LETTER FROM THE EDITOR Happy Holidays to all. We are excited about our second issue of “Distillery Channel Coffee Journal”. We want to thank all who sent so many thoughtful and kind notes after our inaugural issue. This second issue is expanded due to the influx of support, our great credentialed media team, and professional writers’ contributions. We have expanded the reach on the ISSUU magazine platform, so you will find major metropolitan areas receiving additional infusions of our magazine through our diverse media/marketing platform. This magazine is supported by our weekly podcast, “Happy Hour Lifestyle Show”, now on the ten major podcast platforms which are iTunes, Google Play, TUNEIN+Alexa, iHeartRadio, Spotify, Overcast, Pocketcast, Castro, Castbox and Podchaser. We hope you have time to tune in to this vibrant and highly entertaining talk show, which is always clean and joyous in spirit. In today’s digital world, sometimes fluffed with “media spaghetti”, we want to spread the opportunities of travel, photography, golf destinations and highlighting small craft breweries distilleries and wineries with unique missions and personal insights. So, sit back and enjoy a cup of our “Foy Estate Coffee” and a few minutes looking at the pictures from around the world which we spend each month selecting just for you to enjoy. Our editor, Miss Kira, takes great pride in applying her years of professional photography sorting out each issue’s photos. Cheers, Randy Weckerly Publisher

5 Mindset Shifts to Avoid Holiday Weight Gain Written By: Dina Garcia
Distillery Channel Coffee Journal
15
16 Distillery Channel Coffee Journal
If you enter the holiday season with
fear and anxiety around weight gain, most likely you ARE going to gain weight. Typically, what happens when we let fear take over, is we start to restrict our food intake. Restriction can then lead to overeating. Whether we give in because we are hungry and there are no healthy choices around, or we just can’t resist the dessert table, our brain thinks “failure” and shifts into “I’ll start over tomorrow” thinking.
It just catches up to us more
around the holidays because there are so many parties and dishes that are only around during the holiday season.
None the less, here are 5 mindset
shifts that will help you make wiser choices this holiday season without making you feel like you’re on a diet:
Then as we are stuck in that
moment of knowing we will start over tomorrow, our brain either consciously or subconsciously wants to overeat in the moment, since it thinks it won’t get this food tomorrow. When tomorrow comes, nothing changes and eventually the “I’ll start tomorrow” turns into “I’ll start Monday,” then through the holiday season it morphs into “I’ll start in January”.
Old Way of Thinking: I am going to eat super light today to make room for all the food at the party tonight. New Way of Thinking: I deserve to
feel satisfied and not deprived. I will eat when I am hungry. Since I am not restricted, I can also stop when I’m satisfied because I know I can always eat it later.
When you have the right mindset
toward food and body image, then you don’t have to do anything different during the holidays than you normally do. The reality is, there is always a holiday, event, party, etc that leads to overeating.
Old Way of Thinking: I can’t wait to eat all the good food at the party.
New Way of Thinking: I am going to try and focus on fun and friends/family.
Distillery Channel Coffee Journal
I will take my time eating and enjoy
the foods that look the most appealing to me, but I don’t have to overdo it. If there is something else, I’d like to try after I’m full, I can always wait until later to eat it or take it home with me.
Old Way of Thinking: I don’t care, I’m getting tipsy tonight
New Way of Thinking: I’m going to
choose some “lighter” drink options and drink water in between because I don’t want to pay for it tomorrow.
Old Way of Thinking: I’ll eat
whatever I want and burn it off at the gym tomorrow.
17
New Way of Thinking: Exercise isn’t a punishment or penance for what I’ve eaten. I can eat whatever I want but try to stop eating before I am uncomfortably full. Tomorrow I can move my body for enjoyment.
Old Way of Thinking: I’ve already
messed up so I may as well keep going and start over tomorrow.
New Way of Thinking: One day or one meal of over eating doesn’t lead to significant weight gain… water weight gain at best.
I recognize that I’ve had enough
(or too much) to eat. Let me try to distance myself from the food so I’ll be less likely to pick at it.

Vcaddy Launches in 2020 Vcaddy to attend PGA 2020 Merchandise Show ORLANDO, FL 21st - 24th JANUARY 2020 – When Jeff Kuper first approached his brother Greg with the idea of making videos for golf courses, they had no idea the journey they were about to take together. Vcaddy is scheduled to make it's debut at the 2020 PGA Merchandise Show in Orlando, FL (Booth 4208). Greg Kuper is the owner of a Madison, WI video production company, Public Image Media. His brother, Jeff Kuper, had recently sold his Chicago area medical business of 20 years, Kuper Orthodontic laboratory. Together, they created the original concept of Vcaddy, a system that allows golfers to scan a QR code at each hole of a golf course with their mobile device and instantly gain access to an instructional video of how to best play the hole. The videos show aerial footage of the hole, and also features the course’s very own golf professional(s), who give tips on hazards to avoid, what club to use, and how to play the green; any information the course could offer a golfer to take strokes off and improve their overall game. “Great customer service is an expectation golfers have of the courses they play. Our Vcaddy system is a great way for a course to provide better customer service by helping make a player’s game better,” said Kuper (Jeff). Later, sensing something bigger, the brothers partnered with Ryan Jagdfeld, owner of a website development company in Madison, WI. The three expanded the original idea to create a Vcaddy system that not only includes video and QR codes located at each hole, but an informational website (vcaddy.com) and an innovative mobile app. “This is just the beginning,” said Jagdfeld, “we will continually make adjustments and improvements to the app and website as we grow. Our goal is to be the best golf app available. A site and app that no golfer or course will be able to do without.”

