It is hard to grasp that yet another year has flown by and our administration, faculty and staff members are getting ready to say goodbye to the Celina High School Class of 2019. I have no doubt that these young men and women are ready to embark on this great adventure called LIFE and look forward to their visits home next year to catch up on how they are making their mark on this world.

We know that those on the outside looking in have heard that we are a district that excels athletically, but that is just one piece of the puzzle. For those to shine athletically, they must first put in the work in the classroom and this senior class has accomplished great things! From being named UIL District Academic Champions to State Championships in Film and Art, these students have left their mark both academically as well as athletically! As our seniors get ready to embark on their future plans, I ran across a post entitled “The Five W’s of Life.” Each “W” serves as a reminder to these graduates of important points that I hope they will remember as they begin to pave their own path towards their futures.

understood. Take every experience in stride and continue to put one foot in front of the other. Don’t wait for something to happen. Make your own future by infusing it with action because we were all designed to fly.
As we all watch you take those final steps as a Bobcat, your life comes with a story, but it is up to you to add the details. Seize those opportunities that come your way for those may hold the key that will ignite your passion and your purpose. Each day may not hold an experience worth keeping, but it is the promise of a new start, a fresh perspective that transforms you from the dress rehearsal to what will be your greatest masterpiece.

City of Celina Receives 2019 National Main Street Accreditation The City of Celina has been designated as an accredited Main Street America™ program for meeting rigorous performance standards set by the National Main Street Center and recognizing their exemplary commitment to preservation-based economic development and community revitalization through the Main Street Approach™. “We are proud to acknowledge this year’s 840 nationally accredited Main Street America programs that have worked tirelessly to strengthen their communities. said Patrice Frey, President & CEO of the National Main Street Center. “These programs deserve recognition for generating impressive economic returns, preserving community character, and celebrating local history. Main Street America Accredited communities are part of a powerful movement of changemakers, and their dedication to improving quality of life in the places they call home is inspiring. The City of Celina’s Main Street Program’s performance is annually evaluated by the Texas Historical Commission which works in partnership with the National Main Street Center to identify the local programs that meet ten national performance standards. Evaluation criteria determines

the communities that are building comprehensive and sustainable revitalization efforts and include standards such as fostering strong public-private partnerships, documenting programmatic progress, and actively preserving historic buildings. The City of Celina has been a part of the Main Street Program since 1997 and in 2018 there was over a million dollars in reinvestment from both the private and public sector and 1,600 in volunteer hours in the Downtown Historic Square. The program is only getting stronger with 2019 projections far surpassing 2018. Rebecca Barton, the Downtown Development Manager for the City of Celina says, “Downtown is the heart of the Celina. We received national accreditation because everyone loves Downtown and is willing to make it a priority. We have an all-handson-deck approach and it is successful because of the hard work and dedicated hours of everyone: City Staff, the Main Street Advisory Board, Historic Preservation Commission, volunteers, business and building owners, Chamber, EDC, Celina ISD, and countless other local community organizations. This year is gearing up to be even more successful in downtown with the City Council adopting the Downtown Master Plan in January 2019, several City and private rehabilitation projects already underway, new construction, and a full calendar of events that can be found at www. celina-tx.gov/downtownevents. Place chicken in large zip-top bag; pour buttermilk mixture over chicken. Seal bag and refrigerate 2 hours or overnight. Heat outdoor grill for direct grilling over medium heat. Remove chicken from marinade, shaking off excess; discard marinade. Lightly oil grill grates. Transfer chicken to grill and cook, turning occasionally, 16-18 minutes, or until internal temperature reaches 165 F. Transfer chicken to serving platter. Sprinkle with parsley and serve with lemon wedges, if desired.
Grilled Pizza with Arugula Pesto, Corn and Ham Recipe courtesy of Rachel Gurk of Rachel Cooks on behalf of Milk Means More Prep time: 20 minutes Cook time: 10 minutes Servings: 6 Arugula Pesto: 2 cups fresh arugula, tightly packed 1 clove garlic 1 tablespoon lemon juice pinch red pepper flakes, (optional) 1/3 cup shredded Parmesan cheese 1/2 cup extra-virgin olive oil salt, to taste pepper, to taste Grilled Pizza: 2 tablespoons flour, divided 1 pound pizza crust dough (at room temperature if using refrigerated dough) vegetable oil, for grill 1/2 cup Arugula Pesto 1/2 cup part-skim ricotta cheese 1/2 cup diced deli ham 1/2-3/4 cup fresh corn kernels (about 1 cob) 1/4 cup thinly sliced red onion
1/4 cup shredded Parmesan cheese Heat grill to medium heat (350-400 F). To make Arugula Pesto: In food processor, combine arugula, garlic, lemon juice, red pepper flakes and Parmesan. Pulse until combined then, with food processor on, drizzle in olive oil until pesto forms, scraping down sides as needed. Taste and season with salt and pepper, to taste. To make Grilled Pizza: Flour pizza dough lightly and stretch or roll to about 1/2-inch thickness (14-16-inch diameter). Sprinkle remaining flour on large rimless baking sheet, pizza peel or pizza stone. Transfer dough to baking surface. Clean grill grate and grease with oil-soaked paper towel and tongs. Slide dough off baking surface onto grill. Cover and cook until dough is bubbling on top and golden brown on bottom, 2-3 minutes. Carefully flip dough over using peel or tongs. Remove crust from grill to add toppings. Spread Arugula Pesto over dough. Top with ricotta, ham, corn kernels, onion and Parmesan. Return pizza to grill, cover and cook until toppings are heated through and bottom of crust is crispy, 5-7 minutes. Remove from grill, slice and serve.

