Spiced Couscous and Chickpea Patties

A versatile vegan alternative to a traditional beef pattie, perfect for barbequing, hamburgers, wraps or salads.

Ingredients

Method

2 tablespoons currants 2 teaspoons red wine vinegar 1 tablespoon boiling water 1/2 cup couscous 1/2 cup boiling water, extra 1/2 large red onion, chopped 2 x 400g cans chickpeas, drained, rinsed 1/4 cup fresh flat-leaf parsley leaves 1 teaspoon ground cumin 2 teaspoons ground coriander 1 egg, lightly beaten Vegetable oil, for shallow-frying Mixed salad greens to serve

Place currants in a small bowl. Add vinegar and the tablespoon of boiling water. Set aside. Meanwhile, place couscous in a heat-proof bowl. Add the extra boiling water. Cover and sit until liquid is absorbed. Fluff with a fork to separate grains. Place chickpeas, onion and parsley in a food processor. Process until roughly chopped. Transfer to a bowl and add the couscous, spices and egg. Season with salt and pepper and stir to combine. Shape mixture into 8 patties. Serves 4

Add enough vegetable oil to a large frying pan to cover base. Heat over medium heat. Cook patties, in batches, for 2 to 3 minutes each side or until golden and crisp. Transfer to a plate lined with paper towel and cover to keep warm. Patties can be served with salad greens and natural yoghurt. Alternatively break apart and use in wraps or sandwiches.

Despite its small size, Elwood offers a good range of schools. At primary level there is Saint Columba’s Primary (Catholic) and Elwood Primary School (State). Elwood is also serviced by a local secondary school, Elwood College, located near the state primary school, on Glenhuntly Road.
