PUBLISHER Decency Goes a Long Way! AS MANY OF YOU KNOW, we here at Living Local stay away from the “sensational” stories, the ones that usually take a side to pit one against another. We refer to it internally as “negative,” and as policy, we will only participate in the positive; meaning nothing negative, divisive or political. We share the stories that matter to us all, no matter what or who you believe in, they have no bias, are color blind but always stand for something positive and decent! I was personally able to share our vision with a new client the other day and again at a conference in Gig Harbor last month, explaining that our mission is to positively impact the community by writing heartfelt, inspiring pieces. The reception to all of those that hear our message is welcoming, “fresh and uplifting” I was told recently.

This brings me to the recent election and the profound impact it has had on our country. Unfortunately, the mainstream media has done a masterful job at dividing some of us, causing strife in our homes, neighborhoods and communities. We “seem” to be more divided than ever before. It’s so bad that people are rioting and protesting all over the country, high schoolers are marching out of classrooms, college students refusing to complete course work because of emotional distress and the media can’t get enough of it. I saw a post from the Seattle Times where they were asking people to write in and report “hate” crimes. They are actually seeking it out as opposed to reporting on it. In order for change to occur, it must come from us, the people. We have to ask more from our media, our national and local. Let them know that we won’t support this any longer. Let them know that the “negative” no longer appeals to us. Demand real, honest news and while opinion pieces are welcome, we prefer them to be accurate and would like to read, hear from all sides and not just one. Ask for a balance, ask for decency to be restored to our media. Once we get back to balance and decency, we as a country can heal, unite, move forward and continue to work together in making not only our communities and nation, but the world a much better place. As Christmas approaches, stop to reflect why we all celebrate, rejoice in each others unique abilities and perspectives, extend a hand, and lead with grace. Wishing you and your family the very best this Christmas season.

Demonstrate your thoughtful foresight by honestly sharing with your children a realistic picture of your physical and financial health. MAXIMIZE NOW THAT WE ARE IN THE HEART of the holiday season, you may be thinking about ways you can put your money where your heart is. Specifically, you might be pondering which groups you should support with charitable gifts. And as long as you choose groups that meet the right criteria, your generosity can also be rewarding to you, in the form of tax benefits. To begin with, you’ll want to make sure you are giving to a reputable charity. That means you’ll need to ask some questions. How does a group measure its effectiveness? Is it devoting as much of its contributions as possible to the actual work of the organization, or is it spending too much money on administrative costs? Generally, a worthwhile charity should spend at least 75 percent of its income on programs. You may be able to find this type of information on a charitable group’s annual report and its website. You can also go to the website of one of the agencies that evaluates charitable groups. On these sites, you can get a lot of information dealing with a charity’s effectiveness, income, spending and other topics. After you’ve identified a charity, or charities, you can decide how much you want to give and how you want to give it. If the charity has 501(c)(3) status (named after the section of the Internal Revenue Code that governs such groups), your gift can offer you a tax deduction. So, for example, if you are in the 25 percent tax bracket, and you give $1,000 to a qualified charity, you can subtract the $1,000 from your adjusted gross income, which will result in tax savings of $250. Upon making your gift, make sure you get a receipt that lists the name of the organization and the date and amount of your contribution.
(Your maximum deduction will be limited to a percentage of your adjusted gross income.) You can do more than simply write a check, however. If you have stocks that have grown significantly in value, you may want to donate them to a charitable group. You will be allowed a charitable deduction for the full fair market value of the gift on the date of the transfer, even if your original cost was only a fraction of today’s value. Furthermore, you will avoid the capital gains taxes you’d have to pay if you sold the stock, provided you’ve held the stock for at least a year. If you do contribute appreciated stocks, you will want to be cognizant of the effect of your donation on your portfolio. If you were to give a sizable amount of growth-oriented stocks, would it affect your overall growth potential? Conversely, if you are primarily giving away relatively conservative, incomeproducing stocks, would it end up moving your portfolio in a riskier direction? When donating stocks, if at all possible try to do so in a way that does not harm your portfolio’s balance. In any case, whether you give cash or appreciated assets, you’ll need to make your gift by Dec. 31 if you’re going to deduct it on your 2016 taxes. So be as generous as you can afford, think about the effect of your gift on your own financial situation – and be prepared to act soon.

Celebrate Chanukah with your Jewish friends and neighbors. By Colin Anderson
IT’S THE SEASON OF CELEBRATION for people of many different faiths across the world. While the United States is a predominantly Christian society, we are also diverse. Families here practice many religions such as Hindu, Buddhist, Muslim and Judaism, just to name a few.
This year, the celebration begins on December 24 and runs through January 1. The ceremonial Menorah lighting will be held at 6:30pm on Wednesday, December 28 on the grounds of Uptown Gig Harbor. The approximately 10-foot-tall Menorah will be lit; there will be storytelling, singing, dancing and traditional Jewish snacks. The Menorah will remain lit during the remainder of the Chanukah celebration. Those of all faiths are welcome and encouraged to attend so they might learn a little more about the history and beliefs of their Jewish neighbors.
While most of us are comfortable in our beliefs, it can be interesting—and often fascinating—to learn about others’ beliefs. One such opportunity for us to learn more about the Jewish religion is coming up later this month. Rabbi Heber of the Chabad of Pierce County will be holding a special Menorah lighting ceremony in Uptown Gig Harbor. Rabbi Herber presented the idea to the center in 2009 and has been holding the ceremony each year since.
In a community that truly cares and supports each other, it is wonderful to see continued high turnout for this annual event by both those in the Jewish community and those wanting to learn more and celebrate with their Jewish friends and neighbors.
Chanukah is an annual celebration centered around two ancient miracles for Jewish people. If you’re curious as to what those miracles are, Rabbi Herber will be telling the entire story during the ceremony. Chanukah is celebrated over a span of eight nights, which fall on different days each year.

