CHRISTMAS ON THE SQUARE, DECEMBER 6 The holiday spirit falls on Celina’s historic downtown square on December 6 from 5:00-9:00pm. Christmas on the Square presented by Celina Main Street features live musical performances, amusements, food, and a dazzling tree lighting ceremony. Admission is free and open to the public. Free family-friendly amusements include train rides, a live reindeer, bounces houses, life-size snow globe photo opportunity, a giant slide, cupcakes with Mrs. Clause, and much more! Enjoy crafts, games, snacks, and hot chocolate at local community booths throughout the square. Carriage rides and food vendors require cash, and don’t forget to bring your camera for a festive photo opportunity with Santa! The evening will be filled with joyful holiday performances from local choirs, bands, and spirit teams. The highlight of the evening is the annual tree lighting ceremony under the pavilion at 6:45pm followed by a celebration of the Celina Main Street Program’s 20th anniversary. It seems that not a day goes by that we are not bombarded by media reports sharing a tragic story that makes us shake our heads and question the sanity or lack there of, in regards to humanity. No matter what time of year these senseless events happen, it always hurts a little more during the month of December. The holiday season should be a time of great joy and merriment spent with family and friends but for many, the season can signal frustration, anxiety and situations that test the level of our patience. When struck with these reports, it never ceases to amaze me that no matter what happens in the world, I can always witness an overflow of excitement and joy at our campuses during the month of December. From canned food contests to toy drives, the spirit of giving is alive and well from the youngest of our Bobcats to the oldest. Celina Primary School is hosting a Baby and Toddler Supply Drive that started at the end of Novemberand will run through December 12th. Items that are in great need are as follows; diapers, (all sizes)pullups, baby wipes, baby formula, (sensitive and regular) and baby food/cereal. Our elementary campuses will join forces to collect for Toys For Tots. Watching our elementary students arrive at their campuses with their favorite toys hoping to bring joy to someone they’ve never met fills the heart with renewed hope for peace and goodwill. With cold weather on its way, our

Celina 6th Grade Center, with the help of Mission Possible Kids will host the Gotcha Covered Campaign to collect all sizes of jeans, coats and jackets through December 13th. Celina Junior High through their ACE class period will be collecting gift cards and toys that will be divided up between the Blue Santa program, Toys For Tots, and the Young Heroes of the Guard. Blue Santa is a local program, which is hosted by the Celina Police Force to help needy and underprivileged children in our area. The Young Heroes of the Guard is a mission that is near and dear to the heart of CISD Assistant Superintendent Mr. John Mathews, who serves as a Chaplain for the Texas State Guard 4th Air Wing. The Texas State National Guard Toy Drive was launched in November of 2009 and its primary goal is to provide joy and comfort to children that are confined to hospitals in the Dallas/Fort Worth area. Seeing a child’s face light up at the offering of a new toy, can brush away the confinement of a hospital stay over the holidays and provide moments of happiness and joy. Mr. Mathews and fellow guardsmen will be visiting local hospitals over the holidays to distribute toys donated by Celina ISD students. Our secondary campuses will also be hosting their annual spirited canned food drives during the month of December with proceeds going directly

Festive Popcorn Trees
Yield: 10 trees 10 cups air-popped popcorn 1 bag (10 ounces) miniature marshmallows 2 tablespoons butter 1 teaspoon vanilla extract nonstick cooking spray green decorating sugar blue decorating sugar 1 tube white frosting with decorating tip small, colorful candies (such as sprinkles and miniature silver dragees) Place popcorn in large bowl. Place marshmallows and butter in medium saucepan over mediumlow heat. Stir until marshmallows are melted and mixture is smooth. Remove from heat. Stir in vanilla extract. Pour mixture over popcorn in bowl. Toss well to coat popcorn evenly. Line baking sheet with foil. Spray hands with nonstick cooking spray then scoop up about 1 cup popcorn mixture. Shape mixture into cone, keeping base flat to form tree. Sprinkle tree with decorating sugars; place tree on baking sheet. Make nine additional trees. Pipe frosting on trees to make garland then decorate with sprinkles and silver dragees, as desired. Serving suggestion: Place each tree on sugar cookie and decorate serving tray with shredded coconut to resemble snow. Notes: For best flavor and color, start recipe with unflavored white popcorn. You can make your own colored sugar by adding food coloring to sugar then stirring in bowl or shaking vigorously in sealed container. Add additional food coloring for more intense tones.

