One of the best ways we can do this is by spending time with one another. For couples, having a standing “date night” is a great way to accomplish this. If it’s difficult to get a babysitter or if money is an issue, you can still make it happen. Wait until the kids are tucked in for the night and have a special candlelight dinner and a movie.
Do work or obligations at home keep you from spending time with your children? One of the best gifts we can give our children is the memory of time spent together. A weekly visit to the park every Saturday morning or a lunch date with our adult child can be things we do that will spark conversation and nurture that relationship. Many spend more time with their co-workers than their own families. Extending a simple “thank you” can go a long way to show others they are appreciated. My ideal Valentine’s Day is to cook a great dinner in with my husband. It’s so much fun to create something unique together and then enjoy our culinary skills. We’ve done some crazy things like fly in lobsters from Maine! We go out when we are too busy to cook sometimes during the week or when we want to treat ourselves on the weekend. Cheers to making Valentine’s Day special! And remember, Valentine’s Day isn’t Valentine’s Day without Champagne.
My Ideal Valentine’s Day would be waking up to the one I love and then going back to sleep. As long as I am with the one I love, then it will always be my ideal day. Chocolate and flowers do help make it better though.

GLAZING, STAINS, PAINTS AND ANTIQUING

D
esign trends change and everyone has different taste. However, one thing stays the same … there are a ton of finish options available no matter what your style and no matter what project you’re working on. First, there are a few basics to know about finishes available and associated terminology for these elements. These finish options can cover everything from cabinets, doors, trim, furnishings, walls, exterior and even countertops. Glazing, stains, paints and even antiquing procedures all have a multitude of options. They are briefly outlined below, but all have varying elements that professionals have put their own twist on to brand them as their own. Antiquing or Vintage touch – This method creates an aged, worn look. This can be achieved by adding dents, gouging and sanding at varying degrees of application. Distressing can be done before or after any of the below finishes have been applied. Dry Glazes – This is when glaze is hand applied to only the profiled areas (think where moldings meet or changes in elevation of a surface). The base color remains unaltered. Pencil Glazes – This is a small line of glazing that is literally applied by drawing it on via a

tip or thin brush. Typically is applied to areas where there are changes in elevation on the surface and leaves the appearance of a simple line. Wet Glaze – In the wet-glaze process, the glaze is sprayed onto the entire area and then wiped off, altering the overall finish color. Stains – Stains are meant to enhance the natural graining of the wood. Light stains show more of the wood grain, and darker stains hide more of the graining, which makes the wood more uniform in color. Opaque Finishes – This finish completely covers all of the surface. Usually, maple is the wood species that’s painted. However, right now, the trend is tending to paint oak so that the vertical wood grain shows through the paint for a textured paint finish. Chalk Paints – Ingredients are talc, calcite and pigment. Because of the talc and clay, the sheen is matte when dry. Milk Paint – Ingredients are lime, clay, milk protein (casein) and pigment. It’s a powder and gets mixed with water, so you can control the intensity of color. It has a naturally matte finish. Matte Finishes – Matte finishes are becoming more popular as well. Matte black hardware is in such high demand it’s hard to keep in stock.

Countertops are also trending toward matte surfaces. Manufacturers are offering finishes in both polished and matte sheens. These matte finishes lend themselves to a muted and sometimes more gray coloring than the polished original. So, next time you are looking at furniture, shopping for cabinets, picking out new shelving for your living room or simply flipping through a magazine, you can take a closer look at the finishes and know what you are looking at.

2018 Wedding Trends
What you didn’t know you need to know BY LINDY PETERSEN
O
ver the past few seasons, we’ve seen our share of charming, romantic weddings full of pastels and sequins. For 2018, expect us to run full force from this light and airy feel, as we’re predicting weddings will take on a more dramatic and edgy vibe in the way of deeper colors and richer textures. A more bohemian style is taking over and will replace rustic, and couples will be more relaxed in their approach to planning—it’s less about honing in on a specific wedding theme or color combination and more about creating a vibe or mood for your big day. Style: Bohemian Rustic has been all the rage lately—weddings held in barns with DIY-style floral arrangements, casual food (hello barbecue!) and more. For 2018, bohemian will be the new rustic—still a somewhat relaxed look but a bit more elevated than your average hoedown. We’re thinking an undone look that’s edgy but still romantic.

