Chicken and Garlic Soup

A light and deliciously flavoured chicken soup perfect for when your feeling under the weather.

Ingredients

Method

Did you know

1 whole chicken, disjointed

Sweat garlic, onions, carrots and celery in butter for 4 minutes.

200 grams butter

Add stock, whole chicken, parsley, seasoning and bring to the boil.

When buying garlic make sure it is firm and the cloves are tightly bound. If your garlic has sprouted, it is still okay to use in a pinch, just remove the green sprout – it can make your dish taste bitter.

1 litre chicken stock 2 carrots, diced

2 stalks celery, sliced 1 large onion diced

5 cloves garlic, chopped Chopped fresh parsley

Salt and pepper to taste

Bunch spring onions chopped 1 cup cooked pasta

Reduce heat and simmer approximately one hour or until chicken falls off the bone. Remove chicken, discard bones and chop chicken to bite size pieces. Return chicken to soup mixture, season with salt and pepper to taste and finally add cooked pasta.
