“Play gives children a chance to practice what they are learning.”-Mr. Rogers Fred Rogers understood children. He understood child development. He understood the importance of play. “Play is often talked about as if it were a relief from serious learning. But for children play is serious learning. Play is really the work of childhood.” Let the words of Fred Rogers engulf you. For children, play is not a luxury, it is a necessity. Play is so important for a child’s social, emotional, language and cognitive skills, that pediatricians are being urged to write prescriptions for play.

“We’re recommending that doctors write a prescription for play, because it’s so important,” said pediatrician Michael Yogman, MD, FAAP, who was one of five lead authors on a recent report published by the American Academy of Pediatrics titled “The Power of Play: A Pediatric Role in Enhancing Development in Young Children”. Children learn faster through play than any other teaching method. According to Dr. Karyn Purvis, “Scientists have recently discovered that it takes approximately 400 repetitions to create a new synapse in the brainunless it is done in play, in which case, it takes between 10-20 repetitions.” Caution though, not all play is created equal. The rise in popularity of hand-held devices, gaming systems, and cell phones runs parallel with the decline of pretend play and childhood outdoor explorations. While technology and video games can be an appropriate form of play in moderation for older children, one of the most crucial forms of play for toddlers, preschoolers, and early elementary children is unstructured pretend play. Discover the magic that appears in constructing and defending an unconquerable fort made from sheets and chairs. Set sail on the mighty Mississippi River in the grandest of ships aka a laundry basket. Adopt a beloved pet from the fantasy pet shop of stuffed animals. There is beauty and simplicity in the imagination of pretend play. So, follow the doctor’s orders and go saddle your unicorn!

This past month was National CTE Month – a time to celebrate Career & Technical Education in schools. As people contemplate moving to a “small town,” there are always pros and cons…the best parts about living in a small town are the incredible feeling of community, small town values and the opportunity for students to participate in a multitude of activities in great schools! The drawbacks are having to drive to go (anywhere) – I think we could just stop there (ha ha!). Often the smalltown feel comes at the expense of not having as wide of offerings for students in our schools. We have done an incredible job in Gunter ISD in expanding our elective offerings for our students the past several years. We have always had outstanding programs in band and choir and this past year we were able to add Art for Grades 7-12. And in CTE, our kids are doing AMAZING things! In Engineering, we are a Project Lead the Way campus offering Introduction to Engineering Design, Principles of Engineering, Computer Programming and Robotics. Our Business courses offer everything from technology courses to personal finance (Money Matters) to Sports Marketing & Social Media Marketing. In Health Sciences we offer a multitude of courses including Advanced Health Science, Medical Microbiology and Pharmacology where our students are serving in local pharmacies and will have the opportunity to earn a certification in Pharmacy Tech. In Ag Science we offer a strand of courses in animal management, horticulture and welding. Our FFA students did an amazing job at the Texoma Exposition & Livestock Show this past month but even more than the many awards these students won in showing animals and creating a variety of projects, this program teaches leadership, integrity, and hard work. Gunter ISD is excited and proud to provide every student with a wide range of learning experiences at every grade level and thankful that our students have tremendous opportunities in Career & Technical Education.

Leaving a Legacy For the first time ever, the Gunter High School Cheerleaders celebrated an amazing season with their very own Cheer Banquet on February 24th. In the past, the team has always partnered with the sports’ teams, but as Gunter ISD has grown, each organization is beginning to host their own individual banquets. The evening began with student remarks by Ashley Bruner, followed by a wonderful meal and a year in review slide show. Afterwards, the Junior Varsity, Varsity and UIL teams were all recognized, as well as the seniors. Next on the agenda was a slide show from the UIL Team, thank yous and the Big Sis/Lil Sis Exchange. It was a wonderful evening of celebration and a night that these talented, spirited and hard-working ladies aren’t soon to forget. The 2018-2019 Cheer team was fortunate to be led by 5 seniors – Captain Taylor Howard, Co-Captain Peyton Fanning, Lieutenant Chloe Walton, Karsyn Kemp and Ryle Leach. The legacy these ladies have started will forever be remembered. In the course of their Varsity careers, they have put on over 40 pep rallies and cheered at 58 football games, including two trips to state and volunteered to cheer at many home volleyball and basketball games, including the playoffs! In January, they had their most successful finish ever at the UIL State Spirit Championship, finishing in 6th place! As the GHS Cheerleaders wrap up a very successful season, eyes turn towards the 2019-2020 season and team. This year’s Seniors will spend the week before tryouts teaching the material to the next crop of Gunter Middle School and Gunter High School cheerleaders and enforcing the legacy that they have begun. These hopefuls will formally tryout on March 8th and we wish them all the best! Get’em Tigers, Get’em!

