CELEBRATING VETERANS AND OUR FREEDOM THIS MONTH WE CELEBRATE Veterans Day—a day set aside to honor all those who have fought for the freedoms we enjoy as a country. Laying down your life for your country is one of the ultimate sacrifices, and although we acknowledge those sacrifices each November 11, it is something we should make a conscious effort to do all throughout the year. The younger generation only hears stories of what it meant to be drafted into the military; young men anxiously waiting to see if their number came up. Would they be going off to college or to war? It was an uncertain time. We at Living Local are so grateful for the freedom we have and for those who have fought for the rights we now have. Our freedom is something we should never take for granted. As journalists and a company that is independently owned, we are grateful for the opportunity to be able to write and report without censorship.

he Washington state ferry that navigates the waters of the Puget Sound between the waterfront in Mukilteo and Whidbey Island does not resemble a luxury cruise ship. But the ferry does have the ability to take passengers (and their cars) to an environment with all the charm of an English countryside with the indulgences of the wine country in France. The 38-minute crossing delivers visitors to an island that has maintained the spirit of the environmentally sensitive residents who live blissfully on acreage or in one of the quaint waterfront towns on the south end of the island. Oak Harbor, adjacent to the Naval Air Station Whidbey Island at the northern end

of the island, provides modern amenities that cater to the military families and brings a stark reality to the garden paradise. Whidbey Island is close enough for an afternoon adventure for the family while still providing the illusion of being far enough away to offer the elements needed for a romantic weekend away from the gridlock of the big cities on the “mainland.” As an added bonus, Whidbey is also one of best places for dogs to be treated like the most important member of the family. The state ferry drops visitors off at the south end of the island in Clinton, a community of about 900 residents that serves as the gateway

to miles country roads and acres of green pastures. Just a short ride up the road is the township of Langley that overlooks the Saratoga Passage. The town’s merchants fill the store fronts with art galleries, authentic seafood restaurants and souvenir shops that feature the true essence of the island. In keeping with the theme for the town, there are water bowls for four-legged visitors in front of virtually every business on the main street through town. In addition to the charm of the town, Langley offers the closest point to view a small unincorporated out cropping of land known as Baby Island. The upscale community with

medium- to high-bank waterfront stretches along the shoreline of the Saratoga Passage and is home to some of the island’s most charming structures. The south end of the island is also home to some of the most popular destinations on Whidbey, distinctive wineries and an oldschool distillery. The small family wineries and one craft distillery on Whidbey all share the spectacular rural countryside, offering critically acclaimed wines, award-winning liqueurs and unpretentious hospitality. Passionately created and diverse in style, there is an island wine to tempt every wine-lover. The wines of the island represent the full range of

the Washington varieties and regions including the exquisite and rare estate wines of the Puget Sound AVA, the state’s third-oldest designated grape-growing region. The cool clean air and fresh spring water coupled with the finest ingredients culminates in world-class spirits. The charming seaside towns, unspoiled beaches and world-class cuisine have created a vibrant arts community with unlimited recreational possibilities, which make the island a desirable destination. The Whidbey Island Vintners & Distillers Association (WIVDA) hosts a series of wine tours throughout the year that promote local winemakers as well as vendors on the island.

The Spring Tour this past May featured food raised on Whidbey with local wines and spirits. The event paired ethnic dishes and comfort food (think ramen noodles with pork belly and mac and cheese made with crab). If that sounds appealing, tickets are still available for the Autumn on Whidbey event that pairs the seasonal harvest with local wine and spirits. The weekend in November includes exhibits of sculptures, paintings, ceramics, glass and more while visitors sample fine wine and spirits from Whidbey Island. It is also an opportunity to secure tickets for the annual “case sale” where purchases from the participating venues can add up to free passes for the 2018 version of the Red Wine & Chocolate tour.

