Blueberry Compote Ingredients

500g Frozen Blueberries 200g sugar 200g water 300g Sugar 150g water 500g fresh blueberries

Method

From Pelikan Société’s Lemon & Ricotta Pancakes

For coulis, place sugar, water and blueberries in a saucepan. Bring to boil, turn down and allow to lightly cookout for 15 minutes, blitz whilst hot and pass through a fine sieve. For compote place sugar and water in a saucepan and heat to a deep caramel. Once caramel is formed whisk in blueberry coulis. Blend in food processor until completely smooth. Pass mixture through a fine sieve 3 times, then place fresh blueberries into liquid. Allow to cool.
