Small town, big advantages! When one thinks of Norfolk County, for those who can point it out on a map of Ontario, the term “dynamic college campus” may not be the first to come to mind. But that is exactly what you would find if you visited the eastern edge of the town of Simcoe, where Fanshawe College’s Simcoe/ Norfolk Regional Campus can be found. While the images of farm fields, small towns, beaches, and wineries are a large part of Norfolk, the charm of small town life is reflected in the local Fanshawe College campus as well. Here you are a name, not just a student number. Here you are warmly greeted by friendly staff and faculty from day one until that victorious graduation walk that concludes your studies. And here is where you have a variety of unique program options, which is a contributing factor to an increasingly diverse student body. A quick glance at recent online reviews or a talk with a current student and you’ll find one word repeated: small. Though some college students will want the bustling citylike atmosphere of a large college campus, there are a vast number of people who would prefer to go to a school that reminds them of their hometown: small, warm, friendly, welcoming. Not only that-Fanshawe Simcoe provides a local option for a demographic that can’t easily commute to a large city. Mothers, fathers, mature students retraining for a new career, seniors, and young adults all have different reasons to stay close to home and earn their diploma or certificate right in their own backyard. Another element that makes Fanshawe stand out is the broad program offerings available. These range from part time and evening options such as Food Service Worker and Esthetics to full time diploma programs such as Early
Childhood Education (ECE) and Adventure Expeditions and Interpretive Leadership. Furthermore, ECE along with Developmental Service Worker are two-year diploma programs that are accelerated into a 12 month time-frame with new start dates every six weeks. This is very appealing to those who want to start their new career more quickly. Continuing on the unique programming theme, programs such as Adventure Expeditions & Interpretive Leadership and Agri-Business Management were designed in conjunction with local employers to meet community needs. And for those looking to enter the trades, there is even a spectacular modern weld shop to support its Welding Techniques program. Fanshawe’s Simcoe/Norfolk Regional Campus manages to offer something for everyone while maintaining its small school persona. If you love the small-town life and desire an option for post-secondary education that is affordable and close to home, check out Fanshawe’s Simcoe/Norfolk Campus. With friendly staff, small classes, yet state-of-the-art facilities and a surplus of resources to help along the way, the options are plentiful for a high-quality education right here in Norfolk County.

Within her space, Lacie teaches creativity to people of all ages and offers local artists the opportunity to show and sell their work. When she’s not teaching or writing for us, you can often find her at local cultural events, like Hamilton’s monthly Art Crawl, selling hand-made items or playing her ukulele. In addition to her artistic talent, Lacie is also a performer, as a player of Niagara Improv’s monthly Improv Fallout, and as a stand-up comedian. I’m an excursionist! Since I was young, I loved to explore all of the areas around me. My husband Jim and I go for “Drive Abouts.” That means jumping in the car, set to wander aimlessly. We find some of the most interesting places when we don’t know our destination, sometimes getting lost. Small towns, big towns, country lanes, and everything in between is where we wander. We ate what we were given or at least we were creative about how to navigate a clean plate. Food wasn’t an element of community in my younger years. In my 20’s, through falling in love, I experienced the European culture in a delicious new way which would become my new norm. The Seventh Fire Food for Thought on the road to Truth and Reconciliation The Seventh Fire is part of an old Anishinaabe prophecy that presents humanity with a choice of two paths. One path leads to a bright future, the other to our destruction. What does this have to do with food and reconciliation? Quite a lot actually. What is a culture without food? Where would Italians be without pasta; the Vietnamese without Pho; Eastern Europeans without Pierogis; the English without Fish & Chips; or the French without Julia Child introducing the world to beef bourguignon and copious amounts of butter!? What about Canadians? Are we a nation whose culinary identity is defined by poutine and Kraft dinner? Of course not. “Turtle Island is so intricate.” says, Chef Rich Francis, owner of Seventh Fire Hospitality Group and 3rd place finalist of Top Chef Canada, season 4. “There is a whole world of culinary possibilities, beyond colonization.” Chef Francis wants to redefine Indigenous cuisine, and therefore Canadian cuisine, by opening our eyes as a nation to the issues that have plagued Canada’s Indigenous people since colonization: The Residential School System, the stripping away of First Nations food sovereignty, and the onset of disease brought on by colonization, like diabetes and obesity. won’t speak about to this day. Not surprisingly, it’s had a major impact on Rich, who says that when he cooks, it’s for the scared young boy that his father once was. He cooks too for the thousands of other Indigenous children removed from their homes, families and traditional ways of life. What is true Indigenous cuisine? It’s foods native to Canada sourced through hunting, fishing and foraging, then prepared using age-old traditions – some of which Chef Francis intertwines with modern culinary practices. Unfortunately, under current Canadian guidelines, many of the meats that Chef Francis wants to serve, like Moose and Narwhal, are considered illegal. He hopes one day this will change. This brings us back to the Seventh Fire. The road to Reconciliation is forked - what path will we choose? Chef Rich Francis can currently be found operating his catering company on Six Nations in Haldimand County. He’s also working toward the opening of his restaurant, Seventh Fire, in Hamilton by Spring, 2019. Also slated for 2019, Chef Francis looks forward to the release of his first cookbook, Closing the Gap: Truth and Reconciliation Through Indigenous Foods and to the airing of his documentary (that he co-produced) titled, Red Chef Revival. Simply Delicious Dishes Eating healthy has never been so Simple. All you need is a bit of creativity! BY Nicole VanQuaethem Just because farm markets aren’t open, doesn’t mean there aren’t great local food options out there. So how do you find local in the dead of winter? First, search FoodLand Ontario’s Availability Guide to see what local food is available in Ontario this time of the year. Second, see if your county, the OntarioFresh website or other local food organizations have a list of local producers. Third, ask around! You would be surprised what you can find out when you speak to people in your community. They may have a great butcher, cheese shop, or greenhouse grower that they source from. Fourth, check labels. Luckily, we have Foodland Ontario labels to help us identify local food but unfortunately, the majority of fresh and packaged food in grocery stores is still sourced
from outside the country. If you know me, I always have a final nutrition message for you. It is easy to get back into old habits during the holiday season and in the colder months. But with a few tricks, I know you can stay happy and healthy during the winter. Now that you have all this great local food, you need to put it to good use. An easy way to do that is through crockpot meals and meal prep. Veggie filled mason jar salads, warm soups and stews in the crockpot and stir frys are always quick and easy options. If you are pressed for time, grab a friend and make a bunch of crockpot meals in freezer bags. If you know you’re going to have a long day, pull one out of the freezer the night before and throw it in the crockpot the morning of. And voila! You come home to a fully cooked dinner!
Red Lentil Soup This meal is great to do when you are batch cooking or have a busy week ahead. You can make it at dinner time, put it in the slow cooker or even prep the ingredients in a freezer bag and put in the slow cooker days or weeks later. Ingredients 1 onion, diced 2-3 celery stalked, diced 3-4 carrots, diced 1 can of crushed tomatoes 1 cup of uncooked lentils OR one can of pre-cooked lentils. See directions. 1L of vegetable stock
Spice mix of choice - I recommend basil and oregano or chili and cumin Directions • Put all the ingredients into a slow cooker on high for 4 hours or low for 8 hours. You can also cook the night of in a saucepan. If you choose option two I recommend using precooked lentils to speed up the process. • Cook until veggies and lentils are soft. • Serve with cornbread