Autumn on Whidbey is scheduled this year for the weekend of November 11 and 12. The Red Wine & Chocolate tour is set next year over the weekends of February 10 and 11 and February 17 and 18. Tickets for both event are available online at WhidbeyIslandVintners.org. Members of the association include Comforts of Washington, Blooms Winery, Holmes Harbor Cellars, Spoiled Dog Winery and Whidbey Island Distillery. Comforts of Washington The red wines from Comforts of Washington (5219 View Road in Langley) feature fullbodied vintages aged in American oak. The current releases include a Syrah, a Cabernet and a Malbec from 2013 that are best when enjoyed with an appropriate meat. The Malbec, created from grapes raised in the Horse Heaven region of Eastern Washington, is pleasant to drink now but will be even better if laid down for three years, according to the winemakers Carl and Rita Comfort. Each of the five whites offer distinct characteristics that are best when paired with fruit and cheese on a warm afternoon or seafood on a cold winter night. Comforts of Washington also offers lodging to a small number of guests each night in rooms above the winery. The views, according to the proprietor, are almost as wonderful as the smell of fermenting grapes from below. Blooms Winery Owners and winemakers Ken and Virginia

Bloom started making wine in 1998 and became commercially licensed in 2003. Fifteen happy years of award-winning handcrafted wines later, they are still making wine and achieving both national and international recognition. The Spring 2017 issue of Wine Press Northwest featured Blooms 2013 Malbec with a “Recommended” rating, while the upcoming 2014 version with an “Excellent.” Blooms 2013 Poetic was chosen as one of the Top Picks for Washington Red Blends in the Winter 2017, which described the Poetic as “Powerful, poised and balanced with remarkable depth and structure to the concentrated flavors. ...” In the Fall 2016 issue of Wine Press Northwest magazine’s featured article “Best Affordable Reds,” the editors chose four Blooms red wines under $30: the 2012 Syrah, the 2012 Mélange, the 2013 Charmant and the 2014 Merlot. Holmes Harbor Cellars Located slightly north on Honeymoon Road in Greenbank, Holmes Harbor Cellars offers wines that combine the passion for the art of winemaking from Theresa and Greg Martinez, with wines that are balanced with the experience by those who enjoy sampling fine wines. The 20-acre estate welcomes visitors with an arched doorway and a bubbling fountain that only enhances the complexity of the wines inside. Grapes for Holmes Harbor wines come from the warm soils of the Yakima and Walla Walla valleys.

The international wine competitions in San Francisco and Seattle have acclaimed the winemakers at Holmes Harbor for their lateseason Syrah, a barrel-aged Cabernet and two bottlings of their own Petit Verdot. Wine Press Northwest magazine proclaimed, “The marriage of Greg and Theresa Martinez, the latter with a career in chemistry, has helped put Greenbank, Washington, on the winemaking map.”

The Spoiled Dog Winery The setting of the winery that produces Pinot Noir grapes is as charming as the name indicates. Spoiled Dog Winery is a small, family owned business that believes, “Great wines begin in the vineyard.” Jack and Karen Krug began winemaking by using sustainable growing practices that are committed to provide customers with a selection of high-quality fine wines sourced from their own vineyards and select parcels in Washington and Oregon vineyards that utilize biodynamic or certified-organic growing practices. The Spoiled Dog Winery in Langley has become a regular destination to “wine down” for both visitors and locals to “experience the joie de vivre of Whidbey Island,” according to the Krugs.

Whidbey Island Distillery Whidbey Island Distillery, a family owned business operated by three generations of the Heising family, opened in 2009. Although the distillery established a reputation with its distinctive Blackberry, Boysenberry and Loganberry liqueurs, connoisseurs rave about the aptly named Bunker Rye that pays homage to the abandoned military buildings the Heisings turned into the distillery on Crew Road south of Langley. Lodging For those who would like to spend a few nights listening to the sounds of the waves breaking on the rocky shores (or if you’ve had a few too many tastings), there are some wonderful places to lay your head on a soft pillow. The options vary from one of the homes available for rental on VRBO near Useless Bay on the west side of Whidbey (probably because I love the name) to one of the charming bedand-breakfast establishments nestled in older homes across the island.

