Marinated Chicken

Sticky and spicy chicken pieces perfect to feed a hungry crowd.

Ingredients

Method

20 chicken wings and/or drumsticks

In a medium bowl, whisk together the marinade ingredients.

Extra-virgin olive oil

1/2 cup tomato sauce

1/4 cup balsamic vinegar 2 tbsp dark brown sugar 4 tsp granulated garlic

4 tsp Worcestershire Sauce 3 tsp Tabasco Sauce 2 tsp Dijon Mustard 2 tsp paprika

2 tsp chilli powder

Rinse the chicken pieces under cold water and pat dry with paper towel. Place in a large, resealable plastic bag and pour in the marinade. Press any air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl and refrigerate for 4 to 6 hours, turning occasionally.

Remove the chicken from the plastic bag and discard the marinade. Lightly brush or spray the pieces with olive oil. Sear over direct medium heat until well marked, for 4 to 6 minutes, turning once halfway through searing time. Continue grilling over indirect, medium heat until the meat is no longer pink at the bone, 8 to 10 minutes. Serve warm.

Smaller strips can be found at the junction of Keys Street and Beach Road, and two local shopping strips along Balcombe Road.

There are three primary schools in the area; Beaumaris Primary School, Beaumaris North Primary School and Stella Maris Primary School (Roman Catholic), plus a variety of early learning centres. Sandringham College’s Beaumaris Campus caters for years 7 to 10.
