Coconut, Cranberry and Apple Granola

Served with dollops of rich and creamy yoghurt and pieces of sweet and juicy fruit, this golden roasted granola is nutritious and delicious.

Ingredients

Method

3 cups traditional rolled oats 1 cup quinoa flakes 2/3 cup seed mix 1/2 cup whole sliced almonds 1/4 cup coconut oil 1/3 cup maple syrup 2/3 cup shredded coconut 1 teaspoon ground cinnamon 1/2 cup dried cranberries 1/3 cup dried apple, chopped Yoghurt and fresh berries, to serve

Preheat oven to 180ยบC/160ยบC fan-forced. Place oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon in a large bowl. Mix well to coat. Transfer to a roasting pan.

Bake for about 45 minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries and apple then set aside to cool completely. Serve with yoghurt and your choice of fresh fruit or berries.