In addition to the rooms above the Comforts of Washington winery, some of the most intriguing lodging options include: Compass Rose Bed and Breakfast Jan and Marshall have been welcoming guests into their elegant and comfortable home in Coupeville for more than 25 years. Maybe that’s why it has a 5-star rating from Trip Advisor. Guests have written that a stay at the Compass Rose is like taking a walk back through history. The Inn at Penn Cove The 4-star bed and Breakfast in Coupeville is a historical masterpiece located on a quiet residential street. Guest House Log Cottages For more of a rustic stay on Whidbey, the cottages in Greenbank are a 3-star facility nestled in the forest that looks west off a bluff to give guests breaking sunsets with the serenity of a private cottage. Captain Whidbey Inn The classic log lodge on the north end of the island is a true throwback that includes squeaky beds and bathrooms down the hall in the main lodge. There are no televisions, the cell phone coverage is spotty and the rooms are probably overpriced. All that being said, the Captain Whidbey Inn is a must for first-time visitors, even if all you do is stop in for breakfast. The bar and restaurant at the Captain Whidbey Inn make the trek to Coupeville worth every curve along the scenic roadway. Don’t miss the opportunity to stop in for some liquid refreshments at Judge Still’s Tavern. The looming bar at one end of the dining room creates images of sea captains and their mates taking haven from the sea to trade shots at the bar or hoist mugs of ale on a cold winter night. For a truly extraordinary moment, grab a glass of wine in the afternoon and move outside to take a seat on one of the wooden chairs on the front porch, where you can watch the waves of the Sound lap against the shore, and keep a keen eye open for eagles in the tree line. Restaurants Whidbey Island and seafood are almost synonymous. Even the neighborhood diner in Penn Cove will have mussels on the menu. Crab is a mainstay of the diet for most people who spend any time on the island. Here is a list of just some of the more unique destinations. Gordon’s on Blueberry Hill in Freeland Best bet for a special occasion, even if that special occasion is just an excuse to wear long pants. Chef Gordon Stewart has been sharing his culinary talent with Whidbey Island for more than a decade. His diverse experience includes training in New Orleans with culinary masters Jamie Shannon and Paul Prudhomme. A native of nearby Arlington, Chef Gordon has a special place in his heart for New Orleans, and you will find his menu peppered with the Cajun influence he holds so dear. The starter

menu is just a preview of the delights available for the adventurous diner. The Island Bounty tempura is a variety of vegetables grown on the island with Gordon’s special flair. The crispy Cajun catfish are worth the price of admission. The Orchard Kitchen Chef Vincent Nattress and his wine maven Tyla Nattress have been presenting fixed menu dinners on Thursday, Friday and Saturday nights that feature items grown at the rustic 3-acre compound near Langley. Thursday nights are presumably reserved for locals, but if you can sneak in, you’ll sample many of the same items that will be on the Friday-night menu for a lot less money. Doggie friendly Langley is not the only place that caters to canines. The Boy and Dog Park near Langley has shaded trails and separate areas for smaller dogs. But the highlight for any dog will be Double Bluff Park, which offers unspoiled stretches of sandy beaches with lots of driftwood for dogs to chase through the waves. So, whether you have two legs, four legs or a hollow leg, Whidbey Island has all attractions that make it a great place to spend a day, a weekend or an extended family vacation filled with all of the sights, the pleasant sounds and the delightful tastes that create lifelong memories. W

e all have our own holiday traditions. Maybe it’s the allday cooking marathon with Mom, or kicking back and watching football with Grandpa. Your family might go for a walk, throw a ball around, put a puzzle together or watch your favorite holiday movie after a Thanksgiving feast. For decades, hundreds of South Sound families have made it their tradition to come together with other community members for the annual Holiday Tree Lighting. 2017 marks the 72nd time the tree has been lit up with thousands of bright lights at the corner of 9th and Broadway. The holiday tree comes to life at 5pm on Saturday, November 25.

The tradition began in 1945 as a way for the community to celebrate the end of World War II with soldiers who had recently returned home from overseas; it has since morphed into a celebration for all and the unofficial kickoff of the holiday season in and around Tacoma. Carols will be sung and Santa will be making an early appearance so the little ones can have their picture taken and give St. Nick their holiday wishes. J

im Sullivan’s interest in cars began at the ripe young age of 13. He lied to the operator of the local gas station/shop so that he could hang around the mechanic who was restoring a 1958 Corvette. Jim would walk by the shop every day, imagining what it would be like to own his own one day. At just 16, he began working on and collecting old cars. After years in the corporate world, Jim decided to invest in his own restoration shop—a dream since he was young. After pouring all of his retirement money into the shop, what was originally intended to be a hobby turned into a full-time business. So Jim buckled down, drafted a business plan and decided to go for it! And in 2012, Jim’s Classic Garage and Auto Restoration, LLC was born, which offers consignments, partial to full restorations, mechanic and electrical work.

