I

t is still amazing to think that we have finished our first nine-week period and now find ourselves embarking upon the holiday season. I find myself reflecting on what it means to be thankful, and am drawn immediately to its definition, which is “an expression of gratitude.” Melody Beattie once said, “ Gratitude unlocks the fullness of life. It turns what we have into enough, and more. It turns denial into acceptance, chaos to order, and confusion to clarity. It can turn a meal into a feast, a house into a home, a stranger into a friend. Gratitude makes sense of our past, brings peace for today and creates a vision for tomorrow.” This quote inspired an acronym for what I witness daily while performing my job as your superintendent.

Ralph Waldo Emerson once said, “Give thanks for each new morning, with its light, for rest and shelter of the night, for health and food, for love and friends, for everything thy goodness sends.” As we embark upon the holiday season, I want to wish Celina ISD Faculty, Staff, Parents, Students, and all who make our district the best, A Wonderful and Restful Thanksgiving!

Honoring our Veterans by Heather Reynolds

Veterans Day is a federal holiday, celebrated on November 11th, which honors those who have served in the U.S. Armed Forces, also known as Veterans. It coincides with other holidays such as Armistice Day and Remembrance Day, which are celebrated in other parts of the world and mark the anniversary of the end of World War I. President Woodrow Wilson first proclaimed Armistice Day for November 11, 1919 by saying, “To us in America, the reflections of Armistice Day will be filled with solemn pride in the heroism of those who died in the country’s service and with gratitude for the victory, both because of the thing from which it has freed us and because of the opportunity it has given America to show her sympathy with peace and justice in the councils of the nations.” Seven years later, Congress passed a concurrent resolution that President Calvin Coolidge issue another proclamation to observe November 11 with appropriate ceremonies, and in 1938, November 11th was made a legal holiday.

TC

®

In 1945, World War II veteran Raymond Weeks had the idea to expand Armistice Day to celebrate all veterans, not just those that died in World War I. General Dwight Eisenhower supported the idea of National Veterans Day. Weeks led the first national celebration in 1947 in Birmingham, Alabama. Later, President Ronald Reagan would honor Weeks, the “Father of Veterans Day”, with the Presidential Citizenship Medal in 1982 at the White House as the driving force for the national holiday. In 1954, The National Veterans Award was started. Congressman Ed Rees of Kansas was honored as the first recipient of the award for his support to make Veterans Day a federal holiday. Congressman Rees had presented a bill to establish the holiday through Congress. President Eisenhower signed the bill into law and in June 1956, it was amended to replace “Armistice” with “Veterans” and has been known as Veterans Day since.

Spicy Idea for Holiday Dinner Celebrate classic flavors with pork

T

Spicy Cranberry Pork Tenderloin Servings: 6-8

But it’s also a time filled with opportunities for the traditional to meet the modern as Thanksgiving becomes “Friendsgiving” and Christmas includes potlucks and parties with friends, coworkers and family from near and far, from a variety of backgrounds – and with all different kinds of tastes.

2 pork tenderloins, about 1 pound each 2 limes Kosher salt and freshly ground black pepper 1 teaspoon vegetable oil 1 (12-ounce) bag fresh cranberries 2/3 cup light brown sugar, packed 1 jalapeno, seeded and finely chopped

he holiday season tends to overflow with traditions – recipes passed down through generations, annual family gatherings, tree trimming parties and gift exchanges, to name a few.

So how can you put a modern spin on your holiday menu? It’s simple: add bold, exciting flavor to your home-cooked holiday favorites using a versatile ingredient like juicy, tender pork. Start with the traditional – tart, sweet cranberries and pork tenderloin – and add a twist, like jalapenos, to create robust, complex flavor. With seven total ingredients and less than an hour of total cook time, Spicy Cranberry Pork Tenderloin is a celebration-worthy meal that will delight your taste buds and your guests with the perfect combination of classic meets new inspiration. For a garnish, sprinkle freshly chopped sage on top of the finished product. Serve the pork and spicy cranberry sauce with roasted sweet potatoes, skinned and mashed with butter and honey. Preheat oven to 400°F. Finely grate zest from limes. Juice limes (about 4 tablespoons). In small bowl, mix half lime zest (about 2 tablespoons) with 1 teaspoon salt and 1/2 teaspoon pepper. Brush tenderloins with oil. Place tenderloins in nonstick roasting pan, fat side up. Roast, flipping them over after 8 minutes. Add lime zest mixture to top, and continue roasting until digital meat thermometer reads between 145°F. (medium rare) and 160°F. (medium), about 35-40 minutes. Meanwhile, in medium saucepan, mix 1 cup water with cranberries, brown sugar, jalapeno and remaining lime zest and juice. Bring to a boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until berries have burst and juices thickened, about 5 minutes. Set aside. Transfer pork to carving board and let stand for 3-5 minutes. Meanwhile, in roasting pan, bring cranberry sauce to a boil over medium heat, scraping up any browned bits in pan with wooden spoon. Carve pork and serve with sauce.