HIS WINDOW SEAT ON THE 737 had more legroom than the cramped nose section of the B-17 where Lt. Col Richard Wheeler sat as the navigator on an American bomber during World War II. Wheeler—better known to his friends and family as Ken—flew more than 35 missions over hostile territory to support Allied march across Europe. The Gig Harbor resident sat in the main cabin for Alaska Airlines flight with about 100 of his “brothers” as part of the Honor Flight program that provides veterans an opportunity to visit the war memorials in Washington D.C. Midway through his flight, the pilot walked into the passenger cabin with an “airmail delivery” of letters written by friends and family thanking the veterans for their service. “I did not know anybody on the plane when we took off, but we were family by the time we arrived in D.C.,” said Wheeler. The retired flight officer said the trip to the nation’s capital as a civilian gave him a deeper appreciation of the memorials to fallen war heroes than during the three years he served at the Pentagon at the conclusion of his 28-year career with the Air Force. His trip was highlighted by a pilgrimage to the pillars and fountain

that make up the World War II Memorial on the National Mall between the Lincoln Memorial and the Washington Monument. Wheeler emphasized that each passenger on the Honor Flight was treated “like a true VIP.” He said wheelchairs were waiting for every participant as they exited the airplane and available as the group toured the sites in nation’s capital. Abundantly clear The 93-year-old Wheeler was accompanied on the trip by his oldest son, Steve Wheeler of Puyallup, who served with the Marine Corps during Vietnam. The former navigator made it abundantly clear that he did not require assistance from his son or a wheelchair. He was an honored guest at the Veteran’s Day ceremonies at a middle school and at Peninsula High School last month. “Young people just want to shake my hand,” said an embarrassed Wheeler. “Some even asked for my autograph.” He was touched by the standing ovation he was given after his talk at a middle school.

“He was overwhelmed,” said his wife Sharon. “It was amazing to realize that young people today have very little concept of the true impact of a world war.”
Her generosity was only surpassed by her trust, said Wheeler. At one point the woman left the American flyers alone in the house with her three-year-old daughter when she left to find her husband.
Wheeler’s presentation always includes details of the raid he flew in December of 1944 when his plane took off from a base in Foggia, Italy with orders to destroy an oil refinery in Poland. The B-17 ran into antiaircraft fire that punctured the oil supply and forced the pilot to shut down two of the four engines. The plane dropped out of formation at 28,000 feet and turned back toward Italy. They were joined on the return trip by a B-24.

Wheeler’s pilot ordered his crew to lighten the plane by tossing ammunition and guns overboard as it continued to lose altitude. Wheeler said the crew dropped its payload of bombs on warehouses in Gyor in Hungary.
The woman’s husband led the crewmen to a meeting with a man who spoke English. That man provided them with traditional clothing and directions to the coast, 135 miles away. The Americans walked for two weeks through the war-torn countryside, hiding in burned out buildings until they reached the town of Split in Yugoslavia. They waited in a shack on the dock until they made their dash for freedom under a hail of German bullets and jumped aboard British patrol boat that sped into the harbor.
As a token of their appreciation, the Americans gave the woman muchneeded medicine for her teenage daughter as well as a needle and thread from their Escape Kits. The mother was grateful for the parachute one of the airmen flyers had stashed in his jacket.
The B-24 was shot down over Zagreb in Croatia. A few minutes later the captain of the B-17 ordered his crew to “get the hell out of here” as the plane passed over the border into Austria. “I had been so focused on navigation that I had not noticed that the number three engine had caught fire,” he remembered. “I crawled to the edge of the exit hatch, slid out the door, said a prayer and pulled the ripcord. “Thankfully the parachute opened.”

Wheeler will turn 94 in January, but he can describe the events of what happened next as if they happened yesterday. He met up with two other members of his crew who also made it safely to the ground. The trio sloshed down the snowy mountain where they met a woman who did not speak English. She took the risk of taking all three men back to her home, fed them and provided them with dry clothes.

Celebrating the miracle of unstoppable peace and the Christmas Day Truce B Y S A R A H P O LYA KO V
DURING THE HOLIDAY SEASON, one could say that daily miracles occur because of the giving spirit that abounds. Community members strive to reach out to those in need, strangers greet each other with smiles, family members renew relationships, and everyday life becomes a gentler version of itself. This yearly transformation that is witnessed in communities all across the country could be considered a miracle in and of itself. During the month of December, we celebrate holidays that commemorate miraculous events that happened hundreds of years ago. Christians celebrate the gift of eternal salvation that Christ Jesus gave us, who arrived in this world, born not in a palace, but in a humble manger. Jews celebrate the triumph over Hellenism, which had all but destroyed Judaism in 165 BCE; and God showed his promise of eternal care by ensuring the flames of the menorah were lit for eight days. Indeed, this is a season where miracles occur in abundance. But, what about some of the miraculous and world-changing events that happened within the past 100-plus years?
Exactly 102 years ago, on December 24 of 1914, a miracle of global proportions occurred. It happened during The Great War and came to be known as the Christmas Truce. It was a quiet movement that started with individuals

