PRETTY FLAMINGO It’s been causing rather long queues outside its Stanley street shop since it opened last summer, but there’s a new reason to head to Flamingo Bloom’s chic little salon: their new superfood smoothie bowls and creamy vegan milkshakes. Made from just fresh fruit and a splash of almond milk, the new range of bowls come in two delicious flavours: Matcha Melon and Virgin Pineapple Piña Colada. Both are free from added sugars and feature a variety of superfoods, including goji berries, raw rolled oats, black chia seeds and mulberries. The Matcha Melon has a smooth, sorbet-like base made of bananas, red grapes, raw oats, premium matcha powder and almond milk, which is then topped with crunchy toasted granola and a variety of fresh fruit. FOLK TALES Known for its healthy, sustainable food delivery service, Food Folk has teamed up with organic convenience store, Just Green, to launch its first range of good-for-you lunch boxes that you can pick up straight from the chilled cabinet. The menu is designed to appeal to all tastes and appetites and uses high-welfare pastured meat, poultry and dairy products, as well as wild caught or sustainably farmed fish. Where possible they also like to support local artisan producers by using locally farmed fruits and veggies. The current menu includes two dishes to be heated up in the microwave: a satisfying yellow curry with beef brisket that’s been slow-cooked for 12 hours; and a comforting spaghetti bolognese with green veg. They also have a spinach and quinoa citrus salad, and refreshing soba dish that can be eaten cold. The menu ranges from $65 to $80 and is available daily. NORTHERN BITES Celebrated three Michelin-starred chef, Björn Frantzén, has announced his first foray into Asia with the launch of the The Flying Elk on Wyndham Street. Developed in collaboration with Hong Kong restaurant group, Maximal Concepts, The Flying Elk will serve contemporary food from across Europe from within its cosy Nordic-inspired cabin interior. Chef Frantzén will use both local and Nordic suppliers to create his signature dishes inspired by his homeland. While dishes may change depending on the season, the menu will feature staples such as fresh halibut with a sherry and beurre noisette
hollandaise; roasted elk sirloin served with the chef’s famed hot sauce; umami salad with duck confit, shiitake mushrooms and smoked pecorino; and a very satisfying grilled beef short rib and ox heart paired with horseradish, celeriac remoulade and pickled mustard seeds. Finish off with a notso-naughty version of an Eton Mess made with blueberries, lemon thyme, and rye. Vegetarian Lunch at Ahimsa Buffet The Buzz: We always see a huge queue outside Ahimsa Buffet, which offers an all-you-can-eat vegetarian lunch for just $68. Intrigued, we went to see what the fuss is about. The Restaurant: This low-key, canteen-style restaurant is beautifully simple. You pay upfront, get a plate and sit wherever you can find a spot. In the middle of the room is a large buffet with more than 25 types of plant-based dishes, from Buddhist-style braised veggies to spring rolls, tempura, roasted root veg, stir-fried market greens and more. There’s a small western-style salad bar and deliciously simple steamed cakes and cold Chinese-style puddings for dessert. Everything was fresh, tasty, low in salt and oil, and wonderfully satisfying. Responsible consumption is the order of the day: everyone is expected to put their plates away ready for washing, and scrape any uneaten food into a separate bin. The Verdict: At $68, it’s a pretty hard deal to beat, especially given the flavours and the variety of all the dishes on offer. The Treatment: With two therapists at hand, one
tackling your face and one at your feet, we first had a consultation about our skincare goals. This facial uses SEYO, a German machine that helps products penetrate deeper for a long-lasting effect. As we were dry and dehydrated, we went for the Aromatherapy Associates hydrating mask to plump up our skin deep below the surface. Meanwhile, another therapist performed a Bastien Gonzalez pedicure, using dentist drill-like devices to finely sand, buff and remove thick, hard skin and calluses. There’s no nail polish, but our toes were buffed to a glossy sheen and never looked better. The Verdict: We loved it! For an efficient use of limited pamper time, there’s nothing better than having four hands working on both ends, with fabulous results. As someone who gets twitchy after about an hour in the spa, we appreciated being able to choose whether to linger with a cup of tea and a snack, or to shoot back to the office. Flexitarianism,where you eat predominantly veggie but occasionally indulge in animal products, is a growing trend both here in Hong Kong and worldwide. Green Monday (www.greenmonday.org), a social enterprise group that promotes green, healthy and sustainable living, is encouraging people to make more conscious decisions about what they put in their mouths as a way of reducing the environmental burden on our planet. Last year, 23 percent of Hongkongers committed to Green Monday, saving 900,000 tons of carbon emissions in the process.

