Mint and lemon prawn skewers

Spicy and deliciously fragrant, these grilled prawn skewers are the perfect finger food.

Ingredients

Method

2 garlic cloves, crushed 1 long fresh red chilli, seeded, finely chopped 1 tablespoon chopped fresh mint 1 tablespoon finely grated lemon rind 1 tablespoon olive oil 2 teaspoons fresh lemon juice 900g large green prawns, peeled and de-veined Olive oil spray Finely chopped fresh mint leaves, to serve Lime wedges, to serve

To make marinade combine the garlic, chilli, mint, lemon rind, oil and lemon juice in a medium bowl.

Heat a barbecue grill or chargrill on high. Spray the skewers with oil and cook for 2-3 minutes each side or until golden.

Add the prawns and stir to coat. Place them in the fridge for about 10 minutes to marinate.

Sprinkle with chopped mint and serve with or on top of warm fluffy white grain rice and lime wedges.

Thread prawns onto skewers. season with salt and pepper.