Q. How did you get your start and who, if anyone, helped you on the journey to opening your own business? A. Nobody helped me. I come from the corporate world and wanted to have some fun working on a dozen or so of my own classic cars. From there, the business has morphed. There have been a small select group of people in my life that have had an impact on the way I do business. If

I go out to dinner and have a great waiter, I take what that made me feel like and use it. If I’m out getting gas and the cashier [has a bad attitude], I use that too. If an employee of mine ever got grumpy with a client of ours because his wife [was in a bad mood] that morning ... you’re fired. Not on my watch.

Q. Why did you choose Gig Harbor as a place to start your business? A. I bought a commercial building 16 years ago here on the waterfront. I was divorced and always looking for a better life for my two kids. The broker I was using here in the Harbor denied my advances toward her (she’s gorgeous). She told me that her strict policy was to not mix business with pleasure. I agreed, then fired her! We’ve been happily married 10 years this December.

Q. What is it that you are best known for in your field? A. Customer satisfaction. It doesn’t matter what your problem is, we will help you fix it. You need us to pick the car up at your house, we do it. It’s not a matter of how many miles and how much it cost us. We

.find that going the extra mile and doing things the way we would dream about someone servicing our car, then do just that.

Q. Who has been the biggest influence in your professional life? A. My grandpa. The man worked until the day he died at 95. He was a man of few words, and we were not close, but his actions spoke volumes.

Q. Describe a typical day in your professional life. A. I wake up at 3am and am at the shop by 4. I run through the day’s events and write them out on the white board for the guys in the shop. Most of my planning takes place the night before with my business partner, Trigger. She’s a 6-year-old yellow lab. We dinghy over to the sand spit at the lighthouse and toss the ball back and forth. She’s a great listener and tends to steer me in the right direction. Periodically, she stops listening long enough to dive in the water and swim after Larry the seal. You see, Larry is a good listener, too, but has the ability to get on the nerves of Trigger (extremely jealous).

Q. Personally and professionally, how would you like to impact your community? A. I love my community, but my wife and kids are first. Once they’re taken care of, I can work on the community. I’m totally committed to making sure they’re happy and taken care of.

Q. What one piece of advice would you give to someone who wants to open their own business? A. Nothing ventured, nothing gained. Working for yourself is not easy. This is my second business after my commercial property development firm. Deep pockets are important (preferably someone else’s). Lots of people say, what happens if I fail? This is a great thing to say. Say this every day. There is no other avenue for you to go but up Success Avenue, period. You won’t succeed until you believe, beyond anything, that what you are doing is important to your clients. You have to take one day at a time, and every day you get up, believe that you are going to succeed. Never doubt yourself, and definitely don’t listen to critics that know nothing about your business. If you believe in your product and yourself, go for it.

hanksgiving break is a wonderful time of year to travel with family or friends, but it can also be the worst time to travel when you factor in flight costs and busy highways. The Power to Make a Difference Tacoma Rescue Mission provides many volunteer opportunities

olunteerism is at the heart of every community. Not only do those to whom we volunteer our time benefit from that relationship, but the feeling we get knowing we have helped someone is something that benefits us as well. This holiday season, there are many opportunities to give back to those less fortunate in our community. One such place is through Tacoma Rescue Mission, an organization that serves as a refuge for homeless and hurting people in Tacoma and Pierce County. “We will be serving around 1,200 people on Thanksgiving Day,” said Noah Baskett, senior director of Community Engagement for the Rescue Mission. “Our menu includes turkey, ham, mashed potatoes, green-bean casserole,

rolls, cranberry sauce, pumpkin pie and sweetpotato pie.”

With four campuses, the work of Tacoma Rescue Mission is vital to our community, and the need for volunteers great. “In addition to coming in and serving or prepping a meal, we can always use volunteers in our donation center to process donated clothes, as mentors in our youth program and as tutors in our adultlearning program,” said Baskett.