LORETO, Mexico – Former New
York Yankees great player and manager Yogi Berra, who may or may not have been a golfer, once described a famous local restaurant in his area in his own unique way. “Nobody goes there any longer, it’s too crowded,” Berra said in his trademark jumble of sayings.
At the spectacular new
TPC-Danzante Bay near the tiny town of Loreto, Mexico, just the opposite is true. It’s not nearly crowded enough for the outstanding architect Rees Jones 18-hole championship course, which weaves in between local valleys, arroyos, dunes and foothills with a crescendo on the par 3 17th hole overlooking the Sea of Cortez.
The first TPC (Tournament
Players Course) licensed by the PGA Tour in Mexico is so good, and so far, not visited nearly enough because it’s not exactly the easiest place to get to. The tiny Mexican culture town of Loreto is the closet village and the namesake of the only commercial airport in the region, with limited flights, located on the east coast of Baja, Mexico. But even that is a 45 minute car or van ride away. But once you arrive on a stunning, world-class site along the east coast of Mexico’s Baja Peninsula near the historic town of Loreto, where Jones has crafted TPC Danzante Bay-a brilliant, multi-themed 18-hole golf course that runs over and through valleys, arroyos, dunes, and foothills.

WOW! The par 72 layout is testament when a talented golf architect, Jones, part of a hugely talented golf architect family, meets a great natural site. The result is golf resort magic, even if it’s not the easily place to get to. The often repeated saying about
the only difference between American golf resort Bandon Dunes, Oregon and world links Headquarters Ballyibunion, Ireland is that Ballyibunion is actually easiest to get to.
“The PGA Tour approached us about having the irst TPC in Mexico,” Perry said. “They thought it had a chance to be something special and we certainly agree. It will continue to grow and get better, and with the course and hotel to start with, will continue to attract people.”
The remarkable golf course is
But both have succeeded mightily
in their time as must-play golf destinations.
That’s what San Diego
Businessman Owen Perry, the co-owner of TPC-Danzante Bay, was planning when he opened the course and the resort a year ago with plans for what he feels will be the next great Mexican golf destination in a country that has many.
enveloped in panoramic vistas that show off the natural beauty of the region. From every angle enjoy, striking images of the Islands of Loreto and the surrounding Sierra de la Giganta mountain range. Each hole is an experience as the front nine leaves you entranced with exquisite views and the back nine increase the drama with cliff holes that hang over the Sea of Cortez and Danzante Bay.

The first tip off for a great round to
come is the large driving range set facing a huge Mountain Canyon. While most places offer a range solely for warm-up purposes or to mindlessly beat balls to kill sometimes in your schedule, it’s easy to be distracted here with the surroundings and beauty to come.
The course starts out plainly
enough with a par 4 over sand and water, but it gets very interesting an a hurry. The green of the par 5 second hole sits at the bottom of a 200-foot arroyo.
TPC Danzante Bay is a prime amenity for guests and homeowners at Villa del Palmar Beach Resort & Spa, a full-service destination resort community that shares its property with the Loreto golf course. While the hotel has all amenities
you would expect, a huge resort pool, nice-size Sabila Spa and store for all your trip necessities and beach items, the real amenity and draw is right next door with the golf course and green grass putting course Jones designed to sharpen your game.
The third hole, a par 3 sits with
huge mountains on the right and a dramatic bluff on the left. But by the time you reach the par 4 fourth hole, you’re in the middle of the surrounding Sierra de la Giganta Mountains which can take your breath away,
From then, it’s just great hole after
great hole, spectacular setting after spectacular setting.
Water is a predominate theme at
the beginning of the back nine which begins near the clubhouse and offers a brief repast from all the golfing eye candy.
56 Distillery Channel Coffee Journal
Distillery Channel Coffee Journal
57
58 Distillery Channel Coffee Journal
You can see the first three or four
holes from the clubhouse with water, sand and mountain in the backdrop.
The 14th hole begins a steady uphill
climb to the spectacular course finish. The next three holes, including the short and strategic are 4 16th hole plays uphill. But the ultimate payoff comes when you drive your cart up the steep path to find the tee box for the par 3 17th.
In short, the perfect short hole
layout for ultimate success or failure is the 18th a long par 5 which tumbles all the way back to the clubhouse, where you’re likely to rush to check the photos on your camera or to see when the next tee time is.
While the saying, you can’t get there
from here might have some truth to it, the effort to try and succeed will be greatly rewarded.
The future will bring more flights,
more houses and more people. Yet to see TPC-Danzante Bay in its most natural state is certainly a journey worth taking.
Jones designed the hole, which
plays 165 yards from the back tees, with the green shifted to the left, literally hugging the rocks with the Danzante Bay and the Sea of Cortez hundreds of feet below. Anything left of green is gone to a watery grave. Anything right of green is lost in the huge rock formations. Anything short can be snared by the bunker which rings the putting surface and is long gone as well.

