Roast Turkey with Chestnut Stuffing With Chestnuts in season this is the perfect meal for a winter celebration.

Ingredients

Method

1 turkey with cooking indicator

Make the stuffing by lightly frying the diced onion and garlic in the butter until they are soft but not burnt.

1 diced onion

8 cloves garlic (whole) 100g butter

21/2 cups breadcrumbs

150g peeled, cooked chestnuts

50g finely sliced Italian mustard fruits 100g grated parmesan cheese 1 cup chopped parsley

1 green apple cut into quarters 1 tbsp of corn kernels Salt and pepper

Strain the butter into the breadcrumbs. Discard the onions but keep the garlic. To this, add the chestnuts, Italian mustard fruits, parmesan cheese, chopped parsley, corn, salt and pepper. Mix until combined. Make a pocket between the skin and the breast flesh of the turkey. Place stuffing into the pocket, being careful not to tear the flesh.

Cover the skin with a little olive oil, season with salt and pepper. Place in an oven bag with the quartered apple, seal the bag and roast in a pre-heated 170°C oven or hooded barbecue for 70 minutes or until golden brown, by this stage the cooking timer should have popped up. Discard the bag and apple. Serve with roasted vegetables and gravy.