Celina Owned & Operated

I grew up in Ft. Worth, Texas and loved playing sports all through college and currently coach my daughter’s soccer team. I married my high-school sweetheart, Wendy, 17 years ago after finishing Optometry School at the University of Houston. Wendy has a degree in Physical Therapy from UTMB in Galveston and enjoys being involved in Celina’s Moms in Prayer, Bible Study Fellowship (BSF), and C.A.R.E. organization. We are blessed to have a beautiful little girl, Makenna, who is 9 years old and in the third grade at Celina Intermediate School. We enjoy spending time with friends and family and are actively involved at Lifeway Church in Celina. I remember driving up one Friday night to see a Celina High School football game. We were amazed at the unity, enthusiasm, and support. A few years ago we helped start the Grace Bridge Eye Clinic in Celina to assist those who couldn’t otherwise afford an eye exam or glasses. While serving alongside many of the families who volunteer for Grace Bridge, we grew to love the conservative family atmosphere. Celina was a perfect fit for our family, especially since Makenna has always been fond of horses. Lone Star Vision originally opened in 1997 in Plano and has grown to become one of the largest and well-respected eye care practices in DFW. For the past four years, I’ve been looking for the best location for a second office. Once we decided to make Celina our home, it became very clear that Celina would be the perfect place. The community has been incredibly supportive, and I’ve enjoyed getting to know so many people as a member of the Celina Quarterback Club and the Greater Celina Chamber of Commerce. I was honored when the Chamber named Lone Star Vision as the New Business of the Year for 2013.

At Lone Star Vision, we see patients of all ages and recommend children have their first comprehensive eye exam by age 5 to ensure they perform at their best in school. I want everyone who enters Lone Star Vision to feel welcomed and cared for by our entire staff. My goal is that patients will leave my office saying, “That was the best eye exam I have ever had, and I can’t wait to tell my friends and family!” We strive to provide excellent customer service and utilize the most advanced equipment to help patients achieve the best vision possible. Our optical has styles for adults and children including many of the popular frame brands like Ray Ban, Oakley, Michael Kors, and Vera Bradley. One of my favorite areas of expertise is fitting patients of all ages into contact lenses. It’s extremely rewarding to see the positive impact contacts can have on a patient’s life. At Lone Star Vision, we offer Optomap Retinal Imaging to detect eye diseases such as diabetic retinopathy, glaucoma, and macular degeneration. I feel fortunate to be part of the Celina community and couldn’t have imagined a better place for my family and Lone Star Vision! See you Soon,

Homecoming Parade and Pep Rally by Meghan Wellman

Every year Celina has a parade to celebrate homecoming. The parade involves everyone from peewee football to Las Gatitas and Cheer. All Celina schools have early release so that everyone can gather in the square to support the Varsity Football players. The parade starts by Bobcat Field and ends in the middle of downtown. The parade circles the square once, passing in front of judges and the Bobcat Football team. People of all ages come to join in on the fun of homecoming in Celina. It can really feel like there’s something special about this little town when all of the football booster organizations are riding on floats, getting people spirited for the game. Every organization enjoys being able to decorate their own floats and showing off their spirit. Floats such as the Peewee football and cheer are some of the most fun to see. It’s really great to see even such young children excited to cheer on the Bobcats.

At the end of every parade the Friday pep rally is held outside on the square. Cheerleaders perform, the Las Gatitas dance, and Bobcat band plays Celina’s school song. Cambry Lohman, Junior cheerleader said, “There is so much energy at the pep rally on the square! There are so many people and they are so close around us. It feels great!” The pep rally ends with the traditional “Two bits, four bits, six bits, a dollar. All for the Bobcats, stand up and holler!” Then everyone stands and sways to the Alma Mater. Ethan Kendrick, Junior right guard, said he really likes the open air pep rally because even though it was hot, he got to wear his cool sunglasses. Celina is a town all about tradition. Whether its decorating the town, decorating lockers, mum and garters, the Homecoming court, or the Homecoming parade, the little town of Celina is like no other on Homecoming game day.

