Raspberry Cake

The raspberry takes centre stage in this fresh twist on the old tea-cake.

Ingredients

Method

1/3 cup butter, softened 1 cup sugar 1 egg 3 teaspoons baking powder 1/2 teaspoon salt 2 cups flour, sifted 1/2 teaspoon cinnamon 1 cup milk 1 teaspoon vanilla extract 2 cups fresh raspberries

Preheat oven to 190ยบC.

Icing: 1 1/2 cups icing sugar 1 teaspoon butter, melted 6 tablespoons cream

Cream together butter and sugar then add egg and beat well. In a separate bowl mix together the baking powder, salt, flour and cinnamon. Next combine the milk and vanilla extract. Alternating with the milk and vanilla mixture add the combined dry ingredients to the creamed mixture. Mix until smooth.

Serves 10 or more

Pour batter into a greased 20 x 30 cm loaf pan. Sprinkle raspberries evenly over batter. Place in the oven and bake for about 30 minutes. Set aside on a rack to cool. For the icing, mix together icing sugar, melted butter and cream. Using a knife spread icing over the top of the cake. Garnish with additional raspberries and sprinkle with icing sugar.
