Chicken fajitas with Tomato Salsa

This quick and simple Mexican-inspired meal is perfect for warmer weather.

Ingredients

Method

2 teaspoons smoked paprika 1/4 cup (60ml) olive oil 1kg chicken thigh fillets, cut into 2cm-thick slices 10 soft tortillas 1/2 head of lettuce

Preheat barbecue or char-grill pan on high.

Tomato salsa 3 tomatoes, finely chopped 1 Spanish onion, finely chopped 1 teaspoon finely grated lime rind 1 tablespoon lime juice 1 avocado, peeled, chopped 1/3 cup chopped coriander 2 tablespoons olive oil

Combine tomatoes, onion, lime rind and juice, avocado, coriander and olive oil in a bowl. Season salsa mix with salt and pepper then set aside. Combine paprika and oil in a medium bowl. Add chicken and season with salt and pepper. Gently toss to combine. Cook chicken on barbecue or char-grill pan, turning Serves 4

Warm tortillas as per packet instructions and place onto serving plates. To serve add lettuce, top with chicken and spoon over salsa. Fold to enclose filling and enjoy.

Brighton Studio Now Open Open invitation for try-outs.

Following the success of our first studio in Hawthorn, our new venue in Brighton has just opened. One of the only all male dance schools in Australia, we’re extending an open invitation to try out for our new Brighton studio. An exclusively male dance school, ABDA provides a comfortable space for boys and young men to explore their dance and movement skills. Boys selected for the ABDA course are provided with professional instruction in four core styles of dance; hip-hop, classical, jazz and tap. Director of ABDA, Robert Coates explains the motivation behind the establishment of the ABDA; “boys are still underrepresented in dance classes across Australia. Some people still hold the attitude that dancing isn’t a masculine activity; we wanted to challenge that belief”. Try-outs and trial classes are now open at Brighton Secondary College, 120 Marriage Road, Brighton East.
