SPRING WANDERLUST ON THE NORTH SHORE BY ROBERT C. JOHNSTON, WRITER & RESEARCHER

With our Sydney weather so perfect there is nothing better than a walk in the great outdoors! We have so many wonderful walking trails on the North Shore and recently I enjoyed a sunny spring trail walk around Harold Reid Reserve and Middle Cove. Overlooking the glorious Middle Harbour, it is a very agreeable choice for a walk and picnic. In 1965 the Reserve was named in honour of Harold Reid (1896 – 1984), town clerk of Willoughby Council, who had given 53 years of faithful service to Council and other community organisations. The Reserve is accessible from Rembrandt Drive via a paved loop road. Parking can be found halfway around where you will come across picnic benches, a barbecue gazebo, and toilet. Once you have parked, simply follow your feet to the lookout and take in the breathtaking view of Middle Harbour stretching out below. If you’re feeling a little adventurous, there is a loop walking track (the Harold Reid Foreshore Track) that takes you all the way down to the water’s edge. It can be walked in about an hour and is a nice track to introduce kids to bush walking, but be aware there are some steep drops beside the track and some steps to navigate. It is lovely to be beside the water, amidst the breeze, the wildflowers and birdsong. And the best thing about parking in the Reserve is that after the hike it’s picnic time! 8

PARKS WITH A VIEW BY ELISSA TOMLINS, TEACHER AND MUM LET’S TALK PARKS WITH A VIEW Spring has sprung, the days are warming up, and we live less than an hour’s drive from the most beautiful harbour in the world. So, here are a few great parks with a view of the Harbour. BLUES POINT RESERVE BLUES POINT RD, MCMAHONS POINT Sitting directly below the infamous Blues Point Tower, this is a park that I had not been to before and I was pleasantly surprised by it. There is modern decent play equipment including swings and inventive water themed climbing frames. But the best aspect of this park is the most stunning view of the Harbour to enjoy while the kids play. You can’t get more Sydney than looking out at the Bridge, Luna Park, the Opera House, with ferries and yachts sailing past. After a play, take the kids for a stroll following the water line around Blues Point or towards the ferry wharf, be warned though there are no fences between you and the water. And don’t forget to pop up the stairs to find a big green space to run around in, and more of those fantastic views. There are toilets, limited parking and bubblers. It is a gem that I will definitely return to. 10

SAWMILLERS RESERVE MUNRO ST, MCMAHONS POINT Just around the corner as the crow flies from Blues Point Reserve is Sawmillers Reserve. This quiet park commemorates a former sawmill, and you can still see ruins from the old machinery today. Standing on the lookout, there is a beautiful view of the Harbour towards Barangaroo, Goat Island and Balls Head Reserve. The most interesting gem here is a great shipwreck to see. No fences, but on a lovely day this is a top place for a stroll along the waterfront and a run around the grass. Dogs are welcome. Parking is limited and that is it for facilities. Something to check out. CLIFTON GARDENS - MORELLA ROAD, MOSMAN Just a few minutes drive from Taronga Zoo, Clifton Gardens has to be one of the loveliest parks on Sydney Harbour. Looking out on the Harbour towards the Eastern Suburbs and South Head, this is a lovely spot to watch the boats sail by, have a paddle in the water, play in the fantastic playground, ride a bike around the grounds, or enjoy a BBQ or picnic with the family. The park is huge. You could have a massive birthday function here and not disturb any other patrons at all.

2. WHAT IS ALWAYS IN YOUR PANTRY/ REFRIGERATOR? My fridge and pantry are always filled with staple ingredients that I can’t do without. At the moment in my fridge I have broccoli, leeks and Tuscan kale. They are perfect for making into nourishing soups or warm salads. I often add freshly soaked and cooked mung beans for protein, and generously add extra virgin olive oil and lemon for great flavour. I also have avocados in my fridge to throw into smoothies or to enjoy with a side of ocean trout or smoked salmon. Avocados and salmon are a wonderful source of healthy mono-unsaturated fats and omega-3s that do wonders for my skin and digestive system. You’ll also find raw nuts and seeds in my fridge to transform into homemade nut and seed milks, as well as homemade sauerkraut and bone broth. I also have a good quality bottle of cold pressed extra virgin olive oil in the pantry…I use it liberally in my cooking, over salads and it’s wonderful straight in the morning with a glass of lemon water as it helps with elimination. 3. CAN YOU SHARE SOME HEALTHY RULES TO REMEMBER WHEN COOKING? People often think they need to be gourmet chefs in the kitchen, but the simplest meals, using only a few ingredients, often taste the best and can enhance your health. There is nothing better than enjoying a bowl of fresh steamed greens with a drizzle of cold pressed olive oil and a little sea salt. Breakfast is always a 3-ingredient protein rich smoothie that’s made from banana or berries, almond milk and a few scoops of my Healthy Chef Protein. It’s okay to repeat the same meal a few days in a row - I’m always making enough to last a few meals. I make a spectacular mung bean risotto that you can easily freeze or a three-ingredient carrot soup that takes only 10 minutes! I’ve spent many years as a chef working in fine dining restaurants - the process can be so time consuming. These days, my recipes are quick, achievable and simple. Consider cooking as an investment in your health and you will reap the benefits that will last a lifetime. I’m lucky my husband, Paul, loves everything I cook…We’ve been married for 28 years! Simple meals such as smoked salmon and avocado with a little lemon and sea salt is a perfect lunch. Lately, I’ve been making him his favourite strawberry smoothie or a simple mung bean risotto.

