Fig and Almond Tart
Crispy golden pastry with a smooth nutty filling made all the more delicious with a sweet fig topping.
Ingredients
Method
1 egg yolk 1/2 tbspn milk 1 good pinch salt flakes 1-2 sheets of puff pastry 240g unsalted butter 300g caster sugar 4 eggs 1/4 cup brandy 40g flour 400g almond meal 7 large black figs, ripe but firm sliced into thirds, lengthwise 50ml Fig Vino Cotto
Preheat the oven to 220째C. Using a fork beat the egg yolk, milk and salt together. Cut puff pastry into a rectangle 12cm wide x 30cm long. Place onto a baking tray and brush around sides with egg glaze. Cut 2cm wide strips of puff pastry and place around the edges of the tart base. Spike the bottom with a fork, then place into the oven for 20 minutes. Meanwhile place the butter and caster sugar in a bowl and beat with an electric mixer until light and creamy. Then add the eggs, one at a time, then the brandy. Serves 6

Mix for a 1 minute then add the flour and almond meal, mix until well combined. Next, remove pastry from oven and press the centre of the pastry using a clean tea towel, forcing all of the hot air out. Spread almond mixture evenly over the pastry base, brush the side with egg glaze and bake for a further 5 minutes. Remove tart from the oven and top with prepared fig slices then brush with Fig Vino Cotto. Place under a grill for 3 to 5 minutes until golden brown. Serve with sliced almonds.
