nyone who has called Kootenai County home since the internet and cell phones started becoming “a thing” can recall when the Rathdrum Prairie was pretty much that—prairie land. The drive into Spokane along I-90 was mostly open space and farmland around the state line, and Liberty Lake was a relatively small blip before the Spokane area began to appear around the valley mall. It was the same as you left I-90 to go northbound on Highway 41 and into Rathdrum. That once sleepy two-lane highway is now being massively overhauled, and as you turn your head both left and right, open spaces are quickly turning into planned communities, townhomes and apartment complexes. 24

OM “Currently we are experiencing record-low inventory. As of this morning, we have more vacant land listings available than homes for sale,” explained Jennifer Smock, who is managing Broker and co-owner of Windermere Coeur d’Alene Realty. While everyone is aware of the continued growth in the area, recently released projections might still come as a shock. In 2019, the population of Kootenai County was just over 165,000 residents. The Kootenai Metropolitan Planning Organization estimates Kootenai County’s population will swell to some 307,000 people by 2040. Smock believes there is a consensus among REALNORTHWESTLIVING.COM

local Realtors of three key elements driving the influx of new residents. First, the pandemic opened companies’ eyes to the idea that much of their workforce is able to work remotely. “They can continue to earn income at their higher paying jobs in large cities and take that income and come to a place like ours where it goes a bit further,” she said. Another factor that is brought up often is the consistency of the local political environment and beliefs of the area. Finally, people are moving from metropolitan areas of more than 1 million people to enjoy the space and recreation North Idaho has to offer. “While our town is growing quickly, almost overnight, we still have a wonderful small-town feel. There is still space to spread out; mountains to hike, ski and snowmobile through; rivers, lakes and streams to fish; and just good clean living all around us,” said Smock. With active listings at near record lows, buyers would typically turn to new construction as an alternative, but therein lies another issue as most subdivisions are sold out—including those that are just beginning to be built. “As you would expect, this lack of inventory and high demand has driven our home values up to a level that is making it difficult for those first-time home buyers or entrylevel buyers to qualify for a home,” said Smock. Regional developers have never been busier. There are plans underway for several very large new neighborhoods including 1,050 acres of farmland along Huetter and Mullan roads between 26

Coeur d’Alene and Post Falls. Kootenai County Land Company acquired the land, and the master plan calls for an estimated 4,500 housing units ranging from large custom view sites to “quainter footprint homes offering affordability and urban-style living,” according to the company website. Approximately 11,000 people will eventually call this area home. The immense challenge for builders is not only meeting the demand but also keeping the small community appeal that drives new residents to the area. Jason Kindred is chief operating officer of Architerra Homes, a business partner of Kootenai Land Company. He believes thoughtful real estate development takes time, partnership with local agencies, and shared ideas and collaboration in order to create places people will want to live. “We take a phased approach to the build out of our developments,” he said. “Each phase is designed, sized and constructed based on market demands, community needs and agency feedback.” While some projects might take a relatively short time, others will take decades to fully complete. Builders like Architerra recognize the reasons people are moving to the area and make sure to include the Pacific Northwest lifestyle in their development designs and implementations, incorporating walking and biking trails, expansive parks and open spaces. “We are focused on creating close-knit neighborhoods and communities,” said Kindred. “With shared ideas and 30

collaboration, we are able to strategically allocate land for schools, parks and open gathering spaces—all with the goal of creating communities where we would all like to live.” As with existing home sales, the new home sales market is extremely competitive. Kindred acknowledges most builders are currently struggling to keep up with demand, and those who are lucky enough to land one can often expect an eight- to 10-month build time. A sign of the times, Kindred is seeing a noticeable shift in what amenities buyers want in their new build. “It has been interesting to see how quickly buyers want to see upgraded office spaces and other work-from-home amenities. The ability to do home-school functions for children has been high on buyers’ lists as well,” he said. As of late 2020, the residential average sale price in Kootenai County was a whopping $443,000 with a median price of $358,000. While this can be a great opportunity for sellers to cash in, there is also the challenge of finding new and affordable upgrades for current homeowners. Across state lines growth is also happening in the greater Spokane area. Realtor.com put Spokane’s median home sale price at $180,000 in October of 2017. Three years later that number has jumped to $290,000, with a forecasted increase of more than 12 percent in 2021. Data from real estate service Redfin has the Spokane market at a rate of 92/100 on the Redfin Compete Score. With all the amenities of a large metropolitan area and homes costing less than half as much as Seattle and Portland, young families, empty nesters and even retirees are also flocking to Spokane. Young professionals working from home are a driving force, but the continued presence of Fairchild Air Force Base, the opening of the Amazon fulfillment center (with plans for another in the Spokane Valley now in the works,) new schools, and large companies relocating to Spokane or setting up bigger operations have helped drive additional employment opportunities to the region—and therefore more home buyers. With such competition in both markets, buyers can no longer be too picky about the amenities they desire or often the neighborhood they seek. “Unfortunately, they do not always get to choose based on location to a school district or an area they love. They are making concessions on their wants in a home more so now than ever. If a buyer is looking for a four-bedroom, two-bath home in Kootenai County, they can be prepared to compete with multiple offers and pay well over asking price,� said Smock. 32

Growth can be exciting and also painful. Large swaths of downtown Spokane have gone from dilapidated to reenergized in the past decade. Recreation-driven businesses and downtown Coeur d’Alene shops, restaurants and bars are seeing more visitors than ever before. The challenge for all communities of the Inland Northwest will be to accept and manage the growth while keeping the important reasons of why most choose to live here at the forefront. Some would like to see long-term master plans drawn up, while others would prefer to let the market do what it will. Either way, growth is not slowing, and it will be up to each community to adapt. “It is going to be difficult on our infrastructure, schools, medical, and our transportation departments,” said Smock. “Growth is inevitable; our hope would be that it is planned growth and that we can be progressive with it instead of reactionary.” Kootenai County and Spokane aren’t the only areas to see rapid growth in the last several years. With the continuing growth of Kootenai County, many people, both locals and transplants, are shifting their gaze north toward Hayden and Athol, and into Bonner County.

“Due to many factors, including low interest rates, baby boomers retiring and people looking for more rural environments and small towns, 2020 brought more demand to our market than we can supply,” said Jackie Suarez, Associate Broker for Century 21 in Sandpoint. Just like in Kootenai County, increased remote work capabilities, coupled with the COVID-19 trend of relocating out of cities, has led to a market where there is more demand than supply, resulting in higher prices for sellers—and buyers. At the beginning of December 2020, the Bonner County median sales price year to date increased 15 percent over homes sold in 2019. It’s a seller’s market, even more so with the onset of winter. “Typically, there are less homes on the market in the winter season. This, coupled with demand that already stripped supply, has resulted in an increase in prices and a very competitive environment for buyers,” added Suarez. In Sandpoint, the median price for residential units sold in the past three months was $429,900, but the median price for residential units currently on the market as of print time is $791,950—a hefty increase. Affordable housing is increasingly difficult to find in the area, particularly as low- to mid-range homes fly off the market before buyers have a chance to make a move.

