail adventures or riding lessons — at least, not in the typical sense. The horses at Serendipity Equine Haven function more as partners than products; one might refer to them as “therapists,” both emotional and physical, to the people they serve. A non-profit facility, Serendipity Equine Haven offers its services free-of-charge, and relies on donations for the continuance of its mission. This noble initiative — the only free facility of its kind in the Metroplex — exists through the efforts of owner Debbie Truman and her dedicated team. Debbie’s own experience of trauma first opened her eyes to the healing powers of horses. “Years ago, I contracted Lyme’s disease,” says Debbie. “I was in a wheelchair for a period and couldn’t talk; it was quite a bit of disability.” A friend of Debbie’s convinced her to ride horses to aid with her rehabilitation.

West FW Lifestyle | August 2015
“We work entirely off donations. I promised God that if I could feed and take care of the horses, I would not charge a penny for these services.” says Debbie.
The effort yielded pronounced dividends for Debbie’s recovery process. “When you get on a horse, it can help you re-learn how to walk, because a horse’s gait mimics that of a human," Debbie explains. "Riding horses also stimulates the right and left portions of the brain. The horses, along with many people, helped me learn to walk and talk again. After my experience, I wanted to help other people utilize this gift that horses have through therapeutic riding.” Serendipity Equine Haven developed over time, and Debbie’s efforts began informally as a dressage coach. “When you have horses, kids just kinda show up,” says Debbie. “Some of the kids had issues with things like bullying, and I started teaching them dressage. Later, when the kids entered high school, my husband and I sponsored some of them in rodeo clubs. As people heard about us, children with disabilities began to seek us out.”
The creation of Serendipity Equine Haven as a non-profit began in earnest in 2007. Debbie received a lot of help, namely from her two sons, Christopher and Scott. Tragedy threatened to derail their efforts with the sudden death of Christopher at age 24. “After Christopher was killed, we decided to continue with his shared dream of helping children and families through equine therapy,” says Debbie. “We did it in memory of him, and named the facility for my granddaughter, Serendipity.” Serendipity: an unexpected blessing. In the years since, Debbie’s facility has specialized in serving those who have lost their funding for equine therapy. “We take on children who don’t have money or insurance, or who have lost their grants,” says Debbie. “We work entirely off donations. I promised God that if I could feed and take care of the horses, I would not charge a penny for these services.” Serendipity Equine Haven currently has a need for funds to construct a cover for the outdoor riding arena. In the absence of the cover, those who arrive for therapy must suffer the extremes of Texas weather. In the event of bad weather or exceptionally hot days, Serendipity must curtail what it can provide. “The heat has left us in desperate need of a cover,” explains Debbie. “We’ll be out in the sun for five or six hours at a stretch in the arena, leading children and adults through their sessions. We sometimes have to limit our classes because we don’t have shelter.” Serendipity Equine Haven also has need of volunteers to assist in the furtherance of its mission. The facility accepts volunteers aged 14 and up, with younger volunteers considered on a case-by-case basis. Volunteers receive training on how to interact with horses and children, and can also help out with the facility’s organic garden. “We will take as many volunteers as we can get,” says Aundrea Peacock, Serendipity’s volunteer coordinator. “Many junior volunteers come from broken homes, and we give them a chance to redirect their energy toward something positive.” Serendipity’s spirit of rehabilitation extends not only to riders and volunteers, but also to the horses. “We have five rescue horses,” says Debbie, “and they’re all so grateful. They’re