Colors: Deep and Rich with Black Accents Say goodbye to the cotton-candy colors! Those light, airy shades are taking a backseat to a deeper, richer palette. More dramatic hues like burgundy will be popping up in floral arrangements, and edgy black accents will make an appearance as well. Don’t forget about those metallic accents. Gold and copper have been in demand for a while now, and we’ll start to see more silver and chrome as well. Décor Details: Macramé and Crystals Going off the whole bohemian trend, expect to see macramé and crystals as a big part of 2018 wedding reception trends. Table runners, bouquet wraps, chair décor and more all will see their fair share of both. We’ll also see crystals scattered on tablescapes the way that typewriters and other knickknacks were present at vintage weddings in years past.

Venues: The Industrial Space Outdoor weddings are still going to be huge, but indoor venues, especially industrial spaces, are the new “it” spot. They have that same relaxed feel and blank-slate vibe as barn venues (which aren’t going anywhere) but with an edgier, hip feel. And the fact that they’re indoors makes coming up with an alternate plan for bad weather one less thing you have to worry about. Cakes and Desserts: Drip Cakes and Doughnuts No big shocker here because who doesn’t love doughnuts? This is a bit of a holdover from 2017, but drip cakes will still be big in 2018—they pair quite well with the relaxed bohemian look. Naked cakes are making their way out the door, but cakes with a thin layer of buttercream will still also be in style. Don’t worry; the doughnut trend won’t be going anywhere, as couples look to show their personalities with unusual

dessert options including ice cream, dessert cocktails and more. Flowers: The Cascading Bouquet We’ve gone from short and sweet petite bouquets to full luxurious cascading flower arrangements. For 2018, the bigger the bouquet the better. We’re talking a more modern look here than our usual British wedding—and it’s an opportunity for your florist to mix lots of favorite blooms in an array of hues, as well as showing off all that greenery that will still be on trend. Wedding Dresses: Celestial Chic, Puff Sleeves, Edgy Jackets and More Bridal designers were definitely feeling the bohemian-meets-edgy vibe when thinking about 2018 collections. From starryappliqued dresses to edgy rocker jackets, 2018 wedding dresses certainly complement the wedding décor of the moment.
Bridesmaid Dresses: Velvet and Pants Velvet pants?! OK, so the bridesmaid dress doesn’t actually have to be a dress anymore. Bridesmaid pants (both separates and jumpsuits) will be right on point this year. And if you’re still opting for dresses for your gals and are hosting a cooler-weather wedding, velvet is the must-have fabric. How many of us ladies out there have frozen in our too-skimpy dresses while our guys roasted in their suits? No more! Other trends for bridesmaid dresses include wrap dresses and jewel-toned hues. Menswear: Burgundy is the New Blue While we don’t think the blue suit is going anywhere just yet, expect to see more burgundy suits at weddings in 2018. As wedding colors are moving in a deeper direction, this hue will certainly fit right in. And burgundy does look great on many a guy, so it’s definitely a win-win.

T
he helplessness she felt as an eyewitness to a mall shooting turned into her life’s mission.
The trauma that shaped the life of Emily Banks took place several years ago, but she can recall virtually every moment of that eventful day. The resident of the small town of Graham in Pierce County was working a retail store inside the Tacoma Mall early one morning when a gunman entered the mall armed with a semi-

automatic rifle and a handgun. He began to fire randomly at customers. The gunman ultimately injured six people before kidnapping four innocent shoppers. Banks jumped into action to provide aid to one shopper who had been shot in the leg, then dragged her out of the line of fire. “Something deep inside of me must have kicked into gear. It was fight or flight,” Banks remembered. “I tried to herd my customers to
the back of the store so they’d be safe. It was like a war zone in the mall and I just wanted to keep as many people safe as possible “That was the moment when I realized that I had the power to help people and keep them safe from harm.” The shooting in November of 2005 inspired Emily to become a firearms instructor and create Lock and Load Em, the premiere firearms instruction facility in the South Sound. The

owner wanted her enterprise to teach respect for firearms in an atmosphere that is both professional and non-judgmental.