Frosty Fest Brantford, Harmony Square Looking for a family affair full of flair? Heritage Day Workshop Brantford, February 15 They say in order to know the future you must understand the past. Hosted by the City of Brantford, the 22nd Annual Heritage Day Workshop is all about diving into history to build a better tomorrow. This year’s workshop is aptly named “Brantford: Celebrating our Past, Building our Future” and includes a full-day series of lectures covering everything from the industrial history of the area, to the Indigenous and military history of the people who call Brantford home. With lunch and coffee breaks provided, this full day of educational speaking allows you to not only better understand how Brantford became the bustling city it is today, but to also acknowledge the tougher times that have, in the end, allowed us to shape our community’s future. Barn Quilt Trails barnquilttrails.ca You’ve no doubt caught a glimpse of the quaint and colourful painted quilt squares on and around buildings during country drives, but did you know they are actually a part of the Barn Quilt Trail? A little piece of rural eye candy, these squares look like actual quilt squares, but much larger, and are a way to celebrate and draw attention to Canada’s gorgeous country landscapes. Often seen on barns and homesteads, each has their own whimsical story to tell. These pieces of folk art showcase Ontario’s unique and authentic culture. Chili Willy Cook-Off Brantford February 24 A piping hot bowl of chili is hard to pass up on a cold day. So don’t pass on Brantford’s best bowl of chili! Another fantastic winter event taking place in Harmony Square, this delectable get-together showcases local restaurants competing for the title of best bowl. Folks from near and far are encouraged to come out and have their say on what the best bowl of chili in Brantford truly is. Chili tasting is available for $5 per person and who knows? Maybe your favourite chili will win. A true test of your taste buds. The event takes place annually on the last Sunday of February, so get those stretchy pants ready for a good time! Between bowls, feel free to enjoy free public skating and dance to some tunes by a live DJ. You’re going to need to skate a few laps because this chili cook-off serves up some of the best chili around and you’re going to want seconds, maybe even thirds. We don’t blame you! Haldimand Dessert Tour Finish off that bowl of chili, because dessert is served! Take a drive through Haldimand’s Dessert Trail. Every sweet tooth’s dream is very much a reality on this scenic route: from some of the best butter tarts this side of the Grand River at Jones Bakery in Caledonia, to the creamiest, locally made ice cream from Hewitt’s Dairy Bar just outside of Hagersville. In the summer you can barely get a parking spot here and in the winter their specialty flavours like Rum Raisin and Egg Nog bring loads of people, even in minus 20-degree weather! Are you more of a donut fiend? Well DONUT worry; just a little drive down to Dunnville and you can stop at The Minga for some indul-
gent Chocolate Chickpea donuts. You would never guess these are dairy and egg free, because they taste like bits of heaven! Not all desserts are something you eat! Staying in Dunnville stop at one of our favourites – Bains Road Cider Company and pick up one of their two signature dessert wines. Sip Sip Hooray! Port Dover Polar Bear Plunge It’s not New Year’s Day until a bunch of crazy Canucks jump into Lake Erie! Port Dover’s Polar Bear Plunge is not a feat for the faint of heart. With Lake Erie often at its coldest, sometimes more ice-covered than open water, this event can cause icicles to form from your ears to your toes. Despite the frigid temperatures, this annual tradition is not to be missed - whether you’re a polar participant or the warmer, but still chilly spectator. Those participating jump in around 1pm and are normally right back out within the first few minutes! The good news is, it’s all in good fun and donations are often made to a local community group. After the icy plunge, polar bears and onlookers alike head to the Port Dover Harbour Museum for the Captain’s New Year’s Day Levee and Old-Time Fiddle Party. By the end of your first jig, you’ve already forgotten about your frozen frolick! It’s a true Norfolk tradition, and whether you jump in or not, it’s a great way to start off the year nice and chill.
World Nutella Day This smooth and scrumptious event just begs to be eaten up with a spoon! There’s no better place to celebrate World Nutella Day than in the city it’s made in – Brantford! Yes, Nutella is traditionally an Italian staple, but a little known fact is that this chocolate hazelnut spread is manufactured at the Ferrero plant right here in Brantford. Started in 2007 by an American blogger, February 5th was named World Nutella Day and fans from around the world came together to recognize their favourite spread. As the event took off, Ferrero took over to allow the delicious day to grow globally. Now, Brantford is considered the best place in the world to rejoice over the love of Nutella. Gathering in Harmony Square, you can make ooey, gooey Nutella s’mores, sip on the creamiest Nutella hot chocolate and share your fondest Nutella memory with friends and family. Whether you enjoy it on toast or right out of the jar, Nutella is truly a treat worthy of celebration!