The Ocean Recovery Alliance Ahead of World Ocean Day on June 8, We speak to Doug Woodring of the Ocean Recovery Alliance, about the state of Hong Kong’s seas.

Tell us how you came to start the Ocean Recovery Alliance. I’m originally from California and have worked in Asia for over 25 years. As a competitive swimmer and outrigger paddler, I’ve gotten up close to the waters around Hong Kong more than most, and have seen first-hand the growing problem of plastic in our seas. The lack of attention to this issue 10 years ago is what inspired me to hopefully make some changes on a global scale. What’s causing Hong Kong’s growing plastic pollution problem? The plastic pollution issue has increased here due to the regional hemorrhaging that occurs with improper waste management and recycling capacities, coupled with growing populations and the use of plastic in packaging and products. I disagree with a report published by the Environmental Protection Department two years ago, which claimed that 80 percent of our ocean’s plastic trash came from Hong Kong. That was based on only “identifiable” material, and most of what’s picked up is not identifiable by brand. I believe that at least 60 percent of the waste on our shores comes from outside of Hong Kong. Any good news for our seas? One of the best things that the Hong Kong government has done for the environment in the past four decades is to ban trawling. This has had a fast and dramatic positive impact on the health of our waters. The overall water quality has also been improving thanks to new sewage treatment programmes, and although not perfect, it is a lot better than it was.

Tell us some of the most shocking things you’ve seen. The sheer quantity of material, mostly Styrofoam, on parts of the coastline that do not get regularly cleaned by the government or volunteer groups. This product should be banned in the food industry at the consumer level, and restaurants should not be using the excuse that it is too expensive to use alternatives. What else is endangering our seas? It is also sad to see the overconsumption of live reef fish from Asia and the Pacific in our restaurants. Also, the disregard for our Chinese White Dolphins is a tragedy. Any other jurisdiction would be proud to have these animals in their waters. What have been some of the most rewarding moments for the Ocean Recovery Alliance? We worked with Watsons Water, which was the first big Asian bottler to move from 0% recycled content to 100% recycled content (PET) in one move, saving over 75 million virgin bottles per year. Now they need to improve on their bottle caps, which are still the biggest and most wasteful in the world, due to their size and weight. We are also happy to have inspired the movie “Plastic Ocean” which got its start and first footage from our expedition to the North Pacific Gyre [site of the Pacific Trash Vortex] in 31

2009. Our recent award from the Prince of Monaco, the “Prince’s Prize for Innovative Philanthropy” was a great honor for our global work in this space as well. We also are proud to be running the only global conference focused solely on B2B solutions for plastic sustainability, which we launched at the Rio+20 Earth Summit, called the Plasticity Forum. How can everyday Hongkongers stop their waste from ending up in the ocean? They can stop using disposable plastic. It is very hard to get away from packaging in Hong Kong, but at the very least, make sure that it is all put in the correct recycling bin. As a consumer, hold restaurants accountable and push them to make greener choices. You have the power of your wallet to consume elsewhere, and to let them know why. What do you hope to do with the Ocean Recovery Alliance in the next 12 months? We have some big global programmes that will be “turned on” in the coming months, and we are also working on a global report for the United Nations Environment on the topic, so watch this space for some exciting impacts. Our 10th Plasticity Forum will be in Kuala Lumpur on October 25, which is

very timely for this region and the innovations and solutions that are needed for scaled improvements. What are some practical ways our readers can get involved and help out? Use your power as consumers to either not consume blatantly wasteful products or packaged materials. Use your social networks to let brands and companies know that you are eager to support their use of sustainable products or services. Buy recycled products! Without the demand for recycled products, the recycling systems of the world can’t work, as they don’t have the markets to sell into. You can also use our Global Alert app (globalalert.org) whenever you hike, travel or head to the beach, to report trash hotspots in or near anywhere in the world’s waterways or coastlines. This information can be very powerful in driving positive change.

2 tbsp organic ghee, butter or coconut oil

1 tbsp garlic paste

PREPARATION: TIP: For vegans, replace the Greek yogurt with coconut yogurt or tahini, and use coconut oil while basting.