Her business began 11 years ago as a nonprofit effort to assist people who wanted to know more about the proper use of guns. Instruction is held at facilities in both Olympia and Lacey.
The 32-year-old mother of three youngsters under the age of 10 has added to her decade of experience in the firearms industry by becoming certified by the National Rifle Association (NRA) in both pistols and rifles as well as earning her accreditation as an NRA Certified Master Range Safety Officer. She is also certified as an instructor of Advanced

By the end of the class day we ensure that each student will come away from class with confidence, knowledge and … a smile. Her school was founded as a place for women to become comfortable with the guns that are in their homes. The school has expanded over the years to offer classes for men and couples. “Nothing says empowerment and confidence like a lady with a pistol who knows how to use it properly.” Banks stresses respect for firearms as well as the person holding the weapon. For her, the need for respect for guns is personal. She and her husband, Jeremy, live in a house filled with more guns than children. Her passion for firearms comes from her father, Joel, who serves as a senior instructor at Lock

and Load Em when he’s not wintering in Arizona. Before he retired, Joel was a science teacher who has utilized his natural abilities to share the numerous technicalities involved with firearms. The proud daughter also credits her dad with giving her the confidence to handle firearms and the “performance factor” to stand up in front of 100 strangers in a classroom. “My dad taught me to respect guns when I was very young,” said Banks. “My mother used to complain that my dad ‘ruined’ me because I preferred guns over playing with dolls.” Her business has changed dramatically over the past four years with the increase in gun violence across the nation. Banks admitted that many of her friends have a hard time understanding how a kind and compassionate soul can spend so much time with such violent weapons. Women, she said, represent 50 to 60 percent of the new gun owners over the past five to six years. “I try my best not too get political on either side of the issue,” she said. “But the controversy surrounding gun control is a hot topic and must be confronted in almost every class.” The business owner said she had been forced to stay away from checking her account on Facebook for fear of being dragged into a debate that cannot be won or lost on social media. Banks is an NRA-approved instructor and agrees with the organization’s philosophy that
emphasizes the need for background checks for people who want to purchase guns but not with calls for registering every gun. She believes in the literal words of the Second Amendment, which guarantees the right to bear arms for an organized militia. Overcoming fears

Carol Rollinger cried on her way to her first class at Lock and Load Em. She also lives in Graham and was being raised in a family that includes both members of the military and law enforcement officers. But her level of comfort around guns all changed the day she was the witness to a gun-related crime. “It was the sound that made me afraid. Gunshots made me cry for years, and I suffered from obvious symptoms of PTSD [post-traumatic stress syndrome] as if I had seen action in Vietnam,” said Rollinger. “It got so bad that I would shutter every time I heard a firecracker go off or any loud noise. Rollinger emphasized the fact that loud noises made her so uncomfortable that she could not even enjoy the fireworks on the Fourth of July. “That makes it pretty difficult to be the mother of two young children,” she said. “Going to a class at Lock and Load ‘Em was my counselor’s way to make me face my fears.” The instructors at the school worked with Rollinger, slowly exposing her to varied levels of noise from different caliber firearms. One year later, she is an instructor at Lock and Load Em who is available to help other students overcome their fear of guns and loud noises.

“I am at the school as many days every week that I can,” she said with relief in her voice. “Guns are a reality of the life we live in today. People need to confront those fears, even if they are opposed to owning guns themselves.” Rollinger begins the first day of any course with a detailed explanation of her experience with guns and how she came to Lock and Load Em to overcome her fears so students with the same fears realize she can empathize with their feelings. Some of the first students who came to Lock and Load Em for rifle instruction did so to use the guns to hunt deer and elk. Some of the people, said Emily, have come to depend on hunting to provide a portion of the meat for their families throughout the year.