At the time they had been fighting for only four months, but in that short period of time around a million were killed. On a freezing December night, English

soldiers sat in frozen trenches with frostbitten hands. They were so weary from war, but then something caught their eye.
That night, German and English soldiers made a pact not to fight on Christmas Day.
“On December 24, 1914, in the middle of a freezing battlefield in France, a miracle happened. The British troops watched in amazement as candle-lit Christmas trees began to appear above the German trenches. The glowing trees soon appeared along the length of the German front.” (politicalvelcraft.org). From dreary trenches, an otherworldly sound broke out as English soldiers heard a German baritone sing with conviction these simple words: Silent Night, Holy Night, All is calm, All is quiet. The soldiers felt as if a ray of hope had split through a nightmare as the gentle song rose over the frozen mist. Henry Williamson, a young soldier in the London regiment immortalized this moment in his diary. Henry wrote, “they finished their carol and we thought that we ought to retaliate. So we sang The First Noël and when we finished, they all began clapping. And they struck up O Tannebaum and on it went, until we started up O Come All Ye Faithful. The Germans immediately joined in-- this was really a most extraordinary thing — two nations both singing the same carol in the middle of a war.” (politicalvelcraft.org). That night, German and English soldiers made a pact not to fight on Christmas Day. Instead, they shared food, wine, and other comforts of home. That day, they happily wished one another a Merry Christmas and took the time to look into each other’s eyes to see each man’s inherent humanity. The English sang Christmas carols to the Germans and the Germans sang God Save the King to the English soldiers. That moment peace, which was not initiated by global leaders and in a time when communications took days to happen, demonstrates that the miracle of this season, the spirit of joining together, is so strong it can even stop opposing armies. This cease-fire spontaneously spread through a 500-mile stretch of the Western Front, all without text messages or Facebook alerts. One German soldier summed up the

event by saying: “It was a Christmas celebration in keeping with the command ‘Peace on Earth’ and a memory which will stay with us always.” (politicalvelcraft.org). Indeed, it was a memory that stayed with those soldiers forever and one that provides and valuable lesson and timeless lesson that is equally relevant today. Erma Bombeck once remarked, “To receive a gift molded from love and sacrifice, selected with care and tied up with all the excitement the giver has to offer, is indeed rare. They don’t come along often, but when they do, cherish them.” That cold, awful night in the dark trenches was transformed as the sun rose on Christmas Day. Seen in the light of a new day, the opposing soldiers offered each other a gift truly molded from love and sacrifice. The palpable peace that spread through the ranks was indeed a gift so rare that they would cherish it forever. The camaraderie that developed among these brave men who put both language and pride of country aside, calls to us through the ages and whispers a gentle lesson. There is no situation where one can find himself completely without hope and no condition that can suppress the human spirit or override the innate kindness within each of us. Times of conflict often give birth to some of the greatest miracles of all. As Mary held her child on that silent night long ago, little did she know that she would bring into the world the child and the man who would serve as the symbol of salvation for millions of people across two thousand years. To this day, Christmas celebrations can be found in Israel in Jerusalem’s Christian quarter and Bethlehem’s Manger Square. The month of December affords us the opportunity to slow down and reflect on all of the miracles that abound, whether they happened just over two thousand years ago or today. LIVING IN GIG HARBOR provides us with unique opportunities to enjoy not only the beautiful views but to also recreate in the harbor. Whether it is boating, kayaking or fishing, the opportunities to enjoy the harbor are abundant. And thanks to John Synco, those in our community are finding even more ways to be creative when it comes to planning their outings.
As your gondolier, Synco said he welcomes most out-of-the-box thinking when it comes to providing a customized experience for his guests. Whether it is a night that takes them out for a beer at a local bar or dinner at a waterside restaurant, Synco makes an enjoyable experience for all. “Life slows down and pure relaxation takes over when you take a seat on an authentic Venetian gondola,” shared Synco, whose gondola is named Nelly, a name given by the original gondolier in Venice in honor of his mother. “The guests’ only job is to sit back, enjoy their company and the beautiful scenery. Being propelled by oar means each ride is peaceful, allowing you to hear the beauty of the harbor.”
It has been just over a year since Synco launched his business, Gig Harbor Gondola, and the response has been amazing. People are discovering and taking advantage of a new and unique way to celebrate life’s special moments. Gig Harbor Gondola provides the perfect venue for a romantic date, a special event, photo shoots, video shoots and more. Synco also is available for private parties and pick-ups and drop-offs for those who live on the water.
Eager to give back to the community he now calls home, Synco has donated several gondola rides to many organizations in Pierce County to help them raise money. He loves Gig Harbor and looks forward to becoming even more involved in the community in the years to come.

BETSY BRUNKOW: SENIOR BETSY BRUNKOW is evidence that when one is dedicated, great things happen. She has played soccer throughout high school both at Peninsula High School and on her club team, West Narrows. She has been captain of the varsity team during her junior and senior years and also serves as ASB senior senator and is a member of National Honors Society with a 3.97 GPA. She has yet to decide where to attend college but is applying at the University of Washington, University of WisconsinMadison, Cal Poly San Luis Obispo and Western Washington University. “I plan to continue kicking it on the soccer field through intramural sports,” she said. Betsy would like to pursue a career in the field of health and is interested in becoming a pediatrician. “I am also very interested in majoring in nutrition and dietetics to become a clinical dietician because nutrition and exercise are a big part of my life,” said Betsy. She said one of the things she enjoys most

about soccer is the family she has made along the way. “There’s a special bond between teammates when you have to rely on and trust each other playing on the field,” she said. She is grateful for the lessons soccer has taught her, especially what it means to be a team player. “Soccer has taught me it takes a team to succeed…it has taught me to work hard, communicate and focus on doing my job to the best of my ability which (is something) I can apply to other aspects of my life.”

SELENA DUTTON: VOLLEYBALL HAS TAUGHT senior Selena Dutton more than the fundamentals of the sport; it has provided her with life lessons. “One of my coaches always said, ‘if you don’t like it, change it; if you can’t change it, change the way you think about it,’” said Selena. “I think this is a great way to live your life because it will end up making you a happier person.” Selena is in the running start program and has a 3.79 GPA. She is committed to play volleyball at Humboldt State University where she plans to pursue a career in the medical or dental field. “Ever since fourth grade, I knew I wanted to be a orthodontist or anesthesiologist, but my career path has broadened since then, but I still consider those as options,” said Selena.
Being involved in sports has taught her that she cannot be in control of everything. “A quote I have learned from volleyball is ‘good, better, best, never let it rest, until your good is better and your better is best,’” said Selena. “I also try to keep this in my life as much as I can, with school, volleyball etc. With school I shoot for the highest grade I can, and I don’t except anything less of myself. With volleyball I know I can always be better, so why not work hard to get as good as I possibly can?”