2019 Rec Expo A perfect showcase of all things active, every February Brantford hosts the Rec Expo, highlighting the sports groups, organizations and clubs that Brant County offers to local children and youth. Everything from your go-to sports like ringette and softball, to important community organizations like 4-H Clubs. Want to get your little tykes into something more adventurous? Why not try geocaching! Geocaching Unlimited offers a great outdoor treasure hunt that anyone young and old, friends, and entire families can take part in while also discovering their local ecosystems and parks. Alongside the many different recreational options, last year they also had a sports equipment exchange that was a wonderful way to repurpose old gear and help others trade up whatever gear they might need in order to continue playing. Wanting to be a place of inclusivity and equality, the Rec Expo also provides information on financial assistance, helping make sport and recreation activities available to everyone!
The River Rotary Trail Haldimand County This 5.7 kilometre trail is the perfect place to bust out the cross country skis and take in some breathtaking countryside. The Rotary Riverside Trail runs just downstream from Caledonia and once the snow lays a perfect layer of fresh powder, this trail offers views like no other. The trail is open all year round with a parking lot located at Seneca Park. You can then ski your merry way to the cute little town of York where the trail ends and take in some unparalleled views of the river. With the picturesque Grand River on one side of you and the beautiful farmland on the other, keep your eye out for wildlife in action. Deer are often spotted along the trail as well as bald eagles and various waterfowl. Large black walnut trees frame either side of the trail and create the perfect vignette of a true country winter. Not a skier? Snowshoeing the trail is equally as enjoyable! You’ll be the envy of all of your friends once they see the stunning photos on your Instagram!

These aren’t your ordinary bikes, by far. These are fat bikes. Named as such thanks to their huge tires, these bikes are made for rough terrain and yes, snow! Fat bikes are becoming more and more popular and with many winter biking trails opening up across rural counties like Oxford and Norfolk, fat biking is no longer an unusual thing to see. If you’ve got a mountain biker or even a moto-cross fan in your family, get them to try fat biking, they are sure to love it! Just make sure you stay on the designated winter-bike trails as coming across a snowmobile unprepared would be incredibly unsafe. Our family line, via my mom’s side, is from Sydney Mines, Cape Breton Island, Nova Scotia. So, naturally I grew up surrounded by the music of Stompin’ Tom Connors, who was a favourite of my grandmother’s. Because of this, the only thing I really knew about the town of Tillsonburg was that your back would ache every time you hear that word! A line I’m sure most Tillsonburgians (Is that correct or did I just make that up?) have been inundated with for quite some time. It is exciting for everyone at Live Small Town Magazine as we grow and continue to expand our boundaries to feature more small towns and Oxford County’s collection is thankfully where I ventured for this issue. 42 LIVE SMALL TOWN livesmalltownmag.ca
I spent 24 hours not even scratching the surface of what this county offers! My first stop was to the Annandale National Historic in the heart of Tillsonburg. It was built in 1883 by Edwin Delevan Tillson, Tillsonburg’s first mayor, and the son of the founder of the town, George Tillson. The house was beautifully decorated for the holiday season by various organizations — something they do every year. Each group gets assigned a room to display their Christmas displays and no group is allowed to decorate the same room twice, which adds to the uniqueness of the house. The museum boasts hand painted ceilings, stained glass portraits of famous authors at the top of the doors leading into the library, and fine, detailed wood work. It is an amazing reminder of how much effort and care went into the craftsmanship of days gone by. I was told to come back in
the spring because it is completely different when not decorated for the holiday season. So, who wants to come with me for another trip? Afterwards, I headed towards downtown Tillsonburg for my first food stop and I noticed one of my fave parking features that many small town cores offer, diagonal parking! I slowly pulled in and ventured over to The Copper Mug for a bite to eat. As I walked in, my first impression was a sense of community. It had a pub feel to it and I felt like it was a place where you would be welcomed no matter where you were from, a place where you and your friends could go for a couple of beers and watch the hockey game. I had a quick chat with owner, Doris Weiler, who gave me the history of the restaurant and was such a pleasure to talk to. After glancing through the menu, I quickly decided on the