Make it Mediterranean

3 dishes to highlight the next trend in internationally themed cuisine

ust like forward-thinking culinary artists, many at-home chefs seek out the next trendy flavor to provide friends and family gathered around the table. When pondering which trend you’ll dive into in the future, consider incorporating tastes from an especially influential international location – the Mediterranean Sea region. Considered by the experts at Les Dames d’Escoffier International (LDEI) in the organization’s 2018 Trends Report to be one of the most influential parts of the world on the American food scene, flavors from the Mediterranean Sea focus on a diet heavy on fruits, vegetables, grains, beans, seeds and nuts. Take this Hummus recipe, for example, which involves processing a host of beans, seeds and seasonings to create a light, smooth dip to serve with anything from vegetables to crackers. Because the fare is typically lighter, small bites and salads such as Fresh Figs with Honey or this Tomato, Feta and Basil Salad provide easy-to-prepare versions of Mediterranean cuisine. Incorporating vegetables (tomatoes and basil) along with the salty, milky flavors of feta cheese makes the salad a distinctly Mediterranean dish. In addition to Mediterranean food, the trends report highlighted Middle Eastern cuisine and Latin American flavors as areas of the world that

will influence American dining in the next year. Additionally, LDEI highlighted these regions as likely to be influential in the next three years: 1. East Africa 2. The Balkans 3. The Caribbean Sea To go along with specific regions and countries to influence American food culture, the report identified these international food concepts as the most likely to become prominent food trends: 1. Puebla Hot Pot (Latin America, Mexico) – ancho chile, smoked paprika and spices in chicken stock, served with chicken or pork, corn, avocado crema and fresh garnishes. 2. Manouri (Mediterranean, Greece) – a semi-soft, fresh white whey cheese made from goat or sheep milk. 3. Millet (India) – ancient grains harvested from small-seeded grasses used for porridge. Mediterranean food, because of its reliance on the inclusion of vegetables and exclusion of red meat in many of its dishes, also squarely fits into the top established and growing health trends, according to the report, which are: 1. Vegetarian cuisine 2. Organic 3. Vegan cuisine Find full results from the report and learn more about the organization at LDEI.org.

Tomato, Feta and Basil Salad

Recipe courtesy of Beth Vlasich Pav of Cooking by Design, LLC, on behalf of Les Dames d’Escoffier International Servings: 15-20 8 medium size tomatoes, sliced into 1/8-inch slices 1 block (8 ounces) feta cheese, sliced into 1/8-inch pieces 2 small packages fresh basil, leaves picked off stems 3 teaspoons sea salt 2 teaspoons fresh ground pepper 1/4 cup olive oil On large platter, arrange slices of tomato and feta so they overlap. Place basil leaf between each tomato and Feta slice. Repeat. Sprinkle with salt and pepper. Drizzle with olive oil. Serve immediately.


Hummus

Recipe courtesy of Beth Vlasich Pav of Cooking by Design, LLC, on behalf of Les Dames d’Escoffier International Yield: 2 cups 2 cans (15 ounces each) garbanzo beans 1 medium garlic clove, peeled 1 teaspoon sesame oil 1/4 cup fresh lemon juice 2 teaspoons sea salt 1 teaspoon fresh ground pepper 1 teaspoon black sesame seeds

1 teaspoon olive oil 1 teaspoon toasted sesame seeds Drain garbanzo beans reserving 1/2 cup liquid. In food processor, process garbanzo beans, garlic, sesame oil, lemon juice, salt and pepper until incorporated. Stop and scrape down sides of bowl. Add garbanzo liquid and process until smooth. Scoop mixture into medium bowl, add black sesame seeds and mix gently. Serve with drizzle of olive oil. Sprinkle toasted sesame seeds on top.

Fresh Figs with Honey