Cabo Golf 2019 Written By Art Stricklin

Distillery Channel Coffee Journal

While there can be endless
debates on which of the Nicklaus courses here and elsewhere are the best, much along the no-good-answer line of favorite Disney characters, etc., there should be little debate that his newest Cabo property, Quivira Golf Club is his most scenic.
If you’re looking for a
CABO SAN LUCAS, Mexico –
Golf’s greatest champion Jack Nicklaus has always been known as one of the founding fathers of Cabo San Lucas golf. Since he arrived in the early 1990s, he helped usher in the ongoing golf boom here which has led to the greatest links concentration In Latin American, a designation which is not even close to anywhere else.
mind-blowing, eye-pleasing, cliff-hugging, 18-hole thrill ride, than get to Quivira, nestled in Pueblo Bonito resort communities, about 45 minutes northwest of the Cabo airport.
Now, if not sooner!
In 2018, four Nicklaus courses in
Cabo were ranked among the World Top 100 (US excluded) a staggering percentage for a small area on the bottom tip of the sunny and scenic Baja California Peninsula.
When opened by Nicklaus and his
team in December 2014, he won instant praise for his spectacular views, especially on holes 5-6-7 and 13. But in the ensuring years, it has matured into a total resort with several luxury hotels, a booming public food market, sports bar, tennis, water sports, plus the ocean, waves, beach and killer sunrise/sunsets which show up every day at no extra charge.
Distillery Channel Coffee Journal
89
90 Distillery Channel Coffee Journal
But what makes the par 72 Nicklaus Signature Design so successful is that those who manage it know exactly what it is and what it is not. “We consider this a
once-in-a lifetime experience for many people who come here,” said innovative General Manager Antonio Reynante, who has been here almost the entire five years the course has been open.
“We want it to be a happy time. A fun time with family and friends, where you don’t have to rush, but can relax and enjoy the experience.” Indeed, if you’re looking for a speed round of classic golf with premium shots values and little fluff or frills, than this is very likely not your place. But if maximum fun, maximum
view and yes, maximum food, is your favorite type of golf, than Quivira most certainly needs to be on your Cabo golf list.
The Nicklaus layout features a
mile-plus cart journey from holes 4-5 and ½ mile from 13 to 14. There is no chance to ever walk the steep course and a zero chance that the course will ever host a professional golf event, as half the spectators would be lost over the cliffs and the other half would never make it up some fairways.
But as Reynante likes to say, that’s
not the point or purpose of this Cabo golfing gem.
Distillery Channel Coffee Journal
91
92 Distillery Channel Coffee Journal
Distillery Channel Coffee Journal
93
94 Distillery Channel Coffee Journal
“We could set the pace of play at
4:20 or 4:30 a round, but number one that would not be realistic and number two that would not be pleasing to many of the golfers who want to experience this course and scenery. We are not rushing people here, we are embracing people and making sure they enjoy this great place.”
That’s probably why the course
does 22,000 rounds a year, at usually a 5-hour pace, and its almost always packed full in the prime winter and spring months, with golfers, who stay on one of the four nearby or downtown Bonita hotels or own/rent property an house in the expansive facility, paying approximately $300 to play.
When you finally reach the top
there is an elevated comfort station with fresh chicken burritos and ceviche, plus plenty of Mexican firewater and other spirits to alter your swing dynamic. There is a small patio to overlook the Pacific Ocean hundreds of feet below, with the large clubhouse and hotel to your left.
The par 4 fifth with the ocean pounding along the left side offers a back tee which requires a 290-yard carry straight down with forward tees offering a little safer path to a very narrow fairway. The green is perched on a cliff just above the waters, making your approach shot fraught with danger. Construction is a near constant
theme here as visitors from the U.S. and elsewhere hurry to get in on the action and there is talk about a new 18-hole course in the not so distant future.
But for now, golfers can set and
soak up the view, food, golf and fun which really starts when you finish the par 5 fourth hole to the fifth tee which is nearly and virtually straight uphill, winding up the side of a large mountain.
Distillery Channel Coffee Journal
With five tees available, you’re
picking your proper descent, but aiming to the right is the constant theme. There is a steep downward pitch allowing a well struck drive to tumble all the way to the green hard against the ocean cliffs.
The par 3 sixth is equally scenic
and dangerous with the mountain all along the right, the water left and a small green to hit for success or failure.
95
Of course, you can skip the food
stations, included into the cost of your round, or sit with arms folded while your partners enjoy the food and views but at Quivira, but why would you?
While front nine is par 34 with two
food stations, the back nine is par 38 with one very limited one, but possibly has the best and one of the most scenic Par 3s on the course or in the region.
The 13th hole plays just 148 yards
from the very back tees and is considerably shorter from the up markers, but regardless of where you tee it from, golfers are faced with the same set of challenges. A huge collection of rocks to the right of the green which have been around for 10,000 or so years, a tiny green and more rocks in front and behind the putting surface.
The Quivira thrill ride continues
past an old fort with a huge Mexican Flag flying over a massive metal pole until you reach the ninth tee box where there is another comfort station, with good enough steak and cheese tostados and beef sliders to melt your desire to continue on.
It’s a single shot offering triumph
or tragedy, but it sums up the fulfilling Quivira experience. All is for fun and memories, camera shots and an occasionally good golf one.
96 Distillery Channel Coffee Journal
Named for one of the famed seven lost cites of gold, Quivira is thankfully being found by more and more Mexican vacationing golfers every year.

