M
aintaining a healthy lifestyle is a daily struggle for the majority of Americans. That struggle is worsened for families in need due to limited income and access to healthy food options. According to the 2010 United States Census, 21 million Americans are regularly in need of additional food and resources. Grace Bridge Food Bank is striving to meet the needs of these families in North Texas through not only its food distributions, but also its community garden initiative- Grace Bridge Farms. Located in the heart of downtown Celina, Texas, the gardens were constructed using the Aquaponics and Earth™ raised-bed gardening technique. This

type of gardening technique utilizes a dirtless substrate mix of nutrient-rich organic ingredients, instead of traditional dirt, in aboveground gardens. In addition, the gardens
are attached to a hydroponic system- a selfsustaining fish tank in which the waste from the fish serves as a natural fertilizer to the plants and the plants serve as a natural purifier for the
water. Since starting this sustainable gardening system, Grace Bridge Farms gardens have proven to be more fruitful than traditional gardens with longer harvesting seasons. All of the produce harvested at Grace Bridge Farms is distributed to local families in need through Grace Bridge’s first and third Saturday food distributions in Celina. By training local community members and food bank participants to build and maintain this gardening technique in their own backyards, Grace Bridge is equipping families to not only put food on their own tables, but also to generate extra food to share with others in need. iving in Celina, and being in the real estate industry as a realtor for over 30 years, I am asked almost daily “How is the Celina housing market doing, and What does the future residential and commercial growth look like in Celina?” I have successfully represented and sold prestigious residential and commercial real estate in Celina and the Dallas metroplex. The most important thing when selling properties is

showing the uniqueness of the investment and Celina has the opportunities that investors and homeowners are looking for. It is a very unique and fascinating time to invest in Celina.
residential development activity in Celina. It is also my privilege to serve on the Celina City Council, and hardly a month passes without Staff and the City Manager bringing a development agreement or aspects of an agreement for Council approval or denial.
After comparing real estate data with Georgina Hennen at Keller Williams, here are some amazing numbers on the activity in Celina. In 2013 there were 170 pre-owned home sales in the Celina area, and this number jumped to 275 preowned sales in the last year. Demand is high right now and availability is low with only 77 total listings presently available. The good part for homeowners is sales prices are up 17%, which is great for homeowner equity, and overall values in our community. The statistic that really jumped out to me is Keller Williams office in Celina has grown from 68 Associates in January 2014 to 104 employees in January 2015. If you are in our business that number tells a lot about the real estate activity in Celina. Commercial development in Celina is in full swing with the completion of Preston Road improvements. This has developers and investors busy looking at acquiring parcels with anticipation of increased demand for retail and office space. Home & Garden
With these numbers it gives us a real view of the growth both in residential and commercial that is happening today in Celina’s real estate market. It is a unique experience to see first-hand the new

Light Farms is designed around their passion to bring people together to promote a healthy, lively attitude that will resonate throughout the community. Carter Ranch and Heritage are in the process of completing their last phases of lots and new homes and construction has begun on Park View across from the Old Celina Park, which will have 200 lots available this year. The Creeks of Legacy has begun development work on their approximate 1100 lots just west of the Dallas North Tollway, and north of Frontier Parkway. Each of these developments offers different home products that help our City to
grow and expand our retail opportunities. During the last two months the Council has been asked to approve developments in the southeast quadrant of the City. These are excellent residential developments that required infrastructure expansion. Our City Staff did a great job working agreements that required the developer’s pay for these necessary water and
sewer utilities. All the hard work that our city staff is doing with Council approval will be paying off for future residential growth north of FM 1461 and west of Custer Road. The increased home value prices in these developments will be a boost to our economic development and tax base for Celina. All of this activity has occurred during the last year. It is exciting to see the quality growth that is taking shape in our community. I was in the custom home building industry for over 30 years, and quality and value were important to our success. IN HIS PRESENCE We here at Lighthouse count it an honor and privilege to be a part of such a great and growing community. We are blessed to have many great churches to choose from in our area. God loves variety, and we know that by seeing it in His creative abilities on display in sunsets, flowers, majestic mountains, and in people as they gather to worship Him. Every church that calls itself Christian will find many things in common. Although forms and styles may differ, there will be common elements of Bible teaching, prayer, worship in song, opportunities to give and serve, and many other commonalities. In the same way, there is lots of room for churches to have unique distinctives. At Lighthouse, we focus on seeing the big picture of the gospel as the context for all of life. While the essence of every other religion is advice about what we should do to be accepted by God; we believe the gospel is essentially news. The gospel is the good news that God has done something through the life, death, burial and resurrection of Jesus Christ that has totally and finally set things right between man and God. We believe this is the guiding message for all of life. There are incredible implications accompanying this news. For instance, the gospel lets us know that God isn’t interested in us working for Him as slaves and servants as much as He is inviting us to work with Him as Sons and Daughters. The big story of the gospel brings purpose and meaning to the “little” stories of our lives. We have not been left to our own devices by an aloof and uninvolved God. We have been invited to work with Him in His purposes for the earth. There is an amazing passage in the book of John, chapter 17 and verse 18. We’re getting to listen in on a conversation between Jesus and the Father as the obedient Son prays. What a thrill to realize that He’s praying about and for us! Jesus says, “As you sent Me into the world, so I have sent them into the world.” This was and is the prayer from Jesus for everyone who trusts Him as Lord and Savior. The implication clearly being that we have an assignment to accomplish and we are sent into that mission the same way Jesus was sent into His. The preceding verses reveal three distinctions that God equipped Jesus with for His mission. First, Jesus was equipped with a deep, abiding relationship with the Father. Secondly, He was equipped with truth and authority. And lastly, He was equipped with a different spirit than the rest of the world that allowed Him to make decisions without public opinion polls. God offers us the same equipping. Inspired by its coastal origins, traditional Greek dishes feature a colorful collection of fruits, vegetables, grains, legumes and grilled fare. From raw to roasted, pickled to caramelized, the onion is one of the most versatile vegetables, and is commonly found among the many fresh flavors of this fare. The growers and shippers of the Idaho-Eastern Oregon Onion Committee and the National Onion Association offer the following tips about onions: • One large onion, diced equals about 1 cup fresh and 1/4 cup cooked. • Grill and saute onions over low to medium heat. This will bring out a savory, sweet, mellow flavor. High heat can cause the onion to taste bitter. • Store onions in a cool, dry, well-ventilated place with minimal exposure to light. • Keep peeled and cut onions in a sealed container