taught how to love through the kids and their families. Horses do have emotions and feelings, and they teach our children here how to love back.” An atmosphere of grace and healing infuses all aspects of Serendipity Equine Haven’s mission, which Debbie Truman sums up in a few words: “Through horses and good people, our motto is — Dreams are born and hopes are raised in healing hearts. That’s what we’re all about.” Anyone interested in volunteering their time or making a donation can contact Debbie Truman at 817.680.5474 and debbietruman@aol.com; or Aundrea Peacock at serendipitous.peacock@gmail.com. Swat Mosquitoes with Mother Nature ARCHIE'S GARDENLAND HAS TIPS ON HOW TO FIGHT MOSQUITOES THE NATURAL WAY ARTICLE DOUGLAS MATUS | PHOTOGRAPHY PROVIDED
M
osquitoes: the bane of summertime, carriers of disease and all-around nuisances, threats to people and pets, and the fuel behind an industry of repellents and citronella-scented sundries. Seemingly a curse upon mankind and mockery of the natural order, mosquitoes appear to serve no purpose whatsoever; what’s worse, sprays and candles often have no effect, save for a foul smell to accompany sufferers’ frenzied swats and scratches. It’s a cruel irony that, should mosquitoes cease to exist, their primary natural functions — pollinating certain flowers and providing food for fish, frogs, lizards and spiders — could, according to a 2010 article in “Nature,” be readily appropriated by other organisms. In other words, the only irreplaceable purpose of a mosquito is to breed more mosquitoes. Thankfully, Mother Nature has provided us with wards against these insectile aberrations. While repellents and candles have their place, natural options exist in certain plants that drive mosquitoes away. As summer transitions into fall, consider how you might turn the tide against your buzzing tormentors — one plant at a time. Steve McCoy, horticulturist at Archie’s Gardenland, has several tips to aid you in the fight. “The key with mosquito-repellent plants is the fragrance,” explains McCoy. “Certain plants just have an aroma that mosquitoes don’t like. One of them is a type of geranium that we call mosquito plant. Lemongrass also works, as do some kinds of rosemary and lavender.” Don’t have a green thumb? Never fear: as luck would have it, many of the mosquito-repellent plants are quite hardy. 22
West FW Lifestyle | August 2015
“The good news is that most of these plants are easy to care for,” says McCoy. “You can plant them in a bed, or even in a container, which gives you flexibility in how you can use them.” If you have a porch with a nearby flower bed, your mosquito-repellent plants will provide an easy-to-grow addition. Should you decide to keep them in a pot, you have the benefit of transportability. Wherever you need a mosquito-free zone, simply pick up and move your plants. Archie’s Gardenland has a selection of mosquito-repellent plants potted and ready to go. Those in need of a new weapon against their winged nemeses can simply choose one and take it home. Let’s say you have your new plants, but still feel the “itch” to take the fight to the next level. Now that you’ve secured your anti-mosquito safezone, go on the offensive: hit the mosquitoes where they live. Steve McCoy has some pointers to make your property a little less welcoming. “Identify any areas around the home that hold water or allow water to stand for several days,” says McCoy. “Bird baths and swimming pools, of course, but also old tires and places you might not think of, like tall grass or thick ground cover. What folks have to realize is that just a quarter-inch of water can harbor mosquito larvae.” Want more weapons in your war against mosquitoes? Try some cedar oil. Archie’s Gardenland, located off Camp Bowie at 6700 Z Boaz Place, offers granules and sprays that can render your yard more hospitable to outdoor lounging or parties. Mosquitoes might be here to stay, but that doesn’t mean you have to suffer them lightly.

A Bumper Crop of Babies THE FORT WORTH ZOO HAS NEW ADDITIONS TO ITS FAMILY AND A BABY BASH TO CELEBRATE THEM Bowie (left) and Belle (right) engage in some playtime.
