Slow Cooked

Panang Chicken Curry Cooked gently to perfection this mild and creamy Malaysian-style curry is perfect for the whole family.

Ingredients

Method

1 teaspoon peanut oil 6 (600g) chicken thigh fillets 1 brown onion, cut into thin wedges 2 carrots, sliced 2 tablespoons panang curry paste 270ml can coconut milk 1 cup chicken stock 4 kaffir lime leaves, torn 1 tablespoon brown sugar 1 tablespoon fish sauce 1/4 cup roasted and roughly chopped peanuts Fresh coriander leaves, to serve Steamed rice, to serve

Heat oil in a large deep non-stick frying pan over medium-high heat. Add chicken and cook for 2 minutes each side or until browned. Transfer chicken to the bowl of a 5.5 litre slow cooker. Reduce heat to medium. Add onion and carrot. Cook, stirring often, for 5 minutes or until softened. Add curry paste. Cook, stirring constantly, for 1 minute. Add coconut milk, stock, lime leaves, brown sugar and fish sauce. Stir to combine. Pour over chicken in slow cooker. Cover with lid. Cook on low for 4 hours or until chicken is tender. Serve with steamed rice and a sprinkling of roasted peanuts and fresh coriander leaves.

Cranberry Tartlets A super-simple tart of crisp shortcrust pastry filled with tablespoons of sticky cranberry jam.

Ingredients

Method

2 cups plain flour 1/4 cup icing sugar mixture 150g chilled butter, chopped 1 egg yolk 2 tablespoons water 1 1/2 cup fresh or frozen cranberries 2 tbsp maple syrup 2 tbsp coconut sugar 1/4 cup orange juice 1/2 cup (approx) Water Zest of half an orange

Preheat oven to 180째C. Place the flour, icing sugar and butter into a food processor and process until it resembles fine breadcrumbs. Add the egg yolk and water and process until the dough just comes together. Turn dough onto a lightly floured surface and knead until smooth. For the jam, place all ingredients in a medium saucepan and bring to a simmer. Simmer gently for 10-15 minutes, stirring, until the cranberries have all popped and the jam has thickened up. Blend with a stick blender until smooth. Makes 30 (approx.)

Roll out pastry between 2 sheets of non-stick baking paper until 3mm thick. Use a 6.5cmdiameter round pastry cutter to cut discs from the pastry. Line 30ml capacity patty pans with pastry discs. Use a fork to prick the bases. Spoon jam mixture among pastry cases. Bake for 20-25 minutes or until golden. Set aside for 15 minutes to cool before serving.

· Start by decorating a wooden peg with craft decorations like goggly eyes and a fuzzy nose. · Add stripes or dots with a coloured marker. · Decorate some craft card with coloured markers and cut out two wing shapes. · Glue these to the peg with craft glue. · For the final touch, thread a coloured pipe cleaner through the peg spring and curl to make the feelers. · These pegs are great for displaying kids artwork. · Attach a small magnet to the back and stick them on the fridge!