PROTEINS – nuts + seeds, tahini, hummus, organic eggs, smoked salmon, organic chicken. HEALTHY FATS – avocado, extra virgin olive oil, olives, nuts, seeds, tahini. VEGGIES – carrots, broccoli, cucumbers, zucchini, peas, cauliflower, sweet potato, roasted pumpkin or other seasonal veggies you love. BOOSTERS – fermented veggies like kimchi or sauerkraut, tahini dressing, seaweed, apple cider vinegar, lemon juice, dukkah enriched with turmeric, fresh grated ginger, raw chopped garlic. DRESSINGS – hummus, pesto, extra virgin olive oil mixed with lemon, vinaigrette made with apple cider vinegar and olive oil.

At home, we always had extra-large portions and lots of fried and take away food. I was in and out of hospital with pneumonia… my immune system suffered. I had to do something, I had to take control of my own health. My parents called it being rebellious. I would call it saving my life! I never exercised, was always the last person picked for sports at school, was clumsy and always falling over and grazing my hands and knees. In my early teenage years, I had a body image and confidence issue for a few years…and I lost a lot of weight...cycling and sports saved my life because I needed to eat properly in order to win races on the bike and become strong and fit.

INGREDIENTS (4 SERVINGS)

1. Slice the zucchini into linguini using a mandoline.

1kg zucchini 100 g baby spinach leaves 3 tablespoons basil pesto

2. Place into a large mixing bowl. 3. Add the pesto and lightly mix in making sure all the zucchini linguini is covered by the pesto. The zucchini will soften slightly & taste amazing.

According to Sport Dietitians Australia there are number of explanations. Firstly, there is evidence that exercise influences: Your body composition (especially muscle mass); Resting metabolic rate; Gastric response to ingested food; and changes in appetite hormones (such as insulin, ghrelin, cholecystokinin, glucagon-like peptide-1 and Peptide YY, leptin) As a result, during times of energy deficit (the day after training), your appetite hormones signal for you to eat more, and this may contribute to increased hunger. Secondly, on days of high training volume or effort such as an interval training session, hunger is often suppressed after exercise. In fact, a University of Western Australia study, showed men who completed 30-minutes of intense exercise intervals ate up to 170 calories less about an hour after working out compared to those who performed moderate exercises for the same amount of time. This is most likely due to redistribution of blood flow to your extremities, away from the gastrointestinal tract, reports SDA. Thirdly, there is a theory that you can have a biological drive to seek particular foods to replenish blood sugars or glycogen. This effect could also relate to preferences for particular tastes associated with certain nutrients – for example, sweetness which is often associated with carbohydrate rich foods. And finally, humans are chemically programmed to seek sweet food because sweetness comes with the calories we need to survive. So, to make sure you have the right foods at hand on rest days follow this advice about how to survive sugar cravings and ways to know if you’re getting enough protein.

It is becoming clear that oral health is intrinsically linked with our general health. A holistic approach to dental care is essential to ensure that we do not suffer any adverse effects from dental neglect. In previous articles, I have written about the links between cardiovascular disease and oral health, in which I commented specifically on the growing body of research linking inflammatory changes in the mouth and atherosclerotic plaques in blood vessels. I have also written about the links between different aspects of pregnancy and oral health as well as neurodegenerative diseases and diabetes. With this in mind, it is essential to include oral health in any modern healthcare plan. The best way to prevent these sorts of complications is with 32

PRACTICAL TIPS FOR PARENTS OF PRE-KINDERGARTEN AND KINDERGARTEN KIDS BY MRS JULIE WISEMAN, HEAD OF WAHROONGA PREPARATORY SCHOOL