Rovos Rail Celebrates 30 Years ON THE 29th OF APRIL 2019, PRIVATELY OWNED ROVOS RAIL CELEBRATES THREE DECADES IN SOUTH AFRICA Since its first overnight journey with a seven-coach train to what was then the Eastern Transvaal, Rovos Rail has expanded exponentially and now offers eight trips around Southern Africa with more trains that can accommodate 72 passengers. Journeys range from 48 hours to 15 days with the newest route, Trail of Two Oceans, departing for its maiden voyage in July this year from Dar es Salaam to Lobito in Angola. It will be the first time in history that a passenger train will travel the east-to-west copper trail. “Our new route coincides nicely with our 30th birthday. I’d like to say it was planned but I can’t take credit for the serendipitous timing,” says Rohan Vos, owner and CEO of Rovos Rail Tours. Also in the Rovos fleet is the Shongololo Express that was purchased and renovated in 2016. Three journeys are on offer ranging from 12 to 15 days with the train travelling for over 300 days of the year. “That train just goes and goes with very few issues – mostly I think due to the relaxed itineraries. It’s quite amazing,” comments Vos. Asked if he ever thought Rovos Rail would progress this far, Vos responds: “Not at all. We lost so much money in the early days and we knew nothing about hospitality. In my naivety I believed what we were offering was so unique that tickets would sell easily. Boy, was I mistaken.” With his wife Anthea at his side, Vos travelled the world attending travel shows and calling on leading travel agents and tour operators. “It was both invigorating and exhausting,” says Anthea. “We were starting out at the same time as the Vartys from Londolozi and the late Liz McGrath as well as a few others. We all used to lose our voices from punting our offerings so vigorously!” It took a decade for the company to break-even. “We managed to side-step bankruptcy more than once,” says Vos. “I was inexperienced and had no idea just how expensive trains would be to operate.” An auspicious moment arrived in 1993 when Vos formed a relationship with Phillip Morrell from Jules Verne in the United Kingdom. Together they plotted a route from Cape Town to Victoria Falls. “We had no money at the time for any advertising but we placed an ad in the Sunday Telegraph nonetheless. It was December and I didn’t hold much hope.” However, much to his surprise, the advertisement worked and the maiden voyage sold out. When Phillip called to share the good news, Vos’s words to him were: “Send cash!” The new Victoria Falls journey proved successful.

“The Charitable Mr. and Mrs. Nicklaus” PGA Event & His Rolex - $4 Million for Charity 2019
I have always wanted to see “Jack’s
Place” in person, since watching his career from his first professional golf check of $33.33 back in the early 1960’s. I was not disappointed and left in awe.
Miss Kira and I enjoyed the drive
from Southern Wisconsin across Indiana’s flatlands of corn fields and windmills. The Indianapolis 500 was going on as we crossed the city of Indianapolis. We anticipated great days ahead at The Memorial Tournament in Dublin, Ohio.
Majestic and inviting in a strange
way, the downtown and campus gives one a sense of the energy coming through the TV while watching Ohio State. “Traditions”. There is a rich and diverse tradition feel on campus and you can tell the joggers, students and surroundings on campus strike the fine balance of pride and loyalty.
It was a brief visit as we were here to attend The Memorial Tournament that is Jack and Barbara’s Tournament. I have to admit it is hard to call a fellow golfer Mister, but Jack, Arnie and Gary have earned that level of admiration and respect.
We arrived a little early for
checking in to get our media credentials. We took a slight detour to the Ohio State Campus…or should we say, “THE OHIO STATE” Campus. We enjoyed every minute of the experience.

My first thought upon entering
the grounds, is the amount of money it took to build this golf course. It is hard to imagine the money Mr. Nicklaus has made through the years in his corporate businesses and his on the course winnings. I can remember his first major, as the world was not sure having someone challenge the “King”, Mr. Arnold Palmer, was what we needed to have happen in the early 1960s. Today, Mr. Nicklaus and Barbara are majestic in their own way.

center, and meeting the great staff, Miss Kira and I felt right at home. We were assigned our own desk, but who wants to be inside writing, when it was time to go and see the course.
This was Miss Kira’s first time at
Jack’s house, I had her step on the grass near the putting green. The point was, the grass was so rich, soft and full, she left a footprint. We walked to the practice range, one of the best in the world.