chef’s special — a chicken wrap with a creamy potato soup paired with a can of Dead Elephant beer from the St. Thomas brewery, Railway City Brewing Co. Everything was delicious and I highly recommend stopping in for a meal, but if you’re just dropping in for a drink, head to the back of the restaurant and hit them up for their free, buttery popcorn. Delish! While heading to my next destination, I noticed a large building with the word Coyle’s on it. I was intrigued to see what was going on behind their doors and as I approached the entrance, I was greeted with a sign that read “Coyle’s Fresh Made Fudge *Samples*.” I could already tell I would love it there! supplies, Christmas and home decor, and then I spotted it... the fudge kiosk. Now, I’m not much of a sugar person, but I have a special place in my heart for fudge. Chocolate with M&M’s, Butter Pecan, Chocolate Cheesecake, Blueberry Cheesecake, Peanut Butter Chocolate, Maple Walnut, Cookie Dough, and the flavour that interested me the most was Vanilla with Butterfinger. I asked for a sample and a small piece was cut for me. It was the best four seconds of my day! Coyle’s was originally opened in Kinglake, Ontario in 1899 by Aubrey
James Coyle as a small store and manufacturing plant but in 1924, as his family and business grew, he decided to relocate to Tillsonburg. I highly recommend checking them out at coylescountrystore.com and then visiting them on your next tour through Oxford County. My next stop was to 3DVR Designs. I found them online when I was researching the area. 3DVR Designs is a local business that creates technology to put consumers into life-like virtual reality scenarios. Their technology has potential to transform the way we learn, communicate, work, experience the world, and interact with each other. It may also lead a new profitable industry that will benefit companies large and small. After the owner, Milton Toledo, put the VR headset on me, I was instantly transported to a room deep in the mountains. I could walk around the location, I could pick up books that were on the shelf and I could even head outdoors. I learned how to change the furniture in the room and

was absolutely blown away. Milton and his team have also developed a VR simulation where I could be in the same room as a Tesla car. I was able to open the doors, change the colour of the car, the interior, the rims and after Milton instructed me to sit on a chair, I actually felt like I was inside the car. Everything was to scale and it was mind-blowing experience. This is the future! Wouldn’t it be incredible to walk through homes before buying them and be able to change the colours of cabinets, flooring, and furniture. VR is a game changer! If you are a home builder, car dealer, or can think of a way to use 3DVR’s technology, you should get in touch with them. 3dvrdesigns.com Darkness and freezing snow began to aggressively threaten my journey, so I decided it would be best to pack it in and head to my accommodation: A quick drive down the road to Elm Hurst Inn & Spa in Ingersoll. The mansion was built in 1872 as the personal residence of cheese maker James Harris and his family. This Gothic
Revival style mansion remained a stately family home for more than a century but the last Harris heir sold the property in the mid 1970s. In 1979 the house was transformed into a popular dining establishment and in 1988 a 49-room building was added to accommodate the addition of the Elm Hurst Inn & Spa. After arriving, I made my way to the dining room and sat down for a threecourse meal. Other than being a guest at a wedding, I rarely have indulged in such an elegant experience. I started with the Roasted Sweet Red Pepper and Tomato Soup with Gunn’s Hill Five Brothers Cheese crostini. It was unbelievable. My entrée was roasted maple buttered salmon with smoked bacon, sweet corn, blueberry and Oka cheese smashed potato. In the future, I might just pour a touch of maple syrup every time I eat fish again. I pondered getting the dessert, as it was included in the meal but I just didn’t have the room for a pecan chocolate chip tart with Mapleton organic cappuccino ice cream and blood
orange caramel sauce. Later, after I watched the waitress delivered one to another table, I instantly regretted my decision. If you have tried this dessert, please never email me and tell me how amazing it was. It will only deepen my regret. I then made my way to enjoy the hospitality of their spa, that featured a jacuzzi tub, sauna, steam room, massage rooms and a salon for manicures and hair. That night, I had the best sleep followed by a complimentary and superb buffet breakfast. My visit to the Elm Hurst Inn & Spa truly left nothing to be desired. Morning came and I then ventured into downtown Ingersoll to visit Chocolatea and meet with professional chocolatier and owner, Cindy Walker, who offers high quality teas and homemade chocolate. We talked for about an hour and I really had no idea how much effort went into producing her unique products. Cindy’s knowledge on the subject was quite impressive and I was lucky to sample one of their ginger teas - exactly what I needed to start the day. Chocolatea is not a sit-down cafe, but more of a store. Cindy hopes her