Selena shares that one of the biggest challenges has been having confidence in herself. “I think confidence and mental toughness are 80 percent of volleyball, or any sport really, and the majority of athletes struggle with this component of the game,” she said.

THE INHERENT QUALITIES of bronze motivates Gig Harbor artist Mardie Rees to pay special attention to the realistic details of lifesize figures she creates.
also depicts the subtle differences in how soldiers wore their dog tags as well as the way the terrain tore away portions of the soldier’s pant legs as they marched across the jungle islands.
Rees’ latest work recently went on permanent display in the U.S. Marine Corps Museum in Virginia, 36 miles south of Washington, D.C. The statue was commissioned by the WWII U.S. Marine Raider Foundation to acknowledge the specialized contributions of the Navajo Code Talker, War Dog Handlers and the vital role the Browning Rifleman played in the jungle warfare in the Pacific during World War II.
The Marine Raiders were established after the attack on Pearl Harbor to conduct special amphibious light infantry warfare. The elite unit has been described as the first special forces soldiers employed by the American military.
“It was a unique challenge to make the muddy Marine look wet working with a cold, hard material like bronze,” said Rees. “The piece was sculpted in clay and then cast in bronze. Textures make the statues look realistic.” The textures she used for “Soul of the Forward and Faithful”
Her creation was housed temporarily at the Pentagon in the office of Gen. Robert. B. Neller. The bronze statue also pays homage to the important role the Navajo code talkers played in the Marines’ ability to communicate during combat. Navajo soldiers, said Rees, were present in the Pacific theater beginning with the battle at Guadalcanal in 1942. The Native American volunteers who gave their lives during the war did so at a time before they were legally allowed to vote in many states across the West. “It was fulfilling to share with the General details about my work,” says Rees. “I told him that two

of the models who posed were Marine veterans, both having served two tours in Iraq, and the Code Talker model was full-blooded Navajo.” The Navajo language, she noted, was the only code the Japanese were unable to break during the intense fighting. Rees became “totally immersed” in the symbolism of her work for more than a year. The admitted “history nut” traveled to the Southwest to visit a collector to measure and photograph the backpack and radio so she could more accurately re-create the items in clay. Every stature tells a story “Each of my sculptures tell a story,” Rees said proudly. “Some of the stories are famous pieces of our history that need to be be preserved, other times they are sagas that should be cherished.” Enthusiasm for her work is nothing new for the homegrown artist. She is especially proud of the statue she was commissioned to create that stands at the entrance of St. Anthony Hospital in Gig Harbor since 2009. The sculpture is the named “Saint Anthony and Child.” Another statue of St. Anthony sits in the lobby of a hospital in Denver. The looming figures
unveiled in 2015 depicts the namesake assisting a young child find his way. The native of Gig Harbor knew she wanted to be an artist by the time she was a student at Purdy Elementary School. Rees remembers drawing people and faces, often using her friends and family as models. She attempted to duplicate the works of the masters by the time she was a teenager. The young woman said her inspiration comes from her family of craftspeople and artists as well as living in a community that understands the value of art. Her perception of the world expanded when her family moved to Ecuador for three years during her youth. While there, she explored her growing relationship with art by producing oil and acrylic paintings and experimenting with sculpture.
her personal projects that explore fundamental human themes such as womanhood, faith, youth, struggle and hope. “I rely on live models, often friends and family, to draw out depth of character and natural gesture,” she explained. “I look for parted lips, clenched hands and wise eyes as the outer signal of emotions that reveal the sacred inner-self.” The statue in the Marine Museum in Virginia was a stretch for the artist who normally uses people she can relate to as her models. She describes her models as individuals “whom we can identify with, figures that can walk with us. “I seek those moments we have in common and portray the beauty and honesty of times of struggle, solitude or contemplation.”
After returning home she moved to Southern California to study representative and figurative sculpture at the famous Laguna College of Art and Design, graduating with honors in 2003.
Her work has been recognized and awarded by the Portrait Society of America, the Art Renewal Center, Allied Artists of America and the National Sculpture Society. Rees has returned to live in Gig Harbor with her husband, Jeremy Broderick, and the couple’s three young children.
Rees sculpts by hand using handcrafted wooden tools to shape the clay into life-like beings, crafts from live models and casts in bronze using the time-honored lost-wax method. She has won accolades for her commissioned work as well as

By Susan Moore, Better Gym, Gig Harbor. ‘TIS THE SEASON FOR THE COMMON cold, flu, respiratory infections and general nasty ailments. ‘Tis also the season for honoring traditions through food with our loved ones. This year we aren’t having all of our usual family members visit, and I thought about taking a break from my made-from-scratch Christmas Day meal due to our hectic schedule this year. I suggested to my teenage daughters and husband that we order meals from Whole Paycheck and give Mom a break this year. I was not prepared for the upheaval this idea apparently caused. I had no idea how much my family looked forward to these holiday meals until I unknowingly threatened their disappearance. I will admit that it actually
made me pretty happy. I always take days to prepare the holiday meals, mainly to make them as nourishing as humanly possible and because I love to see everyone together. I really had no idea how much they were actually enjoyed. The first ingredient in every holiday meal? Bone broth. Bone broth is as the name implies, broth made from bones. Ideally, they are cooked in a large stainless pot at a temperature below boiling for a few days. Or, in my case, in my pressure cooker for about an hour and a half. They can be made with poultry, beef, lamb (not my favorite), pork or any bones you like. If the bones are raw, I suggest roasting the bones