Mister Nicklaus prides himself on
the design of the course, for the experience of the players their families, and patrons. While we all know Jack’s six “Green Jackets” won at the Masters Tournament are his personal highlight. One can see the impact Augusta had on his design at this venue. As it is told, Jack found this piece of land while hunting in his youth. He felt it was a perfect place to build his golf course. My point is from a $33.33 first check as a professional in the 1960’s and developed into this home of golf perfection in Dublin, Ohio. Congratulations to Barbara and Jack for all of their years of making this happen.
Charity is the number one winner
on the PGA Tour. It was just announced that The Memorial raised over $2,000,000 for local charities once again.
“Official Press Release: Officials of the Memorial Tournament presented by Nationwide announced today that the 44th playing of the prestigious invitational, concluded June 2, 2019, raised a total of $2.65 million for charitable organizations in central Ohio, including a record-setting $2,200,000 for Nationwide Children’s Hospital through an alliance with the Nicklaus Children’s Health Care Foundation. It is the second consecutive year the Tournament’s charitable giving total topped $2 million. Since its inception in 1976, the Memorial has eclipsed $35 million in donations to central Ohio charities, with more than $22.7 million going to Nationwide Children’s.”

It is incredible how Mr. Nicklaus
and Mrs. Nicklaus have impacted the world of charity on a local and global scale. A couple of months ago, Mr. Nicklaus announced that his Rolex Watch should be put up for auction. He had read an article about Paul Newman’s Rolex being auctioned for over $17,000,000 in years past, why not his Rolex which he has worn during his trophy celebrations throughout his career.
On December 10, 2019, Mr.
Nicklaus gave up his Rolex to be auctioned off. This is an 18-karat gold Rolex Day-Date watch that was worn by Mr. Nicklaus over his career of 50 years, and most times as he hoisted 12 of his 18 major trophies.
Mr. Nicklaus watch sold at auction for $1.22 million. Mr. Nicklaus never wore his watch while playing, but immediately after having the last shot was struck, it was on his wrist.
Here is a link to Mr. Nicklaus and
a report of that event.
https://t.co/PDvvYZQKzU
What did Miss Kira and I learn
visiting “The Memorial Tournament”? Mr. Jack Nicklaus and Mrs. Barbara Nicklaus make quite a duo. We stayed at the hotel where PGA Tournament players were staying at during this tournament.
Distillery Channel Coffee Journal
We met Rory McLlroy and his wife on the elevator, and he couldn’t be a finer chap. We sat near a couple of other players having dinner and drinks throughout the week around the hotel. At this point, most are already millionaires. But there is one driving reason they play at this invitational; it is “Jack’s Place”. A place where Jack hunted as a kid and now raises millions for those worldwide.
It is truly amazing to me after
following and playing golf for over 50 years. The impact the winners have on society is truly a miracle and the golf industry and world in general is blessed to have this sport thriving.

Chef Dave Trevelino of The TPC
Potomac at Avenel Farm once again hosted his “Butcher Block Holiday Party” on November 11, 2019. This marked Chef Dave’s sixth year of delivering his culinary talents to one of our country’s nuclear submarines is his family’s and his club members evening of fund-raising to kick off the holiday season.
Christmas 2019 will find Chef Dave
and his wife Linda traveling to Guam to cook Christmas dinner in the galley of one of our nuclear subs in dock. Chef Dave raises all of the money needed through this Annual Butcher Block Holiday party. This year between $75,000 to $100,000 was raised. Miss Kira, Editor of this Magazine and myself, once again drove from Wisconsin to Potomac with a carload of our contributions for the auction.
Chef Dave’s assistant, Kassie,
effortlessly checked in each attendee, including an extra 75 attendees that were a surprise on the evening of the event. Banners from the USS Chicago signed by the Navy sailors from past events, highlighted the red, white and blue décor for the evening.
Distillery Channel Coffee Journal
The first auction item was a
Kendall Jackson Winery Trip in Napa, California and several visits personally escorted and contributed by Jackson Family Wines. What better way to start the evening than have a group of 4 couples plan their California vineyard and dining trip.
An endless ring of silent auction items bordered the corridor leading to the dining room as members entered the Club. By nights’ end, all items were sold, and Chef Dave could now rest easy knowing once again he will be flying to Guam on December 17th to feed the sailors who remain on watch for our country and can’t go home for the holidays.
125
It was stated by all in attendance,
that this event is the highlight of the TPC Potomac at Avenel Farms yearly events. Congrats to Chef Dave and God Bless our sailors during this holiday season.