. Establish an evening routine to include a bedtime story and to ensure your child has at least 8-10 hours sleep each night. Well rested children are the best learners. . Establish a well organised routine at home. Many children don’t like surprises. Tell your child in advance about events and arrangements. . Ask your child to assist with tasks at home – it helps them contribute and builds independence. A four year old can pull up a duvet cover, pick their toys up off the floor, pack away items, help set the table, help pack and unpack the dishwasher and help feed the family pets. . Know that your child won’t always eat their school lunch. Children are more interested in playing with their friends. Only pack small quantities of food. Eating small amounts regularly and drinking plenty of fresh water will sustain your child throughout the day. . Expect your child to be tired at the end of the day. Tired children can sometimes feel bombarded by lots of questions about school. Allow them some down time to relax. They will talk when they are ready. . Expect to be busy. Schools are busy places and there is

a large amount of information. Take the time to read the information and know when events are being held. . Keep a balanced perspective. Children can be very black and white in their thinking. ‘No-one played with me today’ could mean ‘the person I wanted to play with did not want to play the game I wanted to play’. ‘Everyone has a mobile phone’ could mean two children. . Be mindful of what you say in front of children. Children repeat everything to their teachers. Children don’t need to be worrying about adult issues such as money worries or other adult concerns. It only creates extra anxiety for them. . Obey road rules. If children observe parents crossing roads illegally they will take risks themselves. Children under 10 don’t have road sense and need you to teach them these skills. . Be kind and wise. Do not judge other children. You never know what lies ahead. All children make mistakes. It’s how we teach children to learn from their mistakes that is important. . Be patient. Children develop at different rates. Some children learn to read quickly, others take longer. Be positive and encouraging. Celebrate the smallest success.

. Work collaboratively with the school. There will be issues. No child is perfect. Listen, support the teachers and work together to help your child flourish. . Model good manners. Teach your child to say ‘please’ and ‘thank you’, ‘excuse me’ and ‘may I’. Expect your child to not interrupt conversations. . Respect the school rules and procedures. Support the school by expecting your child to wear full school uniform correctly and with pride. . Smile and laugh every day. ROSEVILLE COLLEGE CAPTAIN AND DUX AWARDED AUSTRALIA’S ONLY 2017 ROBERTSON SCHOLARSHIP Roseville College and was distinguished as a HSC All-Round Achiever in 2016 by the NSW Premier. All the more remarkable, while Zoe was preparing for and completing her HSC exams, she was also managing a rigorous and complicated application process, which continued for several months; simultaneously to apply for and secure a place at Duke University, and, contingent on this, for the Robertson Scholars Leadership Program.

Roseville College graduate, 2016 School Captain and College Dux, Zoe King, embarks on tertiary studies at Duke University, USA, this week after winning one of 27 elite scholarships awarded world-wide in the prestigious, highly competitive Robertson Scholars Leadership Program. Inspired by her mother’s positive experiences from studying abroad, the ambitious 19-yearold set her goal on securing a USA scholarship many years ago. Highly capable and boundless in her inquisitiveness, Zoe applied herself whole-heartedly to school life and excelled academically throughout her Senior School years. She pursued leadership opportunities and highly competitive academic pursuits within and beyond school; including the Oxford Summer School and the National Youth Science Forum (ANU). In her HSC year, Zoe was School Captain, the head girl at Roseville College. As a result of excellence in her HSC, she was named Dux at 38

“I pursued a Robertson Scholarship because it recognises the effort you’ve made so far as a student; but the greater emphasis is on your future potential. I have always loved the feeling of being outside a ‘comfort zone’ and this program is definitely the challenge that I was hoping for. I am very excited for the experiences abroad (as part of the program) that will further widen my perspective of the world around me,” she explains. Zoe says the vast array of opportunities available at Roseville College enriched her application, as much as they deepened and balanced her educational experience at School. Above all, she is grateful for the work her teachers put in to helping her throughout her HSC with “any and every question” she had. She is thankful for the hours of assistance her teachers at Roseville College invested into her US scholarship application process. Duke University ranks 8th in the US and is among that country’s most selective, with a 2017 acceptance rate of just 9.2%. BARKER’S DEBATERS MAKE THEIR POINT For the third time in three consecutive years, the Barker College Firsts Debating team has won the CAS Debating Cup.

"It was a fantastic effort from a great team who debated with genuine fluency and teamwork through the season, climaxing with a wonderful CAS series," Head of Barker’s English Department, Andrew Hood. Barker Debating also won the CAS Shield (the most victories across the 55 round debates of the CAS competition) with 37 victories, narrowly beating St Aloysius by one win (secured with the final debate of the night, in the Firsts). This is Barker's fifth win of the shield in the last six years (and six wins in eight years).

In an incredible feat, this particular team, with various team members across their six years, has only lost one CAS debate during this period. The team of Catherine Ku, Felicity Macourt and William Solomon (c) defeated St Aloysius 3-0 (winning all three adjudicators) to win the CAS Debating Cup 5-0 and end an undefeated CAS season. 40

Globally, studies show that green is good for your health and happiness but who has time to read all the science? In a nutshell, the two big benefits of having indoor plants are air quality improvement and your own well-being. Plants remove air-borne toxins created by paints, furniture finishes and air pollution. By having just one or two plants the air quality increases significantly in a space and this in turn promotes feelings of relaxation, inspiration and positivity. In a room about 5 square metres, 1 plant will clean the air by 25% & you’ll feel a little better, but having 5 plants you’ll get 75% cleaner air & your mental well-being will increase by 60%. So just imagine what 10 plants will do for you! Once you get the bug for having greenery in your home you won’t be able to stop.