The interest in volunteering is especially high around the holidays, which Baskett said is wonderful as it allows Tacoma Rescue Mission to provide restaurant-style meal service. But the reality is that the need is great all year round. “We definitely rely on volunteers during these months, and many people think of the Mission as a place to go and serve the vulnerable and oppressed,” said Baskett. “But one of our

And while there are many different views on the subject, I am confident that one thing we all can agree upon is honoring our nation’s veterans. Veterans Day, originally known as Armistice Day, marked the first anniversary of the end of World War I on November 11, 1919, and became a national holiday in 1938. It is a day set aside to honor all those who have served our country honorably during war or peacetime— and there are many.

Those advocating for the Veterans Memorial Plaza worked closely with the City of Edmonds for approximately three years and raised a reported $500,000. The result is a beautiful plaza complete with benches, walls and pathways where the names of veterans are etched; a place where people can go and honor those who have served. If you cannot attend the ceremony on November 11, you will want to be sure and visit this beautiful place that will also have a new addition—a life-size veteran military dog bronze sculpture that was installed on October 21. In 2015 alone, more than 13 million Americans were victimized by identity theft, according to the U.S. Department of Justice. What can you do to guard your identity and protect yourself from potential financial losses? Here are some ideas to consider: • Review your statements. Closely review the monthly statements from your checking and other financial accounts. If you find any unfamiliar charges, contact your bank or other financial services provider immediately. • Order your credit reports. The three credit reporting agencies—TransUnion, Equifax and Experian—are each required by law to provide you one free credit report a year. Make sure your name, address and other information are correct on your credit report, and if you find old or inaccurate information, have it removed. • Place a fraud alert. If you suspect you have become a victim of Identity theft, place a “fraud alert” on your credit reports by contacting any of the three credit reporting agencies. You can choose a short-term or long-term alert. And if you’re an active member of the military, you can request a special, one-year alert. • Feed your shredder. Shred all old bank and investment statements, applications for new

credit cards and any other documents that contain personal information. • Destroy digital data. If you have a variety of financial accounts, you’re not just creating a paper trail—you’re also establishing a digital “footprint.” So, when you sell or otherwise dispose of a computer system or hard drive, you may want to take steps to destroy personal data. You might think that simply deleting it would be sufficient, but tech-savvy identity thieves can “undelete” files or recover information from a formatted drive. However, products are available that allow you to completely wipe out data on hard drives. • Change passwords. It’s a good idea to change your Internet passwords every so often— especially those passwords that provide access to financial accounts. • Leave your Social Security card home. Snagging someone’s Social Security number is a real “catch” for identity thieves, so do everything you can to thwart them. And you can start by leaving your Social Security card safely at home—after all, there’s probably never a good reason to bring it out, anyway. In fact, be wary of anyone, or any business, that asks for your Social Security number, either in person or online. Except for a few obvious exceptions, such as your tax preparer, most reputable

What’s particularly alarming is that these “phishers” have gotten quite good at duplicating logos and using official-sounding language. However, a legitimate bank would never threaten you this way with an email, so, if you get such a message, contact the bank’s fraud department. You can go a long way toward protecting yourself against identity theft by following these suggestions—so put them to work soon.

So you’ve decided to make some changes in your nutrition and lifestyle. Awesome! That first step can be the most difficult, so congratulations on starting down a new path. But wait, you’re married and have a handful of freeloading roommates who have a daily rotating list of demands that requires a lot of your energy and time to execute. If these demands aren’t met, you face the very real threat of having the time that should be sacred in your own home shattered by screams, cries and tantrums by your spouse and/or children. In other words, you’ve come to terms with and accepted that change will be a new reality of the life that you desire, but your family hasn’t. What to do? One answer is to just say, “Guess what, I’m making your meals, so tough luck. You go to the store, plan and prepare your own meals, and you better do all your own dishes if you want something different. Oh yeah, and if you leave any of the unhealthy food you know I will not be eating and don’t want to be tempted by in the house, I’m throwing it in the trash the minute I find it.” That’s certainly an idea, but let’s leave that one on the back burner for a while and see if we can’t achieve some diplomacy without starting an all-out intrahousehold war. Try and find a good, positive way for them to look at the new changes, whether it’s health, longevity or even just plain old bribery. Find a way that you might be able to present it to them that will resonate with them. Then, take it slow and introduce new changes to your lifestyle in steps, not all at once. Flipping everything upside down and inside out is tumultuous for everyone, even you. Take one thing at a time and refine it to something that you think can be embraced. Whether that is one meal, one form of snack, reducing the amount of dessert, changing soda over to something else, adding new vegetables to meals or what have you. Then once that’s been accepted as a part of life and no one is squabbling about it anymore, find something else and slowly refine that. Four Tips to Keep Your Kids’ Teeth Healthy And Clean

