A Snug Retreat BY DELIA RAMSEY

I was originally drawn to the McKinney Snug on the Square’s menu because of their creative takes on the commonly monotonous sandwich. So imagine my delight when I learned Prosper had gotten their very own abbreviated version, at newly budding master-planned community Windsong Ranch. Located in the welcome center at ‘The Commons’ building, Windsong Café offers free wi-fi, comfortable indoor seating, as well as outdoor dining areas. The space is splashed with bright colors, tons of windows and natural wood accents, creating an overall upscale resort-style atmosphere. The cafe is beautifully decorated, making it a great place to gather with friends over a hot, iced, or blended beverage. There is a smorgasbord of choices for coffee lovers, smoothie drinkers, and more. For your sweet tooth and caffeine fix, try the Reese’s Cup: espresso, peanut butter, chocolate, and milk. An indulgent creation, this also makes for an excellent dessert. They have various other specialty coffees to choose from, in addition to the tradional espressos, cappuccinos, and lattes. Windsong Cafe serves breakfast all day, offering a variety of sweet selections and even createyour-own breakfast sandwiches or omelettes. Everything is made fresh to order. They also have recently introduced Simply Oats, your traditional old-fashioned oats, served with steamed milk, brown sugar, and organic clover

honey. Top with your choice of granola, almonds, blueberries, or strawberries and a honey drizzle. If you’re more in a lunch mood, the sandwiches at Windsong are a lovely choice, with jams, savory breads, and other flavors that make them stand out from other breakfast and lunch places in the area. Check out some of their delectable handhelds: Ham and Cheddar Melt: Honey ham, melted pecan cheddar, baby spinach and strawberry jam. Served on buttery brioche. Turkey Almond Jack Melt: Roasted turkey, melted smoky Almond Jack cheese, baby spinach, honey raspberry Dijon. Also served on light buttery brioche. Bacon and Pimento Melt: Homemade Pimento Cheese, crispy bacon, candied jalapenos, and peach preserves. Served on dark molasses bread. They also offer a Chicken Salad Sandwich, and a House Salad with strawberries, almonds, chicken, and poppyseed dressing.

Lunch combos are available, and affordably priced. Choose from a half or whole sandwich, and one of their enticing sides. I love their Chipotle Pasta Salad. Other side dish options are Taco Soup, Black Beans & Rice, Bacon Ranch Potato Salad, fruit side salad, or chips. Desserts are aplenty at Windsong Café by Snug, with fresh baked cobblers, lemon bars, and much much more to sink your teeth into. If you’re thirsty for something other than coffee, not to worry, there is also a wide selection of teas, smoothies, hot chocolate, and juices for the sipping. Windsong Café has an extremely relaxed vibe, servers with a smile, and fresh-cooked farm-to-table food made with locally-sourced ingredients. How to Survive the Stress of Summer

“The LORD gives his people strength. The LORD blesses them with peace.” Psalm 29:11 (NLT) The threat of summer craziness was becoming a reality. I settled in a chair at my kitchen table, surrounded by the clutter of information sheets regarding work obligations, sports practices, mission trips and church activities. Pulling out my family calendar, I mapped out the summer months. After writing down all our commitments, I stared at the endless scribbles etched across practically every date. We had only one free week during the entire summer. With a heavy sigh and swirling thoughts, I felt a twinge of stress and anxiety slowly rising up in my chest. I couldn’t help but wonder, isn’t summer supposed to be footloose and fancy-free? What happened to sleeping in and time to rest and unwind? Are relaxing summer days merely a thing of the past? Now, it seems like the summer can instead be filled with days when the kids are bored and whiny, camps get cancelled, work interferes with vacation plans, the AC goes out, and traffic is horrendous. Days when we lose our patience, harbor a bad attitude, and have had quite enough of family time. Days when we feel powerless against the exhaustion of our busy schedule and stress rules the roost. It may seem that easy summers are long gone. However, we can make it through the hectic days and stay at peace despite the chaos. In Psalm 29:7 God promises He will help with whatever we face: “The LORD gives his people strength. The LORD blesses them with peace.” There are several keys to God’s peace overriding the mayhem. When we remember to focus on God’s sweet goodness, instead of all the scribbles on our calendar, we can be proactive in managing summertime. We can receive God’s calm, even in a busy and sometimes stressful time of the year. Here are some specific ways to do so: Focusing on all the good things God has done for us, instead of the challenges of summer. Remaining calm and praying for God’s peace when the demands of family and life seem overwhelming. Asking God to give us rest and strength when we begin to feel stretched thin and worn out. We can also take some additional steps to keep summer stress at bay. Such as: Take daily mini-vacations. Try to set aside at least five minutes per hour to stretch and take a break. When you take days off from your work or daily routine, unplug completely—meaning no phone or emails. Keep a checklist or a detailed calendar of all scheduled activities. Do something for yourself once a week: take a bubble bath, read a good book, spend time outdoors or take a nap. Busyness and stress can heat up quicker than the summer sun. But it is possible to stay cool on the inside. Whether we are low in spirit or low in energy, depending on God and seeking a daily infusion of His strength and peace can ensure a less stressful summer. “Dear Jesus, sometimes I allow the chaos of summer to distract me from spending time with You. I neglect to claim Your peace and allow myself to get bogged down with the stressors of the season. I get frustrated with my children, rather than treasuring this time with them. Help me to focus on You when I begin to feel overcommitted and to seek Your peace with each rising sun. In Your Name, Amen.”