products will enhance social gatherings in the comfort of your own home or be given as gifts. Again, I don’t have much of a sweet tooth, but I couldn’t pass up the opportunity to leave with three of her peanut butter cups. One for me, one for my niece and one for my nephew. Needless to say, they did not all make it to their intended destination. If you like tea, chocolate or both, this place is a must. Such a treat! My last stop on my Oxford County adventure was to a place that was somewhat the talk of the town. The largest panzerotti you will ever see, apparently resides here and I needed to experience it myself. If you are from the Ingersoll area, you know where I’m talking about, but if you’re not, I was heading over to a little Italian family restaurant called Louie’s Pizza & Pasta. bathed in Upper Thames Brewery Blonde Ale, fried and served on top of house-made marinara. I wasn’t sure what to expect but soon a bowl appeared before me and I dug right in. They were like mini mozzarella sticks but ten times more spectacular. I told myself not to eat the entire bowl and to save some room for the panzerotti... five minutes later, I was licking up the last of the marinara sauce. When I ordered the panzerotti, my friendly waitress looked at me in disbelief. I could tell she knew that I had no idea of the magnitude of what I had ordered and she was right. When she returned and lowered the plate to the table, there was a loud thud. The table even appeared to lean with the uncertain weight of the panzerotti goodness. Their Canadian Panzerotti was filled with pepperoni, Cremini mushrooms, bacon, mozzarella cheese, and house marinara sauce. It looked like the size of small boulder and I dove right in. While I was eating, the owner, Mike came over to introduce himself. He told me that a recent customer was able to finish the entire panzerotti in nineteen minutes. Insanely impressive, but I wasn’t down for the same challenge. This beast of deliciousness was so large that I had acccepted the challenge to finish half of it and twenty minutes later, I was successful.
Besides what I ordered, they also have a massive menu with something for everyone. I was very impressed with this restaurant and will visit them again one day with an army of friends to help devour a panzerotti. Although my visit to Oxford County was just a quick 24 hour vacation, I am already forecasting when my return would be. There is so much that I didn’t have time to do. While here, I learned about the Oxford County Cheese Trail and I needed more time to check that out. Everyone I met was so welcoming and supportive of what we are trying to do with Live Small Town Magazine. I would like to thank everyone I met during my stay and for those of you reading this, please take a minute to check out the places we featured online and make the time to visit and discover more. SOW SHE GROWS Winter pauses The winter is always packed full of hustle and bustle, which can be positive but it sure can be exhausting with seemingly endless errands and obligations galore. It is hard not to feel worn out during these colder months and I know the kids feel it too! With sanity in mind, I always try to break up our mounting ‘to dos’ with some selfcare activities because it is key to well-being. I love sharing quiet cozy moments with my children, Lilah and Max, throughout the brisk and dark days of winter. What better way to do that then by treating ourselves to a delicious snack and drink from a sweet little coffee shop like our favourite spot, Joy Bakery and Café in Simcoe! Often after filling our tummies, we will take in a fantastic show by Young Theatre Players. It truly is a great way to unwind. Another wonderful way we choose to slow the pace down is by shopping “small batch” and picking out locally made items to take home and share. The Shop at Sweetwater in Boston, Norfolk County, is a delightful little spot offering a wide variety of curated handmade goodies - from cozy knits to woodworking pieces and so much more. It always makes me feel so good to support the local, handmade crafters. Walking along the natural canvass of the Grand River is also good for the soul and it gives us plenty of time to enjoy conversation and the
peace of nature. Animal spotting is a game we frequently play to pass the time – counting unique birds or looking for preoccupied squirrels! Simply getting out into the fresh air and moving our bodies just seems to be the ticket to relax and invigorate. That said, just driving through the countryside and enjoying the rolling scenery is all we need to slow ourselves down. My family will simply hop into the car with our dog Wally and head out for an aimless adventure. There are many great things to notice on a country drive. We savour the experience of the farms, the small towns, and the quirky restaurants but we always allow time to make detours – because that is where we will make the most memories. It is really easy to get too caught up in the motions of day-to-day, and forget to enjoy the simple pleasures of life but it is so important to take a step back, decompress and remember that caring for yourself and your family is essential. What ever you enjoy, we hope that you find yourself a peaceful moment or two to take part in something you love to do for you!

After 15 years of working shifts in the automotive industry, the lack of creative freedom was taking its toll. She felt trapped and knew she needed to make changes. Moyaa Shea Butter Lowbanks moyaasheabutter.com Haldimand County gal, wife, and mother of five boys, Debbie VanGrieken started her business, Moyaa Shea Butter, just a few years ago after she had a scare with cancer. In combination of wanting to lead a healthier lifestyle, she also wanted to be more purposeful in her professional life. When she met a group of missionaries who were working with farmers in Uganda to produce shea butter, the pieces started to come together for her. She decided to create a social enterprise that cared about people and the planet ahead of profits, and so her Fair Trade business, Moyaa Shea Butter came to be. Uganda had suffered from civil unrest since the early 1980s; hundreds of thousands of people had been killed and an estimated 1.4 million people had been displaced. Debbie works with many former child soldiers and women, who were left to rebuild communities after horrific atrocities, to build a sustainable Fair Trade Business. She imports raw shea butter, then jars and packages it. She also uses it as a raw ingredient for her all natural shea soap line. Let us support her in doing so!