ARTICLE DOUGLAS MATUS | PHOTOGRAPHY JEFF ROBINSON & THE FORT WORTH ZOO STAFF
T
he Fort Worth Zoo’s baby boom leaves one curious about the strategies that encouraged the recent string of births. Candlelit dinners for two in the elephant habitat? A solo violinist outside the lion enclosure? It’s easy to imagine the giraffes grooving to some piped-in Barry White, but what about the spot-tailed earless lizards? Maybe it’s just luck, or the result of the Fort Worth Zoo’s exceptional environment and animal care standards. Regardless, the public has benefited from a rare opportunity to witness the arrival and growth of exotic animals, some of which — like the famous baby elephants — have woven themselves into the fabric of Fort Worth culture. If you or your children haven’t visited the zoo in awhile, then make haste: babies grow fast, and you don’t want to miss your chance to see such a bumper crop of cuteness. “The baby elephants both turn two this year,” says Avery Elander, public relations manager. “Belle’s birthday was July 7th, and Bowie’s birthday is August 5th. They’re both

Waylon and Willie, about to kick off a jam session.
doing great and growing nice and big. Right now, Belle is 1800 lbs., and Bowie weighs 1500. He’ll soon surpass her in weight, but she’s the bigger at the moment.” Though many people believe the elephants are siblings, Belle, the one-month older female, is actually Bowie’s aunt. The latter’s tusks — a feature limited to males among Asian elephants — have just begun to peek out to provide a hint of his future formidability. Bowie will probably one day move to another zoo, a transition meant to mimic male elephants’ natural migration away from home. For now, though, Bowie and Belle have only one concern: playtime. “Since the temperatures have heated up, both of the baby elephants have been enjoying the water,” says Elander. “Guests at the zoo can often see them splashing around in their pool.” Of course, the elephants are not the only babies at the Fort Worth Zoo. Another trio of youngsters have even greater visibility — at least from a distance. Three giraffe calves, named Dilly, Willie and Waylon, were welcomed into the world earlier this year. Visitors can identify Dilly, the female, thanks to a heart-shaped spot on her neck. The two males, Willie and Waylon, received their names in tribute to two of Texas’s musical giants. The young Waylon is a heavyweight for an entirely different reason as well. “Waylon was the largest giraffe born in the history of the Fort Worth Zoo,” says Elander. “He weighed 187 pounds at his birth.” Many visitors will get excited at the chance to see the zoo’s three lion cubs. Each cub has a traditional African name that reflects the circumstances of its birth. The male’s name, Siyanda, means “we are increasing,” while the two females’ names, Lindelani and Thabisa, mean “to be patient” and “to bring joy,” respectively. The Fort Worth Zoo’s lion pride, which includes the cubs’ parents, Jabulani
and Abagebe, fulfills a vital function for the greater lion population. As a member of the African Lion Species Survival Program, the Fort Worth Zoo brought the parent lions from South Africa, and thus introduced a new bloodline into the United States’ lion population. While elephants, giraffes and large cats receive the “lion’s share” of attention, the zoo has other babies throughout its collection. Earlier this year, the zoo welcomed a bonobo — a type of primate — that was only the third of its kind ever born in Texas. It joins the previous two Texas bonobos, which were also born in the Fort Worth Zoo, in the “World of Primates” exhibit. The tiny ape can be hard to see, so look for its mother; chances are you’ll find baby Kabili firmly attached. Additional new arrivals at the zoo include 19 lesser flamingos, four Caribbean flamingos, 19 spot-tailed earless lizards and 550 Chiricahua leopard frogs. The zoo breeds these last two as part of conservation programs, and plans to eventually release them into the wild. If you’d like to visit some of the babies, then you’re in luck. “The babies are out and viewable in exhibits,” says Elander. “As far as the time of day, it’s hit or miss, however. They’re babies, so they play hard and sleep hard.” The first weekend of August brings an opportunity to celebrate the babies directly. August 1st and 2nd will see the zoo host a Baby Bash. Visitors can hear zookeeper talks on the various babies and learn about maternal care, baby characteristics, and facts about the animals’ growth. For those who want to bring gifts to this “baby shower,” the zoo welcomes donations to its enrichment program, and requests items like non-toxic bubbles, unused brown paper bags, phone books, and gift cards to Home Depot, Michael’s, or pet stores.