These are exciting times in Prosper. Our Prosper High School Baseball Team is the best in Texas, and we are experiencing unprecedented economic development. Many think of economic development in a community as growth in restaurants, stores, and other retail. While retail growth is an important component of economic development, and something the Town of Prosper is working diligently to pursue, the principal focus of economic development is to attract daytime employment, or “primary jobs.” In other words, Prosper and other Texas communities are working to create office space for employment and to attract companies who bring this employment.

This legislation is unique because most states focus their economic development efforts at a state, regional, or even county level, and many states only pursue economic development through their governor’s office. Daytime employment and the creation of office space provides many benefits to our community. A larger daytime population in Prosper helps attract quality

This diversification lessens the fiscal burden on homeowners and enables our community leaders to provide schools, firefighters, police officers, parks, infrastructure improvements, and more without the need for a rise in tax rates.

other healthcare oriented businesses that will undoubtedly bring even more new jobs. Another exciting office project is taking shape immediately north of the future Texas Health Resources facility. Matthews Paradise, a partnership between well-known developers Jack Matthews and Mitch Paradise, is in the preliminary stages of planning an office development that will feature three 4-story ‘Class A’ office buildings. The 285,000-square foot project is currently seeking office tenants and is expected to begin construction when it is 50-percent pre-leased. The PEDC has worked closely with Prosper Bank to build Prosper’s first ‘Class A’ office space. Prosper Bank plans to break ground soon on a 3-story, 25,000-square foot office building with underground parking next to its current location on Preston Road. There are numerous other office projects in early development stages in and around Prosper, and as Prosper continues to grow with a deliberate effort to attract quality development, the creation of daytime employment will be crucial to the vibrancy of our Town. Prosper Brings Home The State Title The Prosper Varsity baseball team has had a great season…making it all the way to the 2015 UIL Baseball State championship in Austin, Texas. Prosper, undefeated in district play, had their highest scoring game against Frisco Heritage 22-6. In Bi-Districts, they had a rough start, losing to Frisco Centennial. “I had faith in the team and knew that we would bounce back and not worry about that game, and instead focus on the next game ahead and play the game we know how to play…. and we never looked back,” stated Sophomore short stop Easton Murrell. They came back the next day determined for the win and brought it home with a high scoring game of 18-6. They then had to play Centennial a third time to earn their spot in Area. The Eagles came in with fire and won 15-3. In Area, Prosper played Newman Smith in a one game series and won 7-2, advancing to Regional Quarterfinals. On May 23 and 24, the boys won a double streak against Frisco…7-4 and 7-3. The Eagles then moved on to the semi-finals against Sulphur Springs. The boys knew that they had to fight hard to make it to the State

Regional Finals, and they got the job done in a high scoring game on May 30, 16-4. In the beginning of the second game against Sulphur Springs, the crowd grew worried after Sulphur Springs scored the first 2 runs. Our Eagles then stepped it up and finished strong with a win, 6-2, advancing them to state. With the baseball team going to state the whole community got together for the State baseball pep-rally and the state send off. Prosper had a close game on Thursday night in the semi-finals against Tomball. Tomball scored a run in the first inning and held their lead for three and a half innings, leaving the Prosper crowed biting their nails. Going into the bottom of the sixth, the game was tied up 1-1. Matthew Gonzales stepped up to plate and blast a threerun home run shot into left field, giving Prosper a lead of 5-1. Prosper pitcher Anthony Bernardez finished the game off after 95 pitches, with the final score of 6-2, Prosper Eagles. Georgetown and Aledo played right after the Eagles won to see who would move on to the finals against Prosper. Aledo could not keep up, and Georgetown took the lead 4-1 in the first