HomecomingTraditions and decorations by Sam Bruton

Celina is known for keeping traditions, and we have many. Homecoming is the time of year when everyone works hard to preserve these traditions and make for a happy Friday. Starting weeks in advance, the cheerleaders plan how they will decorate the inside of the school. Then Thursday afternoon, every stop sign from CHS to the downtown square is looped with orange and silver streamers. Thursday evening the school is flooded with cheerleaders, Las Gatitas, and band members to decorate the lockers of all those involved with the season. Everyone works hard to ensure that the lockers are stuffed with candy and snacks and whatever else sounds delightful. Graham Buchanan, Junior defensive tackle, said, “It is awesome to come to school and see your decorated locker but the best part is opening it and finding all the candy and snacks! I was really appreciative!.” Late into the evening the cheerleaders put out the big surprise, they hang signs and streamers on every open wall and railing. This year there was a giant football field along the cafeteria, strings of pennants draped to the stairs, balloon arches from pillar to pillar and who can

20

Celina Magazine

| THANKSGIVING

forget the hand-drawn “Happy Homecoming” sign with candy attached that was stuck to the front of every single locker. The only thing that makes decorating the school until midnight worth it, is the look on everyone’s face when they enter the school the morning of homecoming. Then the actual game-day comes and the students rejoice with only a half day of school. With the end of the school day comes the homecoming parade. Floats line up from the square to Preston Road decorated with creativity. The whole downtown is gleaming with bobcat pride. The parade ends and the “pep rally on the square” begins. The traditions of homecoming seem to continue without anyone even realizing they are being fulfilled. But with the whole town working to make a great homecoming for the students and alumni, it’s hard not to realize how unique Celina really is.

Mum and Garter exchange

by Miranda Jones

The students at Celina High School usually do mum and garter exchanges the night before homecoming. The girls receive mums and if the guy is not a varsity football player he will receive a garter to wear that Friday during school. It has always been a tradition that the varsity football players do not wear garters because they need to be focused for the game and not on homecoming details. In other words, this means the guy can go all out on the girl’s mum! Most of the girl’s mums this year were bigger than those from years past. For example, Liana Hall had the biggest mum at Celina High School. Her boyfriend, Devin Dickerson, gave her this mum and she was shocked at how big it was. During class she constantly had to keep taking it off because it got in the way too much, but she definitely loved it. Seniors usually do all white mums and garters. Senior, Sam Miller received her mum from her recently graduated boyfriend, Ben Roth. The mum was gorgeous! It was all white with a cheetah stuffed animal in the middle. Hers was not quite as big as Liana’s, but it was big enough to wear the mum around her neck because “it was too heavy to pin to her shirt.” Another senior, Maggie Greenwald, received her very unique mum from her out-of-town boyfriend. Instead of having the usual bear or a Celina bobcat in the middle of the mum, her boyfriend put owls in the center. Maggie’s mum was all white with gold accents, so it wasn’t the usual all white with silver. Throughout the halls of Celina High School there were all kinds of different mums, but in the end it’s not about how big the mum is or how much you spend on it, it’s about the memories you make during homecoming and how they will last forever.

Homecoming Dance by Grace Anderson

The 2014 Celina Homecoming Dance was definitely one to remember! It is my senior year at Celina High School, but my first time to attend the homecoming dance. Each year, the dance becomes a more and more popular event to attend and this year, attendance was peaked! This year the homecoming dance theme was “denim and diamonds.” All the girls showed up in their most sparkly dresses while the boys wore their suave jeans and boots. We had an awesome DJ who played new hits and old classics and by the end of the night everyone was on the dance floor I would like to share the moment that made my night extraordinary. Before the dance, my group of four went to Downtown McKinney to take pictures and eat at Square Burger. We enjoyed great conversation and (obviously!) pretty amazing food. After we finished eating, we waved over the waitress for the check. When she came

22

Celina Magazine

| THANKSGIVING

over, she informed us that someone had anonymously paid for all of our food. I couldn’t believe that someone actually paid for our check that would end up being over sixty dollars. Yes, the dance was amazing, and the memories, and the company, but my night wasn’t only a fun-careless time with all of my friends, but it was a special time that inspired me to always pay it forward. It doesn’t always have to be paying for someone else’s entire meal, sometimes it only takes a smile or a friendly word to make someone’s day. This year’s homecoming was the best it’s ever been not only because of the parade, pep rally, Celina’s win over Anna High School, or even the dance, it has been the best because I learned a valuable lesson and I got to spend my last year with the people I love the most!