I keep the bones from the Thanksgiving turkey and add it to whatever other bones I have for several batches throughout the year. I had someone tell me that the name bone broth was gross. I think maybe I’ve had it as a staple for so long I don’t get it, but if this is how you feel, think again. Bone broth has been reported to be somewhat of a super food. The following beneficial side effects have been reported: helps repair leaky gut, increase in joint health, better skin, hair and nails, anti-aging, reduces the effects of food intolerances, stronger bones and more energy. There haven’t been many studies because you don’t need a prescription for this medical marvel, but a study from October of 1978 concludes, “Hot chicken soup, either through the aroma sensed at the posterior nares or through a mechanism related to taste, appears to possess an additional substance for increasing nasal mucus velocity.” Meaning it breaks up mucus so it is easier to get rid of. And in another study published in October of 2000, “The present study, therefore, suggests that chicken soup may contain a number of substances with beneficial medicinal activity. A mild anti-inflammatory effect could be one mechanism by which the soup could result in the mitigation of symptomatic upper respiratory tract infections.” If you are someone who absolutely refuses to cook, or simply doesn’t have enough time in the day, there are some online companies that sell some great quality broth. Just make sure it’s from pasture raised, grass fed and ethically raised sources. The stuff that is shelf stable is not what you are looking for. You want it frozen or chilled and should be the consistency of jello. Don’t worry, as you slowly heat your broth, it will thin out as you would expect. So do yourself a favor and find or make yourself a mug or bowl of this time honored and delicious elixir.

IT’S DECEMBER AND YOU ARE PLANNING the annual holiday family dinner. Everyone loves Grandma’s famous southern sweet potato casserole and Aunt Louise’s pumpkin pie with plenty of whipped cream. But Uncle Bill and cousin Ann are coming to dinner too. Bill has diabetes and Ann has heart disease. Your daughter Emily is trying to get everyone to eat healthier. What to do? A little planning goes a long way to make your family dinner a success. Here are some tips to make the holidays healthier: • First, set a definite time to serve the meal. A diabetic can plan ahead and adjust meal and medication times according to when the meal is to be served. A two-hour delay can cause problems; normal or routine meal times are the best choice. • Plan a variety of healthy choices. A fresh veggie tray is a good choice with a ranch, salsa or hummus dip. Ordinary foods without adding dressings or sauces are best. • Herbs and spices are a must! Get creative and remember, salt is a personal choice – less is better. Most recipes can be modified to lower the carbohydrate level. Cranberry gelatin salad can be made with sugar free gelatin, have guests add their own whip topping and bet how many will guess this salad is not only delicious but healthy as well! Prepare candied yams with a brown sugar substitute or serve two types of potatoes: candied yams and mashed potatoes. The amount of sugar can be reduced in most recipes, then add herbs and spices for a great taste.

• Have a variety of beverage choices including ice water, sugar free punch or soda and coffee. Although not recommended for diabetics, alcohol is a personal choice. If a diabetic does elect to drink, make sure that food is available to prevent hyperglycemia or hypoglycemia. • Desserts – Yikes!! Always a temptation. A diabetic diet controls all carbohydrates. Carbohydrates found in gooey desserts can raise blood sugars very fast and high. Offer low sugar desserts. A single crust pie or a custard without the crust are better choices than double crust pies. If the diabetic offers to bring something for the meal, have them bring the dessert. Last month was Diabetes Awareness Month. As of 2012 approximately 21.1 million Americans (9 percent) had diabetes and today, one in three people are undiagnosed. Some diabetes signs or symptoms are: • Extreme thirst • Frequent urination • Fatigue Diabetes does not discriminate; it can affect any age, sex or racial group. It can cause many complications or morbid conditions. Remember that holiday meals are a time for family and traditions. Offer choices; it is up to the person with diabetes to make the right decision. If they want to eat a small piece of dessert, it is their choice. Just be sure that healthy options are available.

We eat pre-packaged, pre-prepared foods, alone, where before we made and ate meals as a family. We work jobs where we sit all day when once we would have likely been a farmer or making things with our hands. We have become more productive at the cost of becoming less healthy. Is that really true, though? Are we less healthy? Our life expectancy continues to extend, illnesses which were once very serious are now taken care of by a few small pills, and we know far more about the workings of the human body than ever before. As chiropractors, we see this all the time. Someone gets pain in their body so they go to their doctor. The doctor does an exam and tells them they have a sprain, a strain or some other problem. They then tell them to take some over-the-counter pain medication or, if it is more serious, they prescribe some opioid derived medicine. Unless this problem was created because of a medicine deficiency, then the medicine is only covering up the symptoms of the problem rather than helping the person become healthier. In a Canadian study, it was found that for every dollar spent on over-the-counter pain medication, 66 cents was spent on treating the side effects. Even worse, we have now gotten to a point where 78 people die in this country from opioid overdose every day. Why do I see more news about the “dangers”