Deep Roots
Many of us know Scott Jensen as the gate keeper to three generations of delicious cheese making at Simcoe’s Jensen Cheese but Scott’s talents are not limited to crafting fermented beauties. He is an artist and, dare I say, a romantic. Scott discovered some Victorian cabinet cards at local antique and junk shops. Emotionless in their Sunday best and no longer connected to anyone, they began pulling at his heart and he decided to bring them back in a series of magic marker drawings that resembling parlor paintings. He feels that magic marker is the common man’s mark maker: a quick tool to deliver information. His goal was to transcend the “commonness” of the marker by creating elaborate portraits that would breath new life into those who had vanished in time.

Heritage Day at Selkirk Centennial Community Hall

Every year, on the third Monday in February (Family Day), the North Erie Shore Historical Society helps us remember by hosting the Heritage Day celebration: a fun-filled day of old-fashioned crafts, historic displays, demonstrations, music, 10-cent ice cream cones, and much, much more.
The Great Potato Famine (1846-1851) encouraged many Irish to immigrate and settle in Canada. Most chose Ontario. Newly married Kitty and Charles McCarthy crossed the sea and quickly began making a life and family in Haldimand County.

Helen Kinnear Cayuga 1894 – 1970 Helen was a lawyer and the first woman in the British Commonwealth to be made a King’s Counsel. She was the first female lawyer to argue before the Supreme Court of Canada, and the first woman appointed as a judge in Canada.

History is all around us, and sometimes it pops up in some of the most unlikely of places. Have you ever been in your favourite local spot, looked around at the charming atmosphere surrounding you and thought to yourself: I wonder how long they’ve been here? As a writer and history buff, stumbling across a great story can be exhilarating. But sharing that story, conveying the emotions I felt and invoking them in others, is where the real excitement and sense of satisfaction lies. The following are three of my favourite examples for the latest instalment of our Aging Gracefully series. Fisherville Hotel and Tavern
Fisherville thetav.ca The tale of the weary traveler is something we are all familiar with. Working long hours over great distances and leaving behind family and loved ones in the name of one’s livelihood, are all feelings most of us can connect with on a personal level. We all yearn for a warm bed to sleep in and a hearty and delicious meal to fill and power us through the day ahead. Finding an ideal “home away from home” is harder than it seems, and it takes a special blend of comfort and familiarity to

Paris mausparkantiques.ca Going back in time has always seemed like an unobtainable work of fiction to most of us, invoking visualizations of sci-fi scenes filled with enough moving dials, flashing lights and tempting levers to make an average house cat explode from sensory overload. And while scientists may eventually unlock the secrets behind this amazing journey in the future, at present there is very little attention or funding devoted to it. But what if we told you that you already could travel back in time, and that the best place to do so was in Paris, ON? Though it may sound unbelievable, Douglas Stocks of Maus Park Antiques, has been traveling back in time and bringing artifacts back to the present for over four decades now. The former head of the Canadian Antique Dealers Association, and star of Canadian Antiques Roadshow on the History Channel, Stocks doesn’t just restore and sell antiques‌he also quite literally lives them! His breathtaking gallery is situated right in his own personal home, an 1854 restored manor that acts as the perfect backdrop to the history it contains. Pieces from his collection have been featured on Netflix, Hulu and ABC projects, and a trip through his vast showroom is as close to time travel as modern science is ever going to get. These select few volunteer to keep the rest of us informed, to document important events and occurrences, and to preserve our history and our heritage with as much accuracy as they can. The history of these scribes and their work is deep and rich, encompassing everything from cave paintings to hieroglyphics, but really came of age with the invention of the modern printing press sometime in the 15th century. Seemingly overnight, the printed word (in the form of manuscripts, books, leaflets and the like) was popping up all over Europe, and the ability to reach the masses was cemented as a vital tool the world over. And one of the first official publications in Ontario to begin the practice, is the Ayr News, celebrating its 105th anniversary this year. Family-owned and operated by the Schmidt family since its inception, the paper prides itself on presenting local news and insight to the area with honesty and integrity, earning it several publication awards; one of their owners, Jim Schmidt, has even been inducted into the Waterloo Region Hall of Fame! A vital part of their community that continues to go strong, The Ayr News is the embodiment of everything Aging Gracefully is about: longevity, honesty hard-working people, nostalgia and a celebration of the history that makes us who we are today. From the golden age to the digital age, the satirical adult humour popularized by Warner Bros. animations revolutionized the industry through their at times bizarre and brash animations. The exhibit gives a behind-thescenes look into the creation of beloved cartoon characters like Bugs Bunny, Porky Pig, and more. Pieces document the evolution of designs from model sheets to story sketches to animation drawings. With over 165 drawings, the surreal images are nostalgic while also speaking to the current moment. At times political, comedic, low-brow, but always with the spirit of comradery, Warner Bros. animations are available for an intimate experience with childhood favourites. Besides that, there are two things that will help activate an artistic passion. First you need to dedicate thousands of hours in the studio, experimenting with new ideas, materials and technics. Second, you will need to teach, because when you teach, you learn as well. I have estimated that during my artistic career, I have over 30,000 hours of art practice, both in the studio and workshops learning. Port Rowan As time moves on, I find peace and joy in the memories of the past. Painting such memories has become for me a way of reminiscing, preserving, and honouring the stories of loved ones. I prefer using old candid photographs as references because of their imperfect and uncontrived qualities. I am a self-taught artist that has always lived near Port Rowan. My pride in our community has inspired me to also paint farming, woodland, and town scenes. I work with a variety of mediums including watercolour, acrylic, and oil paint and have had 20 years of experience in commissioned artwork. I also teach art lessons in my studio, and have taught in a public school through an OAC grant.