LOCK AND LOAD EM The Advanced Pistol Clinic is perfect for those who have taken the Basic Pistol Course or seek greater proficiency in handling small arms. This course is limited to students who own their own firearms, and the gear requirements must be fulfilled. The four-hour course is limited to eight students and is held at the Evergreen Sportsmen’s Club in Olympia. According to Banks, the advanced course has been modified to refine a shooter’s pistol shooting and handling skills and introduce practical defensive types of shooting. The co-ed Basic Pistol Course is a one-day event consisting of both classroom and live-fire range instruction. Similar to the Ladies-Only course, the coed instruction includes access to multiple firearms and 2.5 hours of time at the range. The available guns include, but are not limited to .38 special, .357 magnum, .45 automatic and 10mm handguns.
Not for women only “People have the right to own a gun, whether they use it for sport or to provide sense of security in their home,” Emily said. “Others simply enjoy the competition of sharp shooting. We welcome them all.” She explained that her school began to assist women who live in homes with guns but lacked the knowledge and instruction to use them safely. Classes go beyond firearm instruction. Each one, she said, includes an expansive knowledge of the laws and expectations she believes every gun owner should have before making the decision to have a gun in their home. Banks also guarantees every student will have “a great time and leave with some serious shooting skills.”

Her newest offerings are classes required to obtain a permit to carry a concealed weapon. The most popular of those are classes designed to meet the tight requirements to obtain a Concealed Firearm Permit in Utah, recognized by many states as the standard as a multi-state permit. The most popular course at Lock and Load Em is the one-day Ladies-Only Basic Pistol Course, which consists of classroom instruction and live-fire range experience. The ladiesonly course covers everything pistols and revolvers starting at square one to develop safe, responsible and smart shooters. Class size is limited to 18 students to guarantee a minimum two-to-one student-to-instructor ratio. Students in the course are given instruction in handling and firing of almost 40 varieties of firearms. Graduates of the course are fondly referred to as Ladies of Higher Caliber.
The curriculum includes instruction on general firearm safety, the care and operation of pistols and revolvers, types of ammunition, the fundamentals of proper shooting and range etiquette as well as an introduction to home defense and the laws that cover concealed weapons. She says the demographic has been much more diverse than she had thought it would be. “We expected to see a largely millennial audience for this experience [but] we’ve had all kinds of people play Trapped! Some are visiting the fort for the first time, and some are already fans of ours.”
Trapped is a collaboration between Metro Parks Tacoma and Labyrinth Escape Games out of Portland. Fort Nisqually Living History Museum, operated by Metro Parks Tacoma, is a restoration of the Hudson’s Bay Company outpost and headquarters of the Puget Sound Agricultural Company. Visitors travel back in time and experience life in Washington Territory during the 1850s. Nine buildings are open to the public, including the Granary and the Factors House, both National Historic Landmarks, and a Visitor Center with Museum Store.
Participants must be at least 21 years of age or older to engage in the game. Cost is $25 per person, with up to eight people per one-hour game. There are special dates and times specifically set aside for those

sst … Did you know you can protect your children against cancer, your future grandchildren against death from a fatal infection and your daughters from having to worry about abnormal Pap smears—all with a simple vaccination? These illnesses are caused by the Human Papilloma Virus (HPV), a group of viruses that 75 percent of us will be exposed to by the time we’re 50 years old (most of us in our early 20s). We can protect our kids before the virus has a chance to strike by getting them immunized between the ages of 11 and 14.

After getting the shot, your child may complain about redness, swelling and tenderness at the site of the injection. But his or her immune system will now know how to fight off the infection before it can cause problems, and you get to be the hero who protected your child from cancer! How cool is that? HPV causes many types of warts and, worse, a number of cancers in the throat, mouth and genitalia. HPV is the only cause of cervical cancer. That means that if we could protect against all types of HPV, no one would ever get cervical cancer again. (Right now, the vaccine protects against the nine different
types of HPV that cause 90 percent of all disease.) HPV causes 39,000 cases of cancer in the U.S. every year, including 11,500 cases of cervical cancer which go on to kill 4,000 women annually. Babies can get HPV as they pass through the birth canal, some of whom subsequently develop respiratory papillomatosis, an infection of their windpipe which can be fatal. Have you or a friend ever worried about an abnormal Pap smear? That was HPV’s fault, too. HPV is tricky because it doesn’t typically cause symptoms when it is first caught. It can take
anywhere from eight months to two years for a person to fight it off, and the cancers can take up to 20 years to occur. By being so “quiet,” it allows people to pass it on without ever knowing they were infected in the first place. Transmission of the virus from one person to another requires close physical contact of the kind that occurs in healthy, adult relationships. Close contact, not just sexual intercourse. And remember, 75 percent of people have been infected by HPV— healthy people participating in healthy relationships. The HPV vaccine has been part of the routinely recommended immunization schedule for over 10 years. Both girls and boys are recommended to receive the vaccine between 11 and 12 years of age. Why vaccinate them when they’re so young?
children who start the vaccine before the age of 15 only need two doses rather than the three doses that older teens and adults require. • Because the vaccine can’t cure the disease, only prevent it. • Because your child will—eventually—be a healthy adult in a healthy relationship. • And because, in the worst case scenario, our children don’t always get to choose the “who” or the “when” of their sexual exposures. Is Wine Good For Your Health? Grab a glass and drink up! By Lindy Petersen