of chiropractic which has significantly less risks than these medications? The most likely side effect of chiropractic treatment is soreness the following day or two. The risk people get most worried about, however, is that of adjusting causing a stroke. This has been researched multiple times, and all scholar level articles have found the incidence of stroke following chiropractic treatment is the same as that following visits to a primary care provider. Sadly, strokes happen, and due to the neck and head pain which comes before the stroke people go in to see a chiropractor or medical doctor for that pain. CHRISTIANS THROUGHOUT THE WORLD CELEBRATE THE BIRTH OF JESUS By Jillian Chandler & Patty Hutchens It’s that time of year. The leaves have fallen, the trees are bare and the air is crisp. The sound of crackling wood in the fireplace; smoke billowing out the chimney. The aisles are lined with velvety stockings, red and white candy canes and twinkling lights. ‘Tis the season! These are just some of the symbols that let you know it’s Christmastime. But let’s face it, Christmas is not just a religious holiday any more; for many it has become more about family and giving and celebrating the season. In America, it seems that the commercialism of the sacred holiday has taken over. How many of us walked into a store after Halloween, or in some cases before, only to find Christmas decorations and gift ideas on display. While the decorations at home may not go up until after the Thanksgiving holiday, the planning of the holiday season begins long before that. Parties, family gatherings, gift buying and meals are just some of what fills our calendars. But not everyone’s Christmas celebration looks the same. We all vary in our traditions; they are as unique as each family. While some choose to eat turkey and pie, others celebrate with traditional meals of their ancestors. And don’t mess with someone’s tradition; it is sacred. Maybe you experienced this when you were first married. Do we open gifts on Christmas Eve or Christmas Day? What day do we have the big celebration? Who do we invite? Do we go to the church service at midnight? Throughout the United States, Christians traditionally begin preparing for Christmas with Advent. Advent begins the fourth Sunday before Christmas, falling anywhere between November 27 to December 3. It is a time the church prepares for the celebration of the birth of Jesus. Advent wreaths with four candles adorn the churches with

a new candle being lit each Sunday in anticipation of the celebration of Christmas. While we look at the many ways people right here in the United States celebrate Christmas, many of the traditions are similar. But when one starts to look at other cultures, we see some very different ways that others celebrate the birth of Jesus Christ. Some of these celebrations are grounded in Christianity while others are more secular. Travel across the globe to Italy, and you will find a tradition that was first made popular by St. Francis of Assisi back in 1223. After visiting Bethlehem, the birthplace of Jesus, St. Francis began the tradition of a Nativity crib scene; using a crib to tell the story of the birth of Jesus Christ. Today, families throughout Italy have a crib that they bring out on December 8. The figure of baby Jesus, however, is not placed in the crib until Christmas Eve. Unlike Italy whose main religion is Roman Catholicism, only one percent of China’s population is Christian. Because of this, the holiday is primarily only celebrated in the larger cities in China. When they are on display, however, they are typically made of plastic and decorated with chains, flowers and lanterns all made of paper. One China tradition that is increasing in popularity is the distribution of apples on Christmas Eve. The tradition began due to the fact that the Chinese word for Christmas Eve means “peaceful,” and the word for apple in Mandarin is very similar to the Chinese word of “peace.” In England, children eagerly anticipate the arrival of Father Christmas. But they don’t mail their letters to the North Pole as children in the United States do. Instead, they place their letters into the fire in their fireplace, believing

While snow is synonymous with Christmas for many in the northern hemisphere, in Australia the holiday falls during the summer months. Accordingly, much of their celebration takes place outdoors. One such celebration is called Carols by Candlelight, a time when many gather outside to sing Christmas songs and light candles in celebration. In Sweden the eldest daughter plays a
significant role in the pre-Christmas celebration. December 13, St. Lucia’s Day, marks the beginning of the Christmas season in Sweden. On that sacred day the eldest daughter rises early and dresses in a long white dress and a crown of leaves—a symbol of Santa Lucia, the Queen of Light. Singing Santa Lucia, a traditional Swedish song, she then wakes up the remaining family members and serves them coffee and specially made treats. Karin Wehse shares that her father reminisces about one of his favorite Christmas traditions while growing up in Norway. “They would place their Christmas tree in the middle of the room and dance hand-in-hand around the tree

with lit candles on the branches,” said Wehse. “It was a bit of fire hazard but he had no sad results.” For Christians in Ethiopia, one of the oldest countries in Africa, they celebrate the sacred holiday on January 7. This is due to the fact they follow the ancient Julian calendar. In that country, the Ethiopian Orthodox Church’s celebration of Christ’s birth is not called Christmas but instead is referred to as Ganna. The people of Ethiopia fast the day before Ganna, rising early the next day to attend mass at 4am. Unlike many other countries that celebrate Christmas, Ganna is not marked by gift giving. Instead, the holiday focuses on

religious significance of the season, with feasts and games playing a large part in their tradition. The holiday season in Ethiopia does not end with Ganna. On January 19, the Christians there engage in a three-day celebration known as Timkat, which commemorates the baptism of Christ. If you are in Spain, the Christmas celebration commences with the Feast of the Immaculate Conception on December 8. This is the day when Christians celebrate the conception of the Blessed Virgin Mary in the womb of Saint Anne. In Spain there is a weeklong observance of this holy day. Places of worship and outdoor markets are decorated with evergreens. One
need not look far to find musical instruments such as tambourines, castanets and miniature guitars for sale, all adding to the lively celebrations that include singing and dancing in the streets. In Spain it is also customary for children to travel to various homes singing Christmas carols or reciting Bible verses in exchange for receiving a small instrument, toy or a holiday treat. In Israel only two percent of the population is Christian, and for that reason businesses and shops are open and ironically there is little hint of a sacred celebration in this land where Jesus was born. But in Jerusalem one need only travel to that part of the Old City known as the

Christian Quarter to find holy celebrations of the birth of Jesus Christ. A mere six miles away is Bethlehem, the city of Jesus’ birth, where the streets to Manger Square are filled with tourists and security. Manger Square is outside of the Basilica of the Nativity, which is believed to be the place where Jesus was born. In the end, no matter if it is Buon Natale, Froehliche Weihnachten, God Jul, or Merry Christmas, the meaning is still the same as Christians around the world unite to celebrate the birth of Jesus Christ.

By Beth Bond It is reported that the first Christmas Cards were brought to England by Queen Victoria’s husband, Prince Albert, who was German. Prince Albert also is credited with the Christmas tree tradition, and their large family must have really enjoyed decorating it with homemade ornaments. Those first Christmas cards were initiated as annual greetings to friends and family about the same time. Using pieces of lace and net fabric, and even small jewels, the first cards were lavish and undoubtedly cherished by the recipients.
Later, when children were included in this exchange, they jumped in with “primitive” art, ink sketches and wax-type crayons. And so, the exchange of greetings at Christmas has continued to evolve.

