Spinach and Rico a Savoury Puffs

Delicious parcels of flaky pastry filled with grilled vegetables and creamy ricotta cheese.

Ingredients

Method

1 bunch English spinach, chopped 2 tablespoons olive oil 3 bacon rashers, trimmed, diced 4 shallots, trimmed, finely sliced 1 garlic clove, crushed 4 large mushrooms, quartered 2 cups reduced fat ricotta 1/2 cup shredded parmesan 1 egg, lightly beaten Salt & freshly ground pepper 2 sheets frozen ready rolled puff pastry, thawed 8 small slices chargrilled eggplant

Preheat oven to 220째C. Place the spinach and 1/4 cup water in a frying pan over a medium-high heat. Cover and cook for 3 minutes or until wilted. Drain. Squeeze the spinach to remove excess liquid. Heat the oil in the pan. Add the bacon, shallots and garlic. Reduce heat to medium-low and cook stirring often, for 5 minutes until soft and golden. Transfer to a large bowl. Add the mushrooms, ricotta, parmesan and egg. Season with salt and pepper and mix well to combined. Line a large baking tray with non-stick baking paper. Cut the pastry into quarters. Place a slice of eggplant in the centre of each square and top with the ricotta mixture, leaving a 2cm border. Fold in the edges of the pastry to make a parcel. Place on the tray. Bake for 20 minutes or until puffed and golden. Makes 8

Carrum’s local government primary school is Carrum Primary School, and secondary school, Patterson River Secondary College, which operates from Seaford on the southern boundary of Patterson Lakes. There are a variety of additional primary and secondary schools nearby in the surrounding suburbs.
