Lamingtons Impress your friends with this authentic lamington recipe.
Ingredients
Method
4 eggs
Preheat oven to 190°C. Grease and line a 20cm square cake pan. Place eggs and sugar in the bowl of an electric mixer.
125g caster sugar 125g plain flour
1 tsp vanilla essence
50g unsalted butter, melted 200g shredded coconut 25g unsalted butter 160ml milk
500g icing sugar 50g cocoa
Whisk on high until mixture is pale and triples in volume. Sift 2 tablespoons of flour over egg mixture, fold in flour. Repeat sifting and folding until combined add vanilla essence. Add a large spoonful of batter to melted butter and stir to combine. Gently fold the butter mixture into batter until just combined, pour into the prepared pan. Bake for 25 minutes or until cooked. Cool, then turn out onto a wire rack.

To make icing, stir butter and milk in a heat proof bowl over a saucepan of simmering water until butter is melted. Sift over sugar and cocoa, then stir until smooth. Using a knife, cut the sponge into 16 cubes. Insert a skewer into a piece of sponge. Holding skewer over icing, spoon icing over the sponge, coat evenly. Shake off excess, then place onto tray of coconut, coat, and transfer onto serving dish. Repeat with remaining sponge pieces.

Midway along the path, football and cricket is played on the oval backing onto Aspendale Gardens Primary School. Golf, lawn bowls, tennis, athletics and of course the beach can be enjoyed close by in the neighbouring suburbs.
Takeaway food is the main focus in Aspendale Gardens, with fish’n’chips, BBQ chicken and pizza on offer, as well as a café in the shopping centre. More substantial dining can be found on the corner of Springvale and Edithvale Roads, with Michaelangelo – a family bistro, and the Chelsea Heights Hotel.

Aspendale Gardens Primary School is the sole school in the suburb, centrally located opposite the shopping centre and community centre. Mordialloc College is close by, offering secondary schooling, while Aspendale Gardens Pre School is situated within the community centre.