The city of Sandpoint estimates a 3.4 percent growth rate through 2025 and anticipates the addition of over 400 new housing units in the next few years. For those currently looking to relocate, low interest rates allow for interested buyers to take advantage of lending options, said Suarez. “While it’s more difficult to move in winter conditions, people in the winter market are typically serious about buying and selling,” she explained. “Sellers are taking advantage of their captive market, with very little competition.” For many, a rural area like Bonner County and Sandpoint is a new experience. Combining a love of
WOOD & MUSIC Inland Northwest musician creates beautifully crafted instruments By Jillian Chandler
G
rowing up in the Missouri Ozarks, Edward Byler began woodworking with his father from a young age, and when it comes to his fine craftsmanship with wood today, he follows his heritage. “My father worked as a carpenter, and my grandfather built furniture,” Edward says.
The close-knit family also had a love for making music. Developing his skills in the carpentry business with his father and brothers, paired with the love of music fostered in him throughout his childhood, inspired Edward to unite those woodworking skills with his passion for music—and he began to build his own musical instruments. As a teenager, he crafted a banjo, followed by a hammered dulcimer and then a guitar. A true artist, Edward was also afforded the opportunity to take painting lessons during his youth, and he received training in art and sculpture by the late Dennis Anderson. It was 30 years ago that Edward, his parents and brothers moved to Bonners Ferry, Idaho. “We loved the west—and in particular North Idaho,” he smiles. Today, you will find Edward carefully crafting violins and violas as a luthier at Edward Byler Violins, which he introduced to the community—and musicians across the globe—in 2013. It is here where his senses of sight, sound and touch come to life through the elements of wood and string, uniting his love of music and wood craftsmanship to create beautiful violins with world-class tone. “My goal is not to build quantity as much as it is to build them with personality,” affirms Edward. He makes his own purfling and cuts the channel by hand, giving each instrument a more organic appeal. He cooks his own varnish and pigments in the attempt to have them look as much like the colors on the old Italian instruments as possible. “I build mostly del Gesu model violins and am impressed by the humanity that shows through the originals by the tool marks and wear they’ve gotten over the centuries.” More recently, in addition to the del Gesu model violins he is known for, Edward has focused on making Amatis; each handcrafted violin is built with undeniable love of his craft. “My wife and family have been huge supporters of my passion, and God has given me the ambition and the talent to rise above the challenges and stay focused,” says Edward. “I have also been very fortunate to have my friend, and world-class violin maker, Ryan Soltis, teach me everything from construction and varnish to tonal adjustments in the final setup of the violin.” Edward has attended the Acoustic Workshop at Oberlin College and is a member of The Violin Society of America. Over the years, at various competitions, he has won numerous medals including several gold and silver in tone and workmanship.

As the endless warm days of summer are behind us, meaning less time outdoors, now is the time to focus on what’s inside, creating a warm winter oasis that leaves us—and our guests—wrapped in warmth and comfort. Whether you are on a budget or the sky’s the limit when it comes to your financial resources, you can create an inviting, warm and comfy space to beat the winter blues. All it really takes is a handful of items woven into your current home design style and décor. One of the first rooms most see when entering a home is the living room or family room. Here is where one will usually find a sofa, coffee and end tables, fireplace with mantel, and an entertainment setup with a TV cabinet, shelving, etc. This is the room that will most likely leave a first impression and is also the room that gets a lot of use— especially during these colder months. Warming this room up with throw pillows to complement the season, such as neutral whites, off-whites and tans, each showcasing

And … it’s easy to have both comfort and style showcased in your throw pillows. To accompany the pillows, a warm blanket or two will do just the trick. A throw over your favorite chair or the back of the couch not only adds to the look of the space with its color and texture, but creates warmth for the space—and for you when you feel a chill! A great and extremely popular choice—and a bit glamorous—for the cold season is a faux fur throw. Other options include wool, fleece and Sherpa blankets. These are also great to keep on hand in other rooms throughout the house, such as at the bottom of the bed or laid across or folded on an ottoman.

That brings us to carpeting. As more of us are opting for hardwood, tile or laminate flooring through our homes, which is great to help keep things cool in the summer months, it tends to be a bit cold on our feet once the harsher weather has arrived. But there’s a quick—and stylish—fix! Adding area rugs throughout your home, if you don’t have them already, is just the solution and adds warmth to our home. Not only are they a great accent piece, they can be changed out to go with the season. For winter, opt to choose a lush shag rug for your living room and bedrooms. And be sure it coordinates well with your décor and throws! You can also add runners throughout your home as well in entryways and hallways. Create an inviting space without cluttering the space. Candles are another way to bring light into your home, adding a touch of elegance—and a delightful fragrance if you choose ones that are scented. A cluster of complementary candles can really be placed anywhere in the home, from living spaces to more intimate spaces like the bathroom. Just be sure that you keep them far enough away from furniture and curtains to avoid any possibility of a fire hazard, and if you have small children, be sure to keep them out of reach, especially when lit. You can also choose from a selection of candles that have a battery-powered light rather than a wick with open flame. As the artistic and cultural hub of the Inland Northwest, Spokane offers an impressive number of museums, galleries and installations to explore. Particularly during the colder months, these inviting spaces are the perfect place to spend an afternoon and lose track of time. A great place to start is an online visit to Spokane Arts. The nonprofit partners with many private and public entities throughout Spokane to build and support the arts and is a great resource for learning about art galleries, events, exhibitions and more going on in the city. They curate monthly exhibits in the Chase Gallery, located in Spokane City Hall, which is a must stop on the list of local galleries. The Chase regularly features various works—often by local artists—that engages the public and provides space for people of all backgrounds to share their perspective through art. Located in the historic Browne’s Addition neighborhood of Spokane sits the Northwest Museum of Arts and Culture (MAC). The largest cultural organization in the Inland Northwest, MAC offers collections and exhibitions that highlight and preserve the heritage of the Inland Northwest, including the largest collection of Plateau Indian art and artifacts in the world. For a taste of the old and modern masters, head over to Gonzaga University’s Jundt Art Museum, which houses a permanent collection of more than 5,000 objects and features special temporary exhibitions. The museum features work by local, regional, national and international artists, and includes pieces from internationally renowned masters like Rembrandt, Goya, Picasso and Warhol. Spokane is home to many smaller, private art studios and galleries that provide an intimate, up-close glimpse of the Inland Northwest’s 64

The ever-popular First Friday series organized by Spokane Arts is a fun (and often delicious) way to experience art throughout the city. Held on the first Friday of every month, galleries, coffee shops, restaurants, wineries and more open their doors to showcase local artists and performers, typically offering receptions from about 5 to 8pm. A must-attend for art lovers and novices alike is Spokane Arts’ annual Winter Arts Tour held in February, which is a city-wide arts tour that showcases artists, neighborhoods and groups who are based outside of the downtown core, in addition to those within it. It’s like the ultimate First Friday—with so much to see, do and learn.
CATCH A LOCAL’S VIEW
While you’re touring the city’s many art haunts, keep an eye out for the local architectural gems Spokane is known for. The Historic Davenport Hotel downtown is a masterpiece designed by Kirtland Cutter and built in 1914 in the Spanish Revival style. It was the first hotel in the U.S. with air conditioning and a central vacuum system. Driving through the city, make note of several prime examples of Modernist architecture like Trogdon House, Avista Headquarters and Stephan Dental—works by notable architects like Royal McClure, William Trogdon and Bruce Walker, students of famous Bauhaus school of design founder and Harvard professor Walter Gropius. And don’t forget to head across the Spokane River to the Spokane County Courthouse. Built in 1893 by architect Willis Alexander Ritchie, the courthouse is a breathtaking example of 16th century French Renaissance architecture.