he list of the benefits of drinking wine is long and getting more surprising all the time. Already well-known as heart healthy, wine—in moderation—could help you lose weight, reduce forgetfulness, boost your immunity and help prevent bone loss.
those who indulge occasionally; moderate wine drinkers have narrower waists and less abdominal fat than people who drink liquor. The alcohol in wine may encourage your body to burn extra calories for as long as 90 minutes after you down a glass.
Below is a short list of the different ways indulging with a glass of wine might be helping your body, mind and spirit.
Boost your defenses
Feed your head Consuming wine may actually help your memory. When researchers gave memory quizzes to women in their 70s, those who drank one glass or more every day scored much better than those who drank less or not at all. Wine helps prevent clots and reduce blood vessel inflammation, both of which have been linked to cognitive decline and heart disease. Alcohol also seems to raise HDL, the so-called “good” cholesterol, which helps unclog your arteries. Throw away that scale; it’s only a number anyway Studies find that people who drink wine daily have lower body mass index (BMI) than

In one study, those who drank roughly a glass of wine a day reduced, by 11 percent, their risk of infection. As little as half a glass may also guard against food poisoning caused by germs like salmonella when people are exposed to contaminated food, according to a Spanish study. Guard against ovarian woes When Australian researchers recently compared women with ovarian cancer to cancer-free women, they found that roughly one glass of wine a day seemed to reduce the risk of the disease by as much as 50 percent. That’s a good enough reason for us to have a glass! Earlier research at the University of Hawaii produced similar findings. Experts suspect this may be due to antioxidants or phytoestrogens, which have high anticancer properties and are prevalent in wine. And in a
recent University of Michigan study, a red wine compound helped kill ovarian cancer cells in a test tube. Build better bones On average, women who drink moderately seem to have higher bone mass than abstainers. Alcohol appears to boost estrogen levels; the hormone seems to slow the body’s destruction of old bone more than it slows the production of new bone. Get dense girls and have a glass of red! Prevent blood-sugar trouble Premenopausal women who drink one or two glasses of wine a day are 40 percent less likely than women who don’t drink to develop Type 2 Diabetes, according to a 10-year study by Harvard Medical School. While the reasons aren’t clear, wine seems to reduce insulin resistance in diabetic patients. Our advice is never meant to substitute for good, solid medical advice. If your doctor has advised you differently about drinking wine, please listen. We didn’t go to medical school. We just know what we like.

Dinner for two
For this dinner we will be using lamb shanks. If you can’t find them or don’t like lamb, you can replace them with short ribs, beef shanks or even oxtail. The preparation will be the same for all. You will need to pick a vegetable side and also make (or buy) mashed potatoes. For your wine choice, I would go with a full-bodied dark red from Washington; a merlot, cabernet sauvignon, petite verdot or a blend of these. Grab a dessert—you can’t go wrong with something chocolatey—while you’re there as well. You want to finish this off right!