It’s never a bad time to “brush up” on instilling good oral-hygiene habits in our children. Consider this: According to the American Academy of Pediatric Dentistry (AAPD), nearly one in three children ages 2 to 5 years old in the U.S. are affected by tooth decay, which is one of the top chronic infectious diseases among children and can compromise their health, development and quality of life in both the short and long term. “Parents are bombarded with unsolicited advice and health findings that are constantly changing,” says Dr. Jade Miller, AAPD president. “We don’t want to add to that stress, but there are a few common misconceptions that could help make a huge difference in your child’s oral health—which is linked to their overall health and wellness.” The good news is that tooth decay is nearly 100-percent preventable. The following dos and don’ts from the AAPD can keep tooth decay at bay and keep kids smiling for years to come: • Do cut down on sugar. Children shouldn’t graze on candy and sugary drinks (including sports drinks and juice). That prolonged exposure to sugar and acid can wreak havoc on teeth. Instead, stick to designated meal and snack times and have them drink plenty of water throughout the day. • Don’t put babies to bed with a bottle. Milk and juice contain sugar. When babies are put to bed with a bottle, the sugar coats their teeth while they are sleeping, causing tooth decay. If you use a bottle before sleep, opt for water.

• Do wean children off of pacifiers by age 3. Pacifiers are a natural way for children to self soothe. However, prolonged use can increase the risk of cavities and affect the way a child’s teeth bite together, often causing an overbite. • Do avoid topical teething gels and rings. The U.S. Food and Drug Administration warns against using teething gels that contain benzocaine or lidocaine because they can harm your child. Parents and caregivers should stay away from teething rings, too, which contain chemicals and low levels of BPA—despite labels citing otherwise—that can be harmful to your child.

aybe you’ve never heard of ice climbing before and want to get a feel for this novel sport. Maybe you’re into mountain climbing and want to take the challenge to the next level by trying your hand with ice. Maybe you’re already a pro and are used to the thrill of the adventure; the cold biting into your body, the sheer adrenaline rush that comes with being dizzyingly high above the horizon and relying on your picks and ropes for survival. Regardless of your experience level or where you’ve been able to travel for the ultimate climb, it’s about time for you to check out some of the superb ice climbing locations that can be found in the Pacific Northwest. The mountains offer the best of the best in terms of spectacular views and unique challenges. Many of the treks discussed in this article are known for both their alpine beauty and their challenging aspects, especially given the unpredictable and sometimes dangerous weather that can circulate around the Cascadian region. The Pacific Northwest, or Cascadia, can be defined as the stretch of land in North America bounded by the Atlantic Ocean and the Rocky Mountains, spanning far Northern California all the way up to British Columbia in Canada. If you’re willing to put in the travel time to get to some of these remote locations, the region boasts some amazing peaks for independent ice climbers looking for an adventure, as well as topquality guided climbs for those just starting out or looking to get a little more experience. Equipment For Cascadian Mountaineering Although there is a certain set of tools that every ice climber must have in his or her arsenal, climbing in the Cascadian regions requires a double check of your toolkit. Some equipment that will come in handy or even essential includes the following. (If you are new to climbing and not sure about the terms used here, please look them up and find the necessary equipment to ensure that your ice climb remains enjoyable and safe.)