Coeur d’Alene’s arts scene is just as alive and booming as its dining and entertainment offerings. Drive or walk the downtown, and you’ll notice a number of inviting galleries, numerous public art installations, and many opportunities to explore and find new local artists and talent—sometimes even while wandering with a glass of wine in hand. The Coeur d’Alene Arts & Culture Alliance is the heart and soul of the arts community in Coeur d’Alene. Visit their website or stop by their location on First Street to take advantage of their many resources, including a directory of galleries, authors, musicians, photographers and more. The Alliance also spearheads several can’t-miss events and arts programs throughout the year. December marks the final 2nd Friday ArtWalk of the year until it starts up again in April. Don’t miss wandering local galleries, restaurants and stores to explore local artists and enjoy some great company and tasty refreshments. During the winter months, Music Walks will take place every fourth Friday, offering a taste of local musical talent and some fun, cozy places to settle in with friends and family. Coeur d’Alene is home to some fantastic local galleries. Art Spirit Gallery of Fine Arts is a beautiful, 4,000-square-foot space featuring high-quality, original artwork by regional artists, representing a variety of mediums. The relaxing, inviting space is the perfect spot to wander with a coffee in hand, and don’t forget to keep an eye out for regular exhibitions and curated shows the gallery offers. Blackwell Gallery features exclusively local artists who work in various mediums in primarily contemporary and modern work. Visitors can enjoy everything from paintings, mixed media and pastel work to sculpture, metal and woodwork pieces. One of the main attractions of the gallery? The artists regularly stop in and visit, so visitors will have the chance to meet them in person and learn about their passion, method and inspiration. While you’re downtown on Sherman Avenue, stop into The Coeur d’Alene Galleries. Since its opening in 1986, the gallery has been the go-to spot for 19th and 20th century western, wildlife and sporting art. You can find rare works by historical masters, along with unique pieces by contemporary artists.

Coeur d’Alene’s visual arts don’t just apply to its galleries and studios. There are several impressive historic structures that represent notable architecture and history over the years. On your way into downtown, stop by the original buildings of the historic Fort Sherman, established in 1878. You can view the original officers’ quarters, the ammunition bunker (which now functions as a museum) and the historic chapel—Coeur d’Alene’s oldest church. Just off the main downtown drag, catch a glimpse of the old Federal Courthouse— the Coeur d’Alene Federal Building. Built between 1927 and 1928, the three-story building was designed in the Georgian Classical Revival style.

The town may be small, but it has a vibrant arts scene all its own. Sandpoint is often lauded as an arts town—and for good reason. Around 11 year-round galleries exist in the area of Sandpoint, Ponderay and Dover. Sandpoint’s picturesque setting, beautiful scenery and epic mountain and lake vignettes have made it an inspiration to many artists, including famous photographer Ross Hall, many of whose photographs you can spot around town. The Pend Oreille Arts Council (POAC) is the powerhouse behind the local art scene, facilitating many local galleries and creating opportunities for local artists to present their work to the community. While several popular summer events like the annual Arts & Crafts Fair bring visitors to the area, winter is a special time to tour the local galleries and get a taste of North Idaho. POAC’s principal gallery is in its home in the historic City Hall building of Sandpoint on Main Street. The gallery features rotating exhibits of local artists, so more than one visit is recommended throughout the season. Continuing its trend of blending artwork with REALNORTHWESTLIVING.COM

historic architecture, POAC also offers an evolving exhibit in the Old Powerhouse, a beautiful historic structure that is noticeable immediately after you exit the long bridge. Speaking of Ross Hall, stop by the Hallans Gallery in downtown Sandpoint to see a breathtaking collection of the renowned photographer’s work—one of the most extensive collections of vintage black-and-white photography in the Northwest. His ability to capture winter snow formations established him as one of the original photographers to elevate mountain winter imagery to an art form. Head out from the cozy yurt, which is open Friday through Sunday from 9am to 4pm, and explore 25 kilometers (15.5 miles) of Nordic trails. Trails are open Friday through Tuesday.
SKATE THE ICE RIBBON AT RIVERFRONT SPOKANE What’s better than an ice rink? An ice ribbon! Head to downtown Spokane to show off your skills on the Numerica Skate Ribbon at the Riverfront. Grab your skates and some friends, and head out for an old-time experience on the lake. The Third Avenue Pier is also a prime spot to skate on the lake. Just keep in mind, you’re skating on deep water, so make sure the conditions are safe and the ice is thick. It’s usually a narrow window, but it’s well worth the effort.

GO ICE FISHING You can still throw a line in during the colder months—in fact, it’s a popular sport and hobby amongst many Idahoans during the winter. Head to Lake Cocolalla 10 minutes south of Sandpoint, or there are even popular ice fishing areas in Lake Pend Oreille. You’ll need an ice auger to drill the fishing holes, and make sure ice conditions allow before you head out on the ice—you’ll need at least 3 to 4 inches of solid ice to support a grown person. Don’t forget to check out Idaho’s Department of Fish and Game for ice fishing rules before you head out.
TAKE A SLEIGH RIDE AT WESTERN PLEASURE GUEST RANCH Head into the beauty of the Cabinet Mountains on Western Pleasure Guest Ranch’s epic winter sleigh rides. History Continues to be Made 219 enters 87th year in business BY COLIN ANDERSON
T
he end of prohibition marked the beginning of one of Sandpoint’s most iconic sights. In 1933, a ‘beer only parlor’ named The Old Bohemia Club opened its doors. It moved in 1934 to its present location and since then it’s changed names, burned down, been rebuilt, and remodeled, and through all the changes remains open and thriving in its 87th year. It’s been known since the 1950s as the 219, and generations of residents and visitors have enjoyed all manner of entertainment within its walls. “The business was initially named the Diamond,” explained co-owner Mel Dick. “It became the 219 when the new owners applied for the transfer of the liquor license and mistakenly put the address in the name area of the application and simply left it as the 219 when the license was officially transferred by the state.” Working slot machines once graced the interior as well as a few additional games. “During a renovation, a working alarm was discovered that alerted the back-office poker players if the cops were in the bar,” laughed Mel. There is amazing history on the walls as well.
A 40-foot mural was discovered during a remodel that was done by Post Falls artist ‘Cowboy Joe’ in 1935. Another mural depicting the southeast Pacific was also discovered during this time. “It was painted during the days of the Second World War when sailors from the Farragut Naval Training Station on Lake Pend Oreille frequented the place,” said Mel. Today, ‘The ‘Niner’s’ focus is on live entertainment, great regional beers and enjoyable cocktails. There are 17 rotating craft beers, and bar manager Mark Terry also enjoys keeping a selection of bourbons and other whiskies you probably won’t find elsewhere. “You might find Willet, Weller or some Single Barrel goodies. I’m also a huge fan of Bonded Bourbon, so I always make sure to have Old Grand Dad 100 or Rittenhouse Rye (which we use in our classic Old Fashioned) on the shelf,” he said. Happy hour includes $3 wells, $4 pints and $1 off cans and bottles. You’ll hear live music every Saturday starting at 8pm with an emphasis on local and regional talent. Steps to Healthy Winter Skin

aby it’s cold outside, and you may be thinking that your skin needs a little extra TLC. You are not wrong. Adjusting your skin-care routine from hot summer months to the colder days of winter is a great idea to ensure your skin is getting the nourishment and moisture it needs. Here are a few things to keep in mind and keep your skin healthy year-round. Sunscreen is still a must It can be easy to forget sunscreen when you wake up to a snow blizzard! The sun’s not shining, so why do you need it? Even in the winter months, you are exposed to UV rays that can cause skin cancers and premature aging. The rays can be even more damaging when they reflect off snow! So, remember to slather up with a broad-spectrum SPF daily, and reapply every two to three hours. There are several powder SPFs on the market that are great for reapplying and will keep your skin protected snow or shine. Long, hot showers After a cold day of outdoor activities, nothing sounds better than a long hot shower or a soak in the hot tub. While this is exactly what your body craves, it can dry your skin out. Try to limit your time in hot water, and if you can tolerate it, turn the temperature down a bit. Once out of the water, immediately apply body lotion to lock in moisture and prevent your skin from drying out. If you have been in a hot tub that is chlorinated, rinse off in the shower prior to applying lotion, as the chlorine can be extra drying. 86

Adjusting your skin care There are several things to keep in mind as you transition from your summer skin-care routine to your winter routine. Retinol products are great for cell turnover and help with fine lines, wrinkles, pore size and texture. They can also have side effects of dryness, irritation, redness and light peeling. If you are noticing that your skin feels extra dry, try decreasing the use of your retinol to every other night and/or decreasing the strength. Retinol is available in .25 percent to 1 percent, so going down in strength can help to alleviate some of the negative side effects that are made worse by cold, dry air. In warmer weather, most of us can get away with a light moisturizer, but the winter air can pull moisture from our skin. You may find you need a heavier moisturizer and need to apply it more frequently. Look for one with hyaluronic acid, a carbohydrate cell that can hold up 1,000 times its weight in water. This will help your skin to retain more moisture, and as a bonus, it can help to smooth and plump the skin. Don’t forget about your hands The backs of our hands are constantly exposed to the elements and are often neglected. They are also one of the first areas that we begin to show our age. When washing your hands, use lukewarm water rather than hot, and apply a moisturizer immediately after. When applying your sunscreen, put a layer on your hands as well. A cuticle oil before bed will help to keep your hands looking beautiful.