f you own a dog, chances are you see him or her as much more than a pet. Our dogs are beloved family members, adventuresome sidekicks, and daily comforts whose presences serve as blessings. Though we feed them and provide shelter, it often seems as if we owners come out far ahead in the bargain. After all, we receive a priceless degree of unwavering loyalty, not to mention the tangible health benefits that researchers have tied to dog ownership. One of these benefits, the incentivizing of an active lifestyle, often gets under-appreciated. Sarah Cornett, owner of the Pilates Project and proud parent of Gus the pug, has some insight into how a four-legged friend can promote a healthier you. “People always talk about working out with their dogs,” says Sarah. “And it almost seems like a given for some people that their dogs function as part of an active lifestyle. Just the other day, my husband and I were walking Gus on the Trinity Trail and lost count of the number of people out with their dogs.” Sarah has noticed that for some people, the fact of dog ownership promotes exercise that they may not otherwise pursue.
“People who wouldn’t necessarily get out on their own will do it for their dog. Gus gets walked three times a day, for example. The responsibility of pet ownership can serve as healthy motivation for regular exercise.” Researchers have highlighted some facts that back up Sarah’s observations. A 2006 study at the University of Victoria found that the average dog owner walked nearly twice as far each week as a non-owner. The benefits become even more profound for the elderly: older dog owners are much more likely to walk their pets multiple times per day. In many ways, dogs can function as ideal workout companions. Always eager to go, ready to press forward regardless of the time of day or weather; and as for gear, all that’s required is a sturdy leash. “The best thing about a workout with a dog is that they’re not going to complain or want to end the workout,” says Sarah. “They won’t say ‘we’ve gone too far,’ or ‘I want to quit.’ Of course, you have to watch it during the summer. Our Gus, for example, isn’t really an endurance dog, but he still loves his walks.”

Saint-Emilion, Vraiment Magnifique THE WEST FORT WORTH INSTITUTION HAS SERVED WORLD-CLASS CUISINE FOR NEARLY THREE DECADES ARTICLE DOUGLAS MATUS | PHOTOGRAPHY ANN BECK

t sits at the top of West Seventh St. like a crown, or a stylish hat: the familiar brick A-frame of Saint-Emilion, an iconic piece of neighborhood architecture that adds a touch of Old World class to its increasingly busy thoroughfare. This quaint exterior contains a restaurant that continues to redefine excellence in service, atmosphere and food. For nearly 30 years, Saint-Emilion has given its
patrons a taste of the best in French cuisine, from duck, to pork, beef and fresh seafood, and has distinguished itself as one of the Metroplex’s destination eateries. Saint-Emilion has earned its reputation, along with plenty of accolades, through adherence to its core standard of exceptional food delivered with grace and attentiveness. Zagat’s overall highest-rated Metroplex restaurant, Saint-Emilion continues to find new ways to better serve its clientele. The restaurant recently began a partnership with a new seafood provider, which allows them to offer the freshest seafood possible, along with specialty catches. As with all the world’s finest restaurants, details matter at Saint-Emilion, a fact emphasized by Maitre d’Hôtel Joel Graham. 28
West FW Lifestyle | August 2015
“What makes us stand out is the consistent quality of our food and our attention to detailed service,” says Graham. “Many restaurants focus on smoke and mirrors, things like an extensive menu, or a crazy cocktail list,” says Graham. “What makes us stand out is the consistent quality of our food and our attention to detailed service. Here you get seated with courtesy, the maitre’d checks in with you, the chef, the owner, four or five different people work to ensure that you’re taken care of.” Saint-Emilion prides itself on the loyalty of its clientele. The staff remembers guests’ seating preferences and favored drinks, and works to craft an experience that accommodates patrons’ plans and needs. “We want our customers to feel as if it’s a special night when they dine with us,” says Graham. “Regardless of the occasion, whether it’s a typical Tuesday or a celebration.” The sign on Saint-Emilion’s front door sums up the establishment’s spirit: A Country Fresh Restaurant. To Joel Graham, that pretty much says it all. “On the front door, it says ‘country fresh restaurant,’” says Graham. “The feelings you get from that phrase inform everything we do. When you come here, it’s