Peach, Feta & Zucchini Salad
Indulge in the flavors of summer with this unique and flavorful salad!

2 medium zucchini, thinly sliced
2 ripe peaches, sliced
4 oz. feta cheese, crumbled
1/4 cup toasted pine nuts
1/4 cup fresh mint leaves, chopped
2 tbsp. extra-virgin olive oil
1 tbsp. lemon juice, fresh squeezed
Salt and pepper to taste
Method Method
• Combine zucchini, peaches, feta cheese, pine nuts and mint leaves in a large salad bowl.
• Whisk together olive oil, lemon juice, salt and pepper in a small bowl.
• Drizzle the dressing over the salad ingredients and toss to coat.
• Let the salad sit for 10 minutes.
• Serve and enjoy!
Tip Tip
You can adjust the quantities of the ingredients according to your taste preferences. Feel free to add other ingredients like cherry tomatoes or cucumber slices if desired.