Schedule your skin-care treatments There are several in-office treatments that cannot be done when you have suntanned skin. Laser hair removal and Intense Pulse Light (IPL) treatments work by hitting the pigment in the skin to either damage a hair follicle or lift discoloration (broken capillaries, brown spots). When the skin is tan at all, the treatment cannot be done. Doing so can result in burns to the skin and/or discoloration. The winter months are a perfect time to complete a series of IPL treatments to even out skin tone and correct age spots/brown spots, or to have unwanted hair removed. You also need to be free of spray tans and avoid waxing and plucking for six weeks prior to scheduling these services. Chemical peels, microneedling and abrasive skin treatments require you to be out of direct sunlight while healing. That can be nearly impossible during the summer when the lake is calling, so the overcast chilly days of winter are prime time to get your treatments done.

What about the sauna and steam room? Sauna therapy, steam rooms and hot yoga are a great way to unwind, relax and warm up! And there are countless health benefits as well. Be sure to hydrate before, during and after to prevent dehydration, as this can contribute to dry skin. If you struggle with melasma, a condition in which brown patches appear on the face, be mindful that heat can make the pigment darker and further spread. t can happen to the best of us. Our muscles and joints begin to ache as we find ourselves in the midst of the cold season. Unfortunately, the reasons for this are undetermined due to the lack of research, but experts do have theories to what causes these seasonal aches and pains. Some suggest that because our bodies conserve heat when it’s cold, more blood is sent to the organs in the center of the body, such as the heart and lungs. In turn, blood vessels in the arms, legs, shoulders and knee joints will constrict. These areas then become colder and stiffer due to less blood flow—which can cause pain and discomfort. Another common theory is that changes in barometric pressure when it is cold and/or damp may cause an inflammatory response in the joints, resulting in increased joint pain as a result of changes in circulation. Whether these responses are actually occurring in the body is unknown due to the lack of evidence. But there is no denying

that there is a correlation between lower temperatures and stiffer muscles, ligaments and joints. Cold-weather joint pain is most common in the knees, hips and ankles. We can’t control the weather, but we do have some control over our bodies and how to best protect it against the elements this winter season. Though the cold entices us to want to hunker down at home under a warm blanket while streaming our favorite movies, it is important to take the time to exercise your body, keeping it moving and limber. Staying active is beneficial for both the function and mobility of your body, whereas a decrease in range of motion is more likely to result in more joint pain. In addition, it is easy to put on weight when your activity level lessens. This adds extra stress to your body, especially the knees, resulting in additional aches and pains.

No matter your age, stretching is an important habit to include in your daily life. Begin your day with a light stretch, prior to your warm-up before exercising (especially if you plan to work out outdoors), after a workout and before heading to bed. By stretching your body, you are aiding in keeping your joints active— and preventing, or helping to alleviate, pain. If at any time your body is signaling to you that certain movements or exercises are uncomfortable, and even painful, listen to it, and discontinue the activity. During these colder, damper months, it is important that you keep the core body temperature warm. Dress appropriately for the weather, keeping hands and feet warm and dry. And be sure to keep moving, keeping the blood flowing and moving throughout your entire body. Some tips to help with those winter aches include exercising indoors where it’s warm or in a heated indoor pool, which is a great for joint-friendly fitness; applying a heat (or ice) pad for 10 to 20 minutes to the affected body part; using over-the-counter creams, 94

heat gels and other rub-on remedies to the sensitive area; and incorporating supplements that have been shown to help relieve pain, such as vitamin B12, vitamin D, vitamin C, B3 and E. big reason many of us call the Inland Northwest home is the access to nature and recreation seemingly right outside our front doors. Living within a short drive to blue ribbon fly fishing, award-winning ski destinations, and remarkable hiking and biking trails is something few other destinations offer. There are those who venture even further into the wilderness.
Idaho and Washington are home to millions of acres of backcountry, where you seldom find another soul—and the views and vistas you encounter will take your breath away. Advancements in snowmobile technology and riders’ passion for sharing their sport is fueling the next generation of deep-woods winter explorers. REALNORTHWESTLIVING.COM

“It is not the sport that you used to see advertised, in which it was more about drinking than riding,” said Greg Figg.

Figg is the president of the Spokane Winter Knights Snowmobile Club and has been riding around his family farm and all over the West since the age of 7. “Being able to see the backcountry in winter is an incredible experience; I get to see areas few people ever see.”
Purchasing a snowmobile and trailer can add up quickly, not to mention the additional riding gear, helmets, goggles and safety equipment. Those who have an interest will find places to rent everything needed for a ride in Priest Lake, Sandpoint, Coeur d’Alene and Spokane. Regional clubs like the Winter Knights are also happy to partner new riders with experienced members to help guide them through the important know-how and etiquette. The Idaho State Snowmobile Association is another great resource for information. You will also find contacts for regional clubs like the Sandpoint Winter Riders, St. Joe Snow Riders and the Coeur d’Alene Snowmobile Club.
So much in the sport has changed since Figg hopped on sleds in the early 1970s. Engine noise has been cut down on all machines while power and maneuverability has greatly increased riders’ ability to navigate deep snow and steeper terrain. Where once snowmobiles stuck to relatively flat trails, fields and frozen lakes, now entire swaths of wilderness are available to those who possess the right equipment. Much like skiing, however, it is important for beginners to master basic riding skills and knowledge before transitioning to the backcountry. “It would be like taking a first-time skier up and putting them on the

The Winter Knights typically do overnight rides such as one to Priest Lake and another to McCall. Members have also traveled to Yellowstone and Seeley Lake, Montana, and areas of British Columbia. “After riding we all gather for dinner at a restaurant and talk about the day and fun times we had, as well as plan the next day,� he said. The club and many others are making sure they are following current health guidelines when it comes to group rides. While you might think of snowmobiling as a niche sport, more and more riders continue to come into the fold. There are 30,000 registered snowmobiles in Washington alone. Washington State Parks maintains 120 Sno-Parks (parking lots cleared of snow) statewide during the winter. Approximately 80 of the Sno-Parks are designated primarily for snowmobiling. More than 3,000 miles of groomed trails are provided through the Winter Recreation Program, in cooperation with federal, county and local agencies, ski areas, snowmobile clubs and private landowners. In Idaho, even more terrain is available to riders. According to Visit Idaho, the state is home to over 7,200 miles of snowmobile trails and terrain, including more than 1,000 miles of groomed trails in the Silver Valley surrounding Wallace and Kellogg. The economic impact can also not be ignored. A 2017 study done by Boise State University found snowmobile owners spent $197.5 million on snowmobiles,