Servings: 6 large or 9 small kebabs 1 tablespoon cumin seed 1 cup plain yogurt 1 tablespoon chopped cilantro 1 tablespoon chopped chives 3/4 teaspoon honey 1/4 teaspoon salt 1 pound ground turkey 3 cloves garlic, chopped 2 teaspoons lemon zest 1/4 teaspoon kosher salt 1/4 teaspoon cayenne pepper 1 large yellow onion, peeled and cut in thin wedges 1 green pepper, cut into 1-inch dices 12 cherry tomatoes
Heat small pan over medium heat. Add cumin seeds to toast. Stir frequently, for about 3 minutes or until seeds are fragrant and slightly browned. Remove seeds to spice grinder or mortar and pestle; grind to moderately fine powder. In medium bowl, combine yogurt, cilantro, chives, honey, salt and 1 teaspoon ground toasted cumin. Cover and refrigerate at least 1 hour.
Preheat grill. On metal skewers (or bamboo skewers soaked in water 30 minutes), thread meatball, onion wedge, pepper square and cherry tomato. Repeat. Finish skewer with another meatball and onion wedge. Grill until meatballs reach internal temperature of 160°F, turning as needed. Serve immediately with dipping sauce. For mini-skewers, use 2 meatballs, 2 onion wedges, 1 cherry tomato and 1 pepper square on each skewer.
Lentil Salad with Marinated Onions, Roasted Tomatoes and Olives
Servings: 6–8 2–3 medium tomatoes cut into eight wedges 1 (9.5-ounce) jar whole, pitted Greek olives, drained 4 tablespoons extra-virgin olive oil March 2015
1 tablespoon balsamic vinegar 8 thyme sprigs, leaves removed Sea salt 1 1/3 cups lentils 1/2 medium red onion, thinly sliced 1 1/2 tablespoons red wine vinegar 2 garlic cloves, pressed 1 medium cucumber, chopped 1 (12-ounce) jar artichoke hearts, sliced 1/4 cup parsley, chopped 3 tablespoons chives, chopped 2/3 cup crumbled feta 1 tablespoon lemon juice Fresh ground black pepper
Preheat oven to 400°F. On medium-sized baking sheet lined with parchment paper, arrange tomatoes skin side down. Add drained olives to pan; drizzle with 1 tablespoon olive oil and balsamic vinegar. Sprinkle with thyme leaves and sea salt. Roast for 20 minutes. Remove from oven and cool completely. Cook lentils according to package directions, approximately 20 minutes. While lentils are cooking, place red onion in small bowl. Pour red wine vinegar over onions and sprinkle with sea salt. Stir and let stand at room temperature while lentils are cooking. When lentils finish cooking, drain if needed. In large bowl combine lentils, marinated red onion, garlic and remaining olive oil. Mix well and cool completely. When cool, combine rest of ingredients with lentils. Serve cold.

Orange, Mint and Onion Salad Servings: 6 3 navel oranges
1/2 sweet yellow onion, peeled and thinly sliced 1/4 cup fresh mint leaves, torn 1/4 cup black olives, oil cured, pitted Vinaigrette: 1/3 cup cider vinegar 2 tablespoons honey 2 teaspoons Dijon mustard 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 cup canola oil
For salad, cut top and bottom off each orange so it sits flat on cutting surface. Remove peel and pith (white part) by taking sharp knife and running it down sides of orange from top to bottom, following shape of each orange. Slice oranges into rounds. Arrange slices, overlapping each other slightly, on large platter. Scatter onion, mint and olives over oranges. For vinaigrette, whisk vinegar with honey, mustard, cinnamon and salt. Slowly add oil while whisking constantly, until well combined. Drizzle vinaigrette over salad and serve immediately. Note: Any leftover dressing can be stored, tightly covered, in refrigerator for up to 5 days. Home & Garden