as if you’ve walked into a small country house in Saint-Émilion, France. We provide our guests with a cozy, warm feeling and an intimate environment.” The arrangement of Saint-Emilion allows patrons to see the kitchen and wine racks, which creates an air of transparency. The restaurant books a minimum of two hours per table to ensure that guests have plenty of time to relax and enjoy themselves. “We never rush people,” says Graham. “Here it’s about the whole experience of tasting the meal and experiencing the wine list.” Despite its fidelity to time-honored principles of French cuisine and hospitality, Saint-Emilion also knows how to keep pace with the times. For example, patrons can browse the restaurant’s expansive wine list via iPad, an innovation that Saint-Emilion was among the first to implement in DFW. The browsable wine list makes it easier for customers to choose the right bottle; but what about food choices for those with limited knowledge of French cuisine? “You have a couple ways you could go,” says Graham. “Some people like to play it safe and try different prepared foods they may already have familiarity with, like French onion soup. You can also be a little more adventurous and try our foie gras or escargot. A lot of French foods are based on sauces, with the dish built around that.” One dish that most Texans have extensive familiarity with, steak, can present the perfect point of entry as the Steak au poivre. “A lot of restaurants serve steak, but our au poivre is a traditional French recipe,” says Graham. “We also serve lots of duck, and offer a duck twoways plate that lets you explore while still remaining a little cautious.” Whether you decide to tiptoe around the menu or dive head first into the escargot, Saint-Emilion will give you a culinary adventure to remember. If you have trouble finding them, just look for the sign on the front door. If it says “country fresh,” you’re in the right place. August 2015 | West FW Lifestyle

Parting Thoughts
Birds on a Wire
WORDS KENDRA MATHEWSON ne of my dear friends is a painter who sees the world through her amazing artist eyes. When she was the newbie in our neighborhood, her heart was sensitive to how to integrate her family into the community. Driving one day she noticed how birds perched on a telephone wire seemed to choose when to gather, and who to pause with. As she watched the birds sit, and then come and go, those birds spoke to her of how we create community, who we keep counsel with, and even the dynamic nature of the process. She had moved in down the street, and it was my love of her work that initially drew us together. We shared a moment of connection on my front porch steps, and lingered like the birds chatting on the telephone wire, before we flew off back to our hectic lives. Over the years, through working on house projects, painting together, building a club, learning new skills together, cooking meals together, playing cards as couples, we’d pause from the “flights” our lives demanded (me flying around in my minivan and she in her Mini Cooper) to sit like those birds on a wire and talk over tea. This is how we became friends. That is community. That is how community begins and how it grows. These one-on-one connections expand and extend and become a beautiful web of interconnectedness. Through words, stories, shared experiences and common interests, we find inspiration to create our communities. My friend’s keen observations became the main theme of a series that has become her signature. The beauty of her Birds on a Wire series, and her reflections on community, have inspired me to embrace and

celebrate more the important place it has in our lives. We live in such an individualistic society that our personal empowerment sometimes overshadows the significance of our need for each other. Like the ingredients of an exceptional recipe, or the materials used to construct a quality home, a community is only as good as the people who comprise it. Because the people are who ignite an idea, imagine a future, share an event, take the bull by the horns, see a need and fill it, spread the word about a new business, open their home to new families, bring a meal when there’s an illness, invest in a neighbor or believe in a student, give witness to struggles and celebrate successes. Our magazine is your “wire.” Let us pause to read the stories that have been inspired by our community, to drink in the beautiful photographs that paint the story of us. Email your editor and publisher, or better yet reach out and enjoy a cup of coffee together. Let us stop here in the pages of our publication each month and celebrate like birds on a wire, before we fly off to back to our busy lives. You inspire us.