In our early years, we were both working our way through university, with nothing but student debt to our names. Our drives were our escape, where we shared our hopes and dreams under the starry skies of night or during the golden hour in the evenings. We began to fall in love with old Ontario farm homes and the slower pace of rural living. Then one day we stumbled upon “Wildwood� in Cayuga, an English farm-house
built in 1840. We immediately saw the potential for an art gallery and room to grow a family. Three years later, we have been blessed with the arrival of our beautiful baby girl Clementine, followed by our gallery opening
this past November. Opening an Art Gallery in our home allows me the best of all worlds; I get to practice my art, raise Clemmie at home, and enjoy our quaint village of Cayuga. My very own little slice of heaven. Live it for a day. Live it for a lifetime. WINTER 2018-2019 65

Winter is for the birds!
Birdwatching is a wonderful way to venture out with friends and family to discover the beautiful outdoors. BY Adrianna Michell As the temperatures drop, spending more times indoors becomes tempting. The winter months can bring hibernation-like sedentarism, as it is more appealing to cuddle up on the couch than brave the cold. Still, sub-zero temperatures don’t mean that there
aren’t fun outdoor activities that the whole family can enjoy. After a few extra layers and a warm drink, cold toes don’t compare to the snow-capped tress and sparkling ice of a morning snow. Both newcomers and lifelong community members have to agree that
Southern Ontario winters are nearly world wonders, with picturesque foliage, pristine snow, and many natural landscapes for you to explore. Getting outside doesn’t have to be difficult either, as there are many trails nearby perfect for a calm winter walk or a bird watching excursion. Marsh lands are abundant throughout the region, which provide the perfect ecological area for birds braving the colder climate. Whether you are a seasoned bird-watcher or just someone along for the walk, you will love to see expressive birds pop against the bare landscape
with song calls like holiday bells. Bright birds make tree tops more cheerful, while evergreens keep the forests bountiful for yearlong animal inhabitants. The winter months provide the perfect time to take up a new outdoor hobby and the regional trail systems are the place to practice. Get active with a pair of snowshoes or hiking boots, or try a leisurely family stroll with a camera for capturing memories or photos of wild fowl. Some fresh air can help keep the winter blues away, and there is no better way to do so than exploring your own backyard.

Dunnville Marsh Dunnville to Port Maitland grandriver.ca Trailing beside the Grand River, this marsh is a winter landscape that should not be missed. When accessed through the Byng Island park, the wetlands open up into a large system of wildlife trails. This time of year, birding highlights include red-winged black birds, ducks, and the occasional red-throated loon appearing along the lake.
Grand River Valley Forest Paris to Cambridge grandriver.ca Connecting to the Pinehurst Lake Park and Cambridge Rail Trail, this marsh is an interesting landscape unlike other regional marshlands. Terraces rise nearly 40 metres above the river, inhabited by orchards and fields and nearly 119 recorded bird species. Open year round, animal and bird sightings are abundant in this ecological treasure.
Long Point Birding Trail Long Point birdscanada.org Considered one of the richest birding areas in the country, Long Point Birding Trail is home to a variety of indigenous and visiting bird species. With the possibility of seeing over 400 species, the trail provides many opportunities to access this local wonder. Attend the Long Point Bird Observatory to brush up on birding or see them up close.