2 lamb shanks 1/2 cup flour 1 tsp. salt 1 tsp. black pepper 1/4 cup cooking oil 1 large carrot, medium diced 1/2 yellow onion, medium diced 1 stalk celery, medium diced 3 bay leaves 4 garlic cloves, smashed 8 black peppercorns 1 cup red wine 4 strands of fresh thyme 4 sticks of fresh rosemary Zest of one lemon 2 cups low-sodium beef stock Pipe stock (aka water)

• Mix the salt and pepper into the flour. • Coat the shanks in the flour. • In a heavy pot or Dutch oven, heat the oil over medium heat. • Add shanks and cook on all sides until browned. • Add carrots, onions, garlic and celery and sauté for one minute. • Add wine and simmer for one minute. • Add remaining ingredients and enough water to just cover the shanks. • Cover and place in a 350°F oven for about 1 1/2 to 2 hours until fork tender (this can be done on the stovetop as well). • Uncover and cook for another 20 minutes. • Remove shanks and strain liquid into a separate bowl discarding the veg. • Return liquid to pot and simmer on the stovetop until sauce reduces and thickens. Season to taste. • Plate your mashed potatoes at 12 o’clock, you vegetables at 4 o’clock and lean your lamb against the potatoes at 7 o’clock. • Pour your reduced sauce over the lamb and get ready for a standing ovation!

Fondue for Two I am a ‘70s kid, rust-colored corduroy bell bottoms and all. I remember my parents would have friends over, and they would sit around a bubbling pot of exotic smelling goodness laughing and listening to Peter Frampton singing that he wanted me to show him the way. Every day. All of this would happen while I was eating my Salisbury steak TV dinner. Every now and then my mom would sneak me a skewered piece of bread that had been dipped in awesomeness. Fondue. Mind blown. Something about the way the flavor of the wine mixed with the richness of the cheese and the exclusive “adultness” of all of this changed my little culinary palate forever. Sorry and goodbye Salisbury steak.

This recipe uses three cheeses from Switzerland. For a different, more daring experience, reduce the amount of each and add raclette cheese, but make sure you enjoy the strong flavor of raclette before you dive in.

I was trying to think about a romantic libation to serve for Valentine’s Day and realized that my normal cheap whisky with some off-brand corn-syrup ladened soda probably wouldn’t cut it. So I put my bartender cap on and started experimenting. Champagne came to mind first, quickly followed by flowers. I thought to myself, “Troy,” because that’s my name, “how can you make a sparkly drink taste like flowers?” Then it hit me. Elderberry. Very floral. Elderberry with a good rosé Champagne would do just the trick. It just needed a little kick. I added Plymouth, a gin distilled with botanicals and citrus rinds, which is perfect for this Valentine’s cocktail. I will now be the hit of the two-person party!

On February 17 from 7 to 9:30pm, the Foss Waterway Seaport will be hosting Movies and Marine Life at the Seaport. This is one of a series of Pier Peer in Tacoma programs offered in partnership with Metro Parks Tacoma. Bring your significant other for a great date night at the adults only Pier Peer in Tacoma. You will have the chance to see interesting marine organisms while night-lighting on the pier, touch animals brought up by divers, enjoy popcorn and a short film, and cap it off with something sweet all in the Seaport’s 117-year-old warehouse location. The event is alcohol free and open to adults 18 and older. The cost is $25 per person, and pre-registration is required. Life jackets will be provided, but you can bring your own. Please wear warm weather-appropriate clothes, and bringing a flashlight or a headlamp is advised. Kaddee Lawrence, the director of audience engagement and science education at Foss Waterway Seaport, says, “These educational Pier Peers were created to introduce the amazing organisms and diversity of life living in the Puget Sound. The program was originally started by the People for Puget Sound nonprofit that is now a program under the Washington Environmental Council. In the South Sound, summer is the peak time to get married and wedding planning kicks into high gear. One of the last great romantic comedies of the ‘90s, “10 Things I Hate About You,” has one of the most dreamy scenes ever filmed. The Washington State University Snohomish County Extension Beach Watchers are leading a group of eager adventurers on an expedition to explore the tide pools at night. The casual beach walker is aware of the tide pools on the Edmonds beach front during sunny afternoons, but rarely do we get an up-close look at the sea creatures hiding within and visible only at night. What is the name of that pink one? Why does it live under the moss?