Hallmark got on the bandwagon early and mass production of scenic holiday cards and jovial Santas, elves and snowmen appeared. Soon families, wishing to avoid the mundane greeting, added pre-printed names, and cards became personalized with addresses and characters.

Recycle Recycling goods and materials reduces waste by reusing items that might otherwise end up in a landfill. While it varies community to community, glass, plastic, paper, cardboard, cartons and aluminum can all be easily recycled. If your community doesn’t offer recycling pick up, store your old bottles and cans and bring them with you on the next visit to someplace that does. Many places will pay for your recycling, especially if you make it to Oregon where you will get five cents for each glass or plastic bottle you bring in. Not ready to haul that much? Try reusing old bottles as flower vases or funky string lights; each time you reuse or recycle you’re keeping more out of our landfills.
The vast majority of community organizations and nonprofits would not exist in this country without the help and dedication of passionate volunteers. The fun part of volunteering is getting to choose a worthy organization about which you feel passionate and to which you can provide the most help. This can be anything from tutoring children after school, cooking meals in the church basement, organizing a community event, mentoring, transporting patients and so much more. n the comedy film, “Miss Congeniality,” the goal of world peace was a beauty contestant necessity. A contestant could champion many fine causes with the nodding-heads approval of the crowd, but everyone was edged forward in their seat to know if the crowning goal of all would be espoused. “World peace,” smiled Sandra Bullock, and the collective sigh of relaxation was audible. World peace is a wonderful wish, held in highest esteem by believers and non-believers alike. It is the essence of many religions, the goal of every

Christianity worships the Prince of Peace, one of Christ’s many titles. Eastern religions espouse peace inwardly and outwardly. To be sure, a study of religion will discover gods of war, and mythology is none too peaceful a subject. But nevertheless, a quick thumb-through of the doctrines of major religions will find peace in their pathways. Why don’t we have it? If you had the power to establish peace on Earth by removing one species from it, which one would that be? Animals or birds? The ocean’s vast population? Lions, tigers or bears? If you removed mankind, it would end war.

Isn’t it ironic that the one species pursuing peace is the one causing war? And it is perhaps the ultimate irony that many times we fight wars to finally achieve peace. War rages throughout the world in every form imaginable, from spousal abuse to nuclear weapons, and it is far too easy to point outward at causes and triggers and justifications for it. It is nowhere near enough to look outside ourselves for war. We are capable of abolishing plagues, performing in-vitro fertilization, cloning, space travel and wonders too many to mention, but peace eludes us. Where we are, peace is not. As the old comic strip Pogo said, “We have met the enemy and he is us.” What is it within us that drives us to war? Is that a little closer to solving the riddle of omnipresent, on-going war among the most highly-evolved species on Earth? Or the only species created in the image of God? Higher nature, lower nature. Spiritual

nature, physical nature. Perhaps it’s not conflicting ideologies, policies, governments and religions, perhaps it is nothing outside other than ourselves. We may say we want peace, but we want other things that make peace impossible. What could we want that might make peace within ourselves and with others difficult? Money, power, position, promotion, more, a person, other than what we have, what someone else has, privacy, control, admiration, that, this, a change, that candidate, this policy, that method, community growth, community as is… the list is, unfortunately, endless. Buddha did not have good things to say about desires. Jesus said we desire and covet and don’t have because we don’t ask, and when we do ask we don’t receive because we want to spend it on ourselves. If your physical nature is at war with your spiritual nature, good luck being at peace within your family, let alone with your neighbor, and certainly not with neighboring nations. People can only be at peace with each other when they are at peace within themselves. When peace reigns

uncontested within us, it is impossible to project war into any interaction outside of us. Imagine that! What if war were not within us? No other species would bring it to the table as a way to negotiate our way through life. If we no longer possessed the seeds of it within us, perhaps we wouldn’t plant them around the world to grow up and strangle the life out of everyone on the planet! When self-sacrifice is posited as the only way to life, it is understandable that our instinct of self-preservation balks. And all around the world, mankind preserves itself and seeks to build bulwarks of self-protection, with armies to ensure it. And oh look – we are back at war again. What can one person do? Fight the only battle that ends in peace – fight self and everyone wins. If everyone were looking out for the other, seeking to outdo each other in honoring each other, where would war be? It would not be at all. If all this seems a little obtuse and unobtainable, it is because it almost is. But that does not make it untrue. Begin with who you are, where you are. Are you the one we’re all waiting for? Are you the one to begin peace? I hope so, for the sake of a hungry, homeless, hurting world. P.S. But just in case you’d like to get a head start, try this: When a man asked, “Who is my neighbor?” in response to the Biblical command to love his neighbor as himself, the response was unexpected. Who your neighbor is does not depend on residential proximity, or in fact on anything your neighbor is or does. It depends on your actions toward him! The Good Samaritan had mercy, and was both practical and generous in taking care of his “neighbor.” And he paid no attention to culture barriers. Go make new neighbors! And peace be unto you.

Utah Zion National Park Make your way through long winding roads and tunnels of Zion National Park’s red rocks to the Zion Narrows where you can hike the Virgin River, admire the other worldliness of the natural hanging gardens lush in comparison to the surrounding desert and sandstone cliffs. Iceland is referred to as a “country of contrasts.” It’s home to the northern lights, volcanoes, breath-taking waterscapes and massive glaciers. The country is divided into four regions. The East holds much vegetation and has many fishing villages and harbors. It also has “magma chambers” full of mineral deposits. There are mountains to the North as well as lava fields. Here, the sun never sets in the summer and visitors can play a game of golf at midnight if they wish. The South is famous for their seafood, waterfalls and glaciers, and the Highlands are relatively untouched because of accessibility and are known for their hot springs. A good place to start your exploration is in Reykjavík, and don’t visit without planning ahead. A little known online visitor’s fact is that Iceland is also known as a land of books, claiming more books published per capita.