• Multiple different types of pitons, or steel spikes. Angled pitons as well as the regular kind are both good to have on hand. • Cams of sizes ranging from .5 to 4 • At least six to eight single slings, configured as alpine draws • Ice screws, mostly short with a few long ones configured for v-threads • At least 20 meters of tat for rappel anchor creation For those who have little to no experience with mountain climbing or ice climbing, a guided tour can be a great place to start. There are many programs offered in Cascadia that are highly regarded. Some of these include: The American Alpine Institute, The Mountaineers, Northwest Mountain School, Helmcken Falls in British Columbia. • The American Alpine Institute. Located in Washington, the Institute offers a fully equipped gear shop and training programs aimed at all levels from beginner to advanced. • The Mountaineers. The Mountaineers program offers highly rated introductory classes to vertical climbing and mixed climbing in the Seattle area • Northwest Mountain School. The Northwest Mountain School offers

Regardless of your experience level or where you’ve been able to travel for the ultimate climb, it’s about time for you to check out some of the superb ice climbing locations that can be found in the Pacific Northwest.

climbing trips all over the world but focused on the Northern Cascadian states. Based out of Washington, they are fully certified as climbing instructors and offer different levels of guided tours and trips. • Helmcken Falls in British Columbia. Here boasts some of the most rigorous and difficult climbing courses in the world, so is best suited to pro-level ice mountaineers. These incredibly steep and gorgeous climbs include one that features a hole that reaches 100 feet in depth. Although few professional

climbers have ever completed these legendary climbs, there are plenty of easier routes as well. It is still recommended only for at least intermediate level climbers, however. Mount Buckner During the months of March to October, the icy slopes of Mount Buckner become open to climbers. Named after an early Cascadian pioneer, this technically difficult climb is not for the faint of heart and is best done with some previous experience, but offers some of the best views out there. At its highest point, it stands close to 1,000 feet of elevation and can take up to three or four days to fully climb and explore due to the challenging technical aspects and unpredictable weather.

Mount Fury, Washington Mount Fury is also a very technically challenging climb but has been called one of the most beautiful and scenic in the area. Located in North Cascades National Park, the mountain has two equally steep peaks and many glaciers known for their natural beauty and climbing challenges. Definitely have your ice axe sharpened and rope skills triple checked before attempting to take on this multi-day excursion. Mount St. Helens The renowned Mount St. Helens is one of the lower and more technically easy ice climbs for beginners in the region yet still offers its own challenges, so caution is recommended for those new to climbing. Exposure and low visibility due to snow, fog and cloud cover are things to watch out for here. In order to climb this gorgeous peak, you need a permit that is available from May to October each year.

All said and done, ice climbers are some of the most adventurous sportsmen and women out there, with the opportunity to experience thrilling climbs and witness beautiful alpine views that few others get the chance to do. Whether you’re just starting out or have many years of climbing under your belt, the Pacific Northwest offers peaks that are sure to leave you satisfied.

Potato-Leek Soup Soup Ingredients

• 5 leeks (white and light green parts only), roughly chopped • 3 Ibs. Yukon Gold potatoes, peeled and roughly chopped • 6 cups rich chicken stock • 1 cup heavy cream • 3 tbsp. butter • 3 large garlic cloves, peeled and pressed • 2 bay leaves • 1 - 2 sprigs fresh thyme • 1 tsp. salt • ¼ tsp. ground pepper • 1/8 tsp. ground nutmeg

Leek Rings Ingredients • Vegetable oil (enough to fill the bottom of the pan 2-inches deep)

methoD Soup: • In large stockpot on stovetop, melt butter and add leeks, along with garlic. • Cook on medium heat just until soft; immediately add to stockpot potatoes and chicken stock. • Lastly, add bay leaves, thyme, salt, pepper and nutmeg. • Bring to a boil then reduce heat to medium and simmer, covered, until potatoes are fork tender. • Remove herbs and blend until very smooth with either a handheld immersion blender or process in batches through food processor or upright blender. • Once blended (and returned to stockpot if necessary), add heavy cream and stir. • Remove from heat and serve immediately.

methoD Leek RIngs: • Fill a deep cast-iron or heavy-bottom pan with 2 inches vegetable oil and heat on medium until ready to fry. • Wash whole leek (kept fully intact) and slice thin rings from white end. • Separate into individual rings and dredge in whole beaten egg then follow by dredging in a mixture of flour, breadcrumbs, salt and pepper. • Increase heat to high until oil is very hot and bubbles rapidly when a test leek ring is gently placed in oil. Fry in small batches, turning once, until golden brown.

One of our fan favorites, and the winner of the Judge’s Choice and the People’s Choice awards at the North Idaho Culinary Competition, this is a whimsical take on the ever-popular sandwich.

