Mushroom

Soup

Experience the explosion of mushroom with every mouthful with this quick and easy winter warmer.

Ingredients

Method

Did you know

2.8 litres chicken stock

Bring stock to boil in heavy pot. Add Portobello mushrooms, Shiitake and oyster mushrooms.

To reconstitute dried mushrooms, cover with warm liquid (water, broth, wine, etc.) and let sit at least 30 minutes.

250 grams Portobello mushrooms diced 125 grams Shiitake mushrooms thinly sliced

125 grams oyster mushrooms chopped 1 tablespoon soy sauce 1/2 tsp curry powder

2 cloves crushed garlic 1/2 tsp white pepper

Add soy sauce, curry powder, garlic, white pepper, butter, basil, salt, freshly ground pepper and cayenne. Continue boiling for 10 minutes. Reduce heat and simmer for 25 minutes. Garnish with spring onions.

1/4 tsp black pepper

Drain, rinse, and blot on paper towels. The liquid can be used to flavour soups, stews, and stocks. Strain the liquid before use.
