The Christmas season officially begins December 8, the feast of the Immaculate Conception. They celebrate it each year in front of the great Gothic cathedral in Seville with a ceremony called los Seises or the “dance of six.� Today, it is now performed by ten elaborately costumed boys. On Christmas Eve, they light tiny oil lamps in every house. After Midnight Mass and Christmas Dinner, the streets fill with dancers and onlookers. There is a special dance called the Jota and the words and music has been handed down for hundreds of years. Shoes are filled with straw or barley for the tired camels that must carry their riders through the busy night. By morning the camel food is gone and in place of the


straw or barley are presents. Shoes also may be placed on balconies on the night of the 6th January in the hope that the Wise Men will fill them with gifts.


Baskets of Scrambled Eggs with Frigate Mackerel and Chives Ingredients: 1. 2. 3. 4. 5.

8 circles of pastry Plenty of olive oil for frying 1 onion 3-4 chives 5 tbsp. olive oil (you may use the strained olive oil from the bonito can) 6. 3 tbsps. tomato sauce 7. 1 can frigate mackerel or bonito tuna in olive oil 8. 4 eggs 9. 3 tbsp. light cream 10. Salt 11. Pepper 12. Chopped chives

Preparation:

Line 8 fluted brioche molds with the pastry, fitting it in well. Heat the oil in a deep frying pan and fry the pastry cases until golden. Remove from the molds (this is easy once fried) and drain on paper towels.


Egg mixture: Peel and chop the onion and fry. Add the tomato sauce and chopped chives. Drain the frigate mackerel and break into small pieces. Add and fry lightly. Beat the eggs, add the cream and mix into the above mixture. Scramble in a non-stick pan for a few minutes, stirring constantly over a medium heat. Fill the molds, sprinkle with chopped chives, and serve hot. You can also use tuna fish or bonito in oil to make your own pastry: Mix 3 tbsp. each of oil, white wine, and milk with flour and a pinch of salt until you get soft dough. Leave to stand and roll out very thinly. Cut into circles 6 inches in diameter.