Chocolate Popcorn Reindeer
Yield: 8 reindeer 8 cups unsalted, unbuttered popped popcorn 2 1/2 cups mini marshmallows 1/2 cup chopped dark chocolate or dark chocolate chips 2 tablespoons butter or light olive oil 1/4 teaspoon salt 16 pretzel sticks 16 eyeball candies 8 red candy-coated chocolate candies Place popcorn in large mixing bowl. In saucepan set over medium heat, heat marshmallows, chocolate, butter and salt, stirring often until smooth. Toss marshmallow mixture with popcorn until well combined. Scoop 3/4 cup popcorn mixture into ball. Repeat with remaining mixture to make eight balls total. Place each ball in paper muffin cup liner. Insert pretzel stick on each side of ball to resemble antlers, attach two eyeball candies for eyes and red candy for nose. Let cool completely. Tip: Eyeball candies can typically be found in baking aisles of supermarkets or bulk food stores.
Holiday Popcorn Snowman Yield: 5 snowmen 1 package (1 pound) large marshmallows 1/4 cup (1/2 stick) butter or margarine, plus additional 1 teaspoon vanilla 10 cups popped popcorn sprinkles (optional) licorice (optional) gum drops (optional)
cinnamon candies (optional) In large saucepan, melt marshmallows and 1/4 cup butter. Remove from heat and stir in vanilla. Let stand 5 minutes. Pour over popcorn and stir mixture. Butter hands well and form into balls. Decorate with sprinkles, licorice, gum drops and cinnamon candies, as desired.
Holiday Wreath Popcorn Treats
Yield: 8 wreaths Nonstick cooking spray 3 quarts popped popcorn 4 tablespoons (1/2 stick) butter or margarine 3 cups miniature marshmallows 3 tablespoons lime gelatin dessert mix small red candies jellybeans red fruit leather Lightly spray large mixing bowl with nonstick cooking spray and place popcorn inside. In medium saucepan over low heat, melt butter. Stir in marshmallows and gelatin dessert mix until marshmallows are melted and mixture is smooth. Pour over popcorn and mix until coated. Spray hands with cooking spray and press firmly to form into 9-inch logs then bend to form wreaths. Place wreaths on wax paper. Press candies and jellybeans into wreaths as decorations; cut fruit leather to make ribbon and add. Serve immediately or wrap individually in plastic wrap for storage. Active time: 30 minutes Total time: 4 days 4 pound Omaha Steaks Bone-In Frenched Prime Rib Roast any variety Omaha Steaks Rub Thaw roast completely in refrigerator before cooking; allow 48-72 hours. Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight. When ready to cook, heat oven to 225 F. Place roast on elevated rack in roasting pan. Roast 3 hours and 15 minutes, or to internal temperature of 120-125 F. Let roast rest 30-45 minutes. Broil on high 2 inches from broiler, 4 minutes on one side, 2 minutes on other side, or until brown crust uniformly covers roast. Tip: For easier carving, trim roast from bones prior to cooking. Stand rib roast on end so ribs are pointed up. Using sharp knife, cut along bone, being careful not to cut into roast. Tie roast up with butcher’s twine to hold it together while cooking.
Reverse-Seared Roasting The reverse searing method can lead to a well-browned holiday roast with an evenly cooked interior that’s tender and flavorful. 1. A day before cooking, dry brine or season roast and leave it uncovered in the refrigerator to develop crust and flavor. This dries the outside of the roast and forms a layer that allows even browning while locking in moisture. 2. Place roast in the oven at a low temperature to cook evenly from edge to edge. Take it out at an interior temperature of 5-10 degrees below desired finished temperature; it will cook a little more while resting and during searing. 3. Remove from oven and sear roast in a broiler, grill or hot pan to create the crust.

Simple Seasonal Safety Tips Limit your home fire risk during the holidays

t may be the most wonderful time of year, but it can also be one of the most dangerous. Along with the cooking and decorations that make the season magical, the holidays present risks for home fires and burns. An independent survey conducted by Shriners Hospitals for Children® found that many Americans do not follow key fire and burn safety tips despite being aware of dangerous risks. For example, 25 percent of respondents reported leaving lit candles unattended, and 27 percent said they have left them in reach of children. “Some of these findings seem alarming, but each year our burn hospitals see the unfortunate results – children who have been injured in cooking related accidents or in fires associated with holiday decorations or candles,” said Kenneth Guidera, M.D., chief medical officer for Shriners Hospitals for Children. “These injuries can mean years of ongoing treatments and extensive rehabilitation for a child. That’s why we encourage families to learn about fire safety and prevention before a tragedy occurs.”

Fire and burn hazards are prevalent in many homes throughout the holidays, and Shriners Hospitals for Children offers these tips to remind families how to stay safe: Never leave lit candles unattended. If you must use flameburning candles, make sure to extinguish them when you leave the room. n When cooking, turn pot handles toward the back of the stove, out of the reach of children. n Never leave a hot stove or oven unattended. n While cooking, keep a lid or cookie sheet nearby to cover a pan if its contents catch fire. n If you decorate using a live, fresh-cut Christmas tree, water it daily. n Keep trees and other flammable decor at least 3 feet away from heaters and flames. n Discard decorative lights with bare wires, frays or kinks. n Make sure your home is equipped with working smoke alarms and fire extinguishers. n Have an escape plan in case of a fire and practice it with your family members so they know how to react if a fire does occur. n Know the burn care resources in your community. n

Julianna and her mother, Tracy, know firsthand how dangerous the holiday season can be. While at a family Christmas party, Julianna, just 20 months old, snuck away from the activities and was in the bathroom playing in front of the mirror. CANDLE SAFETY FOR THE HOLIDAYS Candles are one of the most common sources of holiday fires. Never leave lit candles unattended and take these additional precautions to have a safe and fun holiday season: n When
candles are lit, make sure they are in stable holders and placed where they cannot be easily knocked over. n Keep candles, matches and lighters out of reach of children. n Be conscious of nearby surroundings. Never place a candle near drapery, decorations or other flammable items that may easily catch fire. Also avoid drafty areas or fans, which can accelerate flames or accidentally blow a flammable item onto a candle. n Know that the safest way to extinguish a candle is with a snuffer. n Consider using wickless or flameless candles. There are numerous options that cast a warm glow so you can enjoy the ambiance of a candle without the risk.