Ingredients • Hawaiian sweet rolls (1 per person) • honey-roast ham, thinly sliced • smoked turkey, thinly sliced • Muenster or Colby jack cheese, sliced • smoked Gouda cheese • 3 eggs • 3 tbsp. powdered sugar • 1 tsp. cinnamon • ½ tsp. vanilla • chipotle powder • maple syrup • jam and preserves of your choice (we use chipotle jam)

method • Cut the rolls in half horizontally, and spread both sides lightly with the jam. • • Layer the cheese and meat on the roll as follows: cheese-meat-meat-cheese. • • Place the top on the rolls and set aside. • • Create an egg bath with the eggs, sugar, cinnamon and vanilla and whisk • • Melt butter in a non-stick pan on medium • • Dip each roll into egg wash and place in pan. • • Sauté gently until golden brown on all sides. • • Pour syrup into individual containers and sprinkle with chipotle powder. • • Cut each sandwich in half diagonally, sprinkle with powdered sugar and serve with chipotle syrup.

Lay the pieces of asparagus (1/2 facing each way) at a slight angle on top of the prosciutto and carefully roll up.

Preheat oven to 400°F.

About 30 minutes before service, bake for 7 minutes at 400°F. Let cool until just warm.

Cut in half on a diagonal and serve with a drizzle of vinaigrette.

After blanching, immediately remove the asparagus from the boiling water and immerse in the ice water to stop the cooking process.

Mix the chevre and the jam thoroughly.

When cool, remove asparagus from ice water and dry with paper towels.

hanksgiving is a time for families to get together, share some quality time and stuff our faces full until we can hardly move. It’s a wonderful guilty pleasure, so why not earn it by burning a few pre-meal calories at the annual Tacoma City Turkey Trot? The gun goes off at 9am, Thursday, November 23, for this family friendly 5k run. Packet pickup begins at 7am, and runners are encouraged to arrive at least an hour early to make sure everything’s in order and you’re all warmed up. The start and finish line is at the Fleet Feet store in Tacoma. The route heads down 26th, back around on 25th then south along Union Avenue past the University of Puget Sound campus. It then turns back north along Washington Street with a few left and right hand turns mixed in. This is a timed race, and awards will be given out for top finishers in men’s, women’s and age categories, but in true Thanksgiving spirit, this is a fun run designed for runners and walkers of all skill levels. For little ones

who can’t quite tackle the 3.1-mile course, there is a shorter 1k race available to them. Registration is open online at TacomaCityTurkeyTrot.com. The cost is $40 for the 5k run with a discount of $5 off per person for families of four or more. The night before and day-of registration is available in person, but the price goes up to $45. All participants will receive a medal and goody bag full of coupons and offers from race sponsors. All ages are welcome as well as strollers and walkers, however, no dogs are allowed on the course. Start your Thanksgiving with a dash of good old-fashion exercise so you can pack away even more of that favorite holiday dish!

A trip to the Point Defiance Zoo and Aquarium is a memorable one for those young and old and even more so by entering at night. Animals behave quite differently in the dark, but it won’t be too spooky this holiday season as nighttime visitors will be greeted with the bright glow of half a million holiday lights as they see the zoo in a whole different way. Zoolights kicks off the day after Thanksgiving and runs through New Year’s Day. Guests will find an amazing scene inside the gates with 3D animal displays like hammerhead sharks and sea turtles to go along with a polar bear family and massive underwater landscape. You’ve seen homes and businesses lit up, but chances are you’ve never seen anything like this. Zoolight hours are 5 to 9pm, and admission is $10 with children 2 and younger in free. You can get discounted tickets online or at your local Fred Meyer. The captivating light display is just one of the many cool things going on each evening. Once inside you’ll find a family of Meerkats to meet, and kids as young as 3 can take a ride on the back of a camel. The aquariums are a favorite nighttime attraction along with feeding the goats. The holiday carousel will run each night, and there will be cookies, cocoa and other treats available throughout the zoo. Those wanting to host a company or birthday party during Zoolights can rent out banquet space for up to 300 guests. A trip to Zoolights is a perfect family event and will help put everyone in the holiday spirit. You’ll be amazed at the attention to detail in the displays, and being able to see the zoo creatures at night is something kids won’t soon forget.
