Burnt Honey Panna Cotta Ingredients

450 ml cream 110 ml milk ½ tsp vanilla paste 120g honey 6g gelatine leaves, bloomed

Method

From Pelikan Société’s Watermelon & Strawberries with Burnt Honey Panna Cotta, Pomegranate, Mint, Macadamia, Lime & Prosecco

Bring cream, milk & vanilla to a scald. Cook honey on stove until 160 degrees and resembling a dark amber colour. Whisk honey into cream mixture quickly, then add gelatine. Chill in fridge for 30 minutes, stirring every so often. Once cooled, fill into desired moulds and set overnight.