Salad: 3 cups baby spinach 3 cups chopped romaine lettuce hearts 1/2 cup sweet red pepper rings 1/2 cup sweet yellow pepper rings 1 cup avocado chunks 1/4 cup thinly shaved red onion To make dressing: In blender, combine yogurt, lime juice, milk, chives, garlic, salt and pepper. Blend on low until smooth consistency forms and chives are completely incorporated. Transfer dressing to jar with tight-fitting lid and refrigerate until serving. Heat grill to medium. To prepare steak: Combine kosher salt, black pepper and granulated garlic to create rub. Sprinkle half of seasoning mix over one side of steak, pressing it into meat. Repeat with remaining seasoning on opposite side of steak. Grill steak over direct medium heat to desired level of doneness, approximately 4-5 minutes per side for medium pink center. Remove steak from grill and let rest 7-10 minutes on cutting board. To make salad: Toss spinach and romaine on large platter. Scatter red and yellow peppers, avocado and onion over greens. Slice grilled sirloin thinly against grain. Arrange meat slices along center of salad. Drizzle dressing over salad just prior to serving. CELINAMagazine.com May 2019 | 17

What’s All the Hype About Drip Irrigation? Ultra efficient and easy to install, drip irrigation systems are ideal for watering pots, beds and trees. The main goal of any irrigation system is to put water on plants period. Exactly how much water is distributed and how efficiently the system runs are the important details to consider. There are many techniques for distributing water, including crop irrigation, pop-up spray systems commonly used to water lawns, and drip irrigation. Flood irrigation is often used in areas where water canals flow through the country supplying fields and yards with water that is siphoned out of the canal. The water is routed onto the desired area in large amounts, to be absorbed into the soil and to the root zone. This is a very effective method that, surprisingly, is not as inefficient as it might first seem. A typical pop-up spray irrigation system that has too much pressure, causing lots of mist, and with poorly adjusted heads that throw water onto the sidewalks and into the streets, may actually be less efficient. Drip irrigation is on the other end of the spectrum. Water, at low pressure, is applied to relatively small areas so that evaporation losses from misting are eliminated, and flooding and runoff to undesired areas are removed. Drip irrigation, simply put, is a method of applying water directly to a target root zone in a controlled manner, limiting losses to evaporation and run off.

Components of a do-it-yourself drip irrigation system include an antisiphon device to protect drinking water, fittings and filters to trap small particles of sand and grit that can stop up the small orifices of drip systems. Do-it-yourself kits for homeowners are available at most garden centers; hardware stores and irrigation supply stores starting at less than $100. These kits include everything needed to set up a simple drip system that hooks up to your hose bib connector: an anti-siphon device, a number of fittings, nozzles, plus a given amount of pipe (depending on the intended application). Simple and easy to follow instructions help with installation, which can often be completed in one afternoon. Timers can also be added for ease of operation. Installing drip irrigation can be fairly simple or quite complex, depending on the area needing coverage. Small, stand alone systems designed simply to water patio pots; beds and trees are ideal for do-it-yourselfers. Larger systems, which are generally added to existing lawn systems, can be installed to water lawns, but these types of systems are best left to the professionals. Keep in mind that there are several state laws that govern potable community water systems and that it’s sometimes easier and less expensive to hire a professional. Texas requires that anyone servicing or installing irrigation systems for a fee be licensed by the state, and that all systems incorporate a backflow prevention device to protect drinking water from contamination by back siphoning. Before installing your drip irrigation system, check with your local water provider to determine exactly what type of safety requirements or preventive measures are necessary.

Anytime a licensed irrigator comes out to your property and finds, during the course of service, that a system is noncompliant with state regulations, he must, by law, bring the system up to grade or disable it. They actually perform best when temperatures are consistently between 60 and 85 degrees. That’s why they are so popular in the Midwest and the Northeast. Our best bet in Texas, is really to grow them in pots. Enjoy them from the first warm days of very early spring on into early summer. They’ll bloom riotously. As it turns hot, you can start giving them more shade in the afternoon. Eventually you will have them in enough shade that the flowering will slow or even stop, but perhaps you can nurse them through the summer so they can bloom again once fall arrives. If you plant them in the ground, you lose that portability. Finally, there is breeding progress being made toward more heat tolerant types, but there is always ample room for improvement.