Connecting with nature offers a wealth of benefits, not to mention the sheer enjoyment of being surrounded by beauty. So go play outside! BY Tara Carpenter As Canadians you might think we would be used to the wild winter weather Mother Nature throws at us year after year at this time, but we always seem to hide away in our cozy caves to hibernate. This can affect our mental, emotional, and physical well-being in a very negative way. Kids intuitively know how to have fun in this not-so-desirable of seasons. My childhood winter playground was the mammoth-sized snowdrifts in the fields where I would dig for hours like a groundhog to create a den that I would imagine
was my home. I learned to skate by pushing a chair on the flooded fields and ponds on the farm until my feet were frozen. As a child we don’t feel the cold when we are mesmerized in the imaginary play of building a fortress to hide behind for a serious snowball battle with all the kids in the neighborhood. These are the memories of a real Ontario winter. My coldest winter camping experience as an adult was when I slept outside in a tent at -23C while at the Research Station in Algonquin Park. The only way I made it through the
night was because I was layered in absolutely every piece of clothing that I could fit on my body. I even slept with my mitts and toque on! The key to enjoying the coldest days of winter is dressing appropriately. What I recommend is multiple layers with a base layer of merino wool. Wool is sustainable, renewable, environmentally friendly, and is even warm when wet. An outer shell that is wind and water proof will have you covered. So get dressed up warmly, get outside, and breathe that invigorating cold Canadian fresh air. Don’t miss out on these experiences and fun winter activities that are only offered this time of year. It will make you feel like a kid again!
Tara Carpenter discovered her love for nature and the outdoors at an early age while growing up on a Norfolk farm. She has always been an avid enthusiast of nature and travel, and for 17 years she roamed all corners of the globe in search of adventure. Chaga Inonotus Obliquus This highly prized and sought after fungus is being closely studied for its anti-cancer abilities. Growing primarily on the white birch tree of the north, this medicine of the forest is now sold at health food stores to be brewed into a rich tasting coffee substitute. Sustainable harvesting and the drying of this mushroom is an important part of the processing.

It is best to brew it with cold water, then filter it, sweeten and enjoy! This tea was also used as a wash for ulcers, and skin diseases. Infuse with Basswood twigs to aid in childbirth. Avoid if hyper sensitive to poison ivy.
Basswood Tilia americana All parts of the mighty basswood are eatable and have high medicinal value. The winter inner bark, which after being cooked is quite tender, can be eaten on its own or added to stews. High in antioxidants, astringents, antispasmodic, and it reduces inflammation. In my long career, I’ve worked at a pizzeria, a drug store, a camera shop, a record store, and more. I’ve been a public servant, a graphic artist, a concert photographer, an entertainment reporter, a best-selling author, and an editor. But I have always wanted to be a florist. No matter where you are in the world, the language of flowers translates easily. Across cultures, flowers are used to mark births and birthdays, weddings and anniversaries, retirements and funerals. Whether you are eyeing florals with your upcoming nuptials in mind or you just can’t get enough of the promise of spring that flowers offer, it’s a great time to take a closer at your local flower growers. These farmers are the keepers of our local culture’s blossoms. Their floral harvest is a powerful symbol of hope, renewal, health, and possibility. I always wanted to be a florist. Each spring, when I see the hidden potential of humble seeds unfurl, I’m reminded that I might yet become one.

Well, in this case, it means there is no flower shop to visit, so there’s no chilly cooler to stand in while you repeatedly fail to create a bouquet that costs less than a car payment and looks like the work of a professional, which you are not. From mid-June until mid-October, Dirt Road Flowers will deliver seasonal, fresh-cut flowers and arrangements to you or whomever you like in the Port Rowan area, plus St. Williams, Turkey Point, Vittoria, and Simcoe. Free delivery! In the offseason, this team trades their dirt road in St. Williams for the cobblestones of Ajijicin, Mexico. But once the jacarandas bloom in April, they’ll be back to the tiny, 550-square-foot cottage they work out of for the flower season, much of which is occupied by vases. “Can one ever have too many vases?” asks Howes-Olmstead on @dirt_ road_flowers, her popular Instagram account. (My answer is, “No, one cannot.”)

Realizing Resolution
One of the toughest parts about achieving positive change is finding the courage to take that first step. BY Elizabeth Voth It is a common practice that happens each December; there is an intention to set goals and create a plan for the next 365 days. For some, it is about removing a habit; for most, it is committing to make a positive change. To me, 2018 meant an opportunity to take one step forward, fulfilling the idea of building my own business. Understanding my personal goals, a mentor had encouraged me to seek a word to describe my year ahead. A word for my personal life and for the career I was beginning to understand as my own. With some quiet thought, I realized and understood that in 2018, I would invest. Invest in my own personal development, in my future, my 82 LIVE SMALL TOWN livesmalltownmag.ca
career, and in community. It was with this word, invest, and my 2018 Dream Board where the idea for EV Coaching was born. EV Coaching came from a commitment to support a friend through a10-week goal setting and physical training plan. What I did not know was that those 10 weeks in the fall of 2017 would lay the foundation for developing a community of women who feel freedom from past fears and discomforts in exercise environments - a community of women who would come together to invest in their own health, engage in positive behaviour changes and be supported by me, their coach. For me, it took the practice of investing in my own community to realize my goals and what I was created to do. In the last year, I’ve understood the value of my communities. I have community in my friends and family. I have community in a group of fellow business owners in Warrior Coaching, and now, I have a community in EV Coaching. It is a community that is growing through partnership with local businesses here in Oxford and Norfolk counties. And it is a community that I see value in and now understand that it was always meant to be built here, in the environment that I grew up in. 365 days later, I continue to dream about what I can accomplish and how I can continue to support a community of women that I am fortunate to lead. We are told it is not good to look back, because you are not going that way. Personally, I can now say that by looking back, I am able to understand and appreciate the events of this past year and how every setback, or unexpected turn has built strength in to my business and my personal life.