This supported 4,062 jobs, generated $108 million in labor income, and increased value added by $161 million, and output of locally produced goods and services by $157 million. Snowmobiles in both states are licensed, and those licensing fees go toward trail grooming and maintenance that benefits not just snowmobilers but hikers and cross-country skiers as well. No matter which state you call home, a variety of trails are available to people of all skill levels. For beginners, Figg recommends Mount Spokane State Park, Kings Lake near Usk, Washington, and Fernan and Bunco near Coeur d’Alene. “Priest Lake also offers a wide range of trail and off-trail riding from easy to expert,” he said. State law in Washington states that children under age 12 may not operate a snowmobile on or across a public roadway or highway. Children ages 12 to 16 must pass the snowmobile safety education course and carry the certificate of successful completion with them when operating a snowmobile. Youth who operate a snowmobile under the direct and present supervision of a qualified adult need not show the certificate. The State Parks websites for both Washington and Idaho have a comprehensive list of available trails broken down by region as well as grooming updates. Clubs like the Spokane Winter Knights are a great resource as well. New riders can gain all
the knowledge they need, and experienced riders might learn of new trails and find new friendships on organized group rides. “Just like skiing is a great winter sport, snowmobiling is another great winter sport in Northeast Washington!” said Figg. “Winter can be a depressing time with the cold and snow, but having something to look forward to makes it an enjoyable season.” 102

Located in Sagle, Idaho, just south of the long bridge, and housed next to the Lodge at Sandpoint, owner Cassandra Cayson is honored to be able to serve guests a truly unmatched dining experience unlike anywhere else in North Idaho. “I am proud that Forty-One South is considered a ‘Sandpoint Staple’ now,” she smiles. “After many years of turnover ownership, it was not expected that we would make it past two years. To be celebrating 10 years in Sandpoint is quite amazing, and we are looking forward to the next 10!” Cassandra is joined by Head Chef Michael Dabrowski, who brings his deep passion for food and knowledge of various cuisines to the table. Raised in Sandpoint, Michael fell in love with food creations as a young child. After attending the Seattle Culinary Academy and putting in years of hands-on kitchen work, including working with Chef Tom Douglas in Seattle, Michael returned to Sandpoint to continue his culinary career, joining Forty-One South in 2017. Though they provide four seasonal menus throughout the year, many of the items remain on the menu year-round, such as the Caramelized Goat Cheese appetizer, the Stone Harbor Crab Bisque and the Smoked Filet. “About 50 percent of our menu changes, which allows us to work with ingredients and preparations that are appropriate for each season,” says Cassandra. “We also make all of our desserts in-house including carrot cake, Southern-style bread pudding and flourless chocolate torte, to name a few.

The wine list has more than 100 selections covering a large spectrum of varietals, regions and price ranges, with a strong influence from the Northwest. They also feature some of the amazing beers and wines from local Sandpoint purveyors. The restaurant can accommodate approximately 70 guests in the main dining room, not including the bar/lounge and their private dining room—the perfect space for private groups up to 18 guests. In summer months and when weather permits, the expansive outdoor patio can seat 150 patrons! From in-house table service to takeout orders and custom family meals to-go, Cassandra and her team ensure you a memorable meal, no matter where, or how, you choose to enjoy it. Cassandra attributes the continued success of Forty-One South over the past decade to her staff for their support, understanding and their continuous efforts, and to the Sandpoint community. “I think that is one of the best things about being in a small town—you never feel like you are just another business on a list.” Currently serving dinner daily from 4:30 to 9pm, dining with a view doesn’t get much better than Forty-One South. t was 1996. The Coeur d’Alene dining scene was wanting, and two friends stepped up to fill a void. That’s how it all began, when John Grollmus and Brad Fosseen sought out to open their first restaurant— and Moon Time was born.
The menu, from the start, has featured creative and upscale pub food, made to order from scratch, bringing a variety of items from many different cultures together. The food is paired with 19 carefully selected beer handles and a wide variety of wines, chosen specifically to complement the fare. From the beginning, it has provided the community a warm and comfortable atmosphere where guests feel at home and are provided an exceptional experience—every time. Twenty-five years later, their philosophy has never wavered, and Moon Time continues to provide their guests with familiar faces, great service, a comfortable atmosphere, and great food and drink at a reasonable price. he Syringa. The Bluebird. The Monarch. And the White Pine. These are all symbolic of Idaho, as they represent the state’s flower, bird, insect and tree. In addition, each represents a North Idaho dining establishment that has become synonymous with Coeur d’Alene. Thanks to owners Viljo and Autumn Basso, Syringa Japanese Café + Sushi Bar, Bluebird - A Midtown Eatery, Monarch Ramen + Noodle House, and The White Pine Coffee Shop are well-known and loved throughout the community—and beyond. The names reflect an appreciation for this place they call home; the restaurants an homage to their travels and the various cuisines they’ve experienced throughout them. aomi Boutz, the woman behind the successful Vine & Olive Eatery and Wine Bar in Coeur d’Alene’s Riverstone, has opened a second restaurant in the Riverstone neighborhood. Opened in early October, eager diners can now partake in delicious eats at Vicino Pizza.
“We’re keeping things simple and soulful just like Vine & Olive,” says Naomi. “We may be a casual pizzeria, but we take food, beer and wine very seriously.” Naomi credits Vicino’s conception to V&O chef Josh Pebbles, as he pitched the idea when he noticed the vacant restaurant space, which already included a wood-fire pizza oven. He will expand his responsibilities to include executive chef at Vicino as well. Chef Josh is not new to the pizza scene, as he opened a Neapolitan-style pizzeria once before in the Bay Area, but credits his most valuable experience to celebrity chef Akasha Richmond. “Chef Josh was the chef de cuisine at two of Akasha’s restaurants, one being a true Italian restaurant with their own pizza oven and fresh pasta,” says Naomi. “That's where he learned even more about the importance of protein, ash and hydration levels in order to create the perfect pizza.” Several salads and appetizers will be available to accompany the Neapolitan-style pizza as well, like meatballs with Nonna sauce (a recipe from a restaurant in Italy that’s been open for 300 years where Chef Josh trained), fritto misto and tiramisu. Guests will also find an all-Italian wine list— the only one of its kind in Coeur d’Alene! “Manager and Sommelier Krista French has put together a very thoughtful and dynamic wine list,” smiles Naomi. There are six tap handles and 20 different bottled beer options as well. The new space offers seating for 77 indoors, with outdoor seating for another 20—which will be available come spring. The black-and-white farmhouse-style eatery features five TVs and will be offering NFL Sunday Ticket during the football season. Vicino is open seven days a week for lunch and dinner, with takeout and to-go available as well. At both V&O and Vicino, you will find a team focused on keeping things consistently simple but soulful. From the food and wine to the service, Naomi, Josh and the rest of the staff are passionate about what they do—and it shows. Whether you choose to take a seat at Vine & Olive or Vicino Pizza, your palate is sure to rejoice!

t’s been 25 years since Raci Erdem, a native of Turkey, first brought the flavors of the Mediterranean to North Idaho. And the delicious aromas and flavors have continued to keep the seats filled and diners smiling at The White House Grill in Post Falls. Here, in addition to the delicious cuisine, patrons will enjoy a comfortable and relaxed family friendly environment, where all ages are invited to take a seat at this fun and noisy restaurant, where Mediterranean music fills the air—as does the aroma of garlic. The menu features seafood, vegetables, pasta and lamb dishes, and is complemented by a full bar showcasing handcrafted cocktails, 12 beers on tap, an extensive wine list and a beautiful scotch list— hand selected by Chef Raci himself. More than a decade later, with one successful restaurant under his belt, Raci opened the doors to The Oval Office Bistro & Martini Bar. At this cozy, romantic small-seat eatery, patrons can appreciate a world of flavors with the small-plate and entrée offerings. Known for its happiest of happy hours in the Northwest, offered twice daily, enjoy all martinis and appetizers at a fraction of the price! A
s you first step into Clover in downtown Spokane, you will find walls adorned with photos of the history of the building and owner. The lighting is warm and the colors masculine. The perfect balance. The fixtures and décor are more contemporary and industrial, a reflection of owner Scott McCandless’ history in engineering. The space is intimate and inviting, from the cozy sunroom to the upstairs bungalow. During the warmer months, guests can choose to dine outdoors on the charming patio, which is filled with herbs and edible foliage, as the kitchen crew uses Clover’s landscape to garden. A lifelong love of food was instilled in Scott starting at a young age, as he watched his mother lovingly devote her time to preparing farm fresh, locally sourced homemade meals “during the time of TV dinners.” 128 128