Hold on tight because it’s going to
To stay motivated to reach your
get FUN! This is personally, one of my favorite activities, that has to do with goal setting and motivation. A vision board is not only fun to make, it’s also fun to keep looking at day after day. But the best part, is beginning to see those visions become reality, in ways you never imagined. I have had some crazy things happen—literally as if they just fell off my vision board and into my lap.
health goals, or any goals for that matter, you have to have some essentials: fun and purpose in your life, a job that doesn’t drain you, relationships that nurture you and a strong sense of self. That is why I recommend creating a well-rounded vision board—so you can achieve your health and wellness goals without feeling like it’s zapping all your energy to achieve them.
Most important concept when creating a health and wellness vision board It’s NOT all about diet and exercise. In fact, diet and exercise are only small pieces of the puzzle. Even though I am a dietitian and fitness enthusiast, when I work with clients on achieving greater health and wellness, I look far beyond diet and exercise.
Steps to creating a vision board STEP 1: Set the mood Create a relaxing atmosphere. Start in a clean, quiet, uncluttered room. Play an upbeat or inspiring playlist and bring in some aromatherapy with candles or an essential oil diffuser. So, you don’t feel rushed, set aside an hour or more to complete your vision board. Some people also like to set the tone by meditating to clear their minds.
Distillery Channel Coffee Journal
STEP 2: Get inspired Spend some time getting clear on exactly what you want your ideal life to look like. Consider these questions: • What do I want? • What do I need? • What do I want to accomplish? • What do I value? How do I want to feel? • • What can I remove from my list of priorities? If you have too much to focus on, you may feel overwhelmed. What you want is to be able to devote adequate attention to the things most important to you.
For life balance, consider various
areas of your life, such as family, work, health, personal growth, spirituality, etc. Journal out some of the answers if you find it helpful.
155
STEP 3: Gather images Cut out images from magazines that represent the life you want to live. For example, if you want to start exercising, you might clip photos of yourself or others enjoying exercise. If you want to find a great romantic partner or spruce up your existing relationship, you might snip pictures of happy couples smiling at each other or happy pics of you and your significant other. TIP: If magazines don’t get the job done, check out Google images and search for things you’d like to post on your board or even use pictures you already have of yourself.
156 Distillery Channel Coffee Journal
STEP 4: Create message Use markers, paint or your computer printer to create personal mantras and/or favorite quotes that inspire you. You also just can cut out words or phrases from the magazines to paste on your board that remind you of the life you want to live.
Make sure to reflect on your vision board and how your goals make you feel for at least five minutes every day. Follow your reflection time with making a list of things you can start doing in the next day, week and month to get you in alignment with making your vision a reality.
TIP: Google inspirational or motivational quotes if you need a spark.
Vision board wrap-up Creating a vision board is a fun, creative and inspiring way to clarify your goals and stay focused on bringing them to life. Make sure to get clear on your goals before you get started. When you’re done creating your vision board, I’d love to see how it turns out. Post a picture of your vision board on Instagram with the hashtag #VidaVisionBoard and be sure to tag @DietitianDina.
STEP 5: Put it all together Paste or pin your images and quotes onto your board. You can lay out images and words in random places or section off parts of your board for different areas of your life, such as family, work, health, etc. There is no “right way” to arrange your board. STEP 6: Make your vision a reality Display your vision board somewhere you’ll see it every day.

Two Towns Two States Two Cultures Two of the Greatest Cities in the Nation “Distillery Channel Coffee
Journal” was created to feature travel, family, dining, golf, spas and so much of how we live our lives, through the thoughtful lens of a great cup of coffee, tea or your favorite beverage.
Geneva, Illinois and Lake Geneva,
Wisconsin are 60-90 minutes West and Northwest of Chicago. They have other similarities other than having “Geneva” in their name. Full disclosure, I have just moved from Geneva, Illinois in the past two years, to Lake Geneva, Wisconsin. I have two sons living still in Geneva, I llinois.
In a few words – “Great, Diverse, Safe, Homespun, Culturally Dynamic and Welcoming”.
I should end this story with that being said. However, let me suggest, get in your car and venture to both. They are different from each other but both a destination where you can spend weekends or a lifetime. In the next few months, we will explore each community in depth. And here are the highlights: Geneva, Illinois: • Culturally diverse dining • Fox River for fishing and biking • Eclectic Shopping • Train Station from Chicago departs in the middle of the downtown • Dynamic housing market • Events for family • Plays and concerts; • High standards of education • Diverse employment opportunities
Distillery Channel Coffee Journal
Lake Geneva, Wisconsin: • Geneva Lake in the heart of the downtown and community • Multiple area lakes for fishing, boating and summer fun • Geneva Lake historical boat tours Geneva Lake Museum • • Entertainment; magic shows; Kayaking; famous cheese curds and Wisconsin Craft Beer.
We will be stopping by coffee
shops, breweries, distilleries, wineries to meet the locals.
The fun of this comparison is this: Geneva and Lake Geneva are the “Jewels of the Midwest”! We are going to unfold why in
the coming months.
There are reasons why people

choose these two communities for their own lifestyle or vacations. Join us in every issue and send us your ideas. If you have some interesting tidbit you would like to share or a unique place that we may have missed, please let us know. We can meet you over a great cup of coffee.