Fjords & Hills It is known as the Land of the Vikings with a midnight summer sun and a winter that is a perpetual night. Norway’s drastic seasons give us a surreal spin to what we’re accustomed. In the summer, name the summer sport and you can do it at any time of day as the sun never sets. In the winter, it’s not completely dark either as impressive auroras light the sky. Past visitors recommend making the summit to “The Pulpit,” a massive rock table in Ryfylke. Hike to the top and drink in the gorgeous view of the fjords and rock formations. Or visit the ancient glaciers still present from the ice ages in the west. To take a break from the outdoors, visit the chic museums and cafes in Oslo. Norway abounds in scenery to experience and definitely requires repeat visits.

Athabasca Falls Plan your trek to this Canadian wonder of Jasper National Park. There’s no outdoor activity you can’t do here from camping in the summer to sleigh riding in the winter. The falls are 75 feet high and nearly 60 feet wide. In the summer months, the Athabasca River flows white with “rock flour” which is the fine silt of mountain remains released as the glacier melts. In the winter, the river takes on an icy blue hue from infinitesimal pieces of rock reflecting blue or green. The park has protected and accessible walkways. Visitors are strongly cautioned to respect the majesty by staying on these trails for safety.

The history of the park’s founder is intriguing. Founder Tom Davis was an early Boise pioneer and helped layout the blueprint of the city and owned and developed thousands of acres of agricultural property. Dining Juniper, downtown, is a brick-walled space with old-timey cocktails and seasonally inspired New American cuisine. I walked here for Saturday brunch during a visit with my sister in September and we both devoured our Mole Huevos Rancheros and OG Bloody Marys. With strong ties to sourcing local, non-GMO, organic ingredients, as well as cage free chicken and grass fed beef, Juniper truly pays homage to not only the region, but to the state we are so lucky to call home. Since their start in 1973, they’ve established a community of more than 24,000 co-owners and have become a reliable source for fresh, delicious foods in Boise. Nightlife Since Boise is a college town, the options for bars and nightlife outings are endless. On any given Friday or Saturday night, while school is in session, the downtown area is the place to be. Just keep in mind that any dive bar that sells cheaper cocktails will be inundated with young people. One of my personal favorites was the Spacebar Arcade. Serving beer and wine, and packed with every retro arcade game and pinball machine imaginable, this place is all about fun and is guaranteed to bright out your inner child. (200 N. Capitol Blvd.) If you’re looking for artisan cocktails and a laid-back atmosphere, head over to Press & Pony. Established just last year and conveniently located downtown, the Press & Pony offers fresh handmade juices, tonics and syrups their cocktails and also hand carve all of their ice cubes. Trust me when I say that you’ll want to see their mixologists in action.

6-8 Yellow Finns Potatoes 2 T. unsalted butter 1 Large yellow onion, thinly sliced. 4 C. Milk or 2 C. Milk & 2 C. Vegetable Broth 2-3 Garlic cloves, smashed 1 t. Dijon mustard (or substitue dry mustard powder) 1 1/2 C. shredded cheddar cheese 3/4 C. heavy cream
Optional: • Salt and pepper to taste

Using a slotted spoon, scoop half of the potatoes and onions into a greased baking dish. Cover evenly with ¾ of the grated cheddar cheese.

Scoop in remaining potatoes and cover with the remainder of the cheese. Pour the cream evenly over the potatoes and cheese. Discard remaining milk/broth mixture. Bake until the top becomes crisp (approximately 1 hour). Potatoes will be very hot when removed from the oven.

Serve and enjoy!

Preheat oven to 375 degrees.

Slice potatoes into 1/8 inch slices and set aside.

In a large sauce pan, melt butter over medium heat. Add the thinly sliced onion and sauté for about 5 minutes until they are softened.

Add milk (or milk/broth mixture), crushed garlic, mustard and bring mixture to a gentle boil. Add salt and pepper for desired taste.

Add the sliced potatoes to the mixture and allow to simmer until the potatoes are almost tender, (approximately 10 minutes). The potatoes should have some resistance when poked with a fork.

THE FLOATING PARADE A longstanding Gig Harbor tradition By Colin Anderson
TYPICALLY, WHEN YOU THINK OF a Christmas holiday parade, you imagine downtown streets lined with kids bundled in winter jackets awaiting the arrival of beautifully lit floats and perhaps a visit from their favorite December character. What makes one of Gig Harbor’s most famous Christmas parades so special is that, instead of meandering down streets, this parade crisscrosses through the most iconic part of town, the harbor. Join with the community on the evening of Saturday, December 10 to take in the annual Gig Harbor Yacht Club Lighted Boat Parade. For more than 50 years boat owners have participated in this fun family event by trying to lavishly out decorate each other. Yachts and boats of all shapes and sizes are lit up with holiday lights and take a slow cruise around the harbor for all to see. If you haven’t been down to see the lighted boat parade before, some of the best vantage points are Maritime Pier, the public dock, the boat ramp dock, Donkey Creek Park, and of course our wonderful waterfront bars and restaurants. Typically around 30 vessels show up for the event, and you’ll have a fun time with the kids picking out your favorite decorations. With more than a 1,000 feet of boats, you’re sure to be impressed. Don’t forget that directly following the parade at 7pm the doors of the Gig Harbor Yacht Club will be open to the community so kids can drop by to see Santa and Mrs. Claus and give them any last minute Christmas wishes. The parade gets underway around dusk, and the boats will make a couple of laps around the marina for all to see. It’s one of the longest running holiday traditions in Gig Harbor and one more outstanding community event that we can all be thankful for.