With a degree in engineering and economics, Scott began his career in the manufacturing industry as an industrial engineer, but due to the demands and constant relocation that came with the job, and raising a growing family, it was time to pursue his deep-seeded passion for food. Together with his wife Liz, who has degrees in both restaurant management and the culinary arts, they made the perfect team. Many years and business ventures later, today, the couple demonstrates their mission in everything they do. When it comes time to order, the cuisine has Mediterranean influences with a focus and flair on Spanish and Italian fare; though they stay true to their American roots, offering locally purveyed meat dishes, such as lamb and duck. Clover’s menu is always true to the season. The seasonings, vegetables, oils, vinegars, game, seafood, drinks, you name it; the kitchen gets all possible regionally and locally sourced and fresh elements for its dishes as they become available or in season. The bar is thoughtful, taking into account how it couples with the dishes, the season, and even the temperature outside. “Our Beef Wellington has been requested so often, it is a staple, as well as our Clover salad with house-made candied pecans and vinaigrette dressing,” smiles Scott. “We have the same demand for our halibut, and with integrity can only offer it when it is in season. Our cobb salad has won the favor from those who claim to know what a good cobb salad is. We hold that kind of feedback in high regard.” Executive Chef Bryan Doyle leads the culinary team. A “homegrown” chef hailing from Spokane, he brings 13 years of experience with him to the plate. “Chef Doyle is consistently challenging himself to balance out dishes with proper acidity, sweetness, salt and spices, and is incredibly open to feedback from a discerning tongue,” affirms Scott. “It is approachable for those who have never tried some of the more uncommon cuisine options out there.” Think scallops, lamb chops, duck, lobster, quail, octopus and more. Scott and Liz credit Bryan, their core management staff and operating crew for showing up, working hard and adapting with all aspects that go into creating what is Clover’s reputation in town. ike so many restaurant owners, husband and wife Seth and Laura Carey were unsure they would survive the pandemic, as the couple’s life work and savings is wrapped up in their restaurant— Veraci Pizza in Spokane’s Kendall Yards. Though not surprised, they were overwhelmed by the community’s showing of support, which kept the restaurant going strong despite all the uncertainty that surrounded local businesses. As Laura shares, “The Inland Northwest stepped up big time and supported small businesses in a very real way. It is because of our customers that we are still here and hope to continue to be here for years to come!” Dishing up their delicious wood-fired pizzas since 2014, Veraci has been satisfying customers since day one. Featured on the menu, of course, are their wood-fired thin-crust pizzas (with vegetarian and gluten-free options available), fired up in their one-of-a-kind ovens, which allows them to cook their gourmet pizzas at 800- to 1,000-degree temperatures, providing a unique—and delicious—end product. You’ll find a selection of salads, appetizers and desserts, as well as a variety of cool cocktails, beer and wine, perfect to enjoy outdoors on the patio overlooking the Spokane city skyline—and they’re planning to add outdoor heaters for the winter months. When interviewed, the restaurant was seating at just 30 percent capacity in order to maintain proper distancing between tables, as the Careys truly care for the health and safety of all they serve—in addition to a delicious meal and great service. Laura credits the excellent staff who have been dedicated to remaining open consistently and safely, as well as Kendall Yards for providing a concierge To-Go service for all their businesses. “We hope that one day—in the not too distant future—we will be able to open our bar top seating back up, fill up our patio, and have all of the tables open inside again,” Laura says. ry Fly Distilling is no longer just a regional name— and hasn’t been for some time. Add Michigan, Missouri, Massachusetts and Oklahoma to the extensive distribution list for the award-winning Spokane distillery. With demand continuing to rise, now was a time to make a move. “We are actually in two facilities now, which requires shuttling of barrels and materials back and forth across town, which is very inefficient,” explained Co-Owner and Vice President Terry Nichols. To help alleviate those issues, streamline production and create a welcoming environment for visitors, Dry Fly will be moving into a 20,000-squarefoot facility at Riverside and Monroe that once housed the SpokesmanReview’s printing operations. The owners are hopeful they will be operational in the new location in March. The new Dry Fly Distilling Company will boast a full-service restaurant, tasting bar and bottle shop as well as event space. Tours will be offered of the new production area, so everyone can get a firsthand look at the operation. It will also be home to all Dry Fly business offices. “Having everything under one roof with ample space will not only give us 10 times our current capacity, it will also make us more efficient,” said Terry. While its staple of whiskeys, gins and vodkas are at the forefront of growth and expansions, the distillery’s canned cocktail line is also exploding in popularity. “We get constant calls and emails inquiring about when and where they can purchase them. All of the various cocktails have a following, but the one that people just can’t seem to get enough of is the Huckleberry Lemonade,” said Terry. Other flavors include Spicy Lemonade, Moscow Mule and Gin & Tonic. The recently released Bloody Mary was done in collaboration with Spokane’s Spiceology Company for a perfect balance suitable for brunch or whenever! Winter will also see a Spiced Cranberry Craft Cocktail added to the lineup. Despite the massive growth, Dry Fly will continue to stay true to its original roots in sourcing as many of its ingredients as close to home as possible. “As we grow and expand into new markets across the country, we will always keep the focus on high-quality local ingredients as we have since day one. If we can source raw materials locally or regionally and keep those dollars here in the great Northwest, we will definitely do so.” Two fly fishing buddies have come a long way since opening one of the first post-prohibition craft distilleries in the country more than a decade ago. With a thriving business, they aren’t able to hit the rivers as often as they used to, but still manage to squeeze in a few casts. “Don (Poffenroth) has gotten out on the Clark Fork a little bit this year, and he was fishing on the Spokane the other day, albeit only so we could capture some footage for a promotional video we are working on! Maybe 2021 will be less hectic,” laughed Terry.

By Jillian Chandler IT’S WINTERTIME, AND HERE IN THE INLAND NORTHWEST, THAT MEANS THE TEMPERATURES ARE FREEZING and there’s a good chance that on any given day we’ve got plenty of snow on the ground—or at least up in the mountains! Gone are the days—at least for the next several months—of enjoying a cold brew or chilled chardonnay out on the patio as the warmth of the sun beats down on our faces and we search for a little shade to shield the heat. But for now, let’s embrace this cold and snowy season and warm up next to a hot, cozy fire with a nice glass of wine. “Any red wine is sure to warm you!” affirms Natalie Barnes, winemaker for Latah Creek Wine Cellars in Spokane Valley, Washington. “The higher alcohol content in these wines is what leads to the warm, cuddling feeling you get, which is why they are most often reached for during the colder months.”