Homecoming Royalty by JaLeigh Wise

Every year each the student body of Celina High selects a Homecoming Princess for the freshman, sophomore, and junior class along with four young women to represent the senior class as the Homecoming Queen nominees. Princesses are nominated and voted on by each of their respective classes. Freshmen Princess was Whitney Roberts; Sophomore Princess was Taylor Applehans; Junior Princess was Bridgette Specht. Queen candidates are nominated by the senior class and voted on by all students. Nominees for Homecoming Queen were Payton Beall, Miranda Jones, Kinzie Juergens, and Hannah Merritt. Homecoming Queen nominee, Miranda Jones said, “My experience was fun, but stressful at the same time! I loved getting all dressed up but it was hard finding not one, but two long dresses.” Traditionally, queen candidates and princesses wear one formal gown in the Homecoming parade and a different one for the coronation. “I wasn’t only part of the court. I am also on the varsity cheer team so I had five minutes to change from a beautiful, long gown to a itchy, hot cheer uniform to preform the pep rally on the square.”

Being part of the homecoming court has been an honor for decades. The queen is announced at half time at the homecoming football game. Each princess and queen nominee is escorted by her father. It is also a tradition for the previous year’s queen to come home to crown the new royalty. This year Arkansas freshman and Celina alum, Haley Hauk crowned Payton Beall. Payton said, “I was so stunned when they announced my name that I didn’t really show a physical reaction. I wanted to chest bump my dad but I thought that may be slightly awkward. When I came off the field I couldn’t wait to hug all my closest friends and family that were cheering for me on the sideline.” In addition, four Homecoming King nominees were selected by the senior class. Each king nominee had a money bucket that was passed around during pep rallies, football games, and lunch in order to collect money for each candidate. The candidate that earned the most donations was the winner. The money goes to help pay for the CHS Project Graduation event. The homecoming king, Jackson Graf, was announced at the dance on Saturday. NOVEMBER 2014

You can do all of that and more at Country Christmas Wonderland, a holiday destination that will make for an unforgettable evening for you and your family. So, put on your cowboy boots and begin a NEW holiday tradition this year! As you arrive at Legacy Creeks’ Country Christmas Wonderland, you are greeted with a serene, rustic landscape and thousands of twinkling lights. The fun immediately begins…the petting zoo is open for kids of all ages while you wait for your turn on Rudolph’s Storybook Adventure hay ride. After that, get ready for your trip down the Christmas Legend Trail – right into a Christmas Wonderland, including the Gingerbread Village, Candy Cane Fun Maze, Nativity Scene and Frosty’s Winter Wonderland. You will also have the opportunity to enjoy the North Pole skating rink, hot chocolate, campfire stories with S’mores and Christmas Carolers. Once inside the charming cabin, you will be able to shop, watch Christmas movies and for the grand finale, have your photo taken with Santa Claus! Each piece of Country Christmas Wonderland’s adventure is carefully planned and guests are scheduled upon arrival for their part of the evening. This will ensure that you and your family will not have to stand in long lines, waiting for your chance to take a picture with Santa, go ice skating or get cozy by the campfire. Your entire family will enjoy the opportunity to celebrate the Christmas season right here in Prosper/Celina! As you are planning your Holiday schedules, make sure you dedicate an evening or two to Country Christmas Wonderland, opening November 28th! Gunter Community-Built Playground!!

T

he Gunter Parks Foundation is a 501c3 organization whose mission is to identify and support park improvement opportunities by encouraging and mobilizing financial support of all residents.

We have chosen a community-built playground as our first project, which will require hundreds of volunteers in the planning and construction process. Construction is scheduled for May 20-25 and at the end of five days, Gunter will have a custom-built and unique playground – one the entire community can be proud to have helped build. This project is exciting for so many reasons: • People of all ages are involved in designing and building • Families will have a beautiful park for their children • 4th graders will have a more interactive and fun place to recess • Individuals will have the opportunity to join with their neighbors and give back to their community This is a huge undertaking for our small town, as we must raise close to $200,000 in cash and materials/equipment donations. All donations will receive a receipt for tax purposes and the gratitude of generations of Gunter’s children. Following are ways you can contribute: • Purchase a personalized fence picket ($50) • Purchase tiles with your child’s handprint and name ($30) Pickets and tiles will be permanent fixtures of the playground. Order forms are online at www.gunterparksfoundation.com. • Become a playground sponsor – you choose your level of sponsorship by purchasing a playground component or making a donation to the playground fund. Sponsorship levels and recognition are included in our sponsorship packet located on the website. • Participate in fundraising events (look for more info later about our “Touch a Truck” event planned for November.

Let’s build a playground!! 26