Head to Sunny Ensenada, birthplace of the margarita and fish taco By Marguerite Cleveland
S
unny Ensenada is located on the Baja California Peninsula and is known locally as “La Cenicienta del Pacifico” or “The Cinderella of the Pacific.” It is on a lovely stretch of coastline with a Mediterranean climate. The city boasts a harbor, making it a hub for great fishing and fresh seafood in local restaurants. Ensenada is backed up against a small mountain range popular for hiking and off-roading. The area is surrounded by many excellent vineyards and is considered comparable to the Napa Valley. “The city is not your standard tourist destination. Ensenada is a more authentic experience and the traveler must be prepared for that,” says Tony DeMarco, owner with his wife Esperanza of Cruise Planners Travel Services, Gig Harbor. DeMarco should know, as he was raised in Southern California and has many fond memories of trips across the border to visit Ensenada. Demarco recommends the Hotel Coral and Marina (HotelCoral.com) just a bit north of downtown with indoor and outdoor pools, waterfront with a full-service marina. The hotel also has a shuttle service which can arrange tours and trips to the local area. For a smaller more intimate stay with a private beach, he recommends the Estero Beach Hotel and Resort just south of town (HotelEsteroBeach.com). The two hotels rank No. 1 and 2 on Trip Advisor. Ensenada is famed for its nightlife and its street food. The fish market is very popular with foodies. You aren’t going to find fresher fish than when the fishing boats are docked right next to the market. It is also rumored to be the home of the first tacos de pescado—fish tacos. Mingle with the masses at the city’s fish market and find local vendors selling corn tortillas piled high with fresh fried fish and all the toppings. Demarco recommends fish tacos right from the street carts. In addition to the fried variety, try the stewed, ceviche, marinated or smoked fish tacos. There is something for every palate. “No trip to Ensenada is complete without a drink or five in the famous

Hussong’s Cantina,” says DeMarco. There are many stories about who invented the Margarita up and down the coast of Mexico, but Hussong’s seems to be the most authentic version and the account is even on record in the Ensenada Historical Society. The cantina was established in April 1892 and has a long history of being frequented by Hollywood celebrities and other high-society folks. According to Hussong’s website, a highsociety miss, Margarita Henkel, daughter of the German ambassador to Mexico, visited the cantina in October 1941. Bartender Don Carlos Orozco concocted this elixir of tequila, Damiana and lime in a saltrimmed glass and named it in honor of Margarita. The rest is history, and today you can still enjoy a margarita at Hussong’s. Wine in Mexico? Is that a thing? Yes it is, and although still relatively unknown outside of Mexico, the wine industry around Ensenada has exploded. According to Ava Carolina Perez of Valley Girl Wine Tours, “In the four years since I’ve been here I’ve watched the valley grow from 40 wineries to over 150 (and growing!), zero craft breweries to over five, and one Michelin star chef to four. I’ve taken out hundreds of private tours including winemakers, sommeliers and chefs as well as several members of the press, and my passion for this place, its people and of course all the amazing wines continue to grow with each day.” Perez is not only a wine tour guide; she is also a sommelier with 18 years of experience. Valley Girl Wine Tours has a variety of options for wine tours in the Guadalupe Valley and can pick you up at your hotel. The company can also arrange private tours for a more personalized experience. In addition

Another favorite DeMarco recommends is driving south about 45 minutes to see La Bufadora, a large blow hole along a rocky part of the coastline. “Be sure to go at high tide,” he said. It is good advice, as when checking reviews for this location those who visited at low tide rated it poorly but those that went at high tide loved it. La Bufadora is the second largest marine geyser in the world. Legend has it that a large gray whale got separated from its group. It swam along the coast and became stuck in the rocks. In an effort to cry for help the whale emitted small and large jets of water into the air to no avail. Eventually, the pitiful creature turned to stone and merged with the rocks. It became “La Bufadora.” You will also find a mini flea market and many vendors with souvenirs and food, which provides another opportunity for fish tacos.
In the evening, head back to Ensenada and enjoy the neon lights after the sun goes down and listen to mariachis strolling the streets. Head to R1, the nickname for the most popular corner in town where Ruiz Street and 1st Street come together. These streets are where the most popular bars, clubs and restaurants are located.