During the winter season, many people may opt for a wine cocktail instead, such as mulled wine. “It is fun to experiment with mulled wine,” shares Natalie. “You can find hundreds of recipes online, and as you taste them you can adapt them to your preference of spices. Plus, when you are making it, it fills your house with the most amazing aromas!”
There’s no wrong answer when deciding on your favorite wines to enjoy during the snowy season. 142

Kylie Presta, winemaker of Pend d’Oreille Winery in Sandpoint, Idaho, recommends full-bodied, complex varietals for the cooler fall and winter months. “These wines offer a richness, which warms and comforts,” she says. When choosing a wine to complement the season, she suggests Pend d’Oreille Winery’s 2018 Syrah, 2018 Primitivo and 2015 Meyer Cabernet. “The Syrah is a perfect balance of fruit and spice and pairs well with roasted pork and gourmet cheeses; the Primitivo offers flavors of candied fruit and caramel and pairs well with roasted vegetables and fall soups; the Meyer Cabernet Sauvignon is an elegant reserve wine, ideal for winter enjoyment.” When it comes to a wine that you can enjoy on any day but also works well for a special occasion, she recommends a bottle of their most popular red blend, Bistro Rouge. “Our Bistro Rouge is essentially a Bordeaux blend with a fruit-forward flavor followed by cinnamon and rosemary,” she shares. “This wine pairs well with a very casual meal or fine dining.” Bistro Rouge is also available on tap at the winery, with the option to refill your wine bottle. She adds that she tends to keep a bottle of Cabernet Franc and Cabernet Sauvignon for guests and dinner wine, as these are “reliably interesting and pleasant wines.” Red wines are not your only choice for the season, as Kylie explains that their house Chardonnay is the most popular option for a white wine preference and pairs lovely in complementing any Thanksgiving table. Pend d’Oreille Winery recently bottled their 2019 vintage of Cabernet Franc, Cabernet Sauvignon and Merlot. “We also bottled our dessert portstyle wine, Oui, to be released by the holidays,” Kylie shares. “We anticipate many delicious wines, and we can’t wait for you to try them!” According to Natalie, “Quite a bit of the time, people like to drink wines that are refrigerated during the summer, as it is hot outside and a nice and
cool crisp Pinot Gris is perfect for sipping outside on your patio. During the colder months, you are more likely to reach for the reds, as they are served around room temperature and give you that nice warm feeling as they go down.” At Latah Creek, they tend to promote their wines with this same idea (i.e. choosing a Wine of the Month) but always tell customers that it is more important to drink what they enjoy rather than trying to stick with an older tradition. “For myself personally, I drink red wines for dinner 95 percent of the time and save the other wines for other times of the day,” says Natalie. “This does not mean, though, that I don’t open up a different type of wine once in a while and try it with my dinner as well, so that I can make a real, tried-and-true suggestion on wine pairings for everyone.”

When it comes to Latah Creek’s wine offerings, Natalie’s top suggestion is always their Mike’s Reserve Red, “as blends are one of my most favorite wines!” she smiles. “Don’t get me wrong, I love varietals as well, but one of my favorite things to do for winemaking is to take various wines and combine them to make something extra special! We are actually, for the first time ever, going to have our Mike’s Reserve Red no.2 and Mike’s Reserve Red no.3 released at the same time! We normally wait until we are out of the previous vintage before we bring out the next one, but these two blends are so different and both so good, we couldn’t wait to release no.3, so we are doing it now! I also love to suggest our Mulled Wine. We take our Sangria, add our mulling spice bag, heat in the microwave, and you have one delicious, mouth-watering, perfect-for-coldweather drink!”

As Natalie suggests, it’s a good idea to keep a variety of wines on hand for guests, as everyone has different tastes. “My mom prefers dry whites, one of my friends drinks only Riesling, and I prefer red.” As she is herself an avid home chef, she likes to keep different types of wine on hand to use in her cooking. “Just a small amount can drastically change the flavor profile of a meal, many times adding that much needed ‘extra’ flavor component.” Latah Creek’s dessert wine, Natalie’s Nectar, is not only wonderful for drinking any time of year, but it is her go-to and the one she most often uses when cooking. “With its concentrated flavor, it really boosts the meal!” she affirms. “I also love to serve this for dessert with dark chocolate when company is over; perfect for when you have already slaved over dinner, it is a nice treat to have dessert taken care of so simply!” At the end of the day, whether you prefer red or white, dessert wines or mulled wines, there’s no wrong answer when deciding on your favorite wines to enjoy during the snowy season. A TOAST … TO 38 YEARS! Taste what Spokane’s long-standing winery has to offer By Jillian Chandler

ine lovers have continued to enjoy sipping wines while visiting with friends and neighbors in the beautifully remodeled tasting room and gift shop at Latah Creek Wine Cellars in Spokane Valley, Washington. The open space, which can comfortably accommodate patrons and easily adhere to social distancing rules, has become a gathering place to relax and taste. As winemaker Natalie Barnes says, “We love that people can have a wonderful place to sit and sip our wine, while being able to see all of our fabulous gifts at the same time.” Established in 1982 by husband and wife Mike and Ellena Conway, Latah Creek Wine Cellars has been pouring excellence into each glass and continues to bring affordable, award-winning wines to the Inland Northwest. Joined by their daughter Natalie, they are continuing that mission 39 harvests later. Currently at the winery, you will find nearly 20 wines that are available for tasting, by the glass or bottle purchase. They are excited to once again be offering wine tastings, in which you can enjoy five tastes of your choice for just $5! The new assortment of

soon-to-be-released wine adds much anticipation to the upcoming season; between August 2020 and February 2021, they are releasing more than 10 new wines! Their first ever Reserve Mourvèdre was released this past August, and they will continue to release new wines, which include three more reserves, two new reds and several whites, through the new year. The gift shop, which is a labor of love for Ellena, is truly unique, offering many gift and gourmet food items that can’t be found anywhere else! “We love sending customers home with gift baskets that will make them shine,” smiles Natalie. For the eighth year in a row, Latah Creek will hold their Annual 12 Days of Gifting during the month of December, where each day is a new deal, only available for that day with discounts up to 50 percent off! Natalie joined her father in the family business of winemaking in 2004, and her passion for her craft continues to grow with each season. “I love how most everything in winemaking is different; growing seasons change each year; grapes all taste distinct from one another (even the same grapes from the same vineyard year to year). It keeps you on your toes and is never boring!” Natalie is grateful to be able to do what she loves while working alongside her parents. “When working with your family, there is a closeness that you can’t get on your own,” she says. “We love sharing wine with one another. The Virgin Islands National Park covers over half of the island, and beautiful, pristine beaches dot the coastline throughout. There are multiple opportunities to hike, explore the island’s history, head into the waters for a boating or snorkeling adventure, or relax on the beach. And with minimal development, the island has retained its unspoiled beauty.
Situated just 4 miles from Saint Thomas, Saint John is the smallest of the three U.S. Virgin Islands, but it boasts a laid-back, quaint and noncommercialized atmosphere that makes it many travelers’ favorite U.S. Virgin Island.
There is no airport on Saint John, so your journey to the island will begin in Saint Thomas. Once you fly into Saint Thomas, the easiest and most affordable way to the island is by passenger ferry. It is a short ferry ride across, and there are multiple departures throughout the day. You can also book a private water taxi, or charter a boat for a day or weekend trip to the island.

This time of year is the perfect opportunity to take off to the warm, balmy climate of the Caribbean for a few days—or weeks.
Winter is the best season to visit Saint John. Temperatures are perfect for exploring the island and beaches—typically in the mid-70s or low 80s— and hurricane season doesn’t start until June. With that said, it’s also the Caribbean’s busiest season, and lots of tourists descend on the area from all over the world. Saint John is just 9 miles long and 5 miles wide, with just over 4,000 permanent residents, making it a small, welcoming island where visitors can truly get to know the people and culture. Nicknamed “Love City,” there’s a reason visitors and locals alike fall under Saint John’s spell. 156

Where to Stay Part of Saint John’s charm is that it has no all-inclusive resorts. There are two main settlements on the island: Cruz Bay, located on the west side of the island, is Saint John’s main economic and entertainment hub; and Coral Bay on the east, the center of plantation life on the island in the early 1700s, is now the quieter, more remote and picturesque side of the island. There are several restaurants and bars in Coral Bay, though accommodations are fewer.