Meditate Your Way to a Healthy Diet Written By: Dina Garcia
Distillery Channel Coffee Journal
195
196 Distillery Channel Coffee Journal
Mindless eating is a common
issue many of my clients are trying to get rid of and for good reason. Mindless eating is often associated with eating more food but having less enjoyment of that food. To suck the joy out even more, mindless eating often leads to guilt which in turn leads to a cycle of restriction then overindulging and more guilt.
Just like with running don’t start with marathon. Work your way up to longer, deeper meditations. Before you know it, you will be more present and mindful eating will be easier.
How do we switch from mindless eating to mindful eating? Mindful eating is a lot more than just giving your undivided attention to eating process. If you need a refresher on what mindful eating is check out
What is Mindful Eating: https://www.vidanutrition.com/whatis-mindful-eating/
This first step in transitioning
from being a mindless to mindful eater is the ability to pause and be aware. Meditation is a great way to exercise these abilities. Our brain is on autopilot most of the time, which means it is going to be following the neural connections that are the strongest and thus easiest to follow. The more we meditate the better the brain gets at being aware and present. When you first meditate it may feel pointless or uncomfortable because you mind may wonder around nonstop. This is normal, you just need to keep exercising the calm and focus neural pathways through meditation.
5 Ways Meditation Can Help You Become A Mindful Eater 1. It Gives You the Ability to Press Pause As I mentioned above, this is really the first and most powerful thing to master when it comes to mindful eating. You must first know how to press pause before you can become aware, conscious, present or whatever you want to call mindful. Pressing pause also affords you the opportunity to think through your food choices and possibly make a healthier choice…but no judgement if you don’t. 2. It Teaches You to Be Mindful Do you ever feel like your mind quickly bounces around from thought to thought without much control? Once you have the ability to pause, meditation teaches you how to hold your attention on one thing or one thought for an extended period of time.

When you can do this effectively it then becomes easier to be more present before and during mealtimes. 3.
It Lowers Your Stress Levels When stress levels are high cravings and appetite can skyrocket. Even if we have the awareness to recognize we are overeating out of stress. We may not have the willpower to care if our stress is too high. It Helps You Honor Your Hunger 4. and Respect Your Fullness Meditation can help us observe and be aware of sensations in the body. When we can fully tune into our body’s physical and emotional cues. It makes it easier to give it what it needs. For example, if you pause and ask yourself “why do I want to eat this?” the answer may be for hunger, pleasure, emotions, or simply no reason at all. Other times we may be hungry but if we are not tuned into our body.

We may not notice the hunger until we are overly hungry which could then lead to poor food choices and overeating. 5. It Helps Us Ditch Our Inner Critic Meditation can help you release thoughts that don’t serve you. How many times have you eaten something but squashed the joy of eating it? Feeling guilt or fear around that food? When we operate from a place of fear and judgement around. We miss out on an opportunity to really be present during the eating experience. When we ditch guilt, it becomes easier to enjoy our food and move on verses falling into a cycle of eating, feeling guilty and restricting then repeating the cycle again. Bottom Line- Mindful eating is a great way to focus on making healthier choices while fostering a positive relationship with food. In order to be a mindful eater, you must have the ability to pause and be present in the moment. Meditation is a great way to exercise your brains ability to pause, focus and be present.

Ever wonder what those specialty
drinks at coffee shops are but have no idea what to order. You can add different flavored syrups with each drink, but it might cost extra. Here is a short explanation of ordering options: Espresso: It is the foundation for every espresso drink like a mocha, latte and macchiato. Yes, you can order a single or a doppio espresso at a coffee shop. Short Macchiato: One shot of espresso, a dollop of steamed milk and foam on top of the espresso. Americano: Fill a cup with 2/3rd full of hot water and one shot of espresso over hot water. CafĂŠ Latte: A shot of espresso, steamed milk and foam on top. Cappuccino: A shot of espresso, steamed milk and 1/3 of the cup with foam
Flat White: A shot of espresso and steamed milk with no foam Mocha: Add chocolate first, espresso, milk and usually topped with whipped cream CafĂŠ Au Lait: Regular coffee with steamed milk. Breve: 2/3 Steamed half & half with a shot of espresso. Espresso Con Panna: Coffee made with whipped cream Chai Latte: Spiced tea with steamed milk Dirty Chai Latte: Shot of espresso, spiced tea and steamed milk Black Eye: Coffee with a shot of espresso Ristretto: A shot of espresso with half the amount of water. Distillery Channel Coffee Journal
In 1954, I was 5 years old. My
folks bought a small shell of a cabin on a quiet lake in Northern Wisconsin. The “shell”, was literally, four walls, a roof, and a sub floor with grass growing through and no glass in any windows. There was no electricity, no plumbing, and no heat. The cabin was resting on four cedar posts, at the corners. Over the next ten years, electrical supply, and a kerosene stove made it habitable, but not in winter. Over twenty years, a proper foundation was placed under the cabin, and a well, indoor plumbing, a garage, furnace, three bedrooms, and a fireplace were added. The lake remained secluded, and still, if three fishing boats are out, it is a busy day on the lake. When we as kids became teenagers, we tore it up water skiing. But those days are long gone now.
Reel forward another forty-five
years, and I was thinking about retirement. The old cabin was also aging, faster it seemed, than I. After my Dad’s passing, the place was put in my name. My daughters had grown up with the same summer love of the lake, the woods, and the cabin, as I had. I wanted to be able to be there in winter, as I am involved with U.S. Cross Country Skiing, and I wanted to be able to leave my children a reliable place of refuge, as my Dad had left me. My Mom, in her 90s, knew I wanted to replace the old cabin, but wished to have me wait until she was gone. I understood, and respected her wish to not see the home of so many years of memories destroyed. However, a year or so later, she said...”you know, I’ve been thinking.... I know you want to take the cabin down, and build something year-around, and I’ve decided I’d like to see what you will do, so go ahead.” At that time, I was living in Florida, and could only make infrequent trips back to the Northwoods.