1. Add 5-7 cups of water to a large pan, and bring to boil. Add the whole cauliflower to the boiling water for 2-4 minutes, and then turn off heat. Remove the cauliflower, rinse with cold water and pat dry before placing it on a baking tray. 2. In a mixing bowl, add ginger paste, garlic paste, Greek yogurt, lemon juice, chopped coriander and mint leaves (set some mint or coriander leaves aside for garnish). Add the tandoori masala and salt. Mix into a paste.
3. Spread the paste over and between the florets. Marinate for at least two hours. 4. Preheat oven to 160 degrees. Bake the marinated cauliflower for 10-15 minutes and baste with oil of choice (organic ghee, butter or coconut oil). Finish off under the grill for a light charring effect on top of the cauliflower. 5. Garnish with chopped coriander, mint leaves and lemon wedges.

But first, you need to provide a DNA sample. So here I am, scrubbing my gums. In a few weeks, I’ll learn how my body responds to carbohydrates, caffeine, toxins, exercise routines, and more - then use that information to make better lifestyle choices. Back in the the 90s, DNA research gained momentum with the discovery of nondeterministic genes like ACE (responsible for regulating blood pressure). But epigenetics really took off after 2003 upon completion of the Human Genome Project - which mapped all 20,000some genes in the human body.

“A lot of people think of DNA as deterministic - the colour of your hair or your height,” says Alex Poole, director of DNAFit Hong Kong. “But actually, much of DNA is about how your environment and lifestyle impacts your genes. You might wonder why you can eat the exact same diet as the person next to you, but you gain weight and she doesn’t. Well, that comes down to your genes.” Some people can eat endless bowls of pasta or noodles and stay pencil-thin, because their body loves that energy source. Others aren't so lucky. But once you know how your body responds to things like carbs or salt or caffeine, you can cut out all the guesswork and optimise your diet. Fast forward three weeks later and my results return. First the good news: I can safely consume lactose, fat and carbs with no digestive issues;
however, I need to cut down on my salt and caffeine intake to avoid hypertension. My body also needs more Vitamin B and D than average, plus I have a one in 35 chance of developing Celiac disease. As for fitness, the tests suggest that endurance training should be my go-to. Essentially, I spend 66 percent of my time at the gym on endurance training - like jogging, biking, HIIT, or moderate lifting - and 33 percent of my time power training, such as interval sprints or max-out deadlifts. “We also test for VO2 max [maximum rate of oxygen consumption], injury risk and recovery time,” says Poole. “Some people can train every day, others need a day in between. Already, established DNA testing programmes such as 23andme have come under fire for selling DNA data to third parties, made possible through a dense wall of foreboding legalese. “Privacy is an issue,” says Schenk. “What is clear is that the more consumer and behavioral data a company has, the more personalised its price-setting can become. In the future, wellness providers will be able to create completely new business models.” Before taking any test, carefully read the terms of service. Some DNA testing sites will sell your DNA information to third parties or use it for further research without your consent.

First, travelers will take DNA and hormone tests to look at
key markers, then the specialists will create a personalised regime. For the next 12 weeks, the Estate will adapt every detail of the retreat to your DNA and blood results - think meal plans, exercise training, stress management, and more. And over in California, Cal-a-Vie boutique wellness resort believes that biochemistry is the key to understanding how your lifestyle affects your long-term health. The retreat recently partnered with WellnessFX, an online blood testing platform to launch a hyperpersonalised health experience. Where I go for a healthy lunch: Fresca on Hollywood Road. I love their healthy vegetarian options and I'm obessed with their tofu dish. Hopefully they'll launch cooking classes one day!
My favourite workout gear: Lululemon. I know it’s expensive but I’ve had a pair of Wunder Under tights since 2010 and they are still as good as new. Buy the best and you’ll only cry once!
What health means to me: It’s everything. I think at some stage everyone takes it for granted until you have a wakeup call. Everything I do these days is to make sure I’m healthy.

On my bucket list: For travel it’s India, but more generally it is to learn French.
Where I go to get pampered: Every two months, I go to Paul Gerard to see Alistair, who keeps my hair a nice, creamy blonde.
My favourite app: Instagram. It’s part of my work, and helps me stay in touch with friends and family.

What I always have in my fridge: Quo coconut kefir. I buy it weekly and have one a day. I had a terrible chronic illness that destroyed my immune system in 2016, and I’ve found my daily dose to be really beneficial in my recovery. What I'm watching on TV: I’m loving "Chef’s Table" on Netflix. I’m a big foodie and I’m planning some holidays around visiting these amazing restaurants. First up is Gaggan in Bangkok this August. My beauty essential: A good cleanser and a night cream. I change it up every six months or so and expose my skin to all different types of products, both mainstream and organic. One brand I’m loving right now is John Masters Organics.
