SEAFOOD SKEWERS Ingredients

Method

• 12 uncooked king prawns, shelled and deveined with tails intact • 12 uncooked scallops, shells removed • 300g white fish fillets, diced • 300g salmon fillets, diced • 1/2 red capsicum, diced • 1/2 yellow capsicum, diced • 250ml olive oil • Juice of 2 lemons • 1/2 tablespoon minced garlic • Sea salt and cracked black pepper to taste • Skewers (if wooden soak them in water)

1. Marinate all seafood ingredients in olive oil, lemon juice and garlic for 2-3 hours.

2. Thread desired combination of seafood and vegetables onto wooden skewers and season with salt and pepper. 3. Place on grill and cook for approximately 2 minutes each side, being careful not to overcook.

1. Peel the hard-boiled eggs and cut into small dice. Fry the bacon until crisp.

4 hard-boiled eggs 4 thick slices bacon, diced 4 cooked chicken breasts 1 avocado 4 tomatoes 1 cos lettuce, finely sliced 100g sweet corn 200g cottage cheese 100g blue cheese, chopped

2 tbsp red wine vinegar 1 tbsp sugar or honey 1 tbsp Dijon mustard Dash of Worcestershire sauce Sea salt and pepper 4 tbsp olive oil

2. Keeping the ingredients separate, chop the chicken breast, avocado and tomatoes, and allow tomatoes to drain. 3. Whisk the dressing ingredients together until smooth. Toss the lettuce in half the dressing and arrange in a single line in the middle of each dinner plate. 4. Add a parallel row of cottage cheese and top it with chopped blue cheese. 5. Arrange the chicken, eggs, bacon, avocado and tomato either side, and drizzle with remaining dressing.

• 4 fresh long red chillies, chopped finely • 1 tsp dried chilli flakes • 2 cloves garlic, quartered • 1sp sea salt • 2 tbsp olive oil • 1 tbsp cider vinegar • 2 tsp brown sugar • 4 x 250g chicken breast

1. Using mortar and pestle, grind fresh chilli, chilli flakes, garlic and salt to make peri peri paste. 2. Combine paste with oil, vinegar, sugar and chicken in medium bowl. Cook chicken on heated barbeque until cooked through. Serve with lime wedges, if desired.

• 4 lamb chops (660g) • 1/2 cup lemon juice • 1/2 cup dry white wine • 2 cloves garlic, crushed • Pepper to taste

1. Trim fat from lamb. Place lamb in shallow dish; pour over combined juice, wine, garlic and pepper. Cover; refrigerate 3 hours or overnight. 2. Drain lamb; discard marinade. 3. Cook lamb on heated oiled barbeque, uncovered, until browned and cooked as desired. 4. Serve lamb with freshly cracked pepper.