I found a very talented local architect/ designer, and a great young construction company, Lake Effect Builders, Leo, and Dana were very interested in a project that I wanted to be energy efficient, locally sourced, and “green-built” as possible. Another local man had made two trailers from freight shipping containers, and had adapted a logging claw on a boom truck. He had taken these down to New Orleans after hurricane Katrina to help with debris removal and demolition. We assembled a small family gathering to watch the old cabin be removed in bites, chunks, and hunks. There were tears, memories, and a very bare odd space when Tommy was done.
I was soon relieved of any anxiety. We were on the phone nearly daily with decisions, choices, and cooperative discussions about materials. One of his crew sent me weekly digital photos of the progress, and I was able to make one late fall trip up to have a look. The quality of the workmanship was top notch, and I began to be less anxious, and more excited.
An example of the kinds of
I included my Mom in the planning
stages, and she was lovingly attended to by Jill, our architect, to make sure she felt a part of the new structure. Leo, and Dana, our construction contractors got right to work that fall. I had a very demanding career in Florida, and was somewhat apprehensive about having contractors working on my project without my being around. I had heard the usual litany of horror stories people told me of their contractors.

discussions we had, was about counter top materials. I had liked the style of some of the modern synthetic materials, but as we looked at the toxic waste produced, and involved in manufacture, that did not fit with our desire to be “green built” and sustainable. Granite has the specter of coming from countries where environmental rules are deplorable, and mountains are blasted to extract the stone, then transported trans-oceanic, sold and milled here. That seemed less than our ideal as well. What emerged as a new option was Shetka Stone.
216 Distillery Channel Coffee Journal
Stan Shetka was an art student at
Gustavus Adolphus University, in Minnesota. In the story I was given, the assignment was “make something out of paper”. He shredded his art history book, pressed it with steam and epoxy, and created a very durable material suitable for countertops. He then created Shetka Stone, as a company to produce the material from a range of paper materials. There are three types in my house. Of two bathrooms, one is recycled newsprint....the other is general paper
Species include, ash (floors), walnut (accents), and basswood (ceiling). When the old cabin was taken down, there were massive cedar beams that the cabin rested on, and these were rescued, planed, finished and added as timber frame accents around the door to the deck, and the fireplace.
colored light tan. But the most remarkable, is the kitchen counter. In keeping with the concept of being “green built”...the kitchen counter is made from shredded currency! It is a very pleasant light green color. All counters have been very durable, easy to clean, and smooth in appearance.
Kitchen cabinets (hickory), and
doors (hickory), are factory ordered, but all the rest of the abundant woodwork was sourced from no more than 40 miles away. Much lumber came from our local lumber mill. The fine finishing, and detail hardwood came from a Finnish family business, just into the U.P. of Michigan, not far from us.
Heat is a concern in the north.
Under the house, is a sheet of plastic, 4 inches of hard foam, 6 inches of sand, pex tubing looped across the sand, another 18 inches of sand, concrete, and tile flooring. The 8 large panels circulate a solar heated fluid through the tubing to heat 2 feet of sand under the whole house.
Distillery Channel Coffee Journal
At -32 degrees F. in winter, I have had 160 degrees F. coming off of the roof. The sand bed, through the winter is between 68-70 degrees F. There is a high efficiency gas (propane) furnace, that does not have to work very hard, keeping the house through most of winter about 70 degrees F.
Wanting to keep the memories of
the old cabin, half-log white pine was stripped from the old cabin walls, cleaned, and refinished, and adorns the living room wall. The hearth stone from the old fireplace was preserved and incorporated into the new fireplace.

So....is it a house, or a cabin? It is the refuge that has sustained my family for over 60 years....so much of the accumulated family history is centered here, and being passed on to the next generations. Our “HOUBIN”, seems to fit. My Dad and Mom were Bob and Bette....so as you enter our “heartwood”, you are greeted by a heartshaped slab of birch trunk. You are welcomed to D. O.B.A.B.A. Heartwood.....Descendants Of Bob And Bette Aldrich.