Trunk Bay
Trunk Bay is home to the Coral Reef Underwater Park Trail, a self-guided snorkeling trail in the Virgin Islands National Park.
The main resorts on the island are the Westin St. John Resort located in Cruz Bay, which features studios and one-, two- and three-bedroom villas; the Gallows Point Resort in Cruz Bay, which is situated on a 5-acre peninsula with breathtaking views; and the Grand Bay Resort, situated hillside overlooking Cruz Bay. Other resorts, hotels and inns like the Sea Shore Allure and Lavender Hill Suites are scattered throughout Cruz Bay and provide exceptional access to the beach, as well as inviting accommodations. For many visitors, however, the most ideal way to experience Saint John is by renting a local villa. Ranging in size from small island cottages to multi-bedroom estates, there are hundreds of villas available for rent throughout the island that provide the true Saint John experience. What to See People come to the Caribbean for the beaches, and Saint John certainly has its share of pristine coastline. You’ll want to spend the majority of your time exploring the various beaches on the island, and swimming and snorkeling the crystal-clear waters. Trunk Bay is the most popular beach on Saint John, attracting crowds of visitors throughout the year, and for good reason. Its picture-perfect white sand beach and aqua waters provide the perfect place to relax on the beach and take in the views, and there is ample opportunity to snorkel, swim, sail and dive. The underwater trail near the shore is particularly fun for beginning snorkelers. 158

Caneel Bay is the location of the Caneel Bay Resort (which is undergoing restoration after destruction from hurricanes), and the hot spot for the rich and famous. Its 170 acres boast seven beautiful beaches, all open to the public. Another must visit is Cinnamon Bay, which offers a beautiful white sand beachfront, hiking trails, windsurfing, ruins, and glimpses of wild donkeys! You can even camp at Cinnamon Bay (if you want a few nights of roughing it in the Caribbean). For more remote and quiet beaches, head east toward Coral Bay. Salt Pond Bay is a remote, tranquil yet rocky beach that offers good snorkeling and mesmerizing tide pools. Lameshur Bay Beach, west of Salt Pond Bay along the south coast, is even more remote, and you have to brave a bumpy dirt road, but the beautiful sands and clear snorkeling waters are well worth the effort. There are also trails to explore in this area, but keep in mind facilities are few and far between, and make sure to lock up cars and possessions. Besides beach lounging, hiking and snorkeling, a great way to explore the island is via kayak or stand-up paddle board (SUP). Many of the beaches or resorts offer rentals, and you don’t want to miss seeing the island and its beautiful bays and shorelines from kayak or SUP. If you’re looking to head further out, book a charter for the afternoon and go island hopping to the many surrounding small islands. You can book a charter with others to save on cost, or you can select a charter for just your group. Either way, exploring the many islands, cays and islets that

make up the U.S. and British Virgin Islands will be a memorable part of your trip. You may be here for the beaches, but don’t forget the Virgin Islands National Park. Along with picturesque beaches, the interior of the park offers hikes to explore the historic plantations that once dominated this island, as well as ancient petroglyphs carved by the Taino Indians. Take a tour at Annaberg Sugar Plantation Ruins, situated in the National Park, and go back in time to 1780 and the days of sugar plantations. The island’s past of slavery is part of its history and story, and an important part of understanding the Saint John of today.
A notable spot you won’t want to miss in Coral Bay is Aqua Bistro, which offers a more formal outdoor sit-down restaurant or the waterview outdoor round bar. The menu specializes in seafood, and there is live music most nights. It’s the perfect hangout after a day lounging at the beach. For a more divey, casual experience, head over to Skinny Legs, a beloved burger spot in Coral Bay. High Tide is a local (and tourist) favorite in Cruz Bay. The grill and bar is located on the water, and you can even walk through the sand to get there. Sip from a Caribbean island favorite: the Painkiller, created in the 1970s at the Soggy Dollar Bar in the British Virgin Islands.
Transportation between Cruz Bay and Coral Bay is easy. You can hop on one of the local Vitran (Virgin Island Transit) busses for cheap, although the schedules are somewhat unreliable, or book a taxi. Taxis have set rates, which usually range from $5 to $14. If you want your own transportation, rent a car, bike or moped during your stay, but keep in mind the island is hilly, so you’ll be getting quite the workout on a bike.
One of Saint John’s longest-running restaurants is The Lime Inn, a fun Caribbean-atmosphere hot spot where you can choose from a creative list of Caribbean classics.

Rustic Mushroom Soup INGREDIENTS
3 tbsp. butter 2 cups chopped onions 1 lb. fresh mushrooms, sliced (any kind; a mix is best) 2 tsp. dried dill weed 1 tbsp. paprika 1 tbsp. coconut aminos 2 cups chicken bone broth 1 can full fat coconut milk 2 tsp. fresh lemon juice 1/2 cup sour cream 2 tbsp. chopped fresh parsley 1/2 tsp. xanthan gum ground black pepper and salt to taste
METHOD
• Melt the butter in a large pot over medium heat. Add the onions and sauté for 5 minutes. Add the mushrooms and sauté for 5 more minutes. Stir in the dill, paprika, coconut aminos and broth. Reduce heat to low. Cover and simmer for 15 minutes. • Whisk the coconut milk and xanthan gum together in a separate bowl. Pour into the soup and stir well. Cover and simmer for 15 more minutes, stirring occasionally. • Finally, stir in the ground black pepper, salt, lemon juice and sour cream. Mix together and allow to heat over low heat, about 5 minutes. Remove from heat and serve warm. Enjoy!

Whipped Coffee Ingredients 2 tbsp. instant coffee 1 tbsp. Lakanto or Swerve brand sweetener 2 tbsp. boiling hot water ½ oz. chocolate liqueur 1 cup unsweetened coconut or almond milk ½ oz. Frangelico (hazelnut) liqueur 1 tsp. dark chocolate, shaved
Method • To make the whipped coffee, add the instant coffee, sweetener and hot water to a medium-sized bowl, and whip on high speed with a hand-mixer until stiff peaks form, about 5 minutes. • To layer the drink, poor chocolate liqueur into a glass, add ice then milk and Frangelico liqueur. Top drink with the whipped coffee and garnish with shaved dark chocolate. Stir whipped coffee into the drink before drinking.
Dad’s Maple
Nut Ice Cream Ingredients 1 tbsp. butter 3 tbsp. Lakanto brand maple syrup 1 ½ cups walnuts, chopped ¼ tsp. Himalayan salt ½ cup Lakanto brand golden sweetener, ground into a powder 5 organic eggs, whipped 4 cups heavy whipping cream 13.5 oz. can full fat coconut cream 5 tsp. maple extract (I like Cook’s brand) ½ tsp. Himalayan salt
Method • In a medium skillet over medium low heat, melt butter. Add maple syrup, walnuts and salt. With a heat-safe spatula, coat the nuts, stirring frequently to toast the nuts, about 5 minutes. The nuts will absorb all the butter and maple syrup. Remove glazed nuts from skillet and place on a plate in a single layer to cool. Set aside. • In a food processor or coffee grinder, process Lakanto golden sweetener into a powder. In a large bowl, whisk the eggs until scrambled. Mix in whipping cream, coconut cream, powdered sweetener, maple extract, salt and glazed walnuts. • Pour mixture into an ice cream maker and freeze according to the manufacturer’s directions. When the ice cream is firm, place in a freezer-safe container and chill for 3 to 4 hours before serving.

APPLE, FETA AND ROSEMARY FLATBREAD Yields: 12 servings
INGREDIENTS
2 Caulipower brand pizza crusts 1 Granny Smith apple, cored and cut into ¼-inch rounds 1 cup feta cheese 1 tbsp. rosemary, minced ½ cup walnut pieces 2 cups fresh arugula 2 tbsp. date syrup
METHOD
• Preheat oven to 425˚F. Remove crusts from box, overwrap and cardboard. Place crusts on a baking sheet lined with parchment paper. Drizzle crusts with 1 tablespoon of the date syrup so that the apples will stick to the crust. Layer crusts with apple slices, feta cheese, rosemary and walnuts—divide equally between both crusts. Bake for 10 minutes or until edges of crusts are golden brown. • Remove from oven. Top both crusts equally with arugula. Drizzle reserved date syrup over the arugula and slice to serve.