two innings. The Georgetown Eagles scored a three-run home run in the fifth inning, giving Georgetown a comfortable lead against Aledo. The announcement was made toover 7,047 fans…it was going to be Eagles vs. Eagles in the State 5A championship game. The 5A State Final game began with a UIL recording-breaking attendance for high school baseball…8,126 fans! Since Georgetown is only about sixteen miles north of Dell Diamond Stadium, and their fans filled the stands. Physically, there was more blue than there was green…but Prosper’s heart just can’t be beat! Prosper came into the game strong, maintaining control, keeping the lead and preventing Georgetown from getting on the board. The break-out lead came in the 2nd inning. Prosper scored six runs on just three hits. Josh Walker’s hit scored Anthony Bernardez. Sophomore Easton Murrell then came up to bat and hit one right down the first base line, resulting in a three RBI triple. Then, a wild pitch resulted in another Prosper run. The score at the top of the 3rd inning was Prosper 6, Georgetown - 0. Prosper fans got louder as Prosper added two more runs during the game. In the end, the Prosper Eagles dominated the game, winning 8-0. Summer Living | WeAreProsper.com

Kylor Morris pitched the entire game, with five strikeouts, and only allowing four Georgetown players on base. “Well, I knew we had a good shot to win against Georgetown because they had thrown their ace pitcher the game before to reach the State game. I was extra excited to see how my pitching matched up with their hitting because they had 2 or 3 Division 1 commits. During the game I felt a sense of leadership that I had to take on to help us win. One of my main thoughts was to give all the glory to God no matter what. Whether we win or lose, we have to give the glory to God because without him we wouldn’t have made it where we did,” said

senior pitcher Kylor Morris. Senior Chad Hardy, who caught the last out on first base to rap up the game said, “It was an incredible feeling. I had so much adrenaline at the time so I just focused on catching it and then celebrated with the squad.” Prosper took the State 5A championship title with a blow out win of 8-0. Senior Catcher Nolan Pratt said, “I was so happy because I’ve been dreaming about winning state and when Chad caught the ball, I just dropped to my knees an praised God for letting it happen.”

After the win, OU commit and Centerfielder, Steele Walker said, “We were very confident going into the two games. We knew we had the talent and determination to win the state title; we just had to go and perform like we’ve done all year. It was really just a blessing to be able to be a part of something that most people never get the chance to experience. I’m thankful that God allowed our team to do this, and I’m extremely grateful that I could go out as a state champion and leave a legacy for Prosper High School!” In March, Coach Carpenter was selected as the 2014 National Baseball Coach of the


Year by the NFHS. Coach Carpenter won three state titles at Fort Bend Elkins before landing in Prosper in 2008. He has lead the Prosper Eagles now for 8 seasons and has watched these boys literally grow up, as the majority of this year’s team are seniors. This State Championship win is a very memorable and monumental moment for Prosper, as we have not won a State title in baseball since 1994. A moment like this in our community is a memory that no one will soon forget. We Are Prosper…We Own This…State Champs!!

Remembering our Town’s Heroes BY JACK DIXON

ill Hays, the President of the Prosper Historical Society, selected the Veteran’s Memorial Committee in 2012 and appointed Jack Dixon as chairman. The committee members selected are: Cap Parry, Ann Lieber, Judy Rucker, Ron Underwood, and Kenneth Dugger, Councilman. The building of the Prosper Veteran’s Memorial is the number one priority for the Prosper Historical Society. Cap Parry and Jack Dixon reviewed various memorials in other nearby cities to gain insight on how to proceed with this project, especially in regards to location. Jack Dixon designed the one-acre, star shaped model that represented the Lone Star State and the Prosper town seal. Currently, there are two suggested locations that are being decided upon. A downtown Prosper location, as the memorial could serve as an anchor for the redevelopment of historic downtown, or possibly the new Sexton Park for a more serene environment. The key to this project is to create a set place where people can go to honor and remember their heroes. Our Prosper Veteran’s Memorial is a three-foot high star shaped base with a 20 ft. black granite pentagon in the middle. Each star point will be angled down with a round brass authorized insignia of each military branch. A walkway surrounding the star will have granite blocks that can be engraved with any veteran’s name, branch of service, date of service, significant military honor, and rank. The backs of the four black, granite benches will be engraved with the names of Prosper residents only who have served in the military. The Prosper Historical Society has a very complete list of Prosper residents who have served in the military to protect our town and country’s freedom. The Memorial would not be complete without displaying the lighted three flags: the United States of America flag, the POW flag, and the Texas State Flag. The Historical Society is actively reviewing all options to proceed with the next steps to get the memorial built. The current price to build the memorial, excluding land, will be roughly $730,000. The Historical Society is a non-profit organization, so any private funds or land donation could be a tax deduction. The Veteran’s Memorial committee will look into all funding options when a memorial location is identified.

