Spicy Pulled Pork Slow cooked to perfection, this family friendly meal is sure to be a winter favourite.
Ingredients
Method
8 garlic cloves, crushed 2 tsp smoked paprika 2 tsp dried oregano leaves 2 tsp black peppercorns, crushed 2 tsp ground cumin 1 tsp ground allspice 1 tsp ground coriander 1/2 tsp dried chilli akes (optional) 4 whole cloves 1 cinnamon stick 125ml (1/2 cup) lime juice 80ml (1/3 cup) orange juice 2kg boneless pork shoulder roast, rind removed, excess fat trimmed
Combine the garlic, paprika, oregano, pepper, cumin, allspice, coriander, chilli, cloves, cinnamon and combined juice in a large bowl. Season with a pinch of salt. Add the pork and turn to coat. Cover and place in the fridge for 3 hours or overnight to marinate. Preheat oven to 160°C. Place pork and marinade in a large casserole dish. Loosely cover surface of pork with foil and cover dish with a lid. Roast for 3 hours or until pork is tender, Serves 6

turning halfway through cooking and basting occasionally. Set aside, covered, for 30 mins to rest. Once rested transfer to a chopping board and use 2 forks to shred the meat, discarding any fat. Strain pan juices into a jug, allowing the fat to settle on top. Remove and discard fat. Transfer pork and pan juices to a large bowl and toss to combine. Serve the pork with generous amounts of crispy roasted potatoes and creamy coleslaw.

1 cup table salt 2 cups plain flour 4 teaspoons cream of tartar 2 tablespoons cooking oil 2 cups water Food colouring Saucepan
Mix the flour, water, salt and cream of tartar in a saucepan over medium heat until thick. Allow the mixture to cool and then add the oil and knead well over a floured cutting board or similar. Divide evenly into as many colours as you’d like to make. Add food colouring to each ball until it is just the colour your child is looking for. Then sit back and let their imaginations go wild. When not in use store in an airtight container in the refrigerator. Mixture will last quite some time.
