a. This delicate style of Chardonnay is generous and smooth with classic varietal flavours of melon and fig. Some spicy, subtle oak derived characters give the wine additional complexity and structure without over powering the natural fruit on the palate.
GRILLED ATLANTIC SALMON WITH DILL SAUCE Ingredients • 4 Atlantic salmon fillets (200g per person) • 1/2 cup sour cream • 1 1/2 tbsp Dijon-style prepared mustard • 2 tbsp lemon juice • 2 tsp chopped fresh dill • Sea salt and cracked black pepper to taste
Method 1. Whisk together sour cream, mustard, lemon juice and dill. 2. Rub both sides of salmon fillets with remaining lemon juice and season with salt and pepper. Grill for 3-4 minutes each side. 3. Top each salmon fillet with dill sauce and serve with boiled baby potatoes.
b. The Taylors winery located in South Australia’s Clare Valley is well known for their production of outstanding quality red wines. This Chardonnay has been produced without the addition of oak which means that all those delicious fruit notes of melon and peach are more obvious because they are not subdued by the characters of the wood. The result is a fresh, lively wine that is a versatile match to food.

PUMPKIN SALAD WITH ROCKET AND LENTILS Ingredients

h. This Tasmanian Pinot Noir has a deep, ruby red hue and a fragrant bouquet filled with black cherry and spice. Rich in flavour the palate shows a good balance between fresh berry flavours and a complex character of earth and spice. Soft and supple with a fine tannin finish, this wine will be perfect with tea smoked duck.
• 2 tbsp olive oil • 2 tbsp balsamic vinegar • 3 tsp brown sugar • Sea salt and cracked black pepper to taste • 1/2 (about 700g) butternut pumpkin, peeled, deseeded, quartered lengthways, cut into 5mm thick wedges • 1 bunch rocket
• 1 400g can lentils
Method 1. Preheat oven to 240°C. 2. Whisk the oil, vinegar, sugar, salt and pepper together in a large bowl. Add the pumpkin and toss to coat. Transfer the pumpkin mixture to a large shallow baking tray. 3. Roast in preheated oven for 20-25 minutes then remove and set aside to cool for 5 minutes. 4. Arrange the pumpkin and rocket on serving plates, drizzle with any pan juices, top with lentils.

Method 1. Combine coconut milk, sugar, 2 tbs soy sauce, curry powder and turmeric in a large glass or ceramic dish. Add chicken. Turn to coat. Cover and place in the fridge for 3 hours or overnight to marinate. 2. Drain the chicken, reserving the marinade. Thread onto bamboo skewers. Transfer the reserved marinade to a saucepan. Add peanut butter and 1 tbs light soy sauce. Bring to the boil over high heat. Reduce heat to medium. Cook, stirring often, for 5 minutes or until the sauce thickens. Stir in lime juice. 3. Preheat a chargrill or barbecue grill on high. Cook the chicken skewers for 2-3 minutes each side or until cooked through. Divide among serving plates and set aside the satay dipping sauce. You’ll need to soak 12 bamboo skewers in cold water for 20 minutes for this recipe.
