Red Wine Pears in Pastry

Deliciously sweet poached pears wrapped in golden pastry make for an impressive dessert.

Ingredients

Method

1 1/2 cups red wine 1 cup sugar 1 lemon, juiced 2 cinnamon sticks 4 firm pears, peeled 2 sheets puff pastry, thawed

Preheat oven to 200ยบC. Line a baking tray with baking paper. In a deep saucepan combine wine, sugar, lemon juice and cinnamon sticks. Bring to boil over medium heat then reduce heat to low until sugar dissolves. Place pears in liquid and turn them to coat. Poach them over a low heat for 30-45 minutes until tender, turning occasionally. Turn off heat and let pears cool in liquid before removing. Using a sharp knife, slice the puff pastry into 2cm strips. Serves 4

Wrap each pear with strips of pastry and place on prepared baking tray. Bake for approximately 20 minutes or until the pastry is golden brown. Meanwhile cook the leftover liquid, stirring occasionally, for about 15 minutes until it turns into a syrup like consistency. To serve, divide syrup into serving bowls and place pears on top, finish with a dollop of whipped cream or a scoop of ice cream!