Remove 1/2 cup and set aside; pour remaining crumb mixture in an 8-by-8-inch baking dish. Coarsely chop cherries and transfer to medium bowl. Add fruit spread, stirring to blend. Pour over crust, gently spreading evenly in bottom. Spoon ice cream over top, gently spreading evenly. Sprinkle with reserved crumb mixture. Cover and freeze at least 8 hours. Cut into squares to serve. Honey-Peach Frozen Yogurt Sundaes Prep time: 15 minutes Makes: 4 servings 1/3 cup walnut halves 2 medium fresh peaches, sliced 1/4 cup honey 1/4 teaspoon ground cinnamon Pinch ground cloves 4 scoops (1/2 cup each) Blue Bunny Vanilla Bean Frozen Yogurt

In medium skillet over medium heat, cook walnuts until toasted, about 5 minutes, stirring constantly. Cool. When cool enough to handle, chop very coarsely. Set aside. In same skillet over medium heat, combine peaches, honey, cinnamon and cloves; cook and stir until peaches soften. Cool several minutes before spooning equally over frozen yogurt. Top each serving with about 4 raspberries. Serve immediately.

Have you ever bought something for a wedding or party and never worn it again? Break out those special occasion pieces and use these tips to incorporate them into your everyday wardrobe. An embellished piece like this sequin skirt is perfect for a wedding. Dress it up with a fun top, statement necklace, and heels. Don’t have an embellished skirt? A bejeweled top paired with your favorite skirt would have the same effect.

Tired of your dresses but want to create the same effect? Create a faux dress by pairing same-color separates. This lace top and black mid-length skirt are a perfect example. To add visual interest to the monochromatic look, play with pattern, texture, and shine. Here, the feminine lace contrasts with the faux-crocodile clutch, and the cocktail ring gives just a hint of sparkle.

Trade the skirt for a pair of trousers and add a lightweight sweater or jacket over a dressy blouse for an easy work outfit. Want to make the midi skirt do double duty, too? Dress it down by adding a simple tank or tee and finish off the look with a pair of sandals.

Pair your sparkly piece with a more relaxed item, like a chambray button up, and wedges for a night out. The combination of dressy and casual creates great visual interest and gives you a polished look.

Remember When - A Look Back at Prosper’s History

SMITH & SCOTT CEMETERY’S This month we will discuss two more private cemeteries that were located in the Prosper area and were founded before Prosper became a community in 1902. These were the Smith and Scott Cemeteries. Before there were community cemeteries, many burials were located on private land and most of the burials were members within the family. However, if there was a family who had no place to bury their dead, another neighbor would often offer land in their own private cemetery. Also, many slaves were buried in these private cemeteries with no names listed. The Smith Cemetery is a private cemetery and is located west of Rock Hill (or where Rock Hill was during the late 1800’s), north of County Road 24 near Panther Creek. The Dallas North Tollway is just east of the cemetery. It is located barely within Collin County, next to the Denton County line. Smith Cemetery is named after Charles Lewis Smith. Charles Smith married Melissa B. Hawkins on December 9, 1847, in Barren County, Kentucky. They came to Texas with their three children in 1853 and settled on a 640-acre land grant. Later, they had seven more children for a total of ten. Their land was located in Collin and Denton counties. The cemetery is located on this land. Charles Smith gave the land and some money to build Smith’s Chapel in

Rock Hill. This church was moved to Prosper in 1902 as the Methodist Church. There are seventeen known burials. Sixteen have headstones. Following are the names of the people buried in Smith Cemetery (notice how many died at a very young age): Melissa B. Scott Cemetery is a private cemetery, located on County Road 161 in Collin County three miles north of Highway 380 and east of Wilson Creek. This cemetery served the Bloomdale and surrounding areas. The cemetery was established on the land owned by James Preston Scott. He was born October 23, 1809 and died March 13, 1858. His wife was Jane C. Scott, who was born October 6, 1806 and died October 12, 1885. Both are buried in the Scott Cemetery. He served in the Texas Legislature and died while serving there. The cemetery was founded in 1854. The first person to be buried in the cemetery was James Preston Scott’s granddaughter, Mary C. Taylor. She was born in 1852 and died in 1854. Mary Taylor was the daughter of Taritha Scott and her husband, A.J. Taylor. Both Taritha and A.J. Taylor are buried in the cemetery. There are over 200 people buried in this cemetery. There are over thirty unmarked graves, two of which were the family slaves, named Jake and Rhoda.

In the next two month’s magazine we will try and cover the four remaining areas that were founded before Prosper became a town in 1902. They are the Horn Cemetery (private), Cottage Hill Cemetery and Methodist Church and the Bethel Cemetery, School and Church and the Zion Cemetery, School and Church.
