CONCEPT
PROJECT
MANIPULATION. Transforming ingredients into unknown forms while engaging the senses and choosing a serving vessel that mimics a similar creation process as the food served.
As a group, we were to create a four course meal where each dish had its own star ingredient. Given a list of proteins, grains, fruits and vegetables, we were to choose an item from each category and simply create a unique dining experience.

EXTRACT Similar to the extraction of bone marrow and honey, we chose to serve this dish with a syringe allowing the consumer to experience the process and enjoy a savory + sweet dish.

The wire and zucchini are both physically altered by warping the original forms. It creates an interesting composition of organic and structured pieces allowing consumers to interact with this in a different way than usual. Finger food.
SOLIDIFY Two similar forms with different complexities take on an equal translucency. We used the grapefruit juices, pulp, and rinds, and applied them to an edible composition of citrus.